I have been playing with some bread recipes lately and have fallen in love with the simplicity of beer bread. They are a bit more dense, but can be mixed with a spoon, there is no kneading and no rise time. That is a perfect option for times when you don't have 3 hours to make bread.

My first few loaves I made with a more flavorful beer and then used a light beer. I can tell you there was a difference. I would stick with a more flavorful beer. You can't taste the beer, but you get a nice flavor to the bread that could best be described as sourdough-esque. In fact the loaf has that firm textured crust and softer bread like sourdough as well.

After making a few recipes of a basic beer bread, I tried a few variations. The recipe I am sharing with you today is fantastic!!! Bacon and cheese in beer bread... OH MY!!! Munchkin swiped a slice and devoured it. She kept saying "Mmmmm" as she was eating it. It really is so good and so easy. Prep is in no time. Set oven to preheat and by the time it beeps you will be sliding your loaf in the oven. It's that fast!

I have made this recipe dozens of times and it is always a home run. Perfect for sandwiches, grilled cheese, french toast and more. How are you using your beer bread. I would love some more suggestions.

    Bacon Cheddar Beer Bread

    Bacon Cheddar Beer Bread is a simple no-knead recipe that is mixed with a spoon and ready to go in the oven before it is done preheating! Loaded with cheese and bacon this is a winner!

    Ingredients

    • 3 cups all purpose flour (363 grams)
    • 1 tablespoon baking powder
    • 1 teaspoon salt
    • 3 tablespoons granulated sugar
    • 1 1/4 cup shredded cheese (I used Monterey Jack, Colby and Cheddar mixture)
    • 1 (12 ounce) bottle of beer (I used Blue Moon)
    • 4 slices of bacon, cooked and chopped (or 1/4 cup real bacon bits)
    • 2 tablespoons butter, melted

    Instructions

    1. Preheat oven to 350°.
    2. Prepare a 9"x5" bread pan by greasing with butter. Set aside.
    3. In a large bowl, combine flour, baking powder, salt and sugar with a whisk. Make a well in the center. Add bacon, about 3/4 of cheese and full beer into the well.
    4. Stir mixture with a spoon until combined.
    5. Pour mixture into prepared bread pan. Add remaining cheese. Drizzle with 1 tablespoon of butter. Bake for 30 minutes.
    6. Remove from oven and drizzle remaining butter over the top.
    7. Bake for an additional 25-30 minutes or until browned on top and loaf thumps when you tap the top.
    8. Remove to a wire rack and allow to cool for 5 minutes. Remove from pan and allow to cool on wire rack. You can brush with more butter if you choose.
    9. Enjoy!

    Plus, there’s no proofing or waiting for the bread to rise before baking!

    And if you’re a beer drinker, you should already have all the ingredients you need to make this homemade beer bread. No special trips to the store!

    Ingredients

    • Self-rising flour  NOTE: See below for how to substitute all-purpose flour
    • Granulated sugar
    • Beer
    • Salted Butter, melted - If you are using unsalted butter, just add 1/4 teaspoon salt to the flour and sugar.

    What is the best beer for bread?


    First, no matter what beer you choose, you’ll want to be sure it’s at room temperature before using it in the beer bread recipe.

    Any beer will work, but it’s best to avoid anything too hoppy. Darker beers like brown ale, lagers, and porters tend to give the best flavor. But, I have used Blue Moon and it is amazing too.

    Keep in mind, you don’t need to spend a lot of money on fancy brews. Any subtle flavors that you might taste while drinking are going to be baked out in the bread.

    So, feel free to go with an inexpensive brew, or use whatever you have on hand.

    How to make the beer bread recipe

    Whisk together the flour and sugar in a large bowl. Make a well in the center and add a full bottle of your beer of choice.

    It should be room temperature, or as close to it as you can get.

    Use a spoon to combine everything together, until the batter is no longer foamy and there are no more streaks of flour.

    Transfer the batter to a greased loaf pan and pour half of the melted butter over the top. The butter is what will give a lovely brown crust to your homemade beer bread.

    Bake for a total of 55 to 60 minutes at 350 degrees F. Halfway through baking, remove the beer bread from the oven and add the remaining melted butter on top.

    The bread is done when the top is browned and a toothpick inserted into the middle comes out clean. Also, it should make a hollow thumping sound when you tap on the loaf.

    Transfer the loaf pan to a wire rack to cool for about 5 minutes. Then, remove the bread from the pan and finish cooling it on the rack until you are ready to serve.

    Recipe Notes

    • You can substitute all-purpose flour in this beer bread recipe with a few adjustments.
    Self-rising flour is a blend of all-purpose flour, baking soda, and salt. It works well if you are out of self-rising flour.

    If you plan to use all-purpose flour, you’ll need to add 1 tablespoon of baking soda and 3/4 teaspoon salt. Then, use the same cup-for-cup amount of all-purpose in place of the self-rising.
    • If you have a beer sensitivity, there are some simple substitutes.
    Replace the beer with non-alcoholic beer, lemon-lime soda, or ginger ale.

    I HIGHLY recommend using the beer though. It gives the bread an incredible flavor that you will miss out on by using a substitution.

    Equipment

    • 9x5 bread pan - you can use your favorite, just keep in mind that dark pans and glass pans bake hotter so you may want to reduce your oven temperature by 25°F
    • Large bowl - This is my go to bowl
    • Cooling rack - you can use your removable microwave rack as a cooling rack in a pinch
    • Bread knife - I love a good bread knife. It is one of my essential knives. This one, I have been using for a decade! I also love to slice tomatoes with it.

    FAQs

    How do you store homemade beer bread?

    Store loaves in a sealed plastic bag or airtight container. It should stay fresh for a few days at room temperature.

    You can also freeze it for later. For best results, slice it first, then place a piece of parchment paper between each slice. This way, you can thaw just what you need. Keep it all in a freezer-safe plastic bag for up to 6 months.

    What does beer bread go with?

    It’s delicious as a snack just as it is or with a little more butter. You can serve this easy beer bread with soups and chilis or even use it to make French toast or sandwiches.

    My favorite French toast is Jalapeno bread dipped in sugar, cream, egg and vanilla and fried. So amazing!

    Absolutely! This is a savory bread, so you’ll want to avoid anything sweet. Keep in mind that certain mix-ins may increase the bake time of this beer bread recipe. Here are some things you can try:
    • Cheese - add 1 to 1 1/2 cups of freshly shredded cheese
    • Jalapeños - use chopped jarred peppers alone or with the cheese
    • Bacon - 1/2 cup of cooked crumbled bacon would be great and can be paired with the cheese too
    • Spice blends - use about 1 tablespoon of Italian or Mexican seasoning
    • Fresh Herbs - about 1 tablespoon of your favorite
    • Fresh garlic - mince a garlic clove and stir in.

    • 3 tablespoons granulated sugar
    • 1 (12 ounce) bottle of beer

    How to make Beer Bread

    You can substitute all-purpose flour in this quick bread recipe by making a few adjustments. 
    Self-rising flour is a blend of all-purpose flour, baking powder, and salt.

    If you plan to use all-purpose flour, you’ll need to add 1 tablespoon of baking powder and 3/4 teaspoon salt to it. Then, use all-purpose in place of the self-rising.

    Half the fun of making this ice cream bread recipe is using different types of ice cream to change the flavor.

    But, if what you have on hand is vanilla ice cream and you really want strawberry ice cream bread, you can add sliced strawberries to your batter.

    If you want chocolate ice cream bread, you can use chocolate ice cream along with chopped nuts and a handful of chocolate chips.

    Just make sure that you do not add things that increase the amount of liquid in the recipe or it may not turn out the same.

    So, while chopped apples should work, applesauce will not. Experiment until you find the quick bread flavors your family likes the best.

    Making this recipe doesn't get much easier. 

    1. Preheat your oven.

    Or, you can slice it and freeze individual pieces of bread in the freezer for up to six months. 

    Just make sure to place freezer paper between each slice so that they don't stick together.

    2-Ingredient Ice Cream Bread

    This Ice Cream Bread Recipe makes a simple dessert that your family will ask for over and over again. It only requires 2 ingredients; softened ice cream in your favorite flavor, and optional multi-colored sprinkles.

    prep time: 5 minutes    cook time: 40 minutes    total time: 45 minutes

    Ingredients:
    • 2 cups full-fat ice cream, softened (we used vanilla bean)
    • 1 1/2 cups self-rising flour *see notes about using all-purpose flour
    • Rainbow sprinkles, optional
    Instructions:
    1. Preheat oven to 350°F. Spray a 9x5 loaf pan with non-stick spray, set aside.
    2. Combine ice cream and flour in a large bowl. Stir until just combined. 
    3. Pour the mixture into the prepared pan. Smooth with a spatula and top with rainbow sprinkles if desired.
    4. Place on the center rack in the oven and bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
    5. Place Ice Cream Bread on a cooling rack for 5-10 minutes, then flip it out of the pan and let the bread cool completely on the cooling rack.
    6. Slice and serve.
    DONNA'S NOTES
    1. Ice cream bread will keep for 3-5 days in an airtight container at room temperature. You can also keep in a freezer bag in the freezer for up to 6 months.
    2. If you have no self-rising flour, you can use 1 1/2 cups all-purpose, 1 tablespoon baking powder and 3/4 teaspoon salt.

    Tips for Making this Strawberry Ice Cream Bread

    • It's important to use full-fat ice cream in this recipe. Don't use a low sugar or low-fat ice cream or it just won't come out correctly.
    • You cannot use all-purpose flour in this recipe. You will need to use self-rising flour. It contains traditional all-purpose flour as well as baking powder and salt.
    • You can make your own self rising flour by placing 1 teaspoon of baking powder and 1/4 teaspoon of salt in a measuring cup. Then, fill the cup with all-purpose flour until you have 3/4 cup. 

    Equipment:

    • 9x5 bread pan - Remember that dark bread pans and glass bread pans bake hotter. So, if you use one of these, you might want to consider lowering your oven temperature by 25F.
    • Large bowl - This is my favorite!
    • Cooling rack - If you don't have one, your microwave cooling rack will work as a substitution. 
    • Bread knife - You will need a nice, sharp bread knife to cut your Strawberry Ice Cream Bread.

    I've added fresh sliced strawberries to this quick bread. But, you can change up the flavor and add another type of sliced fruit. Why not try sliced peaches or a handful of blueberries or raspberries instead.

    And, you can always add in a handful of chocolate chips or your favorite chopped nut to this Strawberry Ice Cream Bread recipe.

    Making Strawberry ice cream bread

    So, how do you use ice cream in bread?  You won't believe how simple it is to make this recipe. Just preheat the oven.

    And, while it's heating up mix the softened strawberry ice cream, the sliced strawberries, and the self-rising flour. Don't over mix it. Stir it until it is combined.

    Then, pour it into your bread pan. Smooth the top of the batter with a spatula. Bake it and let it cool. Remove it from the bread pan and serve it.

    If you want to make this 3-ingredient quick bread even easier, you can leave out the sliced strawberries. You'd just mix the softened strawberry ice cream with the self-rising flour.

    You won't have quite as many chunks of strawberries in your bread, but it will still be delicious.

    Storing ice cream bread

    If you don't finish all of this ice cream bread in one sitting, it can be stored in the refrigerator. Just wrap the quick bread in plastic wrap or aluminum foil.

    Then, store it in the refrigerator for three to five days.

    3-Ingredient Strawberry Ice Cream Bread

    3-Ingredient Strawberry Ice Cream Bread is an easy dessert that your family will beg you to make again. This simple recipe uses only three ingredients that result in a delicious dessert quick bread that is moist and full of flavor.

    ingredients:

    • 2 cups strawberry full-fat ice cream, softened
    • 1 1/2 cups self-rising flour *see notes about using all-purpose flour
    • 1/4 cup fresh chopped strawberries
    • 1 strawberry sliced, optional

    instructions:

    How to make 3-Ingredient Strawberry Ice Cream Bread

    1. Preheat the oven to 350°F. Spray a 9x5 loaf pan with non-stick spray, set aside.
    2. Combine chopped strawberries and softened ice cream in a large bowl. Stir to combined. Add flour and stir until just combined. 
    3. Pour the mixture into the prepared pan. Smooth with a spatula and top with sliced strawberries if desired.
    4. Place on the center rack in the oven and bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
    5. Place Ice Cream Bread on a cooling rack for 5-10 minutes, then flip it out of the pan and let the bread cool completely on the cooling rack.
    6. Slice and serve.
    DONNA'S NOTES
    1. Ice cream bread will keep for 3-5 days in an airtight container at room temperature. You can also keep in a freezer bag in the freezer for up to 6 months.
    2. If you have no self-rising flour, you can use 1 1/2 cups all-purpose, 1 tablespoon baking powder and 3/4 teaspoon salt.
