Chad and I fell in love with the sriracha honey a few years ago and ever since, sriracha has been a staple in my pantry. A little bit here a little bit there.

Then I created the ultimate Easy Crockpot Sriracha Honey Chicken Wings and there was no turning back. The sweet and spicy combination is absolutely incredible.

Chad flipped over these meatballs. He loves spicy food and these were just perfect for him. I have to say my heat tolerance is about medium (most days) and these meatballs just about push the envelope for me.

I actually drizzled a little honey on my serving to add a little extra sweetness.

These are the perfect game day bite, awesome for dinner served over some rice or even potatoes.

I made an extra batch and stuck them in the freezer, I will pull them out and serve them for a quick appetizer for an upcoming party. Easy peasy.

The whole dish is beyond easy. You literally just add the sauce ingredients to the slow cooker, form meatballs and toss them in.  Let it cook and serve. It couldn't be more simple.

The sriracha provides a fabulous flavor profile with red chiles, garlic and vinegar being the stars of the show.

Once the honey combines with sriracha it is a match made in heaven. These meatballs hot, tangy, sweet and wildly addictive.

These will make the perfect appetizer at your next party. Just form them into 1 tablespoon size meatballs and toss in the slow cooker. Your guests will go crazy for them.

Helpful Tips to make Sriracha Honey Slow Cooker Meatballs:

  • If you lightly wet your hands the meatballs will form better and crack less.
  • You can take the lid off after 2 hours to allow the sauce to thicken or you can transfer the sauce to the saucepan on the stovetop and cook until reduced by half, or to desired consistency. The meatballs are perfect whether the sauce is cooked down or not. It is a personal preference.
  • Sriracha is HOT it is HOT CHILI sauce. This recipe is medium heat. If you prefer insanely hot, decrease the amount of honey and increase the sriracha. If you prefer milder heat increase the honey and decrease the sriracha.

  • Slow Cooker- the slow cooker is almost my most used kitchen appliance, especially during fall/winter! It's just so convenient, and let's face it, it makes comfort food taste even better!

Sriracha Honey Slow Cooker Meatballs

This is for the sriracha lover in you. Sriracha Honey Slow Cooker Meatballs are hot, sweet, tangy and wildly addictive. A simple recipe, this dish just about cooks itself. Add the sauce ingredients, form the meatballs. Toss them in the slow cooker and voila. The best make ahead game day or any day food. What more could you ask for?
prep time: 20 minscook time: 4 hourtotal time: 4 hours and 20 mins

Ingredients

  • 1 cup sriracha hot chili sauce (Huy Fong, the one with the rooster on the package)
  • 1 cup honey
  • 1/4 cup fresh lime juice (approximately 2 limes)
  • 2 pounds lean ground beef (I used 85%)
  • 1 cup panko bread crumbs
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground pepper
  • 2 large eggs

Instructions

  1. Combine sriracha, honey and lime juice in a slow cooker on high heat.
  2. In a large bowl add remaining ingredients, except eggs. Stir sriracha sauce in slow cooker until combined.  Taste and add additional honey or sriracha as necessary to suit your heat preference. Add 1/4 cup of sauce into meatball mixture, fold mixture together 2 times, then add eggs.
  3. Mix well, do not over mix or you will have tough meatballs. Place a sheet of wax paper (approximately 9"x9") on your countertop. Using a 2 tablespoon scoop, portion out meat and place on wax paper.  After all meatballs have been scooped, roll into balls and place them into the slow cooker. Once about half of the meatballs are in the slow cooker, spoon sauce over the tops of them. Continue adding meatballs until they are all in the slow cooker.  You may have to layer them, just be sure the bottom layer is thoroughly coated in sauce before you add the next layer.
  4. Reduce heat to low, cover slow cooker and cook for 4-8 hours.
  5. Serve and enjoy.
DONNA'S NOTES

Cheater pork carnitas make the best street tacos, veggie salad topping, carnita nachos and cheese and so much more! I actually turn the leftovers into taquitos.

It all starts with a good cut of pork. I used pork shoulder (aka pork butt), but you could go with pork loin for a leaner cut. The pork shoulder makes it even more rich and tender.

Toss it all in a slow cooker and let it go. Shred it with forks or meat claws and serve!

I have made this several times and I just can't get over how easy and flavorful it is. I love it in nachos, tortillas and made into flautas or taquitos.

You are going to love it too.

  • Make sure you are using a flavorful salsa. I prefer the 505 Southwestern Hatch Valley Green Chile Salsa with Tomatillos, Garlic & Lime.

Cheater Pork Carnitas

3- Ingredient Slow Cooker Cheater Pork Carnitas are so easy they just about cook themselves. The most simple recipe brings the most fabulous results. Just toss it in the crockpot and go! Come back hours later to perfectly tender and juicy pork that is mouthwateringly delicious and perfect on everything.
prep time: 5 MINScook time: 3 hourtotal time: 3 hours and 5 mins

Ingredients

  • 5 pound pork shoulder 
  • 1 ( 16 ounce) jar good green chile salsa
  • 1 medium onion, diced 
  • optional: salt to taste 

Instructions

  1. Place pork in the bottom of the crockpot. Sprinkle onion over top and pour salsa over top.
  2. Cover and cook for 3-4 hours on high or 6-8 hours on low.  Once cooked through, use 2 forks or meat claws to shred pork. Season with salt and pepper to taste. Mine usually needs just a pinch. Stir, cover and allow to cook for 30 minutes longer so the pork can absorb all those yummy juices. 
  3. Serve and enjoy!

  1. Make sure you are using a flavorful salsa. I prefer the 505 Southwestern Hatch Valley Green Chile Salsa with Tomatillos, Garlic & Lime.

Did you know that I bought my first crockpot when I moved out on my own? I purchased my first one so I could make prepare dried beans.

My mom never used a slow cooker so I guess I never really 'got it' until I had one of my own.

Well that was 8 slow cookers ago. Now I have them in every size from a warmer to a 6 quart.

Helpful Tips to make Crockpot Italian Meatballs and Marinara :

  • Mix until just combined. Overmixing will create a tough meatball and that isn't good for anyone.
  • Use a scoop to make uniform-size meatballs; this way you handle them less and they will cook evenly.
  • If you lightly coat your hands with olive oil before rolling the meatballs, they will form better and crack less.
  • Make a few batches of meatballs ahead and freeze them for easy dinners. To freeze, allow meatballs to come to room temperature and place in a freezer bag. I like to flash freeze them on a cookie sheet and then transfer the frozen meatballs to a freezer bag. It makes it easier to grab as many meatballs as I need.

  • 1 1/2 tablespoon scoopperfect for meatballs, cookies, ice cream for portioning out leftovers! I have had this set for years and use them all the time.

Crockpot Italian Meatballs and Marinara

Tender cheesy meatballs are slow cooked in a flavorful sauce made with ingredients from your pantry. There is a time and a place for fresh tomatoes and herbs and this simple recipe isn't it. Whip it up and toss it in the crockpot to cook, the meatballs cook right in the sauce! How much easier could it be? This meal just about cooks itself.
prep time: 25 minscook time: 4 hourtotal time: 4 hours and 25 mins

Ingredients

Marinara
  • 2 (14.5 ounce) cans fire roasted diced tomatoes with garlic
  • 1 (15 ounce) can tomato sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons dried Italian seasoning
  • 1 tablespoon sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon red pepper flakes (optional)
  • meatballs, uncooked (recipe to follow)
  • 2 dried bay leaves
Meatballs
  • 1 pound lean ground beef (I used 88%)
  • 1/2 cup Italian breadcrumbs
  • 1/2 cup marinara
  • 1/4 cup fresh grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon dried Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh cracked black pepper
  • 1 large egg, lightly beaten

Instructions

Marinara
  1. Combine all ingredients in a blender in the order they are listed, except meatballs and bay leaves.  Process until your sauce is the consistency you prefer. Cover bottom of crockpot with sauce crockpot. Reserve remaining sauce to pour on top of meatballs.
  2. Gently place 1 layer of meatballs in crockpot. Pour sauce over top, until covered. Continue adding meatballs until they are all in the slow cooker.  You may have to layer them, just be sure the bottom layer is thoroughly coated in sauce before you add the next layer. Pour remaining sauce over top. Add bay leaves. Cover and cook on high for 3-4 hours, or low for 6-8 hours.
Meatballs
  1. In a large mixing bowl, combine all ingredients. Mix well, do not over mix or you will have tough meatballs.
  2. Using a 1 tablespoon scoop, portion out meat and place on a plate.  After all meatballs have been scooped onto plate, roll into balls.

DONNA'S NOTES

  1. If you lightly oil your hands the meatballs will form better and crack less.
  2. You can prepare meatballs the night before and refrigerate to cut down on prep time.

Helpful Tips to make Taco Cheese Stuffed Meatballs:

  • Do not overmix the meat or you can end up with tough meatballs.
  • Use a cookie dough or ice cream scoop to get uniform meatballs.
  • Be sure to fully seal the cheese within the meatballs or all of the cheese will ooze out while broiling.
  • To make extra meatballs to keep in the freezer, double or triple this recipe. Transfer extra meatballs to a rimmed baking sheet and freeze completely. Then transfer frozen meatballs to a ziploc bag or container.
  • This recipe makes a mild flavored taco meatball. If you prefer extra taco flavor, double the amount of taco seasoning.

What you will need to make Taco Cheese Stuffed Meatballs:

  • Large mixing bowlYou will need a bowl large enough for the ingredients and your hands.
  • Sharp knifeThis recipe requires the cheese to be cut into cubes. A good, sharp knife is always handy to have in the kitchen.

Taco Cheese Stuffed Meatballs

Taco Cheese Stuffed Meatballs are a fun twist for Taco Tuesdays! This easy meatball recipe is taken to the next level with taco seasoning and colby jack cheese.

Ingredients

  • 2 pounds lean ground beef
  • 1/2 cup bread crumbs
  • 2 large eggs
  • 1/4 cup whole milk
  • 1 package taco seasoning (or 2 Tablespoons Homemade Seasoning)
  • 6 ounces Colby Jack cheese - cut into cubes

Instructions

  1. Mix beef, bread crumbs, eggs, milk and taco seasoning until just combined. Do not over mix.
  2. Scoop out 4 tablespoons of beef mixture, flatten then place cheese cube into the center. Bring the edges together to form a ball. Ensure that the meatball is completely sealed.
  3. Transfer meatballs to a greased rimmed baking sheet.
  4. Freeze meatballs on baking sheet for 10-15 minutes to firm up.
  5. Raise oven rack to top and preheat broiler on high.
  6. Broil meatballs on high for 10-12 minutes or until cooked through. Some cheese may escape while broiling.

Chicken and dumplings are the epitome of comfort food, aren't they? What could possibly be better? A delicious chicken and dumplings recipe that is so easy you can make it in your slow cooker. I put this recipe together to recreate a childhood favorite of ours (well, who am I kidding it is a favorite of adults too!).

Like many of you a lot of my favorite family dishes were made with a can of this and a can of that.  Cooking styles have evolved a lot over the years and many of those recipes were left behind.

I decided to rescue this one and remake it with all homemade ingredients.

This Simple Crock Pot Chicken and Dumplings with a creamy chicken soup loaded with tender chicken and topped with scrumptious dumplings!  It  is soooo good that you will have a hard time eating just one bowl.

I put this recipe together to recreate a childhood favorite of ours (well, who am I kidding it is a favorite of adults too!).

Ingredients

  • 2 pounds boneless skinless chicken breasts, uncooked
  • 3 cups Homemade Condensed Cream of Chicken Soup (or 2 cans store bought)
  • 6 cups chicken broth, low sodium
  • ¼ cup butter
  • 2 teaspoons onion powder
  • 2 bay leaves
  • 1 teaspoon poultry seasoning
  • 1 teaspoon parsley
  • 1 teaspoon kosher salt
  • ½ teaspoon fresh ground black pepper
  • 1 recipe dumplings (recipe to follow)
Dumplings
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 tablespoon butter (softened)
  • 3/4 cup milk
  • 1/4 cup water

Instructions

  1. In your slow cooker combine all ingredients, stir to combine.  Cover and cook on high for 5 hours, stirring occasionally.  Add dumplings with a tablespoon scooper or by heaping teaspoon, gently press on dumplings to submerge.  Reduce heat to low, cover  and cook for 1 hour, do not stir until done cooking.
  2. Dumplings:  Combine ingredients in a medium bowl.  Mix well with a fork.
  3. Serve and enjoy!

I have been craving those Asian flavors that I love so much, you know the ones I mean soy sauce, garlic, ginger, sesame and scallions.

Pretty much anything you add them too becomes an amazing Asian inspired dish. My picky crew is really crazy about meatballs!

So I figured if I whipped up some delicious Teriyaki Meatballs it would be a win for everyone. And was I ever right.

When I started putting this recipe together my ingredient list was so long and that is never good. Then I realized that if I just put the teriyaki right into the meatballs I can make dinner much simpler AND tastier!

What could be easier? The entire meal comes together in just 30 minutes and is delicious served over steamed vegetables or rice.

These teriyaki meatballs are unlike anything I have ever tasted. They are bursting with flavor and are amazing on their own.

I mean seriously the best ever teriyaki meatballs. But, we are a sauce loving family so I whipped up an amazing teriyaki sauce to go with the meatballs.

It is so simple because the teriyaki sauce is a stand-alone with the garlic, ginger and sesame. So, it really knocks it out of the park.

I added some pineapple juice for added sweetness and then some corn starch to really thicken it up. We devoured the whole thing. So, no matter how you decide to eat them, you are going to love them! Again and again.

Helpful Tips to make Saucy Teriyaki Meatballs:

  • If you lightly wet your hands the meatballs will form better and crack less.
  • These meatballs are amazingly flavorful without the sauce. If you are cutting back feel free to serve without the sauce. I have really enjoyed the meatballs without the sauce in veggie wraps.
  • Can be served as an appetizer or over rice or veggies for dinner.

Saucy Teriyaki Meatballs

Saucy Teriyaki Meatballs are bursting with flavor in an easy recipe that comes together with just a few ingredients. The whole family is going to love 'em. Simple recipe, awesome meatballs!

Ingredients

Meatball Ingredients
  • 1 pound lean ground beef (I used 88%)
  • 1 pound ground pork
  • 1 cup Panko breadcrumbs
  • 1/2 cup Soy Vay® Veri Veri Teriyaki Marinade
  • 3 scallions, thinly sliced (about 1/4 cup)
  • 2 large eggs, lightly beaten
Sauce Ingredients
  • 1/2 cup Soy Vay® Veri Teriyaki Marinade
  • 6 ounces pineapple juice
  • 1 tablespoon cornstarch
  • Optional: sesame seeds and additional scallions for garnish

Instructions

  1. Preheat oven to 400°F. Prepare a baking sheet by lining with parchment paper.
  2. In a large mixing bowl, combine all meatball ingredients. Mix well, do not over mix or you will have tough meatballs.
  3. Using a 1 tablespoon scoop, portion out meat and place on baking sheet.  After all meatballs have been scooped onto tray, roll into balls.
  4. Bake for 10-12 minutes, until light golden brown and cooked through.
  5. Meanwhile in a 10" skillet warm teriyaki sauce over medium heat. Combine pineapple juice and cornstarch in a resealable container. Cover and shake to combine. Add juice mixture to sauce. Whisk to combine. Cook on medium heat until sauce begins to thicken. 
  6. Remove meatballs from oven and transfer to skillet. Toss meatballs in sauce. Serve and enjoy.

DONNA'S NOTES
