Roasted chicken and veggies have been a long time favorite of mine for as far back as I can remember. We always prepared it with chicken, potatoes, and carrots in a baking dish.

It's perfectly delicious, but when I am looking for a family-pleasing meal that will bring us all together (including my particular 6-year-old), I like to step outside the box and re-imagine those classic favorites.

Sweet heat chicken and roasted fall vegetables are perfect to please all of our palates and to take time away from the hustle and bustle of life and enjoy an amazing meal together.

This fabulous family dinner wouldn't be complete without Lipton iced tea. Living in Florida, I grew up on this southern favorite. Iced tea is the perfect accompaniment for a meaningful meal.



I grew up in a family where no matter how busy life was, we always took the time to come together at the dinner table. Even though we all ran our separate ways all day long, each night we would sit down and enjoy dinner and what was important: each other.

I have the best memories of mealtimes with my family growing up and I am sure that has a lot to do with my passion for food. I really love to cook for my family.

Nowadays the world seems to move much faster, and life has taken on different priorities. Coming together at mealtime is ever more special.

Helpful Tips to make One Pan Roasted Garlic Chicken and Vegetables :

  • New Mexico Chile Powder is made by grinding New Mexico chiles. It is not the same as chili powder. It has an earthy chile flavor and is smoky, with a moderately spicy bite. It is slightly sweet with fruity undertones. You can find it with the International spices at most grocery stores. You can substitute Ancho Chile Powder if necessary.
  • Small Brussels sprouts can be left whole if medium or larger cut them in half.

    One Pan Roasted Garlic Chicken and Vegetables

    One Pan Roasted Garlic Chicken is a simple recipe for a sheet pan supper that your family will thank you for. Moist and tender chicken is bursting with flavor from the sweet heat honey garlic marinade. Brussels sprouts and sweet potatoes are roasted to caramelized perfection. The ultimate family dinner, this one pan recipe is one that you will be making again and again.

    Ingredients

    • 2 medium sweet potatoes (about 1 pound), cut into 3/4"-1" cubes
    • 1 pound small Brussels sprouts, (if they are bigger, cut them in half)
    • 1 medium red onion, cut into slices
    • 3 tablespoons extra virgin olive oil, divided
    • 2 teaspoons kosher salt, divided
    • 1 teaspoon fresh ground black pepper, divided
    • 1 1/2 pound boneless skinless chicken breasts
    • 4 tablespoons honey
    • 2 tablespoons Dijon Mustard
    • 2 teaspoons New Mexico chili powder
    • 2 teaspoons smoked paprika
    • 6 cloves garlic, minced
    • optional garnish: Parsley, chopped

    Instructions

    1. Preheat oven to 425°F. Line a baking sheet with aluminum foil, for quick clean up. Place the baking sheet into the oven to preheat the pan with the oven; this will help the vegetables caramelize faster.
    2. In a medium bowl combine 2 tablespoons olive oil with the honey, mustard, chili powder, smoked paprika, garlic, 1 teaspoon salt, and 1/2 teaspoon pepper. Whisk to combine. Add chicken and toss to coat. Set aside.
    3. Add sweet potatoes, Brussels sprouts, onion, and garlic to the preheated sheet pan. Drizzle with 1 tablespoon olive oil. Sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Toss vegetables with a spoon, until coated well.
    4. Clear a space for chicken breasts around the pan. Place coated chicken breasts on the baking sheet. Spoon the remaining honey mustard marinade over the chicken. Wiggle the pan until the vegetables are in a single layer.
    5. Bake 30-35 minutes until chicken is cooked through and vegetables are fork tender. Set oven to broil high for 2 minutes or until the edges of the vegetables begin to brown.
    6. Serve and enjoy!

    Helpful Tips to make Cheesy Pizza Stuffed Chicken:

    • I like to make the recipe with larger chicken breasts, as they are easier to butterfly and stuff.
    • You can add less or more garlic, also, if you don’t have fresh garlic on hand, you can use 1 teaspoon of garlic powder per chicken breast.
    • Always make sure your chicken is at room temperature, if you put cold chicken in the oven, it will become tough.
    • You can use your favorite marinara sauce or pizza sauce in this recipe.
    • Same when it comes to the cheese, I used mozzarella, but even white cheddar would work. If you want to go all fancy, use a mix of gruyere, romano and provolone cheese.
    • The Italian seasoning is optional, but it will taste more like your favorite Italian pizza if you add it.
    • The chicken is best served over pasta, but its delicious on its own as well.

    • Italian Seasoning- Delicious in this recipe, and its a nice seasoning to have in your pantry.
    • Baking Dish  - a square baking dish works well for this recipe.

    Cheesy Pizza Stuffed Chicken

    Pizza Stuffed Chicken is an easy recipe made in one pan, with lots of cheese and pepperoni to satisfy your pizza cravings!
    prep time: 10 MINScook time: 30 MINStotal time: 40 mins

    Ingredients

    • 3 chicken breasts, about 1lb each
    • 1/2 teaspoon salt, to taste
    • 1/2 teaspoon cracked black pepper, to taste
    • 3 teaspoons minced garlic
    • 1 package pepperoni slices
    • 2 1/2 cups (about 10 ounces) shredded mozzarella cheese, divided
    • 2 1/2 cups marinara sauce
    • Italian seasoning, to taste

    Instructions

    1. Preheat oven to 400°F.
    2. Butterfly the chicken breasts and season with salt and pepper, inside and out.
    3. Open each chicken breast, and add 1 teaspoon of minced garlic to each one. Spread it evenly.
    4. Add about 5-6 pepperoni slices to each butterflied chicken breast on top of the garlic.
    5. Add about 1/4 cup of shredded mozzarella cheese to each chicken breast.
    6. Close the chicken over tightly, and transfer the chicken breasts to a lightly greased baking dish.
    7. Pour the marinara over top of the chicken and into the dish.
    8. Sprinkle the remaining mozzarella cheese, followed by the Italian seasoning, over the chicken.
    9. Top the dish with the remaining pepperoni slices.
    10. Bake uncovered for 20-25 minutes or until chicken is tender and fully cooked.
    11. You can also broil the top layer, for the last 5 minutes of baking. Watch it closely to not burn it.

    First made famous by Brennan’s restaurant in New Orleans, this dish is one of my favorite quick dinner recipes.

    Chicken breasts with seasoning are added to a pan of creamy, garlicky pasta for an elegant dinner without a ton of work.

    Not only is this one pan chicken dinner quick and easy to make, but also, the ingredients to make it are most likely in your kitchen already.

    For a similar flavor with an extra kick of spice, try my Jalapeno Popper Chicken Pasta. The meat is cut into bite-size pieces so you can dig right in, and it’s topped with lots of crispy bacon.

    This Pesto Chicken Pasta Bake combines pesto and red sauce for a heartier pasta dish that’s just as creamy.

    Ingredient notes and substitutions

    • Chicken - When you're cooking chicken, be sure it doesn’t go straight from the fridge to the pan. 
    If the chicken is too cold , the protein siezes during cooking. As a result, the chicken will become tough and chewy.

    For the best results, keep raw chicken at room temperature for about 20 minutes before you cook it.

    • Spices - Customize the seasoning mix with any of your favorite dried herbs, or add some red pepper flakes for a spicier kick. The smoked paprika is optional, but I highly recommend it as it adds great flavor.
    • Pasta - I like to use fettuccine noodles, but you can also use spaghetti, angel hair, or even egg noodles.
    • Heavy cream - Replace with half and half if needed.
    • Add cheese - Make the sauce even more indulgent by mixing in 1/2 cup of grated Parmesan or Fontina cheese.

    Spices you’ll need for making chicken with pasta
    • Dried thyme - Always good to have in your pantry, and especially delicious is this recipe.
    • Smoked paprika - While regular paprika will just add color to the dish, the smoked variety will also add great flavor.
    • Dried rosemary - Another great pantry staple that pairs well with chicken.

    FAQ: Commonly Asked Questions

    Can this be made a day ahead of serving?

    Absolutely! If you'll be serving it to guests, make it no earlier than the day before. This way, it will be as fresh as possible. 

    Any leftovers of the chicken and pasta dinner can be kept in the refrigerator for 3 to 4 days and warmed on a stove top or in a microwave.

    Can I add vegetables to make it more filling?

    Mushrooms and onions would be great additions to this one-pan chicken dinner. Saute them with a little extra butter before cooking the garlic and sage. 

    What side dishes go with chicken Lazone?

    Because the dish is so filling, keep the sides simple and to a minimum. 

    Texas Roadhouse rolls and a spinach salad should be plenty, or make some roasted vegetables to round out the meal.

    Chicken Lazone

    Cream Chicken Lazone is a restaurant quality meal made easily at home. Flavorful and tender chicken is served over creamy pasta.

    prep time: 10 mins     cook time: 20 mins     total time: 30 mins

    Ingredients

    • 1 pound boneless, skinless chicken breasts
    • 2 tablespoons olive oil
    • ½ teaspoon salt
    • ¼ teaspoon ground black pepper
    • 2 teaspoon dried thyme
    • 2 teaspoon dried rosemary
    • 2 teaspoons smoked paprika
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon dried basil
    • 4 tablespoons unsalted butter, divided
    • 1 pound fettuccine
    • 1 tablespoon minced garlic
    • 6-8 sage leaves
    • 2 cups heavy cream
    • Salt and freshly ground black pepper, to taste
    • Fresh parsley , chopped

    Instructions

    1. In a wide, deep bowl combine: salt, pepper, dried thyme, dried rosemary and paprika. Stir to combine.
    2. Rub chicken breast with olive oil well on each side.
    3. Add chicken to the seasoning mixture and coat thoroughly.
    4. Add 2 tablespoons of butter to a large skillet over medium high heat. Once the butter has melted, add chicken breasts and cook for about 4-5 minutes on each side, trying to flip the chicken once only so it sears beautifully on each side. Remove chicken from pan and set aside on a plate, cover with foil to keep warm.
    5. Add pasta to a large pot of boiling water season with salt, some olive oil and cook according to package instructions. Drain well.
    6. Add the remaining 2 tablespoons of butter to the skillet over medium heat. Add minced garlic and sage. Cook, stirring frequently, until fragrant, about 1 minute. 
    7. Gradually whisk in heavy cream and cook until slightly thickened, for about 4-5 minutes. Taste and adjust for salt and pepper. 
    8. Remove and discard sage leaves.
    9. Stir in pasta and gently toss to combine.
    10. Add the chicken back to the pan and top with some of the cream sauce from the pan.
    11. If desired, sprinkle some grated parmesan on top.
    12. Garnish with parsley and serve immediately.

    Baked on a bed of rosemary and lemon this chicken takes on so much flavor it will KNOCK.YOUR.SOCKS.OFF!

    You know that happy dance I told you about?  The one I do in the kitchen?  No?  OK, so I am a total food geek.  I get the biggest thrill out of recipe development.

    So, when I create a recipe I am the first to taste it.  If it blows my mind...  I do this really embarrassing hip and fun dance in the kitchen.

    I would video for you, but I will spare you.  Just imagine some really entertaining 1980's dance off, now add a few years, a fork and a mouthful of food.

    Oh and a lot of MMMMM's.  You get the point.  LOL

    So, if I haven't lost you by now.  You can tell how excited I am about this chicken.  It is that good.

    The lemon and rosemary steam right into the chicken and it absorbs the most incredible combination of flavors ever.  The roasted lemons, rosemary and garlic on top give it an entirely new dimension of flavor.

    I ate the chicken all by itself.  The chicken, the lemons, with the garlic and juice drizzled over top, with some extra fresh rosemary.  OH.MY.WORD!

    Now, you could also throw a pan of The Best Ever Garlic Roasted Brussels Sprouts and a couple russet potatoes into the oven call it dinner and lunch for the week.

    But, personally, my plate was piled high with chicken and roasted lemons.  Even now my mouth is watering just thinking about it.

    Helpful Tips to make Rosemary Lemon Roasted Chicken Breasts:

    • You can double, triple, quadruple, etc this recipe.  I make it with 5 pounds of chicken so we have enough to eat all week.
    • If you prefer your chicken more browned on top, at the end of your cook time turn the broiler on and cook for 2-3 minutes until chicken and lemons are browned.

    • Baking Dish- I have my favorites and this set is one of them. The 9x13 is perfect for casseroles and the smaller size is awesome for making 1/2 a casserole recipe.

    Rosemary Lemon Roasted Chicken Breasts

    Looking for the best-roasted chicken recipe ever? Well, you have found it! I am absolutely head over heels in love with this Rosemary Lemon Roasted Chicken! Moist, flavorful and miles away from ordinary.
    prep time: 5 minscook time: 25 minstotal time: 30 mins

    Ingredients

    • 1-2 medium lemons, sliced
    • 2 sprigs rosemary
    • 2 garlic cloves, quartered
    • 1 pound uncooked boneless skinless chicken breasts
    • 1 tablespoon extra virgin olive oil
    • 1 teaspoon kosher salt
    • 1/2 teaspoon fresh ground black pepper

    Instructions

    1. Preheat oven to 425°F.  Layer 1/2 lemon slices and 1 sprig of rosemary on the bottom of a baking dish.  Scatter 1/2 of garlic around the pan.
    2. Season both sides of chicken with salt and pepper.  Lay chicken on top of lemon rosemary bed.  Place remaining lemon slices on top of chicken breasts.  Place rosemary sprig between the chicken breasts.  Sprinkle with remaining garlic.  Drizzle chicken breasts with olive oil.

    3. Bake for 25-30 minutes until chicken is cooked through (1 pound takes about 25-30 minutes, 5 pounds takes 45-60 minutes).  Cover with aluminum foil for 5 minutes and let the chicken rest.  Serve and enjoy!

    We are so excited to be partnering with STAR Fine Foods, one of our favorite brands to bring you this  fabulous new recipe.  STAR's new line of marinated and stuffed olives just came out and I have to tell you I am hooked. Of all the new products my absolute favorite is the Flavor Destinations: Spanish (Tomato & Peppers) Marinated Olives.



    As soon as I tasted them I knew they were destined for an amazing dish!

    The zestiness of the Spanish flavors really shine through with these gazpacho inspired marinated olives with tomatoes, peppers, onions and a fantastic combination of spices.

    They certainly made for the perfect component to my recipe.



    Funny thing, I fought the chicken thigh train for a long time. I have been a boneless skinless kind of girl for as long as I have been eating chicken, but Chad loves the thighs.

    So, I finally got on board and whipped up some perfect pan-fried chicken thighs and he loved them so much he ate 3!

    After 15 years of chicken breasts, I guess he was making up for lost time, poor guy. LOL. Well I decided to put those perfect pan-fried chicken thighs into an amazing dinner.




    It all starts with pan-fried tender and juicy chicken thighs with golden brown crispy skin, finished in a flavorful fresh tomato-wine sauce.

    The tomato-wine sauce with olives truly makes this a magical dish that is definitely perfect to make for company. Can you image those vibrant colors and flavors on your table?

      Pan Fried Chicken Thighs with Olives and Tomatoes

      Pan-Fried Chicken Thighs with Olives and Tomatoes starts with perfectly cooked tender and juicy chicken thighs with golden brown crispy skin, finished in a mind blowing fresh tomato-wine sauce with marinated olives. It is a simple recipe sure to be on your menu again and again.

      Ingredients

      • 6 chicken thighs (2-3 pounds), skin-on bone-in
      • 1-2 teaspoons kosher salt
      • 1/2-1 teaspoon fresh ground black pepper
      • 2 tablespoons extra virgin olive oil
      • 1 medium yellow onion, chopped
      • 3 garlic cloves, minced
      • 2 cups grape tomatoes, halved
      • 1 (5.75 ounce) jar STAR Fine Foods Tomato & Pepper Marinated Olives, drained
      • 1 cup Chardonnay white wine

      Instructions

      1. Use 1 teaspoon salt and 1/2 teaspoon pepper to sprinkle both sides of the chicken. Warm a high sided large skillet over medium-high heat. Once you hold you hand 6 inches from the skillet and feel the heat, add the olive oil. Then, place the seasoned chicken in the pan skin side down. Cook until golden brown, then flip to brown the other side, about 4-5 minutes for each side. Remove chicken and place in your upside down pot lid or on a plate.
      2. Reduce heat to medium. Add garlic and onion. Cook until onions soften, about 3 minutes. Add olives, wine and 1 cup of tomatoes. Stir to combine and scrape the bottom of the pan to remove the browned bits. Cook until liquid has reduced about half, about 4 minutes.
      3. Taste sauce. Add salt and pepper as necessary. I usually add about 1/2 teaspoon salt and pepper.
      4. Add chicken (skin side up) to skillet. Cook for 10 minutes longer, until the chicken is cooked through to the bone.
      5. If preferred you can place skillet under broiler to crisp the chicken skin. Add remaining tomatoes. Stir and serve.

      DONNA'S NOTES

      1. You can substitute chicken stock or white grape juice for the wine.
