Fresh tomatoes are one of the most used ingredients in my recipes. They are so simple and fresh and create an amazing flavor in every dish I add them too. I love Roma tomatoes in the summer, but the rest of the year I lean toward cherry or grape tomatoes because they have the most flavor.  After a few years of cutting them one by one I started just using them whole because it is such a tedious job and who has that kind of time? AmIRight?

That is when I heard about this fabulous kitchen shortcut. Since then I have been using it to cut pitted olives, pitted cherries, grapes and just about anything thing round-ish and small that I normally struggle with. Now, I know some of y'all have seen it, there are others that haven't and trust me when I say this kitchen hack is a must for a simple kitchen!

I learned a long time ago that my bread knife only has 2 purposes in life. One, of course, is bread. The other is tomatoes. I have to tell you I have never been so frustrated as when I was trying to cut tomatoes in half and ending up with squished tomatoes.

Kitchen Hack: Cherry Tomatoes

2 lids (same size)
1 serrated knife (8" bread knife works great)
cherry tomatoes (or grapes, pitted olives or pitted cherries)

Grab 2 same size lids. You can use plastic ware or lids from your fridge. I use the lids from my Ziploc Twist N Lok The lid does not have to be round.

You can use any size lid as long as it has a lip around the edge. You can even use small appetizer plates from your kitchen.

Place lid with the lip facing up, so you have an edge that will hold your food. Fill lid with cherry tomatoes.



Place the 2nd lid on top of the tomatoes with the lip facing down. Firmly press down on the top lid, but do not squish your tomatoes.



The 2 lips will hold the tomatoes in place so they do not roll off the lid. Slide your knife between the lids and carefully slice through them.

Do you remember those side dish pouches? I pretty much served every meal with one. Let's be honest here. I haven't always been such a fabulous cook and for a long time it was just Chad and myself.     Chicken Rice Simple Side Dish

    Ingredients

    • 1 cup Jasmine rice
    • 1 tablespoon unsalted butter
    • 1 tablespoon low sodium chicken base
    • 1 tablespoon dried parsley flakes
    • 1 teaspoon fresh ground black pepper
    • salt to taste

    Instructions

    1. Bring 2 cups water to a boil in a medium saucepan over medium-high heat. Add rice, butter and chicken base. Stir. Reduce to simmer. Cook 15 minutes, or until rice has absorbed the liquid.
    2. Remove from heat. Let stand 5 minutes. Pour parsley into your hand and crumble it into the pot, add pepper. Stir and fluff with fork.  Add salt to taste. I use 1/2 teaspoon - 1 teaspoon salt.
    3. Serve and enjoy.

    DONNA'S NOTES

    Crockpot Corn on the Cob

    Perfectly cooked, tender and flavorful corn on the cob cooked right in your slow cooker without heating up the kitchen. This recipe is so easy, it practically cooks itself.

    I can't even count how many times I have professed our love for corn around here... I am a born corn lover and Chad is from Iowa, so needless to say we are a corn lovin' family.

    I have prepared it just about every way you can imagine: Oven Roasted Corn on the Cob, Simple Stove Top Corn on the Cob, Grilled Corn on the Cob and of course I have tossed it in a skillet and also microwaved it, but we will get to those later. {Click on the bold recipe titles to see those recipes}

    To be honest, I have been oven roasting corn for the ease of prep and let it go. But it still heats up my kitchen, which during the summer in Arizona, I do not prefer.  So a few months ago I decided to try popping it in the crockpot and seeing what happened.

    I was pretty blown away by the results. I have prepared it this way all summer long, for every party and every gathering and I have to say that all I have heard are compliments. It creates a perfectly tender and flavorful corn with the easiest clean up ever!

    I pack it with all the seasoning and butter that is required to eat it and then just let everyone grab their own pouch.  Open carefully. Pop in some corn holders (or use your fingers) and eat over the foil. When they are done, pop out the holders and wrap up the cob in the foil.  Easy peasy.

    It all starts by placing the corn on a piece of foil, topping with butter and seasonings and wrapping it. It is really that easy.  I have used salt, pepper and cayenne for a spicy version which is excellent.  However I have found of course that butter, salt and pepper is a crowd pleaser and I usually go with that version any time we are having people over or going to a potluck.

    For Chad's birthday party I prepared some burgers, Crockpot Brats, Crockpot Corn on the Cob and a salsa bar (staring 3 heat varieties of our Lazy Day Salsa and several fruit salsas). Needless to say we ate a lot! Everyone went nuts over the corn and brats and I gave out a lot of recipes. You are going to love them too!

    I have even tried this recipe with coconut and extra virgin olive oil and it is perfect every time!

    Helpful Tips to make Crockpot Corn on the Cob:

    • You can mix butter, salt and pepper in a small mixing bowl and dollop about 1/2 tablespoon on each ear of corn.
    • You can use your favorite spice mixture to kick up the flavor. I sometimes add 1 teaspoon (to taste) cayenne pepper to the mixture. If you add spices, be sure to smear butter mixture on the corn or you will end up with a pile of spices on the corn when you open it.
    • If you are watching what you eat, brush lightly with coconut oil or extra virgin olive oil instead.

    What you will need to make Crockpot Corn on the Cob:

    • Slow Cooker - the slow cooker is almost my most used kitchen appliance, especially during fall/winter! It's just so convenient, and lets face it, it makes comfort food taste even better!

    Yield: 8

    Crockpot Corn on the Cob

    Perfectly cooked, tender and flavorful corn on the cob cooked right in your slow cooker without heating up the kitchen. It couldn't be easier with this set it and forget it simple recipe.
    prep time: 5 minscook time: 2 hourtotal time: 2 hours and 5 mins

    Ingredients

    • 8 ears corn, shucked and trimmed to fit crockpot
    • 4 tablespoons unsalted butter
    • salt and pepper to taste (I used about 1 teaspoon each)

    Instructions

    1. Place each ear of corn in a piece of aluminum foil (about 12"). Add 1/2 tablespoon butter, salt and pepper to taste. You can smear the butter over the corn, but I usually just dollop it in there.
    2. Fold aluminum foil by bringing 2 long edges of foil together. Fold them over until you reach the corn. Then, pull sides of foil up to center top. Place corn in the crockpot with the seam side up. I use a 6 quart crockpot.
    3. Repeat until corn is all wrapped. (I can fit 8 trimmed pieces of corn in my crockpot).  Pour 1/2 cup water in the bottom of the crockpot.
    4. Cook on high for 2 hours or low 4-5 hours.  Once corn is done cooking, reduce temperature to warm for up to 2 hours, until ready to serve. Add a splash more water if needed longer than that.

    DONNA'S NOTES

    Helpful Tips to make Slow Cooker Creamy Mac and Cheese:

    • You can use a combo of any cheese you like, or if you only have one type on hand, use just one, just make sure you use same amount of cheese specified in the recipe.
    • The key to this mac and cheese is to make sure you remember to stir it a few times, otherwise the pasta may stick to the bottom or sides of the slow cooker and burn.
    • You can grate your own cheese, or you can buy grated/shredded cheese to save time.
    • If you want to add some protein to the dish, I like stirring in at the end grilled chicken or some cooked sausage.
    • You don’t need to pre-cook the pasta for this recipe. You can also use elbow, bow tie or small shells pasta.

    Crock Pot Mac and Cheese, Slow Cooker Mac and Cheese

    Slow Cooker Creamy Mac and Cheese

    Slow Cooker Creamy Mac and Cheese is made with four cheeses and its so easy to make by adding all the ingredients to the crockpot.

    Ingredients

    • 1 pound cellentani pasta (also known as cavatappi), uncooked
    • 4 tablespoons unsalted butter, sliced into 1-tbsp pieces
    • 4 ounces cream cheese, cut into 1-oz pieces
    • 1 teaspoon kosher salt
    • 1/2 teaspoon paprika
    • 1/2 teaspoon Dijon mustard
    • 4 cups whole milk
    • 1 1/2 cup heavy cream
    • 2 cups freshly shredded sharp cheddar cheese
    • 1 cup fresh shredded Gruyere cheese
    • 1/2 cup shredded mozzarella cheese
    • Fresh Italian parsley, for garnish

    Instructions

    1. Pour the uncooked pasta onto the bottom of your slow cooker. I love my 6-quart for this recipe. Scatter the butter and cream cheese pieces over the pasta. Sprinkle the salt, paprika and mustard over the top and pour the milk and cream into the slow cooker. Stir to combine everything and smooth the pasta into one even layer coated in sauce.
    2. Cover and cook on low for 1 to 2 hours, until the pasta is chewy (not quite crunchy, but very al dente). Your cook time will vary if you use a different pasta, so start with 1 hour and adjust from there.
    3. Stir once halfway through the cook time and be sure to smooth the pasta into one layer so it is well coated with the sauce.
    4. Once the pasta is ready, sprinkle on the cheddar, Gruyere and mozzarella cheeses and stir to combine. The cheese will melt into the sauce to create the most luxurious creamy cheese sauce. Cover the mac and cheese and cook for 10 minutes, until the cheese is melted and it comes together.
    5. Stir before serving and garnish with fresh parsley.
