We went absolutely nuts over this recipe and I know you will too. Everyone loves our No-Bake Avalanches Cookies and you know me. I have to tinker with our favorites and create new versions. So of course, I took our original recipe and amped it up and created our Rocky Road Avalanche Bars which are in our new cookbook: The Simple Kitchen. Available for pre-order now!

They are truly so amazing that I knew I needed to create another avalanche cookie recipe and when I saw that Cap'n Crunch cereal is apart of the #FuelURAdventure campaign at Safeway, I knew I found the perfect ingredient.

    No-Bake Cap'n Crunch Avalanche Cookies

    No-Bake Cap'n Crunch Avalanche Cookies are a simple 5-ingredient recipe that comes together in just 15 minutes! Imagine creamy peanut butter fudge swirled with chocolate and speckled with Cap'n Crunch cereal and fluffy marshmallows. It's the ultimate treat. A creamy, fudgy, crunchy, peanut buttery treat that has the right touch of chocolate and is perfectly sweet! Hurry, you probably have everything you need to make this in your pantry!

    Ingredients

    • 1/2 cup mini chocolate chips
    • 16 ounces (about 2-1/2 cups) white chocolate chips
    • 16 ounces (about 1-3/4 cups) honey roasted chunky peanut butter
    • 3 cups Cap'n Crunch cereal
    • 1 1/2 cups mini marshmallows

    Instructions

    1. Prepare 2 baking sheets with silicone mats or parchment paper. Set aside.
    2. Place mini chocolate chips in the freezer, until ready to use.
    3. Melt white chocolate chips in a large heat safe bowl, microwave 30 seconds at a time until melted and smooth, stirring between each interval.
    4. Add peanut butter to the melted white chocolate chips. Stir until well mixed.
    5. Add cereal to peanut butter mixture and fold in. Allow mixture to cool to room temperature (or until barely warm), if necessary. Mine was room temperature and didn't need to cool.
    6. Fold in marshmallows and frozen chocolate chips, the chocolate chips will melt slightly and create delicious streaks of chocolate throughout your cookies. Don't overmix or the chocolate chips will complete dissolve.
    7. Use a 2 tablespoon scoop to portion treats onto the prepared cookie sheets. Lightly press down on the top of each cookie with the back of the scoop to spread the cookie out.
    8. Refrigerate until firm, about 15 minutes. Keep refrigerated for best results.
    9. Serve and enjoy!

    It all starts with a divine peanut butter and white chocolate base. It is stirred into rice krispies and then combined with fluffy mini-marshmallows and chocolate chips.

    I first discovered  Rocky Mountain Chocolate Factory during a visit to Sedona. The aroma from the store was wafting down the sidewalk and it just about lifted me up by the nose and escorted me inside. My head was swirling. There was case after case of delicious treats to enjoy.

    I was with Chad and my then 5-year-old daughter. I couldn't make a decision, everything looks soooo good. We each ordered 2 things to try and all shared. We pretty much declared their Avalanche Bark the best thing on the planet.

    Well after a few more run-ins with Rocky Mountain Chocolate Factory and many more treats, I decided to work on a copycat make a home version. If you got a gift basket from me this Christmas, it certainly had a few of these fabulous cookies in a treat bag.

    Ingredients

    • 1/2 cup mini chocolate chips 
    • 16 ounces vanilla flavored candy coating ( Almond Bark or CandiQuik)
    • 1 (15 ounce) jar creamy peanut butter 
    • 2 cups Rice Krispies cereal
    • 1 1/2 cups mini marshmallows

    Instructions

    1. Prepare 2 cookie sheets with a silpat mat or parchment paper. Set aside.
    2. Place chocolate chips in the freezer, until ready to use.
    3. Melt Almond Bark in a heat safe bowl, microwave at half power for 30 seconds at a time until melted and smooth. 
    4. Meanwhile: Add rice krispies to a large bowl. Set aside.
    5. Add peanut butter to Almond Bark. Stir to combine.
    6. Pour vanilla candy mixture over rice krispies. Stir until combined. Allow mixture to cool to room temperature (or until barely warm).
    7. Add marshmallows. Mix until combined. Add frozen chocolate chips. Stir to combine. 
    8. Use a 2 tablespoon scoop to portion treats onto prepared cookie sheet.
    9. Allow to set in a cool place, until firm. You can pop them in the fridge if your kitchen is too warm.
    10. Serve and enjoy!

    • You can refrigerate the pan if your kitchen is too warm, or, if you are impatient like me, pop them in the freezer for 20 minutes.

    What you will need to make No-Bake Rocky Road Avalanche Bars:

    • 9 x 13-inch Baking Pan- I have my favorites and this set is one of them. The 9x13 is perfect for casseroles and the smaller size is awesome for making 1/2 a casserole recipe.
    • Mixing Bowl - I like a variety of mixing bowls and prep bowls and this set has them all.

    No-Bake Rocky Road Avalanche Bars

    No-Bake Rocky Road Avalanche Bars are my latest obsession. A simple recipe with chocolate and peanut butter with a candy crunch that comes together in a snap? Sign me up, twice!

    Ingredients

    • 16 ounces chocolate-flavored candy coating (I use Almond Bark or Candiquik)
    • 2 cups semisweet chocolate chips
    • 4 ounces Bakers German’s sweet chocolate bar, broken into chunks
    • 1 (16.9-oz) jar super chunky peanut butter
    • 3 cups crispy rice cereal
    • 3 cups mini marshmallows
    • 1/2 teaspoon salt

    Instructions

    1. Line a 9 x 13-inch baking pan with parchment paper or aluminum foil sprayed with non-stick cooking spray.
    2. Melt the chocolate candy coating, chocolate chips and German chocolate in a large heatproof bowl. Microwave at half power for 30 seconds at a time until melted and smooth, stirring after each interval. 
    3. Stir the peanut butter into the warm chocolate until melted and smooth. Add the rice cereal, marshmallows and salt and stir to combine.
    4. Pour the mixture into the prepared pan. Allow it to set in a cool place until firm.
    5. You can refrigerate the pan if your kitchen is too warm, or, if you are impatient like me, pop them in the freezer for 20 minutes. Once they are solid, cut them into 24 pieces.
    6. Store in the refrigerator.

    Tips for Making No Bake Peanut Butter Bars

    • Graham cracker crumbs - Graham crackers really have to be crumbs to work properly in this recipe. Process them in your food processor to be sure they are fine enough.
    • Butter - You can use unsalted butter if you like. Just add 1/4 teaspoon of salt with the peanut butter.
    • Peanut butter - If you use natural peanut butter, the bars will need to be refrigerated to stay firm.
    • Chilling - These bars will need to be refrigerated for one to two hours so make sure that you plan ahead when making them.
    • Freezing - These bars freeze great! Just be sure not to stack them or they'll stick together.

    Frequently asked questions

    Can no bake bars be frozen? 

    Whether or not you can freeze desserts like this really depends on the recipe. But this one is very freezer friendly.

    Just cut them into individual serving sizes. Then, place the bars (not touching) in a freezer container that's been lined with foil.

    Freeze the bars for up to 6 months. Then, just thaw them in the refrigerator when you're ready to eat them.

    Can I use creamy peanut butter instead? 

    Yes, you can use creamy or crunchy peanut butter.

    If you love chopped nuts in your peanut butter bars, then using chunky peanut butter is a great idea.

    If you don't have honey roasted peanut butter, you can use plain peanut butter instead as well.

    What types of chocolate chips are best? 

    I use milk chocolate chips for this recipe because the final taste really reminds me of Reese's Peanut Butter Cups.

    But, if you want to, you can use semi-sweet chocolate chips or even dark chocolate chips instead. Or, kick it up a notch and try white chocolate chips instead.

    What about healthy peanut butter bars? 

    If you want to make the no bake peanut butter bars a little bit healthier, you can use a one to one stevia blend instead of the powdered sugar.

    That will help cut the sugar content. And, you can use PB2 made into peanut butter to cut the calories and the fat. It's still a delicious treat!

    Can I make a bar dessert without graham crackers?

    You will need to have some type of cracker or cookie crumb for the base of these bars.

    If you prefer not to use graham crackers, you can try any of the following instead:
    • Nilla Wafers
    • Oreo Cookies
    • Gingersnaps
    • Chocolate wafer cookies
    • Nutter Butter cookies (for the REAL peanut butter lover!)

    And, you can make gluten free peanut butter bars by using gluten-free graham crackers.

    Or, for a slightly different taste, you can try crushed pretzels for a pretzel crust.
    The salty and sweet combination is delicious.

    Equipment to make No Bake Peanut Butter Bars
    • Mixing Bowl- I like a variety of mixing bowls and prep bowls and this set has them all. 
    • Food processor - This is helpful to process the graham cracker crumbs.

    Storage

    You will want to keep this dessert in the refrigerator. The peanut butter and the chocolate will melt or become soft if they are exposed to warm temperatures.

    They can stay out for a few hours while you plate and serve them, but for longer periods, store them in the refrigerator.

    No Bake Peanut Butter Bars

    A delicious treat for peanut butter lovers! Make this easy no bake recipe for your next picnic or potluck.

    Prep time: 10 Minutes Chill time: 2 Hours Total time: 2 Hours 10 Minutes

    Ingredients

    • 1 cup (8 oz) butter
    • 2 1/2 cups honey roasted crunchy peanut butter, divided
    • 2 cups graham cracker crumbs
    • 2 cups powdered sugar
    • 2 cups milk chocolate chips

    Instructions

    1. Add butter to a large microwave-safe mixing bowl. Heat in the microwave until the butter is completely melted. Stir in the peanut butter. Once combined add the graham cracker crumbs and powdered sugar. Stir until everything is completely incorporated.
    2. Pour mixture into a 9x13 baking pan and spread evenly. Place in the refrigerator while you prepare the ganache topping.
    3. Heat the chocolate chips and remaining 1/2 cup peanut butter in a microwave safe bowl. Heat 30 seconds at a time and stir between intervals.
    4. Pour the ganache over the peanut butter layer. Smooth into an even layer.
    5. Refrigerate 1-2 hours. Cut and serve. Store bars in the refrigerator.

    Oh, that’s right - the caramel-sweet goodness that is peanut brittle. And if that wasn’t already good enough, there’s also a festive dash of nutmeg-and-cinnamon that helps kick it up a notch.

    HELPFUL TIPS TO MAKE MICROWAVE PEANUT BRITTLE:

    • Working with heated sugar can be tricky. It takes a bit for sugar to reach the correct temp, but once it does and begins to turn color, it doesn’t take much longer for the sugar to burn (and ruin your candy). To help avoid this, prepare and measure all ingredients in advance so that you can work quickly. Also, when heating the sugar, always start at the low-end of the heat times and work your way up, watching for the sugar to turn the correct light gold color. Sugar will continue to cook once removed from the microwave, so if you’re unsure, it’s better to remove the bowl too early rather than too late.
    • Even if you’ve covered everything with cooking spray, you’re bound to get some hard candy stuck to your bowls or utensils. If this happens, soak them in a mixture of hot water, dish soap, and white vinegar for one hour. The candy will either dissolve or easily break off with light pressure.
    • Because you’re using cooking spray, the finished candy may feel a little greasy. If it does, use a paper towel to lightly dab the candy to remove excess oil before storing it.
    • Store peanut brittle in a dry, sealed container at room temperature. If candy needs to be stacked in the container, add sheets of wax layers between the layers.

    Microwave Peanut Brittle

    Microwave Peanut Brittle recipe is a simple recipe that comes together in 10-minutes with no fuss and looks like you spent all day working on it! It makes an excellent gift this season!

    Ingredients

    • 1 teaspoon baking soda
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1 cup granulated sugar
    • 1/2 cup light corn syrup
    • 1 teaspoon vanilla extract
    • 1 teaspoon butter
    • 1 cup unsalted roasted peanuts

    Instructions

    1. In a small bowl, combine baking soda, cinnamon, and nutmeg. Set aside.
    2. Spray a baking sheet generously with cooking spray, then set aside.
    3. In a large microwave-safe bowl, add granulated sugar and light corn syrup. Use a spatula to stir until combined. The mixture will be very sticky and difficult to stir near the end; this is okay.
    4. Microwave sugar syrup mixture on HIGH for 4 minutes, then stir. Return bowl to microwave and heat for another 3 to 5 minutes or until mixture turns a light golden color. Be careful not to overheat; a dark brown hue means the sugar has burned.
    5. Remove bowl from microwave and quickly begin to add the following ingredients: vanilla, butter, the prepared spices from step 1, and the peanuts. Stir the mixture so that all the ingredients are combined. The mixture will lighten and may rise or appear "fluffy.”
    6. Spray rim of the bowl with more cooking spray, then pour the brittle mixture on the prepared baking sheet. Working quickly, use a spatula or a spoon to smooth the peanut brittle out in a layer roughly the same thickness as the peanuts.
    7. Let peanut brittle cool and harden for at least 1 hour. Once cooled and firm, use your hands to break the brittle into sizes of your choice (usually 2x2 inch in size)

    COOK'S NOTES

    1. Because working with heated sugar can be tricky and temperamental, it is best to make this recipe only for the listed portion. Doubling this recipe is not recommended.
