This soup is one of the easiest and tastiest that you will make. Forget about hitting your local Panera Bread, this homemade crockpot version is so much better.

Plus, crockpot potato soup is budget friendly.

What kind of potatoes are best for potato soup?

When making potato soup, you really want a low starch potato (often referred to as 'waxy') that will not absorb the broth like a starchy potato will.

Red potatoes are perfect to use for crockpot potato soup.

Waxy potatoes are creamy and high-moisture, with low starch.

They hold their shape well when cooked and have a thinner skin.

As a result, they are perfect for skin on potato soup, potato salad, casseroles and gratin.

In comparison, starchy potatoes are fluffy and low in moisture, but high in starch. They are very absorbent and will suck up all the flavor you add to them.

However, starchy potatoes do not hold their shape well.

How long does Potato Soup last in the fridge?

Properly wrapped in an airtight plastic container potatoes soup will stay fresh in the fridge for about 3 days.

Recipe tips for crockpot potato soup:


  • I prefer to use Yukon gold potatoes for this recipe. They have the perfect flavor and buttery texture to make the soup irresistibly creamy.


  • You can either cook the bacon prior to starting the soup, by frying it or roasting it in the oven, whatever method you prefer. Also, you can use pre-cooked bacon to save time and cut down on the effort.


  • You can use evaporated canned milk, or for even a richer texture, you can use half and half or heavy cream.

Crockpot Potato Soup

Crockpot Potato Soup is creamy, thick and full of the delicious flavors of a loaded baked potato. Make this easy soup recipe for dinner tonight!

Prep time: 10 MINS  Cook time: 4 hour and 30 MINS  Total time: 4 hours and 40 mins

Ingredients
  • 10 slices cooked bacon, diced
  • 3 cups chicken broth
  • 2 pounds Yukon gold potatoes, peeled and diced
  • 1 medium yellow onion, diced
  • 6 garlic cloves, minced
  • 1 tablespoon dried parsley
  • 4 tablespoons unsalted butter
  • 1/3 cup all-purpose flour
  • 1 (12-ounce) can evaporated milk or half-and-half or heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • optional toppings: chives, extra shredded cheddar cheese and bacon
Instructions
  1. Add diced potatoes, diced onion, minced garlic, bacon, parsley and chicken broth to the slow cooker. Season with salt and pepper. Stir and cook for 6-8 hours on low or on high for 3-4 hours, until the potatoes are fork tender.
  2. Once the soup has cooked, add butter to a medium saucepan over medium heat and melt. Whisk in the flour until completely combined and gradually add in the evaporated milk or heavy cream, depends which one you are using. Whisk the flour mixture until smooth. With the heat on the lowest stove setting, let the mixture cook until it starts to simmer and is getting thicker, stir occasionally.
  3. Immediately add the milk-flour mixture to the slow cooker and stir to combine.
  4. Using a potato masher, mash about 3/4 of the potatoes.
  5. Stir in the shredded cheddar cheese and sour cream. Stir well, until fully combined and creamy. Taste for seasoning, add salt and pepper to taste. Continue cooking the soup on low for 30 minutes or on high for 15 minutes.
COOK'S NOTES
  1. If the soup is too thick, add more chicken broth.
  2. Serve warm, garnished with bacon, cheese and sour cream.
  3. The soup can be refrigerated for up to 3 days.

You can use any vegetables you have or any types of beans you have. Vegetable broth or chicken broth. And any small pasta noodles you have on hand!

Helpful Tips to Make Slow Cooker Minestrone Soup:

  • You can make substitutions for all the ingredients based on what you have on hand! Use any pasta noodles, chicken broth instead of vegetable, almost any canned beans, and a variety of vegetables.
  • Save time, by chopping your vegetables up the night before, so all you have to do in the morning is throw everything into the crockpot.
  • To freeze, bring the soup to room temperature and store in airtight containers. To serve, thaw in the refrigerator and warm over medium heat. The pasta may break apart when you reheat it, so if you are making it for the freezer, leave out the pasta until you heat it up.

Slow Cooker Minestrone Soup

Ingredients

  • 2 (14.5 ounce) cans diced tomatoes
  • 1 cup diced carrots (about 3 carrots)
  • 1 cup diced celery (about 3 celery stalks)
  • 1 cup diced yellow onion (about 1 small onion)
  • 3 cloves garlic, minced
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon pepper, to taste
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 2 bay leaves
  • 4 cups vegetable broth
  • 2 cups water
  • 1 cup sliced zucchini (about 2 small zucchinis)
  • 1 1/2 cups small dried pasta
  • 1 (15 ounce) can red kidney beans, drained and rinsed
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 cup spinach
  • shredded Parmesan, for serving

Instructions

  1. Place diced tomatoes, carrots, celery, onion, garlic, salt, pepper, basil, oregano, rosemary, thyme, and bay leaves in the slow cooker.
  2. Pour in the vegetable stock and water. Stir everything together.
  3. Place lid on the slow cooker and cook on high for 2-3 hours, or on low for 5-6 hours, until the vegetables are tender.
  4. Stir in zucchini, pasta noodles, kidney beans, and cannellini beans. Cook for 20-30 minutes on high until the pasta is tender.
  5. Stir in the spinach and cook for 1 minute, before serving.
  6. Serve topped with shredded parmesan if desired, and with warm bread.

HELPFUL TIPS TO MAKE WEIGHT LOSS SOUP:

  • You can use the veggies that you like most in this recipe. For example, if you don’t like or you don’t have green beans on hand, you can use zucchini. Or you can skip the bell pepper if you are not a fan.
  • I recommend keeping the celery and the cabbage, as they are known for their “weight loss” and detoxifying properties, also they make the soup heartier, hence it will keep you fuller!
  • To make the soup even more healthier, you can replace the white potatoes with sweet potatoes..
  • For more flavor, you can pick canned diced tomatoes that have been fire roasted or have some type of herbs added to them. Also, San Marzano canned tomatoes are the best in my opinion!
  • Make sure you season the soup, otherwise it will taste blend. Dried herbs add a very nice flavor to the veggie broth.
  • If you don’t have veggie broth on hand, you can also use chicken broth, but the soup won’t be vegetarian anymore.
  • If you prefer, you can add beans to the soup for extra protein. I prefer to skip them, only because I consider this soup a lighter meal, that gives my digestive system a break, and beans are harder to digest.
  • The thyme and bay leaves are optional, they add great flavor, but if you don’t have any on hand, you can skip these.

  • 3 cups chopped cabbage
  • 4 medium white potatoes, peeled and cubed
  • 1 carrot, peeled and sliced
  • 1 cup celery, diced

  • 1 1/2 cups broccoli florets
  • 1 (28-ounce) can diced tomatoes, undrained
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes
  • 2 bay leaves
  • 2 fresh thyme sprigs
  • 1 (32-ounce) container vegetable broth
  • Chopped fresh parsley, for garnish

Instructions

  1. Prepare all the veggies, by washing, peeling if needed, and chopping.
  2. Place all ingredients in the slow cooker insert. Stir well to combine. The broth should slightly cover the veggies. If needed add more or add water.
  3. Cover and cook on low for 6-8 hours, or until potatoes are tender. For better results, stir a few times during cooking.
  4. Taste and adjust for salt and pepper.
  5. Once the soup is ready, discard bay leaves and thyme springs before serving.
  6. Garnish with chopped fresh parsley and serve.

HELPFUL TIPS TO MAKE SLOW COOKER FRENCH ONION SOUP:

  • You can technically use other variations of “white” onions, but sweet onions work best in this recipe. Also, please do NOT use red onions.
  • This recipe takes a long time to make, not actively, but the slow cooker will be on for half a day. I recommend starting early morning to cook the onions. Considering that you will have to stir them halfway.
  • If you want to cut down the cooking time, you can brown the onions on the stove, until perfectly brown and caramelized. You will have to do this on low heat, not to burn the onions, for about 1 ½ to 2 hours. You will have to add a little liquid if needed. When transferring the onions to the slow cooker, transfer the juice from the onions as well. 
  • The thyme and bay leaves are optional, they add great flavor, but if you don’t have any on hand, you can skip these.
  • When it comes to adding the sugar, I used 2 teaspoons only and also, preferably use brown sugar as it adds that caramel flavor when combined with the onions. You can add more sugar, if you prefer the soup sweeter.
  • I like to add the sherry vinegar and Worcestershire sauce to the onions, for a deeper flavor. You can also add these when you add the beef stock.
  • You can also use asiago cheese, or a mix of Gruyere and asiago.

WHAT YOU WILL NEED TO MAKE SLOW COOKER FRENCH ONION SOUP:

  • Slow Cooker - the slow cooker is almost my most used kitchen gadget, especially during fall/winter! It's just so convenient, and lets face it, it makes comfort food taste even better!
  • Worcestershire Sauce  - enhances the beef flavor in recipes that use beef, or in this case beef stock.

Slow Cooker French Onion Soup

Slow Cooker French Onion Soup is ridiculously easy to make. It is incredibly flavorful and you can top it with as much cheese as you want!
prep time: 15 minscook time: 16 hourtotal time: 16 hours and 15 mins

Ingredients

  • 3 pounds sweet onions, thinly sliced
  • 4 tablespoons unsalted butter, melted
  • 2 teaspoons brown sugar
  • 2 teaspoons sherry vinegar
  • 1 tablespoon Worcestershire sauce
  • 5 fresh thyme sprigs
  • 3 bay leaves
  • 6 cups beef stock
  • Kosher salt and freshly ground black pepper, to taste
  • 1 (12-ounce) French baguette, sliced
  • 2 cups Gruyère cheese, shredded

Instructions

  1. Add the thinly sliced onions to a 6-qt slow cooker. Stir in butter, brown sugar, 1 teaspoon salt, sherry vinegar and Worcestershire sauce.
  2. Cover and cook on high heat for 8-9 hours or on low for about 12-14; or until onions are caramelized and browned. Make sure to stir halfway, as needed, to prevent burning.
  3. Stir in beef stock, season with salt and pepper, to taste and add thyme sprigs and bay leaves. Cover and cook on high heat for 2-3 hours or on low for 4-5 hours. When ready discard thyme and bay leaves.
  4. Preheat oven to broil.
  5. Place baguette slices onto a baking sheet and broil until golden brown on both sides, about 1-2 minutes per side.
  6. Divide soup into ovenproof bowls, place the bowls on a baking sheet. Top with toasted baguette slices, about two slices per bowl, the bread should cover the soup; top with lots of shredded cheese.
  7. Place into the oven and broil until the cheese is bubbly and golden brown, about 2 minutes.
  8. Serve immediately.

Can I freeze Zuppa Toscana Soup

You can freeze this Zuppa Toscana. Make sure you let the soup come to room temperature and pack it up into portion size containers or one large container. Make sure you remember to leave about 1" at the top for expansion.

It is important to note that chunks of potatoes tend to break apart and have a grainy texture when reheated. If you are sensitive to texture you may want to skip freezing this soup.

You can substitute traditional lacinato kale or spinach in this recipe. I love the tenderness of baby kale, so it is my favorite.

Can you make Zuppa Toscana in the Slow Cooker?

You can absolutely make this Zuppa Toscana in the Slow Cooker. Simply cook the sausage on the stovetop. Add the seasonings and stir. Then add the chicken stock to the pot and scrape the bits on the bottom of the pan.

Transfer sausage and broth to your slow cooker and add potatoes. Cover and cook on high for 3-4 hours or low for 6-8 hours. Remove 2 cups of potatoes and mash them. Return mashed potatoes to the slow cooker, add the cream and the baby kale. Stir until kale is wilted.

Instant Pot Zuppa Toscana (Sausage & Potato Soup)

Instant Pot Zuppa Toscana is the ultimate copycat recipe of the classic Olive Garden soup made quick and easy in a pressure cooker. Sausage, potatoes and fresh kale in a perfectly seasoned rich and creamy broth make this Tuscan Italian-inspired soup a hit from the first bite.

Ingredients:

  • 1 tablespoon extra virgin olive oil
  • 2 (12 ounce) packages No-Sugar All Natural Pork Sausage Roll
  • 1 tablespoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon kosher salt
  • 6 cups chicken stock
  • 6-8 medium russet potatoes, cut into 1/2" cubes
  • 1 cup heavy cream
  • 5 ounces baby kale

Instructions:

  1. Turn the 6-quart Instant Pot to "Saute". Once you can feel the heat when you hold your hand above it, add olive oil and crumble in the sausage.
  2. Cook, stirring occasionally and breaking up the sausage as desired (I like bigger chunks), until the sausage is cooked through, about 3-5 minutes. Drain excess the sausage drippings from the pan (if necessary).
  3. Add the Italian seasoning, onion powder, garlic powder, red pepper flakes and salt. Stir to combine.
  4. Add the potatoes and pour in the chicken stock. Stir to combine and scrape the bits from the bottom of the pot.
  5. Close the lid on the Instant Pot. Select "Manual" setting on the Instant Pot. Turn the pressure to high. Set timer for 8 minutes. Make sure the vent is closed.
  6. When cook time is complete, quick-release pressure according to manufacturer's directions.
  7. Use a slotted spoon to remove 2 cups of potatoes from the pot and place them in a bowl. Mash the potatoes and pour them back into the pot; this will help thicken the soup.
  8. Add the cream and kale to the soup, and stir to combine. Continue cooking the soup until the kale is wilted and tender, about 3 more minutes.
  9. Serve and enjoy!
