Orange Honey Rainbow Fruit Salad (Video)

Orange honey rainbow fruit salad recipe is like a party for your senses. The orange honey dressing includes a secret ingredient that brings this salad to life.

Nothing completes a spring/summer meal like a fabulous fruit salad.  I can remember growing up, every summer party had a big ole bowl of fruit salad on the table.

Picnics, park parties, barbeques, cookouts, and pot lucks: burger, dogs, salads and fruit really make the perfect menu.

Our fruit salads are always spectacular.  You have to start with a rainbow to fruit.  Start with all my favorite berries; strawberry, blueberry, raspberry, blackberry.

Then add kiwi, mandarin oranges, cantaloupe... You really can change it out to add your favorites.

The magic of this fruit salad is the dressing.  I combined the juice of several Mandarin oranges, good honey, lemon juice and a special ingredient: fresh mint (in a mason jar).

I sealed it up and then shook the living tar out of the jar, which helps bruise the mint and release all of its loveliness into the dressing.

Shortly before serving, drizzle the dressing over the salad and toss to coat.  OH.MY.GOSH!  The combination of flavors is utterly spectacular.

The sweet, tart, and coolness from the mint really drive this salad over the top.  This orange honey rainbow fruit salad is like a party for your senses.

It is the perfect fruit salad to take with you too.  Simply layer it in a bowl with the firmest fruit at the bottom and work your way up.  Carry your dressing separately.

When you are ready to serve, drizzle the dressing over top and toss to coat. Happy summer and enjoy!

Orange Honey Rainbow Fruit Salad

Orange honey rainbow fruit salad recipe is like a party for your senses. The orange honey dressing includes a secret ingredient that brings this salad to life.

prep time: 30 MINScook time: total time: 30 mins

Ingredients

• 1 pound strawberries, quartered
• 1 (6-ounce) package raspberries
• 1/2 (6-ounce) package blackberries
• 1 (6-ounce) package blueberries
• 1/4 fresh pineapple, cut into bite-size pieces
• 2 kiwi, sliced
• 1/4 cantaloupe, cut into bite-size pieces
• 4 ounces green grapes, halved
• 1 medium banana, sliced and dipped in lemon juice
• 4-5 Mandarin oranges, divided

Sweet Dressing

• 1/4 cup fresh orange juice (I juiced several Mandarin oranges)
• 2 tablespoons fresh lemon juice
• 2 tablespoons good honey
• 4-10 mint leaves, rough chopped

Instructions

1. Combine fruit in a large serving bowl (except bananas).  Set aside.  Combine dressing ingredients in a mason jar.  Shake vigorously to combine (shaking helps get the best flavor out of the mint).
2. Pour the dressing over the salad shortly before serving.  Gently toss fruit to coat in dressing. Garnish with bananas. Serve and enjoy!

Helpful Tips to make Mojito Fruit Salad :

• As with most recipes, feel free to add your favorite ingredients or omit any you don’t like. Kiwi, raspberries, apples or sliced banana would all be great add-ins.
• The mojito dressing recipe makes enough to just coat the fruit and make it glossy. If you prefer heavily dressed fruit salad or want extras for serving, double the dressing recipe.
• If you love creamy fruit salad just add the flavored yogurt of your choice. Vanilla, strawberry or lime yogurt would be fantastic!

What you will need to make Mojito Fruit Salad :

• Citrus Juicer - This makes juicing the lime much easier. Plus you’ll get every last drop out.
• Microplane/Zester - This is great for zesting citrus. I also use mine to grate garlic.
• Colander - Washing fresh fruit is much easier with a colander. Plus it’s great for draining pasta too.

Mojito Fruit Salad

This Mojito Fruit Salad is bursting with fresh fruit and berries! The dressing is inspired by your favorite mojito flavors with lime, mint and honey. This fruit salad is the perfect dish to bring to a picnic, potluck or barbecue and it is sure to be a hit!

prep time: 10 MINScook time: total time: 10 mins

Ingredients

• 16 ounces fresh strawberries, hulled & sliced lengthwise
• 6 ounces blackberries, whole or halved
• 4-5 Mandarin oranges, peeled & segmented
• 8 ounces red seedless grapes, halved
• 8 ounces fresh pineapple, chopped (approximately 2 cups)

Mojito Dressing

• 1/4 cup good honey
• Zest of 1 lime
• 2 tablespoons fresh lime juice, (approximately 1 medium lime)
• 4-5 mint leaves, finely chopped
• Pinch sea salt

Instructions

1. Prep all fruit and transfer to a large bowl. Set aside.
2. Combine all dressing ingredients in a mason jar. Cover and shake until fully combined. Pour dressing over fruit.
3. Gently toss fruit until evenly coated with dressing.
4. If not serving immediately, cover and refrigerate.

If you are traveling with the salad or making ahead, keep the dressing in the mason jar until 30 minutes before you are ready to serve.

The combination of citrus juices with honey are phenomenal in the fruit salad dressing. Then we added a few special ingredients that give it a little nuttiness and a touch of zestiness to kick it up a notch. Perfect any-occasion dish.

 

How to Make Fruit Salad

Fruit salads are a pretty reliable sign of spring and warmer weather around here. We love fruit in our house, we eat it year round, but come spring our counters and refrigerator are packed with fresh fruit.

I love how bright it is and love creating new dishes with it. Throughout the warmer months you will see fruit filled cakes, fruit ice pops, fruit ice cream and even fruit cocktails (the adult kind) in our house.

This past week we had a group party at the park with Munchkin's ATA (Taekwondo) friends and I wanted to bring something light and healthy, as temps here in Arizona hit 96 this past weekend.

I could only think of bringing ice pops or fruit and I figured fruit would travel much better in 96-degree temps.  I have to say it was a brilliant decision and I am pretty sure every drop was devoured, although I can't know for sure.

We did leave a little early. Chad mentioned ice cream and the next thing you know we were in the car driving to Dairy Queen. You know, priorities.  LOL

As I was saying, the fruit salad....  The very next day I decided to test the fruit salad recipe and I have to say the second recipe test resulted in my 'happy dance' AND a few pats on the back as I shouted out "I AM A GENIUS! OH MY GOSH, THIS IS DIVINE!"

Ok, so I guess you figured out that I love the fruit salad and you are probably wondering what is so special about it.

Tropical Fruit Salads are pretty fantastic on their own. I mean look at the players: pineapple, mango, kiwi, mandarin oranges and strawberry (for a pop of color).

They can certainly pull off a fantastic dish all on their own. But, you know how well lime compliments those tropical flavors, right? What about lime, honey, and ginger?

They are a  true flavor affinity! Then to kick it up a notch we added in lemon and more orange. Last, for a little nuttiness, I added poppyseed.

My masterpiece! The Best Ever Tropical Fruit Salad. This is the only one you need to try.

My entire picky family devoured this fruit salad. The dressing is truly magical. The combination of citrus juices with honey and poppy seeds.

The ginger gives this fruit salad a little zestiness that really kicks it up a notch, but it is subtle enough that no one will really be able to put their finger on the flavor.

• Bananas are lovely, but have to be added at the last minute or they will get soft and not look pretty.

prep time: 25 MINScook time: total time: 25 mins

Ingredients

• 12 mandarin oranges, divided (for dressing and salad)
• 2 cup strawberries, sliced
• 1 pineapple, cut into bite-size chunks
• 5 kiwi, sliced
• 3 mangoes, cut into bite-size chunks

Citrus Poppy Seed Dressing

• 1 medium lemon
• 1 lime
• 1/4 cup honey
• 1/2 teaspoon Gourmet Garden Ginger Paste or fresh grated ginger
• 1/2 teaspoon poppy seeds

Instructions

1. Wash and dry lemon, lime and 2 mandarin oranges. Zest the washed and dried citrus with a zester or fine grater. Add to 1 cup measuring cup or small bowl. Cut each in half and squeeze the juice into the measuring cup. (You should get about 1/2 cup juice).  Add honey, ginger and poppy seeds to juice mixture and whisk until combined.  Set aside or place in the refrigerator if serving later.
2. Prepare remaining fruit. Slice strawberries and kiwi. Section remaining oranges. Cut pineapple and mango into bite size chunks. Place fruit in a large bowl. Pour dressing on top of fruit about 30 minutes before serving. Gently toss to coat. 
3. Serve and enjoy!
