How to Make Fruit Salad

Fruit salads are a pretty reliable sign of spring and warmer weather around here. We love fruit in our house, we eat it year round, but come spring our counters and refrigerator are packed with fresh fruit.

I love how bright it is and love creating new dishes with it. Throughout the warmer months you will see fruit filled cakes, fruit ice pops, fruit ice cream and even fruit cocktails (the adult kind) in our house.

I could only think of bringing ice pops or fruit and I figured fruit would travel much better in 96-degree temps.  I have to say it was a brilliant decision and I am pretty sure every drop was devoured, although I can't know for sure.

We did leave a little early. Chad mentioned ice cream and the next thing you know we were in the car driving to Dairy Queen. You know, priorities.  LOL

As I was saying, the fruit salad....  The very next day I decided to test the fruit salad recipe and I have to say the second recipe test resulted in my 'happy dance' AND a few pats on the back as I shouted out "I AM A GENIUS! OH MY GOSH, THIS IS DIVINE!"

Ok, so I guess you figured out that I love the fruit salad and you are probably wondering what is so special about it.

Tropical Fruit Salads are pretty fantastic on their own. I mean look at the players: pineapple, mango, kiwi, mandarin oranges and strawberry (for a pop of color).

They can certainly pull off a fantastic dish all on their own. But, you know how well lime compliments those tropical flavors, right? What about lime, honey, and ginger?

They are a  true flavor affinity! Then to kick it up a notch we added in lemon and more orange. Last, for a little nuttiness, I added poppyseed.

The ginger gives this fruit salad a little zestiness that really kicks it up a notch, but it is subtle enough that no one will really be able to put their finger on the flavor.

Helpful Tips to make Best Ever Tropical Fruit Salad:

  • This fruit salad is fabulous with whatever you have on hand. I love carambola (star fruit) and papaya in this salad as well.
  • Bananas are lovely, but have to be added at the last minute or they will get soft and not look pretty.
  • If you want to make the salad ahead, prepare the dressing and store it in the refrigerator in a mason jar until 30 minutes or so before you are ready to serve. Shake the dressing, pour over the salad and toss to combine.

What you will need to make Best Ever Tropical Fruit Salad:

  • Citrus Juicer - This makes juicing the lime much easier. Plus you’ll get every last drop out.
  • Microplane/Zester - This is great for zesting citrus. I also use mine to grate garlic.
  • Colander - Washing fresh fruit is much easier with a colander. Plus it’s great for draining pasta too.

Best Ever Tropical Fruit Salad

The Best Ever Tropical Fruit Salad is the only recipe you'll ever need. My entire picky family devoured this fruit salad. The dressing is truly magical. The combination of citrus juices with honey are phenomenal. Then we added a few special ingredients that give it a little nuttiness and a touch of zestiness to kick it up a notch. Perfect any-occasion dish.
prep time: 25 MINScook time: total time: 25 mins

Ingredients

  • 12 mandarin oranges, divided (for dressing and salad)
  • 2 cup strawberries, sliced
  • 1 pineapple, cut into bite-size chunks
  • 5 kiwi, sliced
  • 3 mangoes, cut into bite-size chunks
Citrus Poppy Seed Dressing
  • 1 medium lemon
  • 1 lime
  • 1/4 cup honey
  • 1/2 teaspoon Gourmet Garden Ginger Paste or fresh grated ginger
  • 1/2 teaspoon poppy seeds

Instructions

  1. Wash and dry lemon, lime and 2 mandarin oranges. Zest the washed and dried citrus with a zester or fine grater. Add to 1 cup measuring cup or small bowl. Cut each in half and squeeze the juice into the measuring cup. (You should get about 1/2 cup juice).  Add honey, ginger and poppy seeds to juice mixture and whisk until combined.  Set aside or place in the refrigerator if serving later.
  2. Prepare remaining fruit. Slice strawberries and kiwi. Section remaining oranges. Cut pineapple and mango into bite size chunks. Place fruit in a large bowl. Pour dressing on top of fruit about 30 minutes before serving. Gently toss to coat. 
  3. Serve and enjoy!

DONNA'S NOTE

Ever since Chad and I have been together, we have celebrated every special occasion with his family. My family lives across the country so we never even gave it a second thought.

It is fruit mixed with whipped cream, and it is delightful. A few years ago it got me thinking.

What if I combined cheesecake and fruit to create an over the top decadent cheesecake salad? Well, I did, and I have to tell you it is the most amazing decadent fruit salad ever.

I am planning for Easter dinner this weekend which is my holiday to host. I started thinking about the fruit salad that I would choose.

I got to thinking about the scrumptious ham that we will be enjoying and then it hit me.

Helpful Tips to make Hawaiian Cheesecake Salad:

  • Do not pour all of the creamer into the cream cheese at once. It will get clumpy, and no matter how long you beat it, it will stay that way. Trust me on this one.
  • If the cream cheese and pudding mix get too thick, add in a splash of the cream to loosen it up. Then proceed with the recipe, minus the splash you already used.
  • If you have to substitute for the creamer, use 1 cup heavy cream, 1/4 cup powdered sugar, and 2 teaspoons vanilla extract.

To make Hawaiian Cheesecake Salad Ahead:

  • Prepare the cheesecake mixture and refrigerate in a bowl or sealed jar. 
  • Combine all of the fruit in a large bowl and refrigerate. 
  • Before serving, drain any excess liquid from the fruit and then fold the cheesecake filling into the fruit. Serve and enjoy!

Hawaiian Cheesecake Salad

Hawaiian Cheesecake Salad comes together so simply with fresh tropical fruit and a rich and creamy cheesecake filling to create the most glorious fruit salad ever! Every bite is absolutely bursting with island flavor and you are going to go nuts over this recipe!

Ingredients

  • 1 (8-ounce) package cream cheese, room temperature
  • 1 (3.4-ounce) package instant cheesecake pudding, unprepared
  • 1 cup International Delight French Vanilla Creamer (liquid)
  • 1 pound strawberries, hulled and sliced
  • 4 mandarin oranges, peeled and sectioned
  • 1 (20-ounce) can pineapple tidbits, drained
  • 3 kiwi, peeled and cut into half moons
  • 2 mangoes, cut into bite size chunks
  • 1 banana, cut into coins
  • juice of 1/2 lemon

Instructions

How to Make Hawaiian Cheesecake Salad

  1. In a medium tall bowl (I use my 8 cup measuring cup), using an electric mixer, whip cream cheese until it becomes smooth. It may bind up in the beaters, but continue as is and it will loosen up.
  2. Add the dry pudding mix. Beat until well combined. If the mixture is too thick you can add a splash of the measured creamer to losen it up.
  3. With the mixer on low, slowly add the remaining creamer to the cream cheese mix. Add it about a tablespoon at a time and then mix until it becomes a smooth mixture and all of the creamer has combined into the cream cheese, repeat until all of the creamer has been added to the mixture. Whip until smooth.
  4. In a large bowl, combine strawberries, oranges, pineapple, kiwi and mango.
  5. Add the cheesecake mixture to the fruit. Gently fold cheesecake mixture into fruit.
  6. In a small bowl combine the banana coins and the lemon juice. Toss until well coated, drain the excess lemon juice. Gently fold the banana into the cheesecake salad.
  7. Chill until ready to serve or serve immediately.
DONNA'S NOTES

  2. If you have to substitute cream for the creamer, powdered sugar and vanilla would be the best swap. 1 cup heavy cream, 1/4 cup powdered sugar and 2 teaspoons vanilla extract.
  3. If you are using canned fruit be sure to drain it completely.
  4. To make this ahead: prepare the cheesecake mixture and refrigerate in a bowl. Mix all of the fruit in a large bowl and refrigerate. Before serving, drain any excess liquid from the fruit and then fold the cheesecake filling into the fruit. Serve and enjoy!
