Sausage Gravy and Biscuit Skillet

Classic Sausage Gravy and Biscuits can be on your table in just 30 minutes. This is a one skillet recipe that is sure to make it into your permanent recipe file. Flavorful saw mill gravy made with sausage and scrumptious biscuits that goes from prep to plate in 30 minutes.

I have eaten my share of sausage gravy and biscuits growing up, as a matter of fact I worked at a southern restaurant in my teens. Truth is, I had a lot of jobs in my younger years.

I think I was finding my place. Well this restaurant wasn't it long term, but their food was amazing and I ate biscuits and gravy every day at work.  You could easily say sausage gravy and biscuits are one of my favorites.

How to Make Sausage Gravy

Even though it is a favorite, I have shyed away from making it because I didn't want to go through all the work of making biscuits and washing all those pans.

Ugh.  That was until I created this fabulous one skillet recipe.

The sage breakfast sausage is cooked in an oven safe skillet.  Scrumptious saw mill gravy is built right in that same skillet and then cheesy biscuits are dropped on top of your sausage gravy.

Just pop the skillet in the oven to bake the biscuits and it is ready to serve.

I even clean up the kitchen and set the table while the biscuits are cooking.  Easy peasy.

The perfect family breakfast (or lunch or dinner).  Truthfully its so good, I eat it any time of the day!

Just 30 minutes from prep to plate and enough time to phone a friend or clean your kitchen.

Helpful Tips to make Sausage Gravy and Biscuit Skillet:

  • If the gravy thickens too much, add a splash of milk to loosen it back up.
  • The sausage gravy will thicken as the biscuits cook in the oven so be sure it is a little looser when you put it in the oven.
  • This recipe calls for Parmesan cheese, but feel free to use any type of cheese that you like!

Hot sausage combines with red bell and jalapeno peppers to add some fantastic flavor to Spicy Mexican Corn Skillet with Sausage

Some days by the time I am getting dinner ready I really have no energy left. All I want to do is feed my family and go relax. One skillet meals are such a life saver. Aside from the option of making a huge mess and leaving it for the morning (which I have to admit may have happened once or twenty times), cleaning up a skillet and a few plates is so much more appealing after dinner.

This weekend I was craving an easy dinner with corn. When I think of comfort food, I think of corn (it is the perfect partner for mashed potatoes, right). Did I mention I am a corn lover? Chad is from Iowa and he took me back home for the Sweet Corn Festival in Cedar Rapids a few years back.

I fell in love with the whole town. I think it could have been all the corn. Just kidding.

One of my favorite parts of this recipe is this awesome Kitchen Hack for Halving Grape Tomatoes. It is one of my most fun kitchen tips. I love slicing tomatoes, grapes and olives this way.

I mean you could use a cooks knife and cutting board, but why? But seriously I love corn, so why not make it the centerpiece for a fabulous Mexican skillet? The perfect weeknight dinner bursting with flavor that goes from prep to plate in just 25 minutes. What more could you ask for?

Spicy Mexican Corn Skillet with Sausage

Mexican Corn Skillet with Sausage is a fabulous simple recipe ready in 25 minutes, made all in one skillet. Hot sausage combines with red bell and jalapeno peppers to add some fantastic flavor to sweet roasted corn. Finish this dish off with some fresh tomatoes and spices and you have a home run. This simple recipe is definitely going on our permanent meal plan!

    Ingredients

    • 1 pound hot sausage links or ground
    • 1 red bell pepper, chopped into bite size pieces
    • 2 jalapeno peppers, (seeded, deveined and diced)
    • 2 cups frozen corn
    • 1 cup grape tomatoes, halved
    • 1 teaspoon ground cumin
    • ½ teaspoon fresh ground black pepper

    Instructions

    1. Place a large 12” cast iron skillet over high heat, allow pan to warm (about 2-3 minutes).  Remove sausage from casing (if necessary) and add to hot pan.  Break up the sausage with a spatula or a chop N stir.  Cook until fully cooked through, stirring occasionally, about 3 minutes.
    2. Meanwhile cut red peppers into bite size pieces and dice jalapenos.
    3. Remove sausage from skillet when cooked through and place on a plate.  Add red bell pepper and jalapeno peppers to hot skillet.  If there are no drippings from the sausage add 1 tablespoon extra virgin olive oil.  Toss peppers and cook for 2 minutes until they start to soften slightly.
    4. Move peppers to the edges of the skillet and pour corn into the center.  Move corn around with spatula to make the layer as thin as possible (so a lot of the corn is touching the skillet).   Allow corn to brown, about 3-5 minutes.
    5. Meanwhile, slice grape tomatoes into halves. Use this kitchen hack for fast tomato slicing.
Add sausage back to skillet, add cumin and pepper. Stir to combine. Add tomatoes on top and cook until tomatoes are warmed through.
    6. Serve and enjoy!

Helpful Tips to make Cheese Lovers Mac and Cheese with Broccoli:

    • Pre-shredded cheeses have additives to help keep the cheese from sticking together, called anti-caking agents. They also change the way the cheese melts and will cause thickening of your recipes. Skip the pre-shredded cheese and grate your own. I store it in a zip-top bag in the fridge and it keeps for several weeks.

Yes! One of the easiest ways to save time on a busy morning is by preparing your breakfast the day or weekend before.

Take some time on the weekend and make a batch of these breakfast sliders so you have breakfast all week.

Once the sliders are cooled, place each one (or two) in a freezer bag. They will stay good in the freezer for up to three months this way.

The best way to start your day off is with a good breakfast. Perhaps something hearty that will give you energy for the hours to come. But not everyone is that fortunate.

To this day, I express my gratitude daily for a fully stocked pantry! I have instilled this gratitude in my daughter as we never know what tomorrow holds.

Growing up my parents really struggled to make ends meet. My dad worked several jobs and he worked more than he was home. My mom ran a daycare out of our home and was virtually raising us 5 kids on her own while my dad was working.

Missed birthdays, holidays and family days are too many to be counted, but with all their hard work and dedication we never missed a meal. My mom told me years later that some months were dicey. But they always managed to make it work.

Just make up this easy recipe and toss them in the freezer. Pop them in the microwave in the morning for an easy grab and go breakfast.
prep time: 30 minscook time: 30 minstotal time: 60 mins

    Ingredients

    • 1/2 (16-ounce) bag of frozen tater tots
    • 1 pound applewood-smoked bacon, cooked and chopped
    • 1 pound breakfast sausage
    • 12 large eggs
    • 1/2 cup whole milk
    • 1/2 teaspoon kosher salt
    • 1/4 teaspoon black pepper
    • 8 large flour tortillas
    • 8 ounces O Organic shredded Mexican cheese blend
    • 2 Roma tomatoes, seeds removed and diced
    • a handful of fresh parsley, chopped

    Instructions

    1. Prepare tater tots according to package directions. I prefer mine in the oven until crispy.
    2. Meanwhile, prepare bacon. I love my bacon in the oven. 400ºF on a baking sheet. Cook 15-25 minutes or until desired doneness is reached. Remove from the oven. Allow to cool and chop into bite-size pieces.
    3. In a medium skillet over medium-high heat, cook the breakfast sausage. Be sure to break the meat up with a spatula as it cooks. Once cooked completely, drain (if necessary) and set aside.
    4. In a large bowl (I use an 8-cup measuring cup) combine eggs, milk, salt, and pepper. Whisk until completely combined.
    5. Spray a large skillet with non-stick cooking spray. Heat skillet over medium heat. Add the egg mixture and stir occasionally until the eggs are scrambled and no liquid is left in the pan, about 5 minutes. Do not cook until they are completely dry, or they will be very dry in the burrito.
    6. To assemble burritos: lay one burrito on the counter. Add about 1 ounce of cheese. Top with a sprinkle of tomatoes and parsley. Add sausage, bacon, about 1/2 cup egg mixture and a big spoon of tater tots.
    7. Fold the outer edges into the burrito and hold in place with your middle, ring and pinky fingers. Gather the edge of the burrito closest to you with your thumb and index finger. Fold the burrito over and around the filling, tuck the edge under the filling. It should look like a burrito with one side open now. Pull the rolled portion of the burrito snug as you continue to roll the rest of the burrito, folding in the sides of the untucked side like an accordion a few times until the burrito is closed.
    8. Place the burrito seam side down on a sheet of foil or plastic wrap. Wrap the burrito snuggly and place it in a one-gallon freezer bag. Repeat until all burritos are in the freezer bag. Freeze for up to 3 months.
    9. Reheat Directions: Remove foil or plastic wrap from the burrito and wrap it with a paper towel. Microwave for 2-3 minutes or until heated through.

    DONNA'S NOTES

    1. If you would like to serve these immediately, wrap in foil and place on a baking sheet in a preheated 400ºF oven. Bake for 10-12 minutes or until heated through.
