I don't know about you, but I love my coffee so I always have creamer in the house.

I have found this to be an amazing convenient ingredient in cooking and baking sweets. So, of course, when I started thinking about creamy fruit salad I thought of coffee creamer (but you can use cream too. See the recipe notes for instructions.

I absolutely love fresh fruit and I am completely hooked on fruit salad.

With summer right around the corner and fresh berries calling to me at the market, I could think of nothing more perfect than a berry banana fruit salad.

But, not just any fruit salad. A cheesecake salad.

Rich and creamy cheesecake filling made with cream cheese, pudding and my favorite creamer. The creamer lends a richness and creaminess to the cheesecake filling and the perfect touch of sweetness.

The filling is folded into fresh strawberries, blueberries, and bananas to create the most amazing red, white, and blue fruit salad you have ever eaten.

Memorial Day weekend is the official launch of summer, but I tell you I am way ahead of you.

I am stocking up on summer salad ideas and boy oh boy do we have a good selection to choose from.

Helpful Tips to make Red, White and Blue Cheesecake Salad:

  • Do not pour all of the creamer into the cream cheese at once. It will get clumpy and no matter how long you beat it, it will stay that way. Trust me on this one.
  • If the cream cheese and pudding mix get too thick, add in a splash of the cream to loosen it up. Then proceed with the recipe, minus the splash you already used.
  • To make this ahead: prepare the cheesecake mixture and refrigerate in a bowl. Mix all of the fruit in a large bowl and refrigerate. Before serving, drain any excess liquid from the fruit and then fold the cheesecake filling into the fruit. Serve and enjoy!
  • If you are out of creamer you can substitute: 1 cup heavy cream, 1/4 cup powdered sugar, and 2 teaspoons vanilla extract.

Red, White and Blue Cheesecake Salad

Red, White and Blue Cheesecake Salad comes together so easy with fresh fruit and a rich and creamy cheesecake filling to create the most glorious fruit salad ever! Every bite is absolutely bursting with summer flavor and you are going to go nuts over this recipe!
prep time: 15 MINScook time: total time: 15 mins

Ingredients

  • 1 (8-ounce) package cream cheese
  • 1 (3.4-ounce) package instant cheesecake pudding, unprepared
  • 1 cup International Delight French Vanilla Creamer
  • 1 pound strawberries, cut into bite-size pieces
  • 2 (6-ounce) containers blueberries
  • 4 large bananas, sliced
  • juice of 1 lemon

Instructions

  1. In a medium tall bowl (I use my 8 cup measuring cup), using an electric mixer, whip cream cheese until it becomes smooth. It may bind up in the beaters, but continue as is and it will loosen up. Add the dry pudding mix. Beat until well combined.
  2. With the mixer on low, slowly add the creamer to the cream cheese mix. Add it about a tablespoon at a time and then mix until it becomes a smooth mixture and all of the creamer has combined into the cream cheese, repeat until all of the creamer has been added to the mixture. Whip until smooth. Refrigerate while you prepare the fruit.
  3. In a large bowl, combine lemon juice and bananas. Stir to coat bananas completely and pour off any excess lemon juice. Add strawberries and blueberries. Gently stir to combine. Fold the cheesecake mixture into the fruit.
  4. Chill until ready to serve or serve immediately.

DONNA'S NOTES

Have you ever had Millionaire Salad? It’s a lot like Watergate salad or ambrosia salad, sweet fruit, crunchy nuts, and soft marshmallows, tossed in a fluffy whipped topping.

Millionaire salad is made with cherries, pineapple, marshmallows, coconut, and pecan, It’s light, sweet, and totally delicious, so delicious that I decided to combine it with one of my favorite desserts, cheesecake salad, to create Millionaire Cheesecake Salad, and OMG, it is amazing!

Millionaire Cheesecake Salad

Millionaire Cheesecake Salad is filled with sweet maraschino cherries, coconut flakes, juicy pineapples chunks, soft marshmallows, and crunchy chopped pecans, all folded together in a rich, creamy, cheesecake filling. It’s a delicious fruit salad recipe that everyone will love!

Ingredients

  • 40 ounce can pineapple chunks, drained
  • 20 ounces maraschino cherries, cut in half
  • 10 ounces mini marshmallows
  • 3 cups sweetened flaked coconut
  • 12 ounces chopped pecans
  • 1 (8-ounce) package cream cheese, softened
  • 1 (3.4-ounce) package instant cheesecake flavored pudding, unprepared
  • 1 cup French vanilla creamer (liquid)

Instructions

  1. In a medium tall bowl, using an electric mixer, whip cream cheese until it becomes smooth. It may bind up in the beaters, but continue as is and it will loosen up. Add dry pudding mix. Beat until well combined.
  2. With mixer running slowly add creamer to the cream cheese mix. Add it about a tablespoon at a time and then mix until it becomes a smooth mixture and all of the creamer has combined into the cream cheese. Continue until all of the creamer has been added to the cream cheese. Whip until smooth.
  3. In a large bowl, combine pineapple chunks, maraschino cherries, mini marshmallows, sweetened flaked coconut, and chopped pecans.
  4. Pour cheesecake mixture over fruit. Gently fold cheesecake mixture into fruit.
  5. Chill until ready to serve or serve immediately.

COOK'S NOTES

  1. Do not pour all of the creamer into the cream cheese at once. It will get clumpy and no matter how long you beat it, it will stay that way. Trust me on this one.
  2. If you have to substitute cream for the creamer, powdered sugar and vanilla would be the best swap. 1 cup heavy cream, 1/4 cup powdered sugar and 2 teaspoons vanilla extract.
  3. To make Make Millionaire Cheesecake Salad Ahead: Prepare the cheesecake mixture and refrigerate in a bowl or sealed jar. Combine all of the fruit in a large bowl and refrigerate. Before serving, drain any excess liquid from the fruit and then add the coconut, marshmallows, and pecans. Fold the cheesecake filling into the fruit salad. Serve and enjoy!

Fresh strawberries, sliced bananas, pineapple chunks, and sweet maraschino cherries, are tossed together with chopped peanuts, and rich, creamy cheesecake filling, and topped with chocolate sauce.

When I was a kid banana splits were my favorite treat. Three types of ice cream, a banana, strawberry and pineapple topping, hot fudge, nuts, whipped cream, and of course a cherry on top.

What’s not to love? I don’t have enough banana split goodness in my life these days and that’s what inspired this Banana Split Cheesecake Salad. It has all of the flavors of that classic dessert in fruit salad form.

How do you make Banana Split Cheesecake Salad?

Since this is a fruit salad we skip the ice cream and instead fill a bowl full of fresh strawberries, pineapples, bananas, sweet maraschino cherries, and crunchy chopped peanuts.

Then we top the fruit with a rich, creamy cheesecake filling made with cream cheese, cheesecake pudding mix, and coffee creamer (you can substitute heavy cream if you prefer).

The ingredients are whipped until they make a smooth filling and then it is poured over the fruit and everything is folded together.

The great thing about Banana Split Cheesecake Salad is that you get all of those awesome flavors without having to worry about melting ice cream. That makes it perfect for serving at parties!

  • To keep the bananas from turning brown toss them (and the strawberries and pineapples) in lemon juice before adding them to the cheesecake salad. 
  • Do not pour all of the creamer into the cream cheese at once. It will get clumpy and no matter how long you beat it, it will stay that way.
  • If you choose to substitute heavy cream for the creamer, use 1 cup heavy cream, 1/4 cup powdered sugar, and 2 teaspoons vanilla extract.
  • If the consistency is a little thick you can add a splash or two more of creamer to get it to a pourable, consistency. 
  • Before adding the maraschino cherries drain the juice and pat them dry. That way the juice won’t color the whole fruit salad red!

Banana Split Cheesecake Salad has all of the flavors of a classic banana split.   • 1 (20-ounce) can pineapple chunks 
  • 2 tablespoons lemon juice
  • 1 (10-ounce) jar maraschino Cherries, cut in half
  • 2.5 ounces peanuts, chopped 
  • 1 (8-ounce) package cream cheese, softened
  • 1 (3.4-ounce) package instant cheesecake flavored pudding, unprepared
  • 1 cup French Vanilla Creamer (liquid)
  • 2 tablespoons chocolate sauce 

Instructions

  1. In a medium tall bowl, using an electric mixer, whip cream cheese until it becomes smooth. It may bind up in the beaters, but continue as is and it will loosen up. Add dry pudding mix. Beat until well combined.
  2. With mixer running slowly add creamer to the cream cheese mix. Add it about a tablespoon at a time and then mix until it becomes a smooth mixture and all of the creamer has combined into the cream cheese. Continue until all of the creamer has been added to the cream cheese. Whip until smooth.
  3. In a large bowl, combine sliced strawberries, banana coins, pineapples, and lemon juice. Stir until all the fruit is coated with lemon juice. Add the maraschino cherries and chopped peanuts. 
  4. Pour cheesecake mixture over fruit. Gently fold cheesecake mixture into fruit.
  5. Drizzle with chocolate syrup right before serving. Chill until ready to serve or serve immediately.

In case you missed them, this summer I created two cheesecake salad recipes that were so popular that Summer Berry Cheesecake Salad quickly beat out our beloved Hearty Beef Soup for the #1 most popular recipe on the website.

    • 20 bite-size Snickers candy bars, cut into bite-size pieces (or 3 king size)

    2. With the mixer running slowly add creamer to the cream cheese. Add it about a tablespoon at a time and then mix until it becomes a smooth mixture and all of the creamer has combined into the cream cheese.
    3. Continue until all of the creamer has been added to the cream cheese. Whip until smooth, light and fluffy, about 2 minutes.
    4. Cut apples into bite-size pieces and add them to the cheesecake mixture. Gently fold the apples in as you add them to help prevent browning.
    5. Transfer apple cheesecake salad to a serving bowl. Sprinkle salad with bite-size candy bar pieces and drizzle with caramel sauce.
    6. Chill until ready to serve or serve immediately.
    7. Enjoy!

    Helpful Tips to make Lemon Berry Cheesecake Fruit Salad:

    • Instead of mixing heavy cream with powdered sugar and vanilla extract, you can substitute for 1 cup of French Vanilla Creamer.
    • Do not pour all the heavy cream mixture into the cream cheese mixture at once. It will get clumpy and won't mix well. Trust me on this one.
    • To make this fruit salad ahead of time, prepare the cream cheese pudding mixture and cover and refrigerate the bowl. In a separate bowl mix all the berries and refrigerate those too. When you're ready to serve, drain any extra liquid that has built up in the fruit and then fold in the cheesecake filling with the fruit. Now it's ready to serve!

    Lemon Berry Cheesecake Fruit Salad

    This Lemon Berry Cheesecake Fruit Salad recipe comes together with only a few ingredients! A rich and creamy lemon cheesecake filling is folded over your favorite summer berries to create an amazing fruit salad that everyone will love!

    Ingredients

    • 8 oz package cream cheese
    • 3.4 oz package instant lemon pudding, unprepared
    • 1 cup heavy cream
    • 4 tablespoons powdered sugar
    • 2 teaspoons vanilla extract
    • 1 1/2  pounds strawberries, hulled and sliced
    • 12 ounces blueberries, washed and dried
    • 9 ounces raspberries, rinsed and dried
    • 9 ounces blackberries, rinsed and dried

    Instructions

    1. Prepare berries and lay them on paper towels to dry while you prepare the creamy cheesecake mixture.
    2. In a medium bowl, using an electric mixer, or a stand mixer bowl. Whip cream cheese until it is smooth. Scrape sides of the bowl with a rubber spatula.
    3. Add in the dry pudding mix, and beat for about 2 minutes until combined.
    4. Combine heavy cream, powdered sugar and vanilla extract in a small bowl.
    5. With the mixer on low, slowly add the heavy cream mix to the cream cheese mix. Add in about a tablespoon at a time, and then mix it until it is smooth. Repeat until all the cream has been added. Whip it until it’s totally smooth.
    6. In a large bowl, combine strawberries, blueberries, raspberries and blackberries.
    7. Add the cheesecake mixture to the top of the fruit. Gently fold cheesecake mixture into the fruit.
    8. Chill until ready to serve or serve immediately.
