I am absolutely head over heels in love with this Rosemary Lemon Roasted Chicken Breasts (Video)

Baked on a bed of rosemary and lemon this chicken takes on so much flavor it will KNOCK.YOUR.SOCKS.OFF!

You know that happy dance I told you about?  The one I do in the kitchen?  No?  OK, so I am a total food geek.  I get the biggest thrill out of recipe development.

So, when I create a recipe I am the first to taste it.  If it blows my mind...  I do this really embarrassing hip and fun dance in the kitchen.

I would video for you, but I will spare you.  Just imagine some really entertaining 1980's dance off, now add a few years, a fork and a mouthful of food.

Oh and a lot of MMMMM's.  You get the point.  LOL

So, if I haven't lost you by now.  You can tell how excited I am about this chicken.  It is that good.

The lemon and rosemary steam right into the chicken and it absorbs the most incredible combination of flavors ever.  The roasted lemons, rosemary and garlic on top give it an entirely new dimension of flavor.

I ate the chicken all by itself.  The chicken, the lemons, with the garlic and juice drizzled over top, with some extra fresh rosemary.  OH.MY.WORD!

Now, you could also throw a pan of The Best Ever Garlic Roasted Brussels Sprouts and a couple russet potatoes into the oven call it dinner and lunch for the week.

But, personally, my plate was piled high with chicken and roasted lemons.  Even now my mouth is watering just thinking about it.

Now go forth.  Make the best ever roasted chicken and funny dances.

is an easy stuffed chicken breast recipe made in one pan Cheesy Pizza-Stuffed Chicken +VIDEO
Cheesy Pizza Stuffed Chicken is one of those delicious meals that you will end up just adding to your weeknight menu.

The dish has all the delicious pizza fixings, minus the dough! Chicken breast is first butterflied and seasoned, then it's stuffed with garlic, pepperoni, and cheese.

How To Make Stuffed Chicken Breast

Topped with marinara sauce, Italian seasoning, more cheese, and more pepperoni. Baked to perfection, the chicken becomes tender, with a sweet tanginess from the marinara sauce and very cheesy. Serve it over pasta and with a light salad on the side!

I know how hectic and busy life can get, I have moved a week ago and I relied on take-out for too long.

Once I unpacked my kitchen, I started making easy one pan meals again, and this Pizza Stuffed Chicken is a husband and kid approved meal.

Helpful Tips to make Cheesy Pizza Stuffed Chicken:

  • I like to make the recipe with larger chicken breasts, as they are easier to butterfly and stuff.
  • You can add less or more garlic, also, if you don’t have fresh garlic on hand, you can use 1 teaspoon of garlic powder per chicken breast.
  • Always make sure your chicken is at room temperature, if you put cold chicken in the oven, it will become tough.
  • You can use your favorite marinara sauce or pizza sauce in this recipe.
  • Same when it comes to the cheese, I used mozzarella, but even white cheddar would work. If you want to go all fancy, use a mix of gruyere, romano and provolone cheese.
  • The Italian seasoning is optional, but it will taste more like your favorite Italian pizza if you add it.
  • The chicken is best served over pasta, but its delicious on its own as well.

What you will need to make Cheesy Pizza Stuffed Chicken:

  • Italian Seasoning- Delicious in this recipe, and its a nice seasoning to have in your pantry.
  • Baking Dish  - a square baking dish works well for this recipe.

Enjoy!

One Pan Roasted Garlic Chicken and Vegetables

One Pan Roasted Garlic Chicken is a simple recipe for a sheet pan supper that your family will thank you for. Moist and tender chicken is bursting with flavor from the sweet heat honey garlic marinade. Brussels sprouts and sweet potatoes are roasted to caramelized perfection. The ultimate family dinner, this one pan recipe is one that you will be making again and again.
is a simple recipe for a sheet pan supper that your family will thank you for One Pan Roasted Garlic Chicken and Vegetables

Roasted chicken and veggies have been a long time favorite of mine for as far back as I can remember. We always prepared it with chicken, potatoes, and carrots in a baking dish.

It's perfectly delicious, but when I am looking for a family-pleasing meal that will bring us all together (including my particular 6-year-old), I like to step outside the box and re-imagine those classic favorites.

Sweet heat chicken and roasted fall vegetables are perfect to please all of our palates and to take time away from the hustle and bustle of life and enjoy an amazing meal together.

This fabulous family dinner wouldn't be complete without Lipton iced tea. Living in Florida, I grew up on this southern favorite. Iced tea is the perfect accompaniment for a meaningful meal.

I grew up in a family where no matter how busy life was, we always took the time to come together at the dinner table. Even though we all ran our separate ways all day long, each night we would sit down and enjoy dinner and what was important: each other.

I have the best memories of mealtimes with my family growing up and I am sure that has a lot to do with my passion for food. I really love to cook for my family.

Nowadays the world seems to move much faster, and life has taken on different priorities. Coming together at mealtime is ever more special.

This sweet heat chicken and roasted vegetables and a glass of Lipton iced tea is the perfect way to sit back and reevaluate our priorities. I like to sip slowly and drift back to a time when sitting at the table catching up on the day was the perfect way to end the day. Good food, great family and sweet iced tea!

One Pan Roasted Garlic Chicken and Vegetables starts with some of my favorite fall vegetables. You can use whatever your favorite is, but sweet potatoes and Brussels sprouts are the perfect accompaniment for this amazing chicken. It is moist and tender, marinated in a sweet and mildly spicy sauce that will wake up your taste buds.

My family went crazy over it and I am sure yours will too.

Helpful Tips to make One Pan Roasted Garlic Chicken and Vegetables :

  • New Mexico Chile Powder is made by grinding New Mexico chiles. It is not the same as chili powder. It has an earthy chile flavor and is smoky, with a moderately spicy bite. It is slightly sweet with fruity undertones. You can find it with the International spices at most grocery stores. You can substitute Ancho Chile Powder if necessary.
  • Small Brussels sprouts can be left whole if medium or larger cut them in half.

The ultimate family dinner, this one pan recipe is one that you will be making again and again.
prep time: 15 minscook time: 30 minstotal time: 45 mins

    Ingredients

    • 2 medium sweet potatoes (about 1 pound), cut into 3/4"-1" cubes
    • 1 pound small Brussels sprouts, (if they are bigger, cut them in half)
    • 1 medium red onion, cut into slices
    • 3 tablespoons extra virgin olive oil, divided
    • 2 teaspoons kosher salt, divided
    • 1 teaspoon fresh ground black pepper, divided
    • 1 1/2 pound boneless skinless chicken breasts
    • 4 tablespoons honey
    • 2 tablespoons Dijon Mustard
    • 2 teaspoons New Mexico chili powder
    • 2 teaspoons smoked paprika
    • 6 cloves garlic, minced
    • optional garnish: Parsley, chopped

    Instructions

    1. Preheat oven to 425°F. Line a baking sheet with aluminum foil, for quick clean up. Place the baking sheet into the oven to preheat the pan with the oven; this will help the vegetables caramelize faster.
    2. In a medium bowl combine 2 tablespoons olive oil with the honey, mustard, chili powder, smoked paprika, garlic, 1 teaspoon salt, and 1/2 teaspoon pepper. Whisk to combine. Add chicken and toss to coat. Set aside.
    3. Add sweet potatoes, Brussels sprouts, onion, and garlic to the preheated sheet pan. Drizzle with 1 tablespoon olive oil. Sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Toss vegetables with a spoon, until coated well.
    4. Clear a space for chicken breasts around the pan. Place coated chicken breasts on the baking sheet. Spoon the remaining honey mustard marinade over the chicken. Wiggle the pan until the vegetables are in a single layer.
    5. Bake 30-35 minutes until chicken is cooked through and vegetables are fork tender. Set oven to broil high for 2 minutes or until the edges of the vegetables begin to brown.
    6. Serve and enjoy!

Pan-Fried Chicken Thighs with Olives and Tomatoes

Fried Chicken Thighs with Olives and Tomatoes Pan-Fried Chicken Thighs with Olives and Tomatoes

We are so excited to be partnering with STAR Fine Foods, one of our favorite brands to bring you this  fabulous new recipe.  STAR's new line of marinated and stuffed olives just came out and I have to tell you I am hooked. Of all the new products my absolute favorite is the Flavor Destinations: Spanish (Tomato & Peppers) Marinated Olives.

As soon as I tasted them I knew they were destined for an amazing dish!

The zestiness of the Spanish flavors really shine through with these gazpacho inspired marinated olives with tomatoes, peppers, onions and a fantastic combination of spices.

They certainly made for the perfect component to my recipe.

Funny thing, I fought the chicken thigh train for a long time. I have been a boneless skinless kind of girl for as long as I have been eating chicken, but Chad loves the thighs.

So, I finally got on board and whipped up some perfect pan-fried chicken thighs and he loved them so much he ate 3!

After 15 years of chicken breasts, I guess he was making up for lost time, poor guy. LOL. Well I decided to put those perfect pan-fried chicken thighs into an amazing dinner.

It all starts with pan-fried tender and juicy chicken thighs with golden brown crispy skin, finished in a flavorful fresh tomato-wine sauce.

The tomato-wine sauce with olives truly makes this a magical dish that is definitely perfect to make for company. Can you image those vibrant colors and flavors on your table?

Fresh lime and Jose Cuervo Gold are the stars of this simple marinade Grilled Tequila Lime Chicken

I am so happy that it is grilling season again.  I am giddy over this Grilled Tequila Lime Chicken recipe!  I know I could grill all year long living in Arizona, but there is just something about spring and summer that makes grilling that much more fun.  I'm in a boozy kinda grilling groove.

I pulled out some of our favorite flavors to cook with and of course tequila is a favorite.  It has such a fantastic taste.  The sweetness of the blue agave and the hint of vanilla in the tequila really gives the chicken a flavor you will not forget. You know my favorite is Jose Cuervo Especial Tequila Gold.  This Grilled Tequila Lime Chicken is amazing.

I like to marinate at least overnight.  The chicken cooks up tender and moist on the grill with the most amazing flavor you can imagine.  It is perfect served with some Cilantro Lime Rice and Best Ever Oven Roasted Corn.

I really missed MY grill.  My parents were so sweet to buy us a new grill a few summers ago (early birthday gifts).  You know I am the grill master in this family, and I am very possessive over the grill.  Chad loves that I do the grilling and I do too.  Heck the best cook should wield the spatula, right?

Fire it up!  It's grilling season. Dinner's Ready!

        Garlic Lime All-Purpose Marinade

Garlic lime all-purpose marinade is a simple recipe that comes together in a snap and creates the most amazingly flavorful, moist and tender meat dishes. Perfect on chicken, pork, steaks and seafood. Truly an all-purpose marinade I would happily use this as gravy on my mashed potatoes too (I may have done that already).

I have loved quick and easy marinades as long as I can remember. I use them for chicken, pork chops and steaks all the time. I love really versatile marinades and have been working on this garlic-lime version for some time now. I wasn't until I made it with Star Fine Foods new garlic olive oil that I knew the recipe was perfect. I have used the garlic flavored olive oil in several dishes already but it really kicked this marinade up a notch.

This simple marinade is truly all-purpose. It is excellent on chicken, whether it is grilled or oven roasted. We brought garlic-lime marinated chicken to a potluck this summer and had the host grill it. It was absolutely amazing! It is spectacular on steak, London broil, pork, and I can imagine how much a seafood lover would enjoy fish marinated in it.

It all starts with a fantastic flavor palate. Garlic and lime are one of my favorite culinary combinations and this marinade brings the two together with a tangy goodness that will make you sing! The addition of mustard in this marinade helps creation an emulsion so the marinade really hangs onto the meat.

With enough acid to really make your meat moist and tender, this marinade will take your dish all the way to flavor town. I actually may have poured this cooked down marinade over my mashed potates too.  I couldn't help myself the marinade is so good I cook down the left overs and drizzle them over my dinner.

          Ingredients

          • 2-5 pounds meat of choice (I used boneless skinless chicken breasts)
          • 6 tablespoons STAR Garlic Flavored Olive Oil
          • 1/4 cup STAR White Wine Vinegar
          • 1/4 cup fresh lime juice (about 2 limes)
          • 2 tablespoons packed light brown sugar
          • 1-1/2 tablespoons whole grain mustard
          • 1-1/2 tablespoons dijon mustard
          • 1 teaspoon kosher salt
          • 1 teaspoon black pepper
          • 4 cloves garlic, minced

          Instructions

          1. Place meat in ziptop gallon bag. Set aside.
          2. Combine all remaining ingredients in a mason jar (or a 2 cup measuring cup). Seal your jar and shake vigorously until your mixture becomes completely combined (or you can whisk well) and pour over meat. Zip bag closed and place in a bowl in the refrigerator (to prevent leaks) or double bag it. Marinate 30 minutes to overnight. I recommend overnight if you have the time. If marinating for hours, remember to flip the bag over a few times to keep the meat coated and moist.
          DONNA'S NOTES
          1. If you wish to use the marinade to serve over the meat, you can boil it on the stove top until reduced by 1/3 to create a delicious sauce.
          2. You can substitute all Dijon mustard or all whole grain.
          3. Cooking instructions will vary based on the meat you choose.
          TO GRILL CHICKEN
          1. Preheat grill to medium-high. Place chicken on the counter (to take the chill off) while grill is heating. Grill chicken about 4-5 minutes on each side.
          2. Serve and enjoy.
          TO GRILL PORK CHOPS
          1. Preheat grill to medium high. Place the pork chops on the grill and sear both sides, about 2 to 3 minutes per side. Move the pork chops away from the flame. Cook over indirect heat with the grill closed until they are somewhat firm to the touch or until an instant-read thermometer inserted horizontally into the center of a chop, away from the bone, registers 145°F, about 15 minutes. Transfer the pork chops to a platter and let rest for 10 minutes.
          2. Serve and enjoy!
TO BAKE CHICKEN OR PORK CHOPS
          1. Preheat oven to 425°F. Bake for 30-40 minutes until chicken is cooked through (1 pound takes less time, 5 pounds takes more time). Cover with aluminum foil for 5 minutes and let the chicken rest.
          2. Serve and enjoy!
