Succulent sun-dried tomatoes, briny kalamata olives, herbed chicken and tender baby spinach all come together in a rich and creamy cheese sauce. It’s most definitely my favorite one-pot wonder and it’s ready in just 30 minutes.

One of my favorite kinds of recipes to cook is one-pot meals. I am sure you have noticed my infatuation with one-pot recipes over the years.

So naturally when we were deciding what was most important to be in our first cookbook, we knew One-Pot Wonders needed it's own chapter!!!

🔥 "One-Pot Wonders" are rock star recipe with very little clean up and an ease of preparation. All 10 recipes in this chapter are tagged with their total cook time and they are all ready in 30 minutes or less.

At least half of these recipe simply require you to add the ingredients to the pot and turn on the stove. I can't wait for you to dive into this chapter.

I mean how much easier could it get???  You simply toss all of the ingredients into your Dutch oven and toss with tongs a few times as it cooks. Then voila, dinner is ready!

This recipe is crazy good, so good in fact that we I shared it with our friends that own a Greek restaurant they asked for the recipe!!!

Helpful Tips to make One-Pot Cheesy Greek Pasta with Chicken:

  • Grab two lids of the same size. You can use plasticware or lids from your fridge. Place one lid with the lip facing up, so you have an edge that will hold your food. Fill the lid with pitted kalamata olives. Place the second lid on top of the olives with the lip facing down. Firmly press down on the top lid. The two lips will hold the olives in place, so they do not roll off the lid. Slide your serrated knife between the lids and carefully slice through them. Watch your fingers. Now you have halved olives in the blink of an eye!

What you will need to make One-Pot Cheesy Greek Pasta with Chicken:

  • Dutch oven - I love this set and use it all the time. It is perfect for roasts and I especially love it for my one-pot meals.
  • Tongs - I love this set of 3. I use every pair of them. They are so handy and grip amazingly well!

Enjoy!

One-Pot Cheesy Greek Pasta with Chicken

One-Pot Cheesy Greek Pasta with Chicken is a simple recipe featuring our favorite Mediterranean ingredients that infuse big, bold flavors in this ambrosial Greek pasta dish. Succulent sun-dried tomatoes, briny kalamata olives, herbed chicken and tender baby spinach all come together in a rich and creamy feta wine sauce. It’s most definitely my favorite one-pot wonder and it’s ready in just 30 minutes.
prep time: 15 minscook time: 15 minstotal time: 30 mins

Ingredients

  • 1 cup sun-dried tomatoes packed in oil and Italian herbs, drained
  • 1 large yellow onion, sliced
  • 1 lb boneless, skinless chicken breasts, cut into 1/2" pieces
  • 6 cloves garlic, sliced
  • 1 cup kalamata olives, pitted and halved
  • 1 lb linguine pasta, uncooked
  • 2 teaspoons dried oregano
  • 1 teaspoons freshly ground pepper
  • 1 teaspoons kosher salt
  • 8 cups baby spinach leaves, divided
  • 4 cups chicken stock
  • 1 cup Chardonnay
  • 8 ounces feta cheese, crumbled

Instructions

  1. Combine the tomatoes, onion, chicken, garlic, olives, linguine, oregano, pepper and salt with 4 cups of the spinach in a 12-inch braising pan or Dutch oven over medium-high heat. Pour the chicken stock and the wine over the top.
  2. Cover and bring to a boil. Cook for 7 to 9 minutes, until the pasta is al dente (has a bite to it). Toss the pasta with tongs occasionally to keep it from sticking to the bottom of the pot. You will still have some liquid in the pan when the pasta is done cooking; this is going to make the base for our delicious cheese sauce.
  3. Turn off the heat and add the cheese to the pasta. Toss the pasta with tongs until the cheese melts into the pasta. Toss in the remaining 4 cups (120 g) of spinach.

DONNA'S NOTES

  1. Grab two lids of the same size. You can use plasticware or lids from your fridge. Place one lid with the lip facing up, so you have an edge that will hold your food. We love one-pot meals. I mean delicious dinner and easy clean up. How can you beat that?

That is exactly why we have an entire chapter dedicated to one-pot wonders in our new cookbook The Simple Kitchen!!!

Some of my new favorite new one-pot recipes are in there are you are going to love them!!!

As you all know I am very passionate about simple cooking and I make a lot of one-pot recipes, but the "One Pot Wonders" are truly my favorite.

You just toss the items in the pot, turn the stove on and almost like magic the entire pot turns into one enchanting dinner.

I love that the pasta cooks right in the pot and absorbs all of the flavors from the ingredients you add.

I created this new recipe especially for an event Chad and I presented at last year and we decided that we really wanted to take it to the next level so Chad and I also created a video for you.

Let me know how you are liking the videos. They are a lot of fun and we are excited to keep doing them.

Now, let me tell you... This is TRULY my favorite One-Pot ever posted on our site! {Leave room for another one that is in the cookbook that would give this recipe a run for it's money.}

The addition of chicken and herbs and spices come together with the chicken stock and chardonnay to create an amazing flavor combination.

The fresh spinach is cooked in the pot and more it stirred in at the end to give you cooked and wilted spinach. It is truly the perfect American-Italian dinner!

Did you listen to the video? I suggest you leave the music on, it is such a happy song it will make you want to jump up and go make the pasta.

Pot Cheese Italian Pasta and Chicken is a rich and savory dish bursting with your favorite One-Pot Cheesy Italian Pasta and Chicken (with VIDEO)

Helpful Tips to make One-Pot Cheesy Italian Pasta and Chicken:

  • Dried Italian Seasoning is a fabulous convenience ingredient. If you do not keep it on hand, combine 1 teaspoon dried basil, 1 teaspoon rosemary, 1/2 teaspoon oregano and 1/2 teaspoon dried thyme.
  • This dish is just spicy enough to make your tongue tingle. For a very mild sauce, reduce the red pepper flakes to 1/2 teaspoon.
  • I know some people are sensitive to alcohol. The wine adds a fabulous rich buttery flavor and a bright citrusiness to the pasta. If you can use the chardonnay, I highly recommend it. However, you can substitute with chicken stock, white grape juice, or lemon water (1/2 cup fresh lemon juice and 1/2 cup water).

What you will need to make One-Pot Cheesy Italian Pasta and Chicken:

  • 4 Quart Braising Pan - this is my favorite for my one pot wonders. The spaghetti fits inside so you can put the lid on.
  • Tongs - I love this set of 3. I use every pair of them. They are so handy and grip amazingly well!

Recipe has all the great classic chicken fajita flavors combined with creamy pasta in a p One-Pot Chicken Fajita Pasta

With everyone back to school, we're all in need of quick and easy weeknight dinners.  In our household, pasta is always a great dinner go-to, with adults and kids alike.  This chicken fajita pasta is a combination of three things that we love; chicken fajitas, pasta, and one-pot meals!

Hey guys, it's Amanda from The Chunky Chef.  I love being a contributor here on TSRI, and will be here sharing some of my favorite recipes each month!  I look forward to bringing some of my midwestern flair and enjoying some treats together.

When it comes to one pot meals, I can't get enough!  There's something so satisfying about an entire meal cooked in one pot... with no extra pots and pans to wash up after dinner.

Not only is this chicken fajita pasta made entirely in one pot, it’s also incredibly flavorful!  It’s creamy and savory, with the great texture from the chicken and fajita vegetables.

Recipe has all the great classic chicken fajita flavors combined with creamy pasta in a p One-Pot Chicken Fajita Pasta

Helpful Tips to make One-Pot Chicken Fajita Pasta:

  • Make sure to keep your chicken pieces similar in size.  The chicken in this recipe cooks in just a few minutes, so you need to make sure the chicken pieces are all close to the same size so they can fully cook at the same time.
  • The heat level (in my opinion) is between a mild and medium, however you can make it spicier by using hot diced tomatoes and green chiles, or by substituting jalapeño for the green bell pepper.  You can make it milder by using plain diced tomatoes instead of the diced tomatoes with green chiles.
  • There is no cheese in this recipe, however if you are a cheese lover, feel free to add in a handful of your favorite cheese when you add back in the chicken and peppers.

What you will need to make One-Pot Chicken Fajita Pasta:

  • Dutch oven - I love the size of this pot.. it's perfect for this recipe and it holds the heat really well.
  • Fajita seasoning - this the brand I love.

Enjoy!

One Pot Chicken Fajita Pasta

This hearty One-Pot Chicken Fajita Pasta Recipe has all the great classic chicken fajita flavors combined with creamy pasta in a perfect weeknight meal!
prep time: 10 minscook time: 25 minstotal time: 35 mins

Ingredients

  • 3 tablespoons olive oil, divided
  • 1 pound boneless, skinless chicken breasts, cut into 1/2 - 1" pieces
  • 2-3 tablespoons fajita seasoning (taco seasoning works as well)
  • 1 large yellow or red onion, diced
  • 2-3 bell peppers (any variety), sliced into thin 1" long strips
  • 5 cloves garlic, minced
  • 2 cups reduced sodium chicken stock
  • 1/2 cup heavy cream
  • 10 ounce can diced tomatoes and green chiles (I used Rotel brand)
  • 8 ounces uncooked penne pasta (or other short cut pasta)
  • pinch of salt and black pepper, to taste
  • Lime wedges, for garnish
  • Diced green onions, for garnish
  • Minced fresh parsley or cilantro, for garnish

Instructions

  1. Add 1 1/2 tablespoons olive oil to dutch oven or 12" skillet and heat over MED HIGH heat. Add chicken, sprinkle with half of the fajita seasoning and cook about 2 minutes. Turn chicken pieces over (or give it a good stir) and cook the other side for another 1-2 minutes. Remove chicken to a plate and set aside.
  2. Add remaining 1 1/2 tablespoons olive oil to dutch oven and add in onions and peppers and remaining fajita seasoning. Cook, stirring occasionally, about 4-5 minutes, until softened and slightly charred. Add garlic, stir, and cook about 30 seconds, then remove vegetable mixture to the plate with the chicken and set aside.
  3. Pour in chicken stock, heavy cream, diced tomatoes and chiles, pasta, and a pinch of salt and black pepper. Use a wooden spoon to carefully loosen the browned bits from the bottom of the skillet and bring to a boil. Once boiling, reduce heat to a low boil (usually about a MED LOW heat should work), cover, and cook about 15 minutes, stirring occasionally.
  4. After 15 minutes, most of the cooking liquid should be absorbed. If it's not, cook another 3-5 minutes. Return the chicken and vegetables to the pot and stir to heat through.
  5. Serve garnished with diced green onions and minced fresh parsley or cilantro and with a squeeze of a lime wedge.

is a glorious dish that starts with tender pan One-Pot Chicken Alfredo

I have to tell you this Chicken Alfredo recipe has me giddy with excitement. Traditional Alfredo is a creamy Parmesan sauce made with cream, butter and Parmesan cheese. I really love putting a spin on traditional recipes to create my family favorites. And you certainly know by now that simple recipes are king in my house.

This simple one-pot recipe starts by cooking the chicken and then building a delicious Chardonnay Alfredo sauce on it. Next, the pasta is added directly to the pan and the pasta soaks up all the flavors of the scrumptious sauce, creating the most incredibly rich and creamy Alfredo sauce you have ever eaten. Prepared with Fettucine and chicken, for the easiest dinner ever.

I like to share our dinners when I am recipe developing. I package it up and send out texts to friends and family to come share in the deliciousness. But this one was so good Chad insisted we keep it for ourselves.

Yield: Serves 4

One-Pot Chicken Alfredo

One-Pot Chicken Alfredo is a glorious dish that starts with tender pan-fried chicken breast finished in a luxurious cream sauce that will blow your mind. A simple recipe, the fettuccine is cooked right in the sauce in the same skillet!
prep time: 10 MINScook time: 20 MINStotal time: 30 mins

Ingredients:

  • 2 tablespoons unsalted butter
  • 1 pound boneless skinless chicken breast, cut into bite-size pieces
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 cup (8-ounces) Chardonnay (white wine)
  • 1 cup (8-ounces) chicken stock
  • 1 cup heavy cream
  • 8 ounces uncooked fettuccine pasta (or whatever pasta you prefer)
  • 4 ounces fresh grated Parmesan cheese, about 2 cups
  • 1/4 teaspoon ground nutmeg
  • (optional) chopped fresh parsley to garnish

Instructions

  1. Warm a large skillet over medium-high heat, add butter. Once butter is melted add chicken and sprinkle with salt and pepper. Cook until browned, about 10 minutes. Add wine to skillet, use a rubber spatula to scrape the browned bits from the bottom of the skillet. Add broth and cream. Stir to combine.
  2. Add uncooked pasta to skillet. Stir to combine and coat pasta in the sauce (the pasta will cook right in the sauce absorbing the sauce and becoming incredibly flavorful). Bring to a boil.
  3. Once boiling, cover and cook 7-9 minutes until pasta is cooked al dente (with a bite to it). If you are using long pasta (spaghetti, fettuccine, etc) you will need to stir every minute or so after 7 minutes to make sure the pasta is combined and cooking in the sauce.
  4. Once pasta is cooked al dente, remove from heat. Stir in Parmesan cheese and nutmeg. If necessary, add salt and pepper to taste. Garnish with fresh parsley (or basil would be good too).
  5. Serve and enjoy!
