  • non-stick cooking spray
  • eggs
  • salt

How to Freeze Eggs for Individual Use

  1. Spray a muffin tin with cooking spray.
  2. Crack one egg into each muffin cup. 
  3. Add 1/2 pinch of salt to each muffin cup. 
  4. Gently beat each egg until it is just combined. Do not beat too long. We are avoiding incorporating air into the eggs.
  5. Freeze until solid, I freeze overnight.
  6. Fill a baking pan with 1" of warm water. Set the muffin pan in the water for 2 minutes.
  7. Remove the eggs from the muffin pan and store in a ziptop freezer bag marked with the date.
  8. Eggs will keep in the freezer for up to 12 months. 
  9. To thaw eggs for use, place the frozen eggs in a bowl, cover, and place in the refrigerator to defrost overnight.

How to Freeze Separated Eggs Whites and Yolks

  1. Carefully separate the yolk and the white using an egg separator.

When it comes to how to freeze milk, don't simply put the container in the freezer. When you freeze it, the milk expands. So, placing the container in the freezer as it can make a huge mess when it comes time to defrost it for use.

Can you freeze milk for later use?

Yes, you can easily freeze milk to use later on whether it's skim, reduced-fat or whole milk. It is best to freeze your milk before the best by date. It the milk is approaching it's best-by-date you would be better off to use it up in a recipe like our rice pudding or 3-Ingredient Mac and Cheese.

After you've frozen your milk, to defrost it place it in the refrigerator to thaw. It will be completely safe for consumption if you do that.

Absolutely! Follow the same directions for regular milk or chocolate milk.

How long does milk last after being frozen?

After you have frozen the milk, it will last for three to six months in the freezer. If you try to store it for longer than that, you might find that it has started to absorb odors from the other foods you're freezing (yes, even thru the packaging). And. it may start to look more yellow than normal.

The reason that frozen milk turns yellow is that the riboflavin doesn't freeze as quickly as the milk. That makes it separate from the milk and causes a color change.

While this shouldn't affect the taste at all provided you shake it well, it might make it less appealing to people. So, if you're wondering how to freeze milk without it changing color, use it in three to six months.

Yes, you can! However, you will need to open the container of milk and pour out at least an inch of milk. I pour it into a cup and put it in the fridge. Reseal the container and place it in the freezer.

By removing some of the liquid, you allow it to expand in the carton as it freezes. This will prevent the top from popping off and the milk going over the top. It helps to put the date on the front so you know which container to use first.

Can I use other types of containers?

If you want to, you can use this same method with slightly larger containers. That way, you can freeze it in one cup or two cup measures for recipes that require more liquid.

That way, when you want to use the milk, you can remove only the amount that you want. This is the perfect method to use if you plan on baking or cooking with it rather than drinking it.

Ice cube trays are more practical for many people. So, this simple method works well unless you drink a lot of milk each day.

  1. Pour about 1-inch of the milk out of the carton.
  2. Mark today's date on the carton. 
  3. Freeze.

  5. Once the milk is defrosted, make sure the lid is still on tight and then shake the living tar out of it. This will help the smoothness.

While churros may look a bit intimidating, they are relatively easy to make. You will need these pantry staple ingredients.
  • Water 
  • Butter

ingredients:

  • 1 cup water
  • 8 tablespoons butter
  • 1/4 teaspoon salt
  • 3/4 teaspoon ground cinnamon, divided
  • 1 1/4 cups all-purpose flour
  • 3 eggs
  • 1 1/2 cups vegetable or canola oil
  • 1/2 cup sugar

instructions:

How to cook Churros Recipe from Disney Parks (Churro Bites)

  1. Combine water, butter, salt, and 1/4 teaspoon cinnamon in 1 1/2-quart saucepan over medium heat. Bring the pot to a rolling boil.
  2. Reduce heat to low.
  3. Add flour and stir vigorously until the mixture forms a ball. Remove from heat and let rest for 5-7 min.
  4. Add eggs, one at a time, and stir until combined. Set aside.
  5. Using caution, heat oil in a medium skillet or 1-quart saucepan over medium-high heat or until temperature reaches 350˚F.
  6. Spoon dough into a piping bag fitted with a large star tip. Pipe 1-inch strip of dough over the saucepan, cut with a knife, and drop into the hot oil. Repeat until churro bites fill saucepan with room to fry.
  7. Fry churro bites until golden brown. Remove with a slotted spoon or mesh spider strainer.
    Drain churro bites on paper towels.
  8. Mix sugar and 1/2 teaspoon cinnamon in a medium bowl. Toss in churro bites until coated. Place on serving plate and serve with favorite dipping sauce.

Tools needed to make pizza bites
  • Mini Muffin Pan
  • Silpat Mat - is perfect for everything. We use them for rolling out doughs, baking cookies, biscuits, and other desserts. They are also great for transporting pans. Just line a baking sheet and place your baking dishes on the mat. It provides a non-slip surface for traveling.
  • THERMOS food jar is the best way to send your little ones off to school with a hot lunch!

Frequently asked questions

Recipe notes and tips for success
  • To send these pizza bites to school just fill a thermos with hot boiling water while you warm up the pizza puffs. Then pour out the water and place the pepperoni pizza puffs in the thermos. Seal and they will stay warm until lunchtime!

  • You can also stuff a cube of mozzarella cheese in the center of the puff before baking for an ooey-gooey cheesy center!

  • To save time, you can use a premade roll of biscuits. Just cut each one into 4 pieces and use two pieces per muffin cup. It's a great way to save time on a busy day.
  • You can make these in a cake pan or a bundt pan but you will need to cook it longer to make sure that they are done.

  • If you don't have Italian seasoning, substitute 2 parts of oregano, 2 parts of basil, and one part of thyme.

  • If you prefer not to use pepperoni, you can substitute Italian sausage. Or, you can make these with chopped peppers, onions, olives, and mushrooms for a vegetarian option.

  • When they are done, you can dip them in spaghetti sauce, cheese sauce, or even Ranch dressing.

How to freeze and reheat pizza puffs

My favorite way to freeze these pizza bites is to let them come to room temperature and place them on a jelly roll pan lined with a Silpat mat.

They flash freeze and then I pop them in a freezer gallon storage bag. That way, I can enjoy them whenever I want a quick snack or a light lunch.

Spritz them with water and either microwave them until heated or defrost them and pop them in a 350°F oven for about 10 minutes.

Pizza Bites Appetizer with Pepperoni

Pizza Bites are soft, cheesy, pepperoni appetizers that taste fantastic and are fun to eat! Make this recipe for game day snacks or lunch boxes!
Prep time: 10 Minutes Cook time: 20 Minutes Total time: 30 Minutes

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes
  • 1 cup fresh shredded Parmesan cheese
  • 1 teaspoon sugar
  • 2 tablespoons extra virgin olive oil (plus more to grease pans)
  • 1 1/2 cups whole milk
  • 2 eggs, beaten
  • 2 cups shredded 4-cheese pizza blend
  • 1 (5-ounce) package mini pepperoni rounds

Instructions

  1. Preheat oven to 350°F.
  2. Reserve a hand full of pepperoni (about 1/4 cup).
  3. In a large bowl, combine flour, baking powder, Italian seasoning, red pepper flakes, Parmesan cheese, sugar, olive oil, milk, and eggs. Stir together with a fork. Mix in the pizza blend cheese and remaining pepperoni. Set aside.
  4. Prepare (2) 24 cup mini-muffin pans by greasing with olive oil (or spray with cooking spray).
  5. Mix batter and add 1 heaping tablespoon scoop to each muffin cup. Top each muffin with 2 or 3 of the reserved pepperoni. Bake until golden brown, approximately 20 minutes.
  6. Allow to cool for 5 minutes, remove from muffin tin and serve with favorite marinara sauce.

This recipe is an old family favorite that was originally shared with you 6 1/2 years ago. It is DEFINITELY a reader favorite.

So, we decided to share it with you again. We enjoy this breakfast on holidays and sometimes just because. It has truly become a tradition that we look forward to.

Special occasion meals

Father's Day is such a special day for us, as it is for most people. 

Take the day to really celebrate the important man in your life! Make a special breakfast to remind him just how special he is.

My husband is a wonderful father to our Munchkin, and an amazing husband as well. We spend the day taking part in our favorite family activities.  So, I like to start off with a very special breakfast. 

By special, I mean out of the ordinary for us.  We tend to have a very healthy breakfast each day. Once in a while, we go out on a limb, making buttermilk pancakes on a Sunday.

Well, I have been making Sugar Cookie French Toast for special occasions for quite some time.  Any kind of french toast is my husbands favorite. 

French Toast Casserole


So for this special occasion, I decided to try this French Toast Casserole I have been drooling over for quite some time. 

I have to tell you it is so decadent, so flavorful, so divine....  There are barely words! 

The bread has a consistency like the most incredible bread pudding.  The custard mixture bakes into the bread, and the topping is such a delightful treat. 

You can leave the maple syrup off this french toast.  I think it would spoil the flavor.  It is THAT good!!!

Helpful tips for making French toast casserole

How to prevent soggy French toast
  • We have been enjoying this recipe for 6 years.  I have made a few changes.  There is less milk/cream than in the original recipe, as the bread is sometimes too moist for my taste.
Substitute for half and half
  • Half and half is a dairy product found in the USA.  You can substitute half cream and half milk for half-and-half.  You can also use any combination of all cream to all milk as long as you are adding 1-1/2 cups total.
Praline topping
  • In the original casserole recipe, the praline topping included corn syrup.  It really doesn't need it, so it is no longer in the recipe.
Serving suggestions
  • This french toast casserole is amazing served with fresh berries instead of the praline topping if you are looking to lighten it up. 
Freezing the casserole
  • The leftovers freeze VERY well!  We eat about 1/4 of the pan.  I freeze the leftovers in 3 containers, so when we want a special breakfast I just thaw it and pop it in the oven at 350 for about 10 minutes.  Perfect.

KITCHEN TOOLS TO MAKE THIS RECIPE
  • 9 x 13 Baking Dish - I have my favorites and this set is one of them. The 9x13 is perfect for casseroles and the smaller size is awesome for making 1/2 a casserole recipe.
  • Mixing Bowls - I like a variety of mixing bowls and prep bowls and this set has them all.
  • Whisk - I have had this set for over 10 years and it is still as good as the day I bought it. With 3 sizes there is a whisk for every job.

Make Ahead French Toast Casserole

Prep the night before and throw it in the oven while you are getting ready for the day. Easy breakfast recipe that your family will thank you for!

Ingredients
  • butter (for preparing baking dish)
  • 1 loaf French bread
  • 8 large eggs
  • 1 cup half-and-half
  • 1/2 cup milk
  • 2 tablespoons granulated sugar
  • 1 tablespoon vanilla extract (or vanilla bean paste if you want to really jazz it up)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
Praline Topping
  • 2 sticks unsalted butter, room temperature
  • 1 cup packed light brown sugar
  • 1 cup chopped pecans
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
Instructions
  1. Prepare a 9"x13" baking dish by generously buttering the entire inside of the dish.  Set the baking dish aside.
  2. Slice the French bread, on the bias approximately 1-inch thick. Arrange slices in your prepared baking dish in 2 rows, overlapping the slices. Set dish aside.   In a large bowl, whisk eggs. Add half-and-half, milk, sugar, vanilla, cinnamon, nutmeg, and salt. Whisk until well combined.
  3. Pour the egg mixture over the bread slices, making sure they are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. I like to make sure all my slices are good and coated.  Even dunking them in the mixture sometimes. Cover with foil and refrigerate overnight.
  4. The next day, preheat oven to 350°F. Meanwhile, prepare the praline topping by combining all ingredients in a medium bowl and mix to combine.  Scoop out praline topping and make 8 dollops of topping.  Then spread Praline Topping evenly over the bread (like you are icing a cake).
  5. Bake for 40 minutes, until puffed and lightly golden.
  6. Serve and enjoy!
