Now that summer has arrived, you can find berries everywhere when you shop. Grocery stores, farmer's markets, and pick your own berry farms are all bursting with fresh strawberries.

Of course, now that berry season has arrived, I have been getting all of my strawberry recipes ready. There are so many delicious ways to enjoy fresh summer berries.

Strawberry Jam recipe without pectin

This recipe doesn't need powdered or liquid pectin added to it. If you're wondering how to make a jam recipe without pectin, I'll explain.

Jam recipes need to have added pectin to help them firm up.

But, in some cases instead of adding powdered or liquid pectin, you can simply add a fruit that naturally contains pectin like apple, pears, plums, or oranges.

In this strawberry jam recipe, I have added Granny Smith apples. So, there is no need to add extra pectin.

To help the apples dissolve more easily, you can grate them rather than adding chunks or slices to the strawberry mixture.

Remember that the more ripe a berry is, the less natural pectin it has.

Frequently Asked Questions

Can I Use Frozen Strawberries?

When you make my strawberry jam recipe, fresh berries will have the best flavor. But, you can also use frozen berries if you don't have fresh ones on hand.

Just be sure that you drain them completely before adding them. You don't want extra water in the jam or it may not set properly.

Tips For Preparing the Strawberries

To get the strawberries ready for this strawberry jam recipe, you will need to quarter them. This leaves a nice amount of texture in your jam recipe.

If you prefer your jam to be a bit smoother, you can process them a bit with a stick blender as they are cooking. Or, if you prefer more texture in your jam, you can leave it as is and skip that step.

How Can I Tell When my Strawberry Jam is Done?

The easiest way to tell when this jam is done cooking is by waiting for it to thicken. If you use a wooden spoon to lift a bit from the pot, you will see it clinging to the spoon in drops.

When that happens, your jam is ready.

Another way to test it is by using a candy thermometer. Jam is at the perfect consistency at 220 degrees.

So, when you reach that point, your jam is done and ready to be poured into jars.

How Should I Store my Jam?

Once you've made this jam, it will need to be stored in the refrigerator. It has not been processed, so it isn't shelf-stable.

It will keep longer, if you pack and seal in canning jars according to the manufacturer's instructions. Check with the instructions that come with your canning jars for the correct processing time.

You can store this strawberry jam in an airtight container in the refrigerator. Properly sealed, it will stay good for two weeks.

If you want to keep this jam for longer than a few weeks, you should freeze it. Freezer jam is just as delicious. Just put it in a freezer-proof container with a tightly fitting lid.

Then, you can keep it in the freezer for several months. When you want to use it, let it thaw in the refrigerator.

What Should I Serve this On?

Homemade jam is one of the best things to put on toast from homemade bread. you might want to try it on my homemade bread recipe. Or, this homemade no-yeast bread is a wonderful option toasted.

You can also serve it on these fluffy buttermilk pancakes instead of syrup. Or, add it to this cornflake crusted French toast for breakfast.

Strawberry Jam (Best Ever)

This really is the best ever strawberry jam recipe (no pectin needed)! Flavorful, delicious and easy to make. Can't beat that!

Prep time: 20 MinCook time: 20 Total time: 40 Min

Ingredients

            • 2 pounds fresh strawberries, quartered
            • 2 cups granulated sugar
            • 2 tablespoons orange juice
            • 3/4 Granny Smith apple (peeled, cored and chopped small)

                      Instructions

                          1. In a large pot over medium heat combine strawberries, sugar, orange juice and apples. Stir well to combine. Bring to a boil, stirring often. 
                          2. You will start to notice foam rising to the top of your jam.
                          3. As the foam rises to the top skim it with a ladle and place it in a cup. You may choose to discard the foam, but we like to eat it. All that strawberry goodness! 
                          4. Stir until the jam thickens. If you use a wooden spoon to lift a bit from the pot, you will see it clinging to the spoon in drops. When that happens, your jam is ready. Or using a candy thermometer when your jam reaches 220°F it is done. This will take approximately 20 to 25 minutes.
                          5. Remove the pot from heat. 
                          6. Your apples should dissolve into your jam and you will not taste them, however on occasion mine do not completely dissolve, so I transfer my jam to a food processor and blend it smooth. As it so happens this batch is for a gift and they like smooth jam, but my family prefers the chunky.
                          DONNA'S NOTES
                          1. If you are not food processing it, place jam in bowl or jelly jars and allow to come to room temperature. Then store in the refrigerator.
                          2. I have not canned these as we love it so much it goes too fast. I put it in a glass bowl or 2 jelly jars and store it in the fridge.
                          3. Jam will keep in the refrigerator for at least 2 weeks (much longer from my experience). But, it will keep longer, if you pack and seal in canning jars according to the manufacturer's instructions.

                          I have to say, of all the delicious things to come out of my kitchen in the last 3 months this was has received the most 'spectacular' reviews.

                          We first tried the strawberry habanero combination about 4 months ago and we have been hooked ever since.

                          I have been sharing it with friends and family and I have to say that I have yet to receive a negative review. Munchkin did say (in her cute 5-year-old voice) "it's a little bit sicy (that means spicy), but I like it!"

                          Of course, she thinks anything more seasoned than ketchup is a little spicy. One of our friends actually told us that we should bottle it and sell it. Another friend that we shared it with put it on everything.

                          This fabulous creation comes together with just 4 ingredients.

                            2 alarm - medium heat - 2 habaneros, seeds and veins removed

                            4 alarm - fire - We have not make this level yet, but we would love to hear what you all come up with.

                          • Heavy bottomed pot- heavy bottom pots are thicker at the bottom for a more even cooking distribution.
                          • Jelly Jars - if you don't have a stockpile of these I highly recommend you invest in some. Interestly Amazon and Ace Hardware are my 2 favorite places to find them. I use them for everything making whipped cream, storing salad dressings, jams, jelly, drinking glasses.
                          • Disposable Vinyl Gloves - The first time Chad suggested I wear gloves to cut up habaneros I laughed at him. Until...  I wiped the back of my hand across the nose and upper lip. It hadn't directly touched the peppers, I had already washed my hands...  But oh my goodness my face was on fire for hours. Now I have 2 boxes in my pantry at all times.
                          • Hands-Free Over the Sink Strainer - Perfect for working in and out of the strainer without worrying about it tipping over or having to hold it.

                          Strawberry Habanero Everything Spread

                          Strawberry Habanero Everything Spread is our latest obsession. A sweet strawberry spread with a fantastic citrusy flavor and a little bite at the end. Perfect, just perfect! This simple recipe comes together with just 4 ingredients and you will be making it all year long!
                          prep time: 10 MINScook time: 25 MINStotal time: 35 mins

                          Ingredients

                          • 2 pounds fresh strawberries, hulled and quartered
                          • 3 cups sugar
                          • 2 habaneros, seeds and veins removed (diced) (this makes medium heat)
                          • 2 tablespoons orange juice

                          Instructions

                          1. Rinse strawberries in cold running water and hull them.  Quarter strawberries and place in a heavy-bottomed pot, add sugar, habaneros and orange juice. Stir well to combine.  Bring to a boil over medium heat, stirring often.
                          2. Stir occasionally until the spread reaches 220 degrees on a candy thermometer. This will take approximately 25 to 35 minutes. Use a potato masher to smash strawberries if you desire a less chunky consistency or you can transfer to a food processor and blend it smooth.
                          3. Remove pot from heat.  If you are not food processing it, place jam in bowl or jelly jars and allow to come to room temperature.  Then store in the refrigerator.

                          Strawberry season is upon us and as I find myself making batch after batch of jams and sauces I knew I had to share this recipe with you. My favorite memory with this syrup goes back a few years...

                          At a blogger brunch we hosted a few years back we set up a fantastic pancake bar. There were tons of topping options and several recipe suggestions. One of the most popular recipes was the Very Berry Strawberry Shortcake Pancakes. Everyone loved all of the combinations, but my then 3 year old (now 5) went absolutely crazy over this strawberry syrup.

                          We made her a stack of strawberry shortcake pancakes with this scrumptious syrup drizzled over them. A simplified version of the very decadent pancakes previously mentioned.  You may have caught that photo on Instagram

                          It was so good the family called for an encore, resulting in an awesome pancake Sunday the very next day and pretty much every Sunday for the next 2 months.

                          Helpful Tips to make 3 Ingredient Homemade Strawberry Syrup:

                          • I love big chunks of strawberry in my syrup, but you can dice the strawberries to get smaller chunks or even run them through a blender before cooking them for a pretty smooth sauce.
                          • You can use frozen strawberries, just thaw them first.
                          • The longer you cook the sauce the thicker it will be.
                          • The syrup will keep for weeks in the refrigerator.

                          3 Ingredient Homemade Strawberry Syrup

                          3 Ingredient Homemade Strawberry Syrup is a luscious fresh strawberry sauce ready in just 15 minutes! This is the perfect simple recipe to get your taste buds talking this summer.
                          prep time: 5 minscook time: 10 minstotal time: 15 mins

                          Ingredients

                          • 1/2 pound ripe strawberries, washed and hulled
                          • 1/2 cup sugar
                          • 1 tablespoon vanilla bean paste (or vanilla extract)

                          Instructions

                          1. In a medium saucepan combine strawberries and sugar.  Smash strawberries and turn heat to medium.  Bring to a boil, reduce to simmer for 10 minutes without a cover.
                          2. Remove from heat, add vanilla and stir.  Enjoy warm on pancakes.  Allow to cool to room temperature before using for ice cream and cocktails.
                          3. Enjoy!

                          Chocolate Dipped Strawberry Cupcakes are perfect for a special occasion. A delicious chocolaty brownie cupcake is topped with the most amazing strawberry buttercream and fresh strawberries that have been dipped in chocolate. These cupcakes are a show stopper! I love the different textures and flavors, and the fresh fruit adds such a nice tanginess to this dessert.

                          Hi guys, it's Catalina from Sweet and Savory Meals here. I am happy to be a contributor on TSRI and add recipes to Donna and Chad's already great collection. With Valentine’s Day just around the corner, I want to introduce you to these Chocolate Dipped Strawberry Cupcakes that are super cute and very tasty. These cupcakes are perfect for any occasion, you can make they year around, especially when strawberry season hits.                           HELPFUL TIPS TO MAKE CHOCOLATE DIPPED STRAWBERRY CUPCAKES :

                          • Use high-quality cocoa powder and high-quality chocolate. You can use regular unsweetened cocoa or Special Dark Unsweetened Cocoa. You can also use milk or dark chocolate, whichever you like more. I used semi-sweet chocolate in this recipe and it came out great.
                          • Don’t skip the salt, it will enhance the chocolate flavor.
                          • Ingredients should be at room temperature.
                          • The cupcakes are not very airy, they have more of a dense texture, closer to a brownie, as I wanted them to be more indulgent. For a more moist texture add ⅓ cup of oil to the wet ingredients.
                          • Make sure you don’t overbake the cupcakes, each oven is different but checking at the 15-minute mark is key to see how much more they need to be kept in the oven, keep in mind that every minute counts so check back in 2 minutes if they are still slightly raw.
                          • To make the frosting I am a HUGE fan of using freeze-dried strawberries. Since they are dried, you can process them into a powder and they won’t add extra moisture to the buttercream. Also, they will add the most beautiful, natural pink color. The frosting will taste like it’s made with fresh strawberries.
                          • If you don’t have any freeze-dried strawberries on hand, you can use strawberry puree or strawberry jam. I prefer to use the jam, as its easier to work with, I usually use 1/2 cup and a bit of pink gel food color. You will have to add a little more powdered sugar to get the right consistency for the buttercream.

                          WHAT YOU WILL NEED TO MAKE CHOCOLATE DIPPED STRAWBERRY CUPCAKES :

                          • Muffin Tin- this one is regular size and its perfect for muffins and cupcakes.
                          • Cocoa Powder  - always use high-quality cocoa powder in chocolate desserts.
                          • Freeze-Dried Strawberries - I prefer to make them into powder and use in frostings.

                          Chocolate Dipped Strawberry Cupcakes

                          Chocolate Dipped Strawberry Cupcakes with a glorious brownie cupcake, topped with the most luscious strawberry buttercream and finished with chocolate dipped strawberries. That is the ultimate Valentine's Day treat!!!

                          Ingredients

                          • 1 (4 ounce) stick unsalted butter
                          • 3 ounces semi-sweet chocolate melts or chopped chocolate
                          • 2 large eggs, room temperature
                          • 3/4 cup granulated sugar
                          • 1 teaspoon vanilla extract
                          • 1/2 cup sour cream, room temperature
                          • 3/4 cup unsweetened cocoa powder
                          • 3/4 cup all-purpose flour
                          • 1/2 teaspoon baking soda
                          • 1 teaspoon baking powder
                          • 1/4 teaspoon salt
                          Strawberry Frosting
                          • 1 1/2 cups freeze-dried strawberries
                          • 1 (4 ounce) stick salted butter, room temperature
                          • 1/2 cup shortening, room temperature
                          • 4 cups powdered sugar
                          Chocolate Covered Strawberries
                          • 7 ounces chocolate melts or chopped chocolate
                          • 1 tablespoon light corn syrup

                          Instructions

                          1. Preheat oven to 350F degrees. Set the oven rack in the middle of the oven.
                          2. Line a regular muffin pan with cupcake liners. Set aside.
                          3. Add butter and chocolate to a microwave safe bowl and melt in 30-second increments. Set aside to cool.
                          4. In a large bowl mix together flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
                          5. In another bowl, either using a hand mixer or stand mixer, whisk together eggs and sugar. Add vanilla extract and sour cream, whisk on medium speed until smooth, for about 1 minute.
                          6. Add the melted chocolate and butter mixture to the egg mixture and whisk until smooth, for about 30 seconds.
                          7. With the mixer on low speed, slowly add in the flour mixture, about ¼ cup at a time, as soon as the flour has been mixed in, turn off the mixer, to avoid over-mixing the batter.
                          8. The batter will be thick and shiny.
                          9. Fill the cupcake liners ⅔ of the way full with batter.
                          10. Bake for 15-18 minutes some ovens may take 20 minutes. At the 15 minute mark check the cupcake for doneness. The center of the cupcake should spring back up if gently pressed.
                          11. Add strawberries to a food processor and pulse until made into powder.
                          12. Add butter and shortening to the bowl of a stand mixer, starting on low speed, then increasing the speed gradually to medium-high, cream together until fluffy and a pale yellow color.
                          13. Turn the mixer off and add in strawberry powder, beat on medium speed until combined, for about 30 seconds.
                          14. Turn mixer on to the lowest setting and add in confectioners sugar, 1 cup at a time. Once incorporated, turn mixer on high for 1-2 minutes.
                          15. If the mixture is too thick add 1 tablespoon of whole milk at a time. If the mixture is too runny, add more confectioners sugar, ½ cup at a time. The frosting should be soft and creamy and hold its shape.
                          16. Pipe the frosting onto the cupcakes.
                          17. For the Chocolate Covered Strawberries: Place chocolate in a bowl and microwave in 30 seconds increments, stirring after each round until fully melted.
                          18. Stir in light corn syrup.
                          19. Dip each strawberry into the cooled chocolate and place on each cupcake.

                          Nothing beats the summer heat like an icy cold summery treat.  I love popsicles!  They are light, refreshing, so easy to make and made perfectly sweet for you, as you control the sugar. 

                          There was not much thinking when I was deciding what flavor to make.  Chad and I scored the best strawberries at the grocery store last week.  We ended up buying around 70 pounds total. 

                          Needless to say, we are stocked for the year on Strawberry Jam and have been enjoying many summery desserts.  It truly was lucky to get such great strawberries for such a great price.

                          I have been making this simple recipe and sharing it with everyone who pops in.  It is so scrumptious that I have been through several batches already. 

                          The adults are blown away that they are home made. The kids gobble them up and I enjoy every minute of it.  Munchkin asks for these all the time.  The best part is...  I feel good about feeding them to her.

                          Helpful Tips to make Sublime Strawberry Popsicles:

                          • Adding a little sugar to the berries and allowing them to macerate really amps up the strawberry flavor in addition to bringing out their sweetness.
                          • I love lemon juice in these pops, but lime or orange will be delicious as well.
                          • After they freeze, I store my popsicles in snack size ziptop bags and place all of those individual bags into a gallon size ziptop bag. They keep well for 6 - 8 months.

                          What you will need to make Sublime Strawberry Popsicles:

                          • Popsicle molds - these are our favorite, although any mold will work.
                          • Blender - I love to use a high powered blender for all smoothies and it is perfect for these ice pops.

                          Sublime Strawberry Popsicles

                          3 ingredients make the most perfect Strawberry Ice Pop! It's the perfect summertime treat.

                          Ingredients

                          • 2 pounds ripe strawberries, washed, hulled and halved
                          • 2 tablespoons sugar
                          • 2 tablespoons lemon juice

                          Instructions

                          1. Place strawberries in a medium bowl.  Add sugar.  Toss to coat.  Allow berries to macerate for about 30 minutes. Once you see juice in the bowl you can move on to the next step.
                          2. Add strawberries and lemon juice to food processor or blender. Blend until strawberries are pureed. Add to popsicle molds. Freeze for 4-24 hours.  I leave mine in for 24 hours.

                          Fresh Strawberry Pie without Jello is so easy to make from scratch and tastes amazingly flavorful. This pie recipe is perfect for summer because it can be made without turning the oven on.

                          You can use a store-bought pie crust or a no-bake graham cracker crust as a base (or go the fancy route and make your own pie crust).

                          This Strawberry Pie is loaded with juicy, fresh strawberries and made with a homemade strawberry glaze without added gelatin that lets the natural flavor of the strawberries be the star.

                          I have the biggest sweet tooth and love everything with berries but strawberry pie is definitely one of my favorite desserts!

                          This Fresh Strawberry Pie is the perfect spring and summer dessert made with simple ingredients! Top it with a big dollop of whipped cream and you have an easy dessert that everyone will love!

                          Helpful Tips to make Fresh Strawberry Pie:

                          • I used a homemade pie crust for this recipe but you can also use a Graham Cracker Crust or a store-bought pie crust to save time.
                          • For the best flavor, use fresh, high-quality strawberries. The strawberries are the star of this recipe so look for the freshest strawberries you can find that don’t have any bruises or discoloration.
                          • This pie tastes best on the same day! The longer it sits the higher the risk of the juicy strawberries making the pie crust soggy. To avoid a soggy pie crust you can seal the crust by painting melted chocolate in the bottom and inside of cooled pie crust. Place the crust in the freezer to set the chocolate before adding the berries.
                          • Make sure to stir the cornstarch mixture continuously for 2-3 minutes until it is thick and translucent. You don’t want it to be clumpy.
                          • This pie won’t be as sturdy because it is made without gelatin but it will not ooze all over after cutting if you keep it refrigerated and serve it straight from the fridge.
                          • Don’t forget the whipped cream! Strawberries and cream are a match made in heaven!!

                          • Pie Dish - This is my everyday pie dish but if I want to use a fancier one this is my go-to pie dish for guests.
                          • Strawberry Huller -  This little tool makes hulling strawberries super easy and it’s safe for kids. It works best on medium and larger strawberries.
                          • Hand Mixer -  If you have problems with whipping cream try using a hand mixer. I prefer to use this one instead of my stand mixer to whip cream because I have more control and don’t over-whip the cream.

                          Fresh Strawberry Pie

                          Ingredients

                          • 6 cups whole strawberries, hulled
                          • 3/4 cup granulated sugar
                          • 3 tablespoons cornstarch
                          • 1/2 cup water
                          • 1 (9-inch) pie crust, baked
                          • 1 cup heavy whipping cream
                          • 2 tablespoons powdered sugar

                          Instructions

                          1. Mash 1 cup strawberries with a fork or in a food processor and set aside.
                          2. In a small saucepan, whisk together sugar and cornstarch. Stir in water and mashed strawberries.
                          3. Bring to a boil over medium temperature, stirring constantly. Let the mixture boil and stir for 3 more minutes until thick and translucent. Set aside and let cool for 10 minutes.
                          4. In the meantime, arrange remaining strawberries in the pie crust. Cut some of the berries in half to make them fit better.
                          5. Pour cooled glaze over the strawberries. Make sure that all the berries are coated with the glaze and no dry spots remain. Chill pie for 2-3 hours until set.
                          6. Combine heavy whipping cream and powdered sugar. Whip at medium-high speed until soft peaks form. Serve pie with whipped cream.
