This recipe has been a family favorite for several years now. It is either on the menu or in the freezer ready to pull out for quick lunches every week.

I can not tell you how many days have slipped by and I was able to pull something together from the pantry. One of my favorites is this 5-Ingredient Lazy Day Chili.

I put this together one day when I didn't have anything ready for dinner one night. I grabbed a few cans from the pantry and some ground beef and I whipped up the most amazing chili.

It is so good and so easy that it is now my go-to chili and everyone who has ever tried it goes crazy over it.

Our Mexican Rice Casserole received 4 thumbs up from our very picky 6 year old (apparently the toes count too, who knew?). NOTE: We originally shared this post almost 3 years ago. She is almost 9 now and it is still one of her favorites!

I even packed up a One Skillet Mexican Rice Casserole meal to take to one of our best friends tomorrow.

Munchkin informed me that she needed her own meal and I had to take a bowl out of the meal we were delivering for her. Apparently my daughter had plans for leftovers. LOL

I actually make this quite often and let the casserole cool for a while and then scoop 3 tablespoon portions of it onto a baking sheet topped with a silpat mat and flash freeze them for 4 hours to overnight. Then I toss them in a 1 gallon freezer bag for easy lunches. It is ALWAYS in my freezer and my favorite meal to bring to friends!

Perfectly seasoned ground beef comes together with tomatoes, black beans, corn, jalapenos and rice to create this absolutely simple recipe that will knock your socks off. Smoky, spicy and so hearty.

Our simple one pot Mexican meal is sure to be on your table again and again!

Helpful Tips to make One Skillet Mexican Rice Casserole:

  • Why New Mexico Chile Powder? It has a deep dark reddish brown color and features an earthy, sweet flavor and subtle, spicy heat. It is mildly hot and absolutely perfect in this sauce. It creates a truly authentic flavor! New Mexico Chili Powder can be found in the international aisle in the bulk bags or on Amazon. if you are afraid the heat will be too much you can use half New Mexico Chili Powder and 1/2 regular chili powder.
  • Using fire-roasted tomatoes in place of crushed or diced tomatoes gives recipes a depth of flavor that makes you think it cooked all day long.
  • If you prefer a less spicy dish, you can substitute the diced jalapenos with green chiles. 
  • Our favorite toppings are a dollop of sour cream or guacamole.

One Skillet Mexican Rice Casserole

One Skillet Mexican Rice Casserole is a simple recipe that comes together in just 30 minutes. A one pot meal featuring your favorite Mexican flavors that cooks all in one pan. You can't beat that! It is a quick and easy weeknight dinner option with little clean up!

Ingredients

  • 1 pound lean ground beef
  • 1 1/2 teaspoons kosher salt, divided
  • 2 teaspoons New Mexico chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon fresh ground black pepper
  • 1 (15 ounce) can low-sodium black beans, rinsed and drained
  • 1 (14.5 ounce) can fire roasted tomatoes with garlic
  • 1 (15.25 ounce) can niblet corn, rinsed and drained (or 1 cup frozen corn)
  • 1 (4 ounce) can fire roasted diced jalapenos
  • 1 cup jasmine rice
  • 2 cups water
  • 8 ounces Colby jack cheese, shredded
  • optional garnish: fresh cilantro, chopped

Instructions

  1. Warm a large (10") skillet over medium high heat. Add ground beef and 1/2 teaspoon salt. Cook until beef is cooked through. Drain excess drippings if necessary (I had very little drippings and did not have to drain). Sprinkle spices over the beef (chili powder, cumin, paprika, onion powder, pepper and remaining 1 teaspoon salt). Stir to combine.
  2. Add black beans, tomatoes, corn, jalapenos and rice to skillet. Stir to combine. Add water. Stir to combine. Cover and bring to a boil. Once mixture is boiling, stir well making sure there are no bits stuck to the bottom. Reduce to simmer.
  3. Cook 15 minutes or until rice is cooked through. Remove cover half way through and stir well, unstick any bits stuck on the bottom of the pan.
  4. Remove skillet from the heat, sprinkle with cheese. Place skillet under broiler until cheese is completely melted, about 2 minutes.
  5. Sprinkle with cilantro. Serve and enjoy!

DONNA'S NOTES

  1. If you prefer a less spicy dish, you can substitute the diced jalapenos with green chiles. Another option is to serve with a dollop of sour cream on top. The cream will mellow out the heat in the jalapenos.

Difference Between Taco Lasagna and Mexican Lasagna

Mexican lasagna and taco lasagna are basically the same ground beef lasagna recipe.

Meat and beans make this a very hearty meal, and the lasagna has layer upon layer of scrumptious Mexican flavors with a little kick of heat to wake up your taste buds.

Corn tortillas separate the layers rather than the traditional lasagna noodle.

Can you make Mexican lasagna with noodles?

Yes, you can definitely make this Mexican lasagna with noodles.

What kind of tortillas to use

I used large flour tortillas when I made taco lasagna with tortillas. But, you can use corn or flour tortillas.

It's an easy recipe you can modify for your family's taste preferences and what you have on hand to cook with.

Is Taco Lasagna recipe spicy?

If you want this lasagna with tortillas to be spicy, you can add New Mexico chile powder. If you prefer dishes that aren't as spicy, you can use less in your recipe.

This taco lasagna with tortillas is only as spicy as you want it to be.

How to assemble lasagna with tortillas

  • Smooth about 1/3 of the enchilada sauce over the bottom of a 9x13 baking pan.

  • Then, lay the tortillas on the bottom of the pan, slightly overlapping until the pan is covered (about 4 tortillas).

  • Spoon half of the beef mixture over top of the tortillas and spread evenly.

  • Next, layer tortillas on top of beef mixture. Smooth about 1/3 of the enchilada sauce over the tortillas.

  • Sprinkle 1/2 of each of the cheeses on top and scatter the green chiles over the cheese.

  • Add the remaining beef mixture. Spread evenly. Layer tortillas on top of beef mixture.

  • Spoon the remaining enchilada sauce over tortillas.

  • Finally, sprinkle remaining cheese on top of tortillas and garnish the top with olives and scallions.

What you need to make this recipe
  • 10-inch Large Skillet - I have had this pan since 2006. It is my go-to large skillet. It heats evenly and quickly. The stainless steel cleans up beautifully with a little baking soda so they still look brand new.
  • 9x13 Baking Dish - I have my favorites and this set is one of them. The 9x13 is perfect for casseroles and the smaller size is awesome for making 1/2 a casserole recipe.
  • New Mexico Chile Powder - This is one of my favorite spices. See the notes above.

Other protein options

We used ground beef in this taco lasagna with tortillas, but you can change up the protein if you want to.

If you are hoping for a lower fat option, you can use ground turkey, ground chicken, or even ground venison.

Or, if you want a vegan option, there are several different types of protein crumbles you can find in the store. Any of these will still be delicious.

Is this casserole freezer friendly?

Yes, this is an easy freezer-friendly recipe.

Either wrap individual portions in plastic wrap and then place in a freezer bag, or divide the recipe between 2 smaller casserole dishes and freeze one (freeze it uncooked, then just defrost, cook, and enjoy!).

Taco Lasagna with Tortillas

Taco Lasagna has layers of tortillas, ground beef, and south-of-the-border flavors. Prep this fabulous, easy casserole recipe in 15 minutes!

Ingredients

  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1/2 small yellow onion, grated or finely chopped
  • 2 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 tablespoon New Mexico chile powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 (14.5 oz) can fire roasted diced tomatoes
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 1/2 cups frozen sweet corn
  • 1 (4 oz) can fire roasted diced green chiles
  • 1 (10 oz) can enchilada sauce (or our homemade enchilada sauce)
  • 12 8” large flour tortillas
  • 8 ounces Pepperjack cheese, shredded
  • 4 ounces Colby Jack cheese, shredded
  • 6 oz can sliced olives, drained
  • 2 scallions, finely chopped
  • 2 tablespoons chopped cilantro

Instructions

  1. Preheat oven to 425°F.
  2. Drizzle olive oil into a large skillet, over medium high heat. Add beef, onion, paprika, cumin, chili powder, salt and pepper to skillet. Brown beef for about 5-7 minutes. Add tomatoes, beans and corn. Stir to combine. Allow to cook while you begin preparing the baking pan.
  3. Smooth about 1/3 of the enchilada sauce over the bottom of a 9x13 baking pan. Lay tortillas on the bottom of the pan, slightly overlapping until pan is covered (about 4 tortillas).
  4. Spoon half of the beef mixture over top of the tortillas, spread evenly. Layer tortillas on top of beef mixture. Smooth about 1/3 of the enchilada sauce over the tortillas. Sprinkle 1/2 of each of the cheeses on top. Scatter the green chiles over the cheese. Add the remaining beef mixture. Spread evenly. Layer tortillas on top of beef mixture. Spoon remaining enchilada sauce over tortillas. Sprinkle remaining cheese on top of tortillas. Garnish top with olives and scallions.
  5. Bake for 10-15 minutes, until cheese is melted and lasagna is warmed through. Remove from oven and sprinkle with cilantro.
  6. Serve and enjoy!

One Pot Chicken Parmesan Pasta

One Pot Chicken Parmesan Pasta is made with a few simple ingredients and comes together in one skillet. It is made with all of your favorite Chicken Parmesan ingredients and flavors.

Ingredients

  • 1 pound chicken breast, cut into 1 inch pieces
  • salt and pepper
  • 2 tablespoons olive oil
  • 1/2 cup diced yellow onion
  • 1 tablespoon minced garlic
  • 12 ounces rigatoni pasta
  • 2 cups marinara sauce
  • 2 cups chicken or vegetable broth
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • chopped fresh basil, for garnish

Instructions

  1. Season chicken with salt and pepper; set aside.
  2. In a 12” pan or skillet, heat olive oil over medium heat. Add onions and stir until soft, about 3 minutes. Add chicken to pan and cook until brown on both sides. Stir in garlic and cook one additional minute. Add uncooked pasta, sauce and broth. Stir then bring to a boil.
  3. Reduce heat to low, cover and simmer for 20 minutes, or until pasta is al dente. Sprinkle with mozzarella and parmesan cheese. Cook until cheese is melted. Garnish with fresh basil.
  4. Enjoy!

There are so many amazing flavors going on in this One Pot Creamy Chicken Tortellini.

You've got the intense sweet, tart flavor of sun-dried tomatoes, a rich, creamy, cheesy sauce that coats everything, and the salty, smoky flavor of bacon. Mmm, bacon, it really does make everything better.

All of those ingredients are cooked together with fresh baby spinach, chicken thighs with crispy skin, and cheese tortellini for a one pot dinner that the entire family will love.

Helpful Tips to make One-Pot Creamy Chicken Tortellini:

  • Use refrigerated tortellini rather than frozen so it cooks quickly.
  • You can substitute boneless, skinless chicken thighs, or chicken breasts if you prefer.
  • Don't want to cook bacon? You can use pre-cooked bacon or add sliced proscuitto instead!
  • If you don't have a skillet big enough any large pot will work.

What you will need to make One-Pot Creamy Chicken Tortellini:

  • 4 Qt Braising Pan or a large skillet with a lid- I would suggest at least a 12-inch skillet for this recipe!
  • Cheese Grater - Fresh cheese makes this recipe even better. Buy a block of fresh cheese and grate your own.

One Pot Creamy Chicken Tortellini

One-Pot Creamy Chicken Tortellini is an easy weeknight dinner recipe with tender chicken thighs tossed in an Italian rich, cheesy Italian blowing sauce. It is a complete dinner that only takes one pot and 30 minutes to make!
prep time: 5 minscook time: 20 minstotal time: 25 mins

Ingredients

  • 4 chicken thighs, boneless, skin-on
  • 3 tablespoons olive oil, divided
  • 1 clove garlic, finely diced
  • 3 tablespoons all-purpose flour
  • 1 1/2 cup chicken stock
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 20 ounces tortellini, refrigerated
  • 4 strips bacon, cooked and chopped
  • 1 ounce sun-dried tomatoes
  • 2 ounces baby spinach

Instructions

  1. In a large skillet over medium-high heat add 1 tablespoon of olive oil and the chicken thighs (skin down). Cook chicken thighs for about 6 minutes on each side or until the internal temperature reaches 165 degrees F.
    Remove chicken from skillet and place on a plate covered with foil.
  2. Add 2 tablespoon of remaining olive oil and the garlic to the skillet. Cook for 1 minute. Then add flour and cook for 2 minutes.
  3. Pour chicken stock and heavy cream into the skillet whisking until the mixture is smooth. Bring to a boil and add Parmesan cheese.
  4. Turn heat down to medium and add tortellini, bacon, sun-dried tomatoes, and spinach to the cream sauce. Cover pot and let cook for 5 minutes stirring occasionally to make sure the tortellini is coated in the sauce and doesn't stick to the bottom of the skillet.
  5. After 5 minutes nestle the chicken thighs into the pasta and continue to cook with the lid on for 3-4 minutes until tortellini is heated through.
  6. Serve with a little more Parmesan sprinkled on top.

Helpful Tips to make Ravioli and Sausage Skillet :

  • Using fire-roasted tomatoes in place of crushed or plain diced tomatoes gives recipes a depth of flavor that makes you think it cooked all day long.
  • Try substituting 1 pound of your favorite Italian cheeses in place of the cheese blend. I use 8 ounces of mozzarella cheese, 4 ounces provolone and 4 ounces Romano or Asiago.

Ravioli and Sausage Skillet

Ravioli and Sausage Skillet in 30 Minutes! Loaded with a mind blowing flavor explosion from pasta, cheese, sausage and tomatoes. My meat and potatoes loving husband insisted that this was the meal I serve at our holiday get togethers. Looking for an easy recipe that makes an impressive holiday dinner in no time? Ravioli and Sausage Skillet is it!
prep time: 15 minscook time: 15 minstotal time: 30 mins

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 16-oz bulk hot Italian sausage (chicken, turkey or pork)
  • 1 (14.5 ounce) can fire roasted diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • 1 tablespoon tomato paste
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh ground black pepper
  • 1 1/2 cups water
  • 16 ounces shredded Italian cheese blend, divided
  • 25-oz frozen mini round cheese ravioli
  • 4-oz Parmesan cheese, grated
  • 6 basil leaves, chopped

Instructions

  1. Add olive oil to a large skillet over medium-high heat. Add sausage to skillet. Stir occasionally until cooked through.
  2. Add diced tomatoes, tomato sauce, tomato paste, Italian seasoning, garlic and onion powders, salt and pepper. Mix to combine. Add water and ravioli. Stir and cover. Cook 10 minutes or until ravioli is tender, stirring occasionally.
  3. Preheat oven to broil.
  4. Add 4 ounces of Italian cheese blend to skillet and gently fold in to combine. Sprinkle the remaining 12 ounces over the top of the skillet.
  5. Broil in oven for 2-4 minutes until the top is bubbly and golden brown. Watch carefully cheese can turn crispy in a blink.
  6. Remove from oven with oven mitts!! Sprinkle fresh grated Parmesan cheese over top, garnish with fresh basil, serve and enjoy.

I’m Jacqueline, and I blog over at Go Go Go Gourmet- my mantra is all about “less effort, more taste,” and I have definitely achieved that with this incredibly simple, but absolutely delicious pasta dish that is a guaranteed family dinnertime hit. I’m so happy to be bringing my recipe philosophy over to my friends Donna and Chad here at TSRI!

I have been a seafood lover for about as long as I can remember. When I was younger and would go out to dinner with my parents, my dinner of choice was almost always a shrimp cocktail.

As I got older, my love of all things seafood grew, which is equaled by two things- an affinity for all things pasta and a hatred of doing dishes. This creamy garlic shrimp pasta hits it out of the park for me- a luscious creamy cheese sauce develops after cooking pasta straight in milk, cream, and water.  No roux needed here!

HELPFUL TIPS TO MAKE ONE POT CREAMY GARLIC PARMESAN SHRIMP PASTA:

  • The amount of liquid that you use in this will depend on how fast your pasta cooks. I started off with 1 1/2 cups of each liquid, but I ended up adding another cup and a half when I stirred in the Parmesan to get the dish creamier. 
  • Add milk or cream until you get the texture that you prefer- thicker vs. thinner. You can substitute the shrimp in this recipe if you prefer- rotisserie chicken would be outstanding. The amount you choose to put in is also flexible and entirely up to you!

WHAT YOU WILL NEED TO MAKE ONE POT CREAMY GARLIC PARMESAN SHRIMP PASTA:

  • Wide Shallow Pan - a 4-quart braiser is one of my favorite pans. It is wide and shallow and perfect for one-pot recipes! Using a wide pan gives more surface area so your pot will heat more evenly and cook faster.
  • Garlic Press-One of my moist used kitchen tools! I received mine as a gift years ago and I can't imagine why I never had one. It minces garlic with one squeeze, with the peel still on!

One-Pot Creamy Garlic Parmesan Shrimp Pasta
SERVES 6   |  ACTIVE TIME 5 MIN   |  TOTAL TIME 20 Min

3 tablespoons butter
3 cloves garlic, minced
2 cups water
2 cups milk
1 1/2 cups heavy cream
2 teaspoons kosher salt, or to taste
1 teaspoon freshly ground pepper, or to taste
1 pound angel hair pasta
1 cup parmesan
1 pound jumbo shrimp, peeled and deveined
3 tablespoons chopped parsley

In a wide deep skillet (I love this 4-qt braiser), melt the butter over medium-high heat. Add the garlic and saute until lightly golden.

Pour the water, milk, cream, salt, and pepper in the skillet and whisk together. Bring to a simmer, then add in the angel hair pasta. Cover and cook until almost al dente, about 5-7 minutes.

Stir in the Parmesan cheese. Top with the shrimp and sprinkle with parsley.  Re-cover and simmer for an additional 5 minutes, until shrimp is cooked through, pasta is tender, and sauce is thickened. Serve immediately.
