As you know we have a house full of picky eaters, but we all come together when there are potatoes and cheese.  I mean can you say ultimate comfort food?

These potatoes are awesome served along side our pork roast or meatloaf. They pretty much go with everything. I can't quite get enough. But then again.. Cheese and potatoes are kind of a no-brainer around here. Add corn and broccoli on the side and we have a family full of happy campers. Well, not literally 'campers'. If you want me to go camping there needs to be a hotel room involved. We can roast hot dogs over an open fire pit (by the hotel pool). Know what I mean?

This simple recipe starts by creating your glorious cheese sauce, then layering the potatoes with ladles full of cheese sauce between. Sprinkle with more cheese, cover and bake.  It's THAT easy!

You could even pour this fabulous cheese sauce over a pound of cooked pasta and toss it in the oven for the richest most scrumptious mac and cheese ever. I really can't get enough of it and you will be in awe too.

What you will need to make Cheesy Potatoes Au Gratin:

  • A large skillet with a lid – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.
  • Mesh Strainer – Normally you don’t need to drain the grease when cooking with lean ground beef, but if you do, a mesh strainer will help ensure you don’t lose any of the cooked meat.
  • Heat resistant spoon or spatula – Ideal for cooking, stirring, and serving.

Cheesy Potatoes Au Gratin

Thinly sliced potatoes layered among the creamiest cheese sauce ever come together to create this taste sensation. Potatoes Au Gratin have been a long time favorite in our house. And with this simple recipe they will be your go to side dish all year long!
prep time: 30 minscook time: 1 hour and 30 minstotal time: 1 hours and 60 mins

Ingredients

  • 3 pounds red potatoes, scrubbed and cut into 1/4" slices
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon fine ground black pepper
  • 2 cups 2% milk
  • 12 ounces Colby-jack cheese, shredded (divided)

Instructions

  1. Preheat oven to 400°F.  Butter a 1-1/2 quart casserole dish (approximately 9x5x3 or similar).  Set aside.
  2. Scrub and cut potatoes into 1/4" slices. Place in a large bowl of cold water.
  3. In a medium saucepan over medium heat, melt butter.  Add flour.  Whisk to combine and cook for 2 minutes to cook out the flour-y taste.  Add spices and milk.  Whisk to combine.  Cook until mixture begins to thicken. Add 8 ounces cheese and stir to combine.  Once cheese is melted and smooth, add about 1 cup to casserole dish.
  4. Drain and rinse potatoes. Create a layer of potato slices on top of the cheese.  Add 1 cup of cheese sauce over the top of potato slices.  Repeat until all potato slices are gone or you reach 1/2" from the top of your dish. Sprinkle remaining cheese over top of casserole.
  5. Spray aluminum foil with non stick spray and lay sprayed side down on the casserole.  Bake for 75-90 minutes or until potatoes are tender.  Uncover and place under the broiler for 2-3 minutes or until the cheese is golden brown.
  6. Allow to cool for 5 minutes. Serve and enjoy!

Are you looking for the perfect side dish?  I have been dreaming of a side dish so insanely divine that I would need to build a meal around it.  

Loaded with bacon, beer and cheese I am pretty sure this is it!!!  Even though I am not a big beer drinker (I would much rather sip on a glass of merlot) I really love the flavor beer gives to a dish when cooked with it.

We have had many bacon cheese loves in our food experience.  But, none have come so close to perfection. 

These potatoes are rich, creamy, tender, bacony, cheesy and boast a lovely flavor from the beer.  You are printing this recipe out...  Right?  You have to try this.

So, back to this story... I thought I was just about to the point of side dish perfection with the Bacon Cheddar Hasselback Potatoes

It was so close, but just a tiny bit short of being the consummate side.  (I think if it had beer in it, I would have flipped though).

So here we are, a traditional potatoes au gratin turned into a heavenly Bacon Cheddar Beer Potatoes Au Gratin.  Did you flinch?  Bacon, cheddar and beer with potatoes?

Oh yes there is nothing light about this dish.  It is intentionally rich and decadent.  Lighten the guilt, serve it with a side salad.

Bacon Cheddar Beer Potatoes Au Gratin

Bacon Cheddar Beer Potatoes Au Gratin are your favorite rich and creamy potatoes taken to a whole new level with bacon, cheese and beer.

Ingredients

  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon ground chile de arbol (can substitute cayenne pepper, to taste)
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup beer, Belgian style wheat beer (Blue Moon)
  • 1/2 cup reduced sodium chicken broth*
  • 8 ounces mild cheddar cheese, shredded
  • 3/4 cup half-and-half
  • 1 cup whole milk
  • 1 teaspoon Worcestershire sauce
  • 24 ounces bacon, cooked, drained and chopped
  • 3 pounds red potatoes, sliced thin

Instructions

  1. Move rack to center of oven and preheat oven to 350°F.
  2. In a medium saucepan over medium-low heat, melt butter.  Add flour and whisk; allow flour to cook for 2-3 minutes to cook out the ‘floury’ taste.  Add garlic, chile, paprika, salt, and pepper.  Whisk to combine.
  3. Slowly add beer, chicken, and, half-and-half.  Whisk until there are no lumps.  Add cheese and whisk constantly until you have a smooth mixture.  Add milk and Worcestershire.  Reduce heat to low.
  4. Butter a 3 quart casserole dish.  Layer potatoes in casserole dish, topping each layer with about ½ cup of cheese sauce.  Halfway through add half of chopped bacon on top of cheese layer.  Continue layering cheese sauce and potatoes.  Reserve the remaining bacon.
  5. Bake for 70-90 minutes, until potatoes are tender.  Top with remaining bacon for the last 10 minutes of cook time.  Allow potatoes to rest for 20 minutes before serving to thicken up. 
  6. Serve and enjoy!

Rich, creamy, and packed with ooey gooey cheese this simple cheesy potatoes recipe is a keeper!

I've been on a casserole kick lately so I wanted to share my Cheesy Potato Casserole with you along with a few of my other favorite casserole recipes.

These Cheesy Potatoes Au Gratin are a family favorite year-round. And, these Bacon Cheddar Beer Potatoes are a favorite rich and creamy potato recipe with bacon, cheese, and beer.

Or, my Sweet Potato Casserole Boston Market Copycat has rich sweet potatoes covered in marshmallow and brown sugar streusel.

Cheesy Potato Casserole - Recipe Notes

To save time, you can make this Cheesy Potato Casserole using frozen hash brown potatoes. You need to start with them thawed to use this method.

The texture won't be as smooth as my version. But, it is a simple way to save time.

If you want a crunchy topping for your cheesy potatoes, you can add lightly crushed cornflakes with a little bit of melted butter to the top of the casserole before you bake it. Just sprinkle them on top of the shredded cheese.

Depending on where you live, you may have heard this Cheesy Potato Casserole referred to as funeral potatoes.

They are both the same thing, just two different names.

What kind of potatoes are best for casseroles?

If you're going to start with fresh potatoes as I do, I recommend red potatoes. They have smooth, red skin and they cook up evenly in your favorite casserole recipes.

If you prefer to use a white potato, look for an Irish potato. It has thinner skin than many other types of white potatoes and it holds up well during longer cooking times.

What cheese is best for cheesy potatoes?
When you make cheesy potatoes, you want the cheese to melt smoothly so it becomes a creamy sauce for the potatoes.

For that reason, I have used a combination of cream cheese, shredded mild cheddar cheese, and shredded Colby jack cheese. You can experiment with what you have.

But, be sure that the cheese you use melts smoothly for the proper consistency.

How do I reheat potato casserole?
To reheat this Cheesy Potato Casserole, cover the top of the pan with aluminum foil so that it doesn't burn. Then, bake it at 300F for about 15 minutes. You will need to adjust the timing based on how much is left in the casserole pan.

  • Mixing BowlsI like a variety of mixing bowls and prep bowls and this set has them all.
  • 6"x10" baking dish
  • Aluminum foil

Can I make this ahead of time?
Yes, you can make this Cheesy Potato Casserole one to two days ahead of time. Just make the casserole completely and cover it with aluminum foil. Then, you can refrigerate it for 1 to 2 days.

To reheat, let the casserole dish come to room temperature on the counter while the oven preheats. Then, bake it as directed in the recipe. You can add an extra ten minutes to the baking time if your dish is still cold.

Can I use cream soups in this recipe?
Some people prefer to use canned cream soups in this casserole recipe. It's really a personal preference. The classic version of this dish uses cream of chicken soup. But, I really like my version with sour cream.

If you want to use cream of chicken (or mushroom) soup, simply replace the cup of sour cream with a can of condensed cream of chicken soup.

Best toppings for casseroles
When I make this casserole, I top it with shredded cheese. But, if you prefer a crunchy topping for your casserole, you can try any of these options mixed with a little bit of melted butter.

  • Crushed Ritz or Saltine crackers
  • French Fried Onions
  • Crushed Pretzels
  • Buttered panko bread crumbs

Cheesy Potato Casserole

Ingredients

      • 1 pound thick-cut bacon, cooked and chopped
      • 2 pounds red potatoes, washed and diced
      • 1 cup sour cream
      • 1 (8-ounce) package cream cheese
      • 1 (8-ounce) package shredded mild cheddar cheese
      • 1 (8-ounce) package shredded Colby jack cheese
      • 1 teaspoon kosher salt
      • 1 teaspoon black pepper
      • 1 scallion, chopped

          Instructions

              1. Preheat oven to 400°F.
              2. In a large mixing bowl combine sour cream, cream cheese, cheddar cheese, salt, and pepper.   Stir until well combined.  Add potatoes and 3/4 of chopped bacon.  Mix until well combined. 
              3. Pour into a greased (6"x10") baking dish.  Cover with aluminum foil and bake for 60-75 minutes, until potatoes are fork-tender.  Remove from the oven.  Stir.  Sprinkle Colby Jack cheese over top and bake for 15 more minutes uncovered.
              4. Sprinkle casserole with reserved bacon and scallions.
              5. Serve and enjoy!

                  When making traditional scalloped potatoes or potatoes au gratin, you really want a starchy potato that will hold up well during baking and such as a Russets or Yukon Golds.

                  This recipe made with a rich cheese sauce we found that the buttery and slightly sweet atributes of the Yukon Golds make it the perfect potato for this recipe. Not to mention if you want a light and fluffy mashed potato or scrumptious hasselback potato you can't go wrong with Yukon golds!

                  How do you make Scalloped Potatoes ahead?

                  Make ahead or freezer scalloped potatoes are easy to prepare. Simply undercook the potatoes by 10-15 minutes. Allow to come to room temperature and freeze. Allow the potatoes to come to room temperature and bake at 350°F for 30 minutes.

                  What is good with scalloped potatoes?

                  Scalloped potatoes are the perfect side dish for holidays and everyday. These potatoes are the perfect with Baked Orange Honey Ham, the Perfect Grilled Steak and Double Kick Pork Chops.

                  How long are scalloped potatoes good for in the fridge?

                  Properly wrapped in foil, plastic wrap or air tight plastic containers scalloped potatoes will be stay fresh in the fridge for about 3-5 days.

                  Helpful Tips to make Cheesy Sausage Scalloped Potatoes:

                  • Jones Dairy Farm All Natural Little Pork Sausages add tremendous flavor to this recipe but you can use substitute any of their breakfast sausages by cooking them in a skillet according to the package directions and then continuing with the recipe. Visit the product locator on the Jones Dairy Farm website to find their products at a store near you.
                  • You can make this recipe in one 9x13 or split it up into 2 (8-inch x8-inch) or similarly sized pans. I used two 7-inchx10-inch here.
                  • Pre-shredded cheeses have additives to help keep the cheese from sticking together, called anti-caking agents. They also change the way the cheese melts and will cause thickening of your recipes. Skip the pre-shredded cheese and grate your own. All of my recipes call for freshly shredded cheese. I store it in a zip-top bag in the fridge and it keeps for several weeks.
                  • When making cheese sauces and cheese-based soups, be sure to add the cheese slowly over low heat, or your sauce could become grainy. Reheat cheese sauces and soups low and slow to maintain the smooth texture.
                  • You can halve this recipe for occasions when you are not cooking for 12 or freeze the leftovers. 

                  What you will need to make Cheesy Sausage Scalloped Potatoes:

                    • Mandoline slicer - This slicer is perfect for making easy work of uniform fruit or vegetable slices. I must have bought and returned 6 mandoline slicers before this one.  This one, I have had for 7 years and I still love it. 
                    • Cutting Board- A big good solid cutting board so you can prep all your veggies on one surface.  I use my cutting board daily so it’s worth the investment. 
                    • Quality Knives- Quality knives make prep time much quicker and are important for safety as well.  If you make one kitchen investment, I believe it should be in quality knives.

                    Cheesy Sausage Scalloped Potatoes

                    These au-gratin style cheesy, creamy scalloped potatoes are taken over the top with 2 cheeses and the addition of sausage. They are so good they disappear like magic!
                    prep time: 25 Mcook time: 1 hourtotal time: 1 H & 25 M

                    ingredients:

                    • 1 (12 ounce) package Jones Dairy Farm All Natural Little Pork Sausages
                    • 4 tablespoons butter
                    • 4 garlic cloves, minced
                    • 1/4 cup all-purpose flour
                    • 3 cups whole milk
                    • 1-1 1/2 teaspoons kosher salt
                    • 1/2 teaspoon fresh ground black pepper
                    • 3 ounces (3/4 cup) Parmesan cheese, freshly shredded
                    • 4 pounds Yukon Gold potatoes, sliced into 1/8-inch rounds
                    • 12 ounces (3 cups) freshly shredded sharp cheddar cheese
                    • fresh chives, chopped divided

                    instructions:

                    How to cook Cheesy Sausage Scalloped Potatoes

                    1. Preheat oven to 400°F. Butter a 9x13 baking dish. Set aside.
                    2. In a large (10 inch) skillet cook pork sausage links uncovered over medium-high heat with 5 tablespoons of water for 6 minutes. Uncover and continue cooking for 2 minutes, until golden brown, turning frequently. Transfer sausage to a small cutting board and allow to cool. Once cool, slice sausage into coins.
                    3. Meanwhile: add butter to the skillet and cook until completely melted. Add garlic and cook for 1 minute. Add flour and whisk for about 2 minutes to cook out the 'flour-y' taste.
                    4. Slowly pour milk into the skillet while whisking constantly. Use the whisk to scrape up the browned bits on the bottom of the skillet. Continue to whisk occasionally until bubble start to break on the top, allowing the mixture to start to thicken, about 2-3 minutes.
                    5. Reduce heat to low and slowly sprinkle in Parmesan cheese, salt and pepper. Whisk until completely melted and smooth, about 1 minute. Set aside.
                    6. Arrange a layer of potatoes in the baking dish (use about half of your slices). Then pour half of the cheese sauce over the potatoes. Sprinkle half of the remaining cheese over top of the sauce. Sprinkle 1/2 of the sausage coins over the cheese.
                    7. Spread the remaining potato slices over the cheese. Add the remaining cheese sauce. Sprinkle the remaining sausage coins over top of the cheese sauce. Top the sausage coins with the remaining cheese.
                    8. Cover the baking dish with aluminium foil and bake for 30 minutes. Remove foil and continue baking for another 30 minutes, or until potatoes are cooked through and tender. Total cook time is 60 minutes.
                    9. Garnish with chives. Serve and enjoy!

They also change the way the cheese melts and will cause thickening of your recipes. Skip the pre-shredded cheese and grate your own. All of my recipes call for freshly shredded cheese. I store it in a zip-top bag in the fridge and it keeps for several weeks.
                    3. When making cheese sauces and cheese-based soups, be sure to add the cheese slowly over low heat, or your sauce could become grainy. Reheat cheese sauces and soups low and slow to maintain the smooth texture.
                    4. You can halve this recipe for occasions when you are not cooking for 12 or freeze the leftovers.
