I have been playing with some bread recipes lately and have fallen in love with the simplicity of beer bread. They are a bit more dense, but can be mixed with a spoon, there is no kneading and no rise time. That is a perfect option for times when you don't have 3 hours to make bread.

My first few loaves I made with a more flavorful beer and then used a light beer. I can tell you there was a difference. I would stick with a more flavorful beer. You can't taste the beer, but you get a nice flavor to the bread that could best be described as sourdough-esque. In fact the loaf has that firm textured crust and softer bread like sourdough as well.

After making a few recipes of a basic beer bread, I tried a few variations. The recipe I am sharing with you today is fantastic!!! Bacon and cheese in beer bread... OH MY!!! Munchkin swiped a slice and devoured it. She kept saying "Mmmmm" as she was eating it. It really is so good and so easy. Prep is in no time. Set oven to preheat and by the time it beeps you will be sliding your loaf in the oven. It's that fast!

I have made this recipe dozens of times and it is always a home run. Perfect for sandwiches, grilled cheese, french toast and more. How are you using your beer bread. I would love some more suggestions.

Are you looking for the perfect side dish?  I have been dreaming of a side dish so insanely divine that I would need to build a meal around it.

Loaded with bacon, beer and cheese I am pretty sure this is it!!!  Even though I am not a big beer drinker (I would much rather sip on a glass of merlot) I really love the flavor beer gives to a dish when cooked with it.

We have had many bacon cheese loves in our food experience.  But, none have come so close to perfection.

These potatoes are rich, creamy, tender, bacony, cheesy and boast a lovely flavor from the beer.  You are printing this recipe out...  Right?  You have to try this.

So, back to this story... I thought I was just about to the point of side dish perfection with the Bacon Cheddar Hasselback Potatoes

It was so close, but just a tiny bit short of being the consummate side.  (I think if it had beer in it, I would have flipped though).

So here we are, a traditional potatoes au gratin turned into a heavenly Bacon Cheddar Beer Potatoes Au Gratin.  Did you flinch?  Bacon, cheddar and beer with potatoes?

Oh yes there is nothing light about this dish.  It is intentionally rich and decadent.  Lighten the guilt, serve it with a side salad.

Smokehouse Smoky Barbecue Beer Burger with Caramelized Onions Steakhouse Smoky Barbecue Beer Burgers with Caramelized Beer Onions

The sounds of summer in the air had me whipping off my grill cover and dusting off my grill this weekend.  Chad has been talking about having a fine steakhouse burger all week.  When I say he has been talking about it, I mean it!  This is how our good nights went last evening.  Me:  "Goodnight baby."  Chad: "So, what do you think about having burgers tomorrow".  Really?

Once menu requests sneak into your goodnights...  It's serious.

I started thinking and planning my next burger masterpiece.  I have really been diggin' cooking with beer lately.  I love the flavor it imparts into a dish.  So, I decided to add some beer into our steakhouse burger.  That and some smoky flavor create a fabulous base for this gourmet burger.

This smoky beer burger is topped with barbecue sauce, cheese and caramelized beer onions.  It comes together in just 30 minutes.

Smokehouse Smoky Barbecue Beer Burger with Caramelized Onions Steakhouse Smoky Barbecue Beer Burgers with Caramelized Beer Onions

Helpful Tips to make Steakhouse Smoky Barbecue Beer Burgers with Caramelized Beer Onions:

    • 80/20 beef makes for the best burgers!
    • Mix until just combined. Overmixing will create a tough burger and that isn't good for anyone.
    • Resist the temptation to press down on the burger with a spatula. It doesn't make them cook faster, it just presses out the juices and all the flavor, leaving you with a dry burger. Again, no one wants that!
    • Preaheat your grill to medium or medium high.
    • Make a slight indentation in the center of the burger on one side to prevent it from doming up in the center. The indentation will rise as your burger cooks.

What you will need to make Steakhouse Smoky Barbecue Beer Burgers with Caramelized Beer Onions:

    • A large skillet with a lid – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.
    • Large Mixing BowlI like a variety of mixing bowls and prep bowls and this set has them all.

a simple marinade made with fresh ingredients creates the most tender and flavorful chick Grilled Garlic Beer Chicken
Can you believe it is barbecue season already? We are bringing you our favorite summer specialties.  I have been enjoying learning how to cook on the big gas grill.  It made perfect sense.  I am the cook.  Why wouldn't I also be the grill master?

I have also been having a lot of fun developing marinades for grilling.  Most recently I created Lemon Rosemary Marinade and Garlic Beer Marinade for Grilled Chicken.

After enjoying Beer and Garlic Marinaded Chicken at my friend Mary's house several times, I decided to develop a garlic beer marinade myself.  I started with the garlic and the beer.  I chose Black Toad, which boast a deep nutty flavor.

I am not a beer connoisseur, but this sounded promising (I was right).  I have to tell you though, this does not taste like beer just a deliciously flavorful marinade (I am not a big beer fan, I don't like anything stronger than Bud Light.  Don't judge!  It just is).

I added lemon juice for some acid (which tenderizes the chicken), olive was my chosen oil and some delicious herbs from my garden.  I love the flavor and aroma of lemon basil, it works perfectly here.  If you do not have lemon basil, you can use any basil.

Now go, get your grill on!!!  Enjoy!

Garlic Beer Marinade for Grilled Chicken - a simple marinade made with fresh ingredients creates the most tender and flavorful chicken ever! It is fast easy and flavorful. No chopping required. Blend in food processor and marinate!
prep time: cook time: total time:

    Ingredients

    • 1 12 ounce bottle dark ale beer (I used Black Toad from Trader Joe's)
    • 1/4 cup extra virgin olive oil
    • 6 large cloves of garlic, smashed
    • 1/4 cup lemon juice
    • 3 tablespoons fresh basil (or 3 teaspoons dried)
    • 1 tablespoons fresh oregano (or 2 teaspoons dried)
    • 1 tablespoon fresh thyme (or 1 teaspoon dried)
    • 2 teaspoons kosher salt
    • 1 teaspoon freshly ground black pepper
    • 4-5 lbs boneless skinless chicken breasts, trimmed and washed

    Instructions

    1. Place chicken in a 1 gallon resealable plastic bag.  Set aside.
    2. Combine olive oil, garlic, lemon juice, basil, oregano, thyme, salt and pepper in a food processor.  Blend until your mixture is smooth. Combine 1/4 cup marinade mix and 1/2 cup beer in an airtight container, reserve this mixture. Place in the refrigerator.
    3. Pour remaining mixture over chicken.  Pour 1 cup beer in over chicken.  Squeeze out as much air as possible and reseal bag. Turn your bag a few times to make sure chicken is well coated with marinade.  Allow chicken to marinate in refrigerator for 3 -24 hours.
    4. Preheat grill to medium-high.
    5. Remove chicken and reserved marinade from refrigerator and set on counter to come to room temperature, about 30 to 60 minutes (you never want to grill cold meat, the temperature change will toughen the meat).
    6. Grill chicken until the top side start to turn opaque (instead of pink), this will take about 6-8 minutes.  Turn your chicken and apply the reserved marinade to the cooked side of the chicken.  Grill the other side until your chicken is seared nicely and when you press down on the chicken it is firm but not hard.

    DONNA'S NOTES

    1. You can also cook this in the oven.  Preheat oven to 350 degree F.  Pour off 1/2 of marinade, add the chicken and remaining marinade to a 9x12 baking dish and bake for 60 minutes.
