Easy Slow Cooker Chili

This simple and easy recipe is perfect to feed a crowd! Our HEARTY slow cooker chili is fully loaded; packed with meat, beans and just the right amount of heat to make your tongue tingle. Cooked in your crock pot all day or in just 4 hours. It's up to you, it doesn't get much easier than that!

Our annual Christmas party is such a blast.  After years of spending all day making the perfect little appetizers and finger foods, I decided last year I was going to simplify.

A crockpot meal is exactly what we needed.  With temperatures in Phoenix dipping into the frigid 60's in December {insert sarcasm}, I thought a warm and hearty chili would be perfect!

This recipe starts with 4 pounds of meat!  That is some hearty chili.  Hot Italian sausage and ground beef create a flavorful chili with kidney and pinto beans cooked in a smoky tomato base.

Add the perfect amount of heat and you have the best ever crockpot chili!

We served this at our Christmas party and our guests devoured it.  We served it with some easy cheese bread and it made the perfect party meal.

No muss, no fuss. An excellent meal to serve at any occasion, prep and step away.  Serve when ready.  This chili will keep on a warm setting for hours.

Freezing:  Cool chili to room temp and fill a freezer safe container 2/3 full with chili.  It freezes for several months.  To serve:  defrost and add water to thin it out as needed.  Reheat and enjoy!

Helpful Tips to make Simple Crock Pot Chili:

  • Why New Mexico Chile Powder? It has a deep dark reddish brown color and features an earthy, sweet flavor and subtle, spicy heat. It is mildly hot and absolutely perfect in this sauce. It creates a truly authentic flavor! New Mexico Chili Powder can be found in the international aisle in the bulk bags or on Amazon. if you are afraid the heat will be too much you can use half New Mexico Chili Powder and 1/2 regular chili powder.

What you will need to make Simple Crock Pot Chili:

  • Slow Cooker- the slow cooker is almost my most used kitchen appliance, especially during fall/winter! It's just so convenient, and lets face it, it makes comfort food taste even better!
  • New Mexico Chile Powder- This is one of my favorite spices.

Simple Crock Pot Chili

This simple and easy recipe is perfect to feed a crowd! Our HEARTY slow cooker chili is fully loaded; packed with meat, beans and just the right amount of heat to make your tongue tingle. Cooked in your crock pot all day or in just 4 hours. It's up to you, it doesn't get much easier than that!
prep time: 20 minscook time: 4 hour and 10 minstotal time: 4 hours and 30 mins

Ingredients

  • 2 pounds hot Italian sausage, bulk (we used chicken sausage)
  • 2 pounds 93% lean ground beef
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground black pepper
  • 3 (14.5 ounce) cans kidney beans, drained and rinsed
  • 3 (14.5 ounce) cans pinto beans, drained and rinsed
  • 3 (28 ounces) cans crushed tomatoes with garlic
  • 1 (4 ounce) can diced jalapenos
  • 2 tablespoons smoked paprika
  • 2 tablespoons New Mexico chili powder
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon ground cinnamon
  • 2 teaspoons ground cumin
  • 1/2-2 teaspoons red pepper flakes (to taste depending on heat preference)
Adapt this recipe for a 5 quart crock pot
  • 1 1/4 pounds hot Italian sausage, bulk (we used chicken sausage)
  • 1 1/4 pounds 93% lean ground beef
  • 3/4 teaspoon kosher salt
  • 3/4 teaspoon fresh ground black pepper

Instructions

  1. Cook hot sausage in a large skillet over medium heat until cooked through.  Drain drippings and add to a 6 quart crock pot.  Cook beef with salt and pepper in a large skillet over medium heat until cooked through.  Drain drippings and add to a 6 quart crock pot.
  2. Add remaining ingredients.  Stir to combine.  Cook on high 4-5 hours or low 6-8 hours.
  3. Serve and enjoy!

Helpful Tips to make Slow Cooker Turkey Chili:

  • This is an excellent recipe for left over turkey.
  • You can also use ground turkey in this recipe.
  • To kick it up you can add 1/2 teaspoon of cayenne pepper or 1-2 diced jalapenos added at the start of cooktime.
  • To thicken up the chili, you can mash one can of the beans in the slow cooker and then add the remaining ingredients.
  • Slow Cooker Turkey Chili is freezer friendly. Allow chili to cool to room temperature. Portion into containers. Top with plastic wrap pressed onto the chili (to help keep out freezer burn). Replace lid and freeze. Thaw in the refrigerator and reheat low and slow.

Slow Cooker Turkey Chili

Slow Cooker Turkey Chili is a hearty meal that you can make with leftover holiday turkey or ground turkey -- an easy recipe for a scrumptious weeknight meal that your family is sure to love.

Ingredients

  • 3-4 cups of roasted turkey, chopped
  • 1 green bell pepper, chopped
  • 1 red onion, chopped
  • 4 garlic cloves, minced
  • 2 cans (14.5 oz) diced tomatoes, undrained
  • 1 can (16 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) chicken broth
  • 1 can (6 oz) tomato paste
  • 2 cups frozen corn
  • 1 tablespoon chili powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
Optional garnishes
  • shredded Monterey jack cheese
  • chopped cilantro
  • sour cream
  • tortilla strips

Instructions

  1. Add all ingredients (except garnishes) to a 5-quart slow cooker and stir to combine.
  2. Cover and cook on low for 4 hours or until heated through. Top with your favorite garnishes. Serve and enjoy!
COOK'S NOTES
  1. You can use 1 pound of ground turkey fried in 1 tablespoon of extra virgin olive oil, in place of the roasted turkey.

Sriracha Honey Slow Cooker Meatballs + VIDEO

Sriracha Honey Slow Cooker Meatballs are hot, sweet, tangy, and wildly addictive. This is for the sriracha lover in you. A simple recipe, this dish just about cooks itself. Chad and I fell in love with the sriracha honey a few years ago and ever since, sriracha has been a staple in my pantry. A little bit here a little bit there.

Then I created the ultimate Easy Crockpot Sriracha Honey Chicken Wings and there was no turning back. The sweet and spicy combination is absolutely incredible.

Chad flipped over these meatballs. He loves spicy food and these were just perfect for him. I have to say my heat tolerance is about medium (most days) and these meatballs just about push the envelope for me.

I actually drizzled a little honey on my serving to add a little extra sweetness.

These are the perfect game day bite, awesome for dinner served over some rice or even potatoes.

I made an extra batch and stuck them in the freezer, I will pull them out and serve them for a quick appetizer for an upcoming party. Easy peasy.

The whole dish is beyond easy. You literally just add the sauce ingredients to the slow cooker, form meatballs and toss them in.  Let it cook and serve. It couldn't be more simple.

The sriracha provides a fabulous flavor profile with red chiles, garlic and vinegar being the stars of the show.

Once the honey combines with sriracha it is a match made in heaven. These meatballs hot, tangy, sweet and wildly addictive.

These will make the perfect appetizer at your next party. Just form them into 1 tablespoon size meatballs and toss in the slow cooker. Your guests will go crazy for them.

Helpful Tips to make Sriracha Honey Slow Cooker Meatballs:

  • If you lightly wet your hands the meatballs will form better and crack less.
  • You can take the lid off after 2 hours to allow the sauce to thicken or you can transfer the sauce to the saucepan on the stovetop and cook until reduced by half, or to desired consistency. The meatballs are perfect whether the sauce is cooked down or not. It is a personal preference.
  • Sriracha is HOT it is HOT CHILI sauce. This recipe is medium heat. If you prefer insanely hot, decrease the amount of honey and increase the sriracha. If you prefer milder heat increase the honey and decrease the sriracha.

Sriracha Honey Slow Cooker Meatballs

This is for the sriracha lover in you. Sriracha Honey Slow Cooker Meatballs are hot, sweet, tangy and wildly addictive. A simple recipe, this dish just about cooks itself. Add the sauce ingredients, form the meatballs. Toss them in the slow cooker and voila. The best make ahead game day or any day food. What more could you ask for?

Ingredients

  • 1 cup sriracha hot chili sauce (Huy Fong, the one with the rooster on the package)
  • 1 cup honey
  • 1/4 cup fresh lime juice (approximately 2 limes)
  • 2 pounds lean ground beef (I used 85%)
  • 1 cup panko bread crumbs
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground pepper
  • 2 large eggs

Instructions

  1. Combine sriracha, honey and lime juice in a slow cooker on high heat.
  2. In a large bowl add remaining ingredients, except eggs. Stir sriracha sauce in slow cooker until combined.  Taste and add additional honey or sriracha as necessary to suit your heat preference. Add 1/4 cup of sauce into meatball mixture, fold mixture together 2 times, then add eggs.
  3. Mix well, do not over mix or you will have tough meatballs. Place a sheet of wax paper (approximately 9"x9") on your countertop. Using a 2 tablespoon scoop, portion out meat and place on wax paper.  After all meatballs have been scooped, roll into balls and place them into the slow cooker. Once about half of the meatballs are in the slow cooker, spoon sauce over the tops of them. Continue adding meatballs until they are all in the slow cooker.  You may have to layer them, just be sure the bottom layer is thoroughly coated in sauce before you add the next layer.
  4. Reduce heat to low, cover slow cooker and cook for 4-8 hours.
  5. Serve and enjoy.
DONNA'S NOTES

Hi!  This is Jen from Carlsbad Cravings and I am SO excited to bring you this Slow Cooker Beef Brisket recipe!

I love this Beef Brisket more than my crazy popular Slow Cooker French Dip Sandwiches, Slow Cooker Barbecue Ribs, Slow Cooker Carnitas, etc.

I know that is a bold statement, but this brisket is boldly delicious.  So, if you have never made beef brisket or never made slow cooker beef brisket, prepare for your mind to be blown with this easy method for crazy tender, juicy beef brisket every single time.

What sets this Slow Cooker Beef Brisket above the rest is our intoxicating spice mix of paprika, brown sugar, chili powder, chipotle powder, onion powder, garlic powder, dried thyme, salt and pepper.  The rub is not too spicy, not too sweet, but just plain flavorful.

The other important element is our tantalizing homemade barbecue sauce that I first used in my Slow Cooker Barbecue Ribs.

This Barbecue Sauce is a reader favorite and the “only barbecue sauce I will ever use,” according to many.  So while you can use your own bottled barbecue sauce, I highly recommend this version.  It is sweet and tangy and just right.

I love using my slow cooker during the holidays because not only does it free up the oven, but the results are wonderfully tender and every bit as delicious as oven results.  And so easy!

Making and serving Slow Cooker Beef Brisket on the same day can be difficult, however, unless you plan ahead because the brisket requires a good 8-10 hours of cooking time.  That is why I like to prepare my brisket the day before.

After your brisket is cooked, this is when I remove the slow cooker ceramic insert and refrigerate it with the brisket and all the juices for 1-3 days.

Not only does the flavor improve, but the brisket becomes even more tender and makes prep the next day a snap.  When ready to serve, simply skim off the hardened fat then cook on low for 1-2 hours until warmed through.

HELPFUL TIPS TO MAKE SLOW COOKER BEEF BRISKET:

  • Rinse brisket in cold water and pat dry. This helps keep the meat from steaming and allows it to sear so you get an amazing flavor and crisp coating on the outside of the brisket.
  • Slicing the meat across the grain ensures the meat is extra tender.
  • You can use beef base in place of the bouillon.

Slow Cooker Beef Brisket

Slow Cooker Beef Brisket is a simple recipe that is wonderfully juicy, exploding with flavor, smothered with spices, oven seared then simmered in the crockpot until it is melt-in-your-mouth-tender.
prep time: 10 minscook time: 8 hour and 40 minstotal time: 8 hours and 50 mins

Ingredients

  • 4-5 pounds beef brisket, trimmed of excess fat
  • 1 cup water
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon beef bouillon
  • 1/2 cup homemade barbecue sauce (recipe below)
Spice Rub
  • 2 tablespoons paprika
  • 2 tablespoons packed brown sugar
  • 1 tablespoon chili powder
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 1 teaspoon ground chipotle pepper
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional for more heat)
Barbecue Sauce
  • 1 tablespoon Spice Rub (recipe above)
  • 1 1/2 cups ketchup
  • 1/3 cup molasses
  • 1/3 cup packed brown sugar
  • 1/4 cup seedless blackberry preserves
  • 1/4 cup apple cider vinegar
  • 1 tablespoon mesquite liquid smoke (optional but recommended)

Instructions

  1. Preheat oven to 425°F. Line a large baking sheet with sides/jelly roll pan with parchment paper or foil for easy cleanup. Set aside. Spray 6 quart (or larger) slow cooker with non-stick cooking spray.
  2. Trim brisket of excess fat and rinse and pat dry. 
  3. Add 1 tablespoon Spice Rub to a medium bowl for the barbecue sauce and set aside.
  4. Rub all remaining Spice Rub evenly all over the meat then place brisket on a prepared baking sheet. (You can let sit at room temperature for 30 minutes or refrigerate up to 24 hours if desired).  Bake for 30 minutes at 425°F to sear meat. 
  5. Meanwhile, add all of the Barbecue Sauce ingredients (recipe to follow) to the 1 tablespoon reserved Spice Rub and whisk to combine. Remove 1/2 cup barbecue sauce and add to slow cooker along with water, Worcestershire, reduced-sodium soy sauce and beef bouillon.  Whisk to combine (the bouillon will not be completely dissolved but will dissolve during cooking).
  6. Using tongs (so you don’t burn yourself) carefully transfer the brisket to slow cooker.  It will be large so you will have to squish it in. Not all of it will be under the liquid. 
  7. Cover and cook on LOW for 8-10 hours until brisket is very tender, flipping over halfway through cooking. Remove brisket to a foil-lined baking sheet.  Brush with barbecue sauce and broil 5-10 minutes, until slightly caramelized.   Meanwhile, simmer barbecue sauce until warmed through.

COOK'S NOTES

  1. Liquid smoke can be found next to the barbecue sauce in most grocery stores. It adds a wonderfully smoky flavor.
  2. MAKE AHEAD:  I often will cook my brisket until tender then remove the removable ceramic insert and refrigerate the brisket in the juices.  The next day, I skim off all the hardened fat then cook on low for 1-2 hours until warmed through.
