This potato soup is so rich and creamy. Loaded with cheese, bacon and sour cream it is utterly life changing. This recipe is incredibly popular and you are going to love it!

Soup season is finally here. I cannot tell you how excited I am to see the temperatures fall below 100. I hear we will also see lows of 60's all week, which is pretty incredible for this time of year in Arizona. What I usually do is turn the air up and put on a sweater so I can pretend it's cold. Then I make soup. Lots and lots of scrumptious soup.

Baked Potato Soup is an old family favorite. I have made several different versions and today I am sharing a stovetop method using baked potatoes and all my favorite baked potato fixings.

Of course, this is an excellent soup to use leftover mashed potatoes too. You know, Thanksgiving comes, and we make 20 pounds of mashed potatoes and have a truckload left over. This recipe is the ultimate leftover soup! Check out 'Donna's Notes' below the recipe for details on using leftover mashed potatoes.

This amazing recipe all starts with a pound of bacon, cooked and removed from the pot. Then the entire soup is built on the bacon drippings. Needless to say, it is glorious!

Helpful Tips to make Baked Potato Soup:

  • Half and half is a dairy product found in the US. It is made up of half cream and half milk. You can substitute accordingly or substitute with one of the other. All cream will make the soup richer, and all milk will make it lighter.
  • You can substitute 5-6 cups of smashed/mashed potatoes for the five baked potatoes.

What you will need to make Baked Potato Soup:

  • Dutch oven - I love this set and use it all the time. It is perfect for roasts and I especially love it for my one-pot meals.

Enjoy!

Baked Potato Soup

Baked Potato Soup is rich and creamy and has all your favorite potato fixin's cooked right inside this luscious soup. It comes fully loaded with cheese, bacon, and sour cream! This dinner is utterly life changing. This simple recipe is incredibly popular and you are going to love it!

Ingredients

  • 8 slices thick cut bacon
  • 1 onion, diced
  • 1/2 cup all-purpose flour
  • 5 cups chicken stock
  • 5 russet potatoes, baked, peeled and smashed
  • 1 teaspoon dried parsley flakes
  • 2 cups half & half
  • 1 cup sharp cheddar cheese, grated
  • 1 cup sour cream
  • salt & pepper to taste

Instructions

  1. In a large heavy bottom pot (or Dutch oven), cook bacon until crisp; remove bacon from pan with a slotted spoon and place on a plate. Crumble bacon and set aside.
  2. Cook the onion in the bacon drippings until translucent; sprinkle in flour, stir and cook for one minute, stirring constantly.
  3. Gradually add chicken stock. Cook the soup, occasionally stirring until thickened and bubbly. Add in the smashed potatoes and bacon. Stir to combine.
  4. Add parsley and half & half; cook for 10 minutes.
  5. Add about a cup of hot soup to a small 4 cup bowl. Add sour cream stir to combine. This step will help the sour cream incorporate into the soup without getting lumpy (a great tip from one of our readers). Pour sour cream soup into the pot. Stir in cheese and taste. Add salt and pepper as desired.
  6. Serve and enjoy!

Crockpot Potato Soup (With Video)

Crockpot Potato Soup is creamy, thick and full of the delicious flavors of a loaded baked potato. Make this easy soup recipe for dinner tonight!

thick and full of the delicious flavors of a loaded baked potato Crockpot Potato Soup (With Video)
Slow cooker potato soup is the epitome of comfort food. With fall weather in full force, I am ready to cuddle under a blanket with all the bacon and creamy soup I can get.

This soup is one of the easiest and tastiest that you will make. Forget about hitting your local Panera Bread, this homemade crockpot version is so much better.

Plus, crockpot potato soup is budget friendly.

Hey guys, it's Catalina from Sweet and Savory Meals here. I am happy to be a contributor on TSRI and add recipes to Donna and Chad's already great collection.

What kind of potatoes are best for potato soup?

When making potato soup, you really want a low starch potato (often referred to as 'waxy') that will not absorb the broth like a starchy potato will.

Red potatoes are perfect to use for crockpot potato soup.

Waxy potatoes are creamy and high-moisture, with low starch.

They hold their shape well when cooked and have a thinner skin.

As a result, they are perfect for skin on potato soup, potato salad, casseroles and gratin.

In comparison, starchy potatoes are fluffy and low in moisture, but high in starch. They are very absorbent and will suck up all the flavor you add to them.

However, starchy potatoes do not hold their shape well.

How long does Potato Soup last in the fridge?

Properly wrapped in an airtight plastic container potatoes soup will stay fresh in the fridge for about 3 days.

Recipe tips for crockpot potato soup:

  • I prefer to use Yukon gold potatoes for this recipe. They have the perfect flavor and buttery texture to make the soup irresistibly creamy.

  • You can either cook the bacon prior to starting the soup, by frying it or roasting it in the oven, whatever method you prefer. Also, you can use pre-cooked bacon to save time and cut down on the effort.

  • You can use evaporated canned milk, or for even a richer texture, you can use half and half or heavy cream.

Tools for making the crockpot potato soup recipe:

Slow Cooker - the slow cooker is almost my most used kitchen gadget, especially during fall/winter! It's just so convenient, and lets face it, it makes comfort food taste even better!
Potato Masher - the kitchen tool that should be in each's one kitchen drawer! Work those arm muscles!

Enjoy!

  • 6 garlic cloves, minced
  • 1 tablespoon dried parsley
  • 4 tablespoons unsalted butter

  2. Serve warm, garnished with bacon, cheese and sour cream.
  3. The soup can be refrigerated for up to 3 days.

Potatoes are one of my family's favorite side dishes. There are almost infinite ways to make them.

Or, you can try my Easy Soup Recipe for Leftover Baked Potatoes. It's fully loaded and ready in just twenty minutes.

Tips for the Perfect Air Fryer Baked Potato

  • You do not need to poke holes in the potatoes. They will come out perfectly without doing this.

  • Make sure that your potatoes are all about the same size. This is important to be sure that they are all cooked evenly at the same time.

  • Using a potato brush makes it easier to clean your potatoes before you cook them. Make sure that they are completely dry before you start cooking them.

  • Always give your potatoes a light spray of cooking oil before you bake them. It helps make the skins crispy.

  • You can use olive oil or bacon drippings but don’t rub potatoes with butter, butter contains a lot of moisture and can prevent your skins from crisping up.

  • Check the potatoes partway through. If the skins are starting to look too brown, you can flip them over using a pair of cooking thongs.

  • Don't cook more than 4 potatoes at a time. You don't want them to be crowded because they won't cook as well.

Tools to make an air fryer baked potato

You only need a few simple tools to make this recipe.

If you don't have an oil spray bottle, you can put the olive oil on your hands and rub the outside of the potato that way.

Just make sure that they are evenly coated.

Favorite potato toppings

There are so many different toppings you can use on your baked potato. While we all have our own personal favorites, here are a few more potato topping ideas you might want to try.
  • Chives or chopped green onions
  • Cheese sauce
  • Sour Cream
  • Everything bagel seasoning
  • Crumbled bacon
  • Shredded cheese
  • Salsa
  • Guacamole
  • Chili
  • Alfredo sauce
  • Blue cheese
  • Sauteed mushrooms

Of course, these air fryer baked potatoes come out so perfectly that all you really need to add is a pat of butter and your favorite sea salt.

Frequently asked questions

Wrapping potatoes in foil - yes or no?

Experts recommend that you not wrap your potatoes in foil because it may present a risk of botulism. Instead, rub your air fryer baked potatoes in olive oil for a crispy exterior.

Can you use aluminum foil in the air fryer?

You can use aluminum foil in the basket of your air fryer. But, you should never use it on the base of the air fryer. It may end up scratching the surface and will interfere with cooking.

Are air-fried potatoes healthy?

Air-fried foods are healthier than deep-fried foods because they are lower in fat and calories.

But, because they do have some type of added oil, they may not be as healthy as their broiled or steamed alternatives.

So, this air fryer baked potato is better than fried potatoes. But, it may not be as healthy as boiled potatoes.

The benefit of making baked potatoes in the air fryer isn't necessarily that they are healthier. But, it is so much faster to make them this way.

It takes about 20 minutes less time to make air fryer baked potatoes.

Make this recipe in less time than oven baking Air Fryer Baked Potato

What type of potatoes are best for baking?

The best potatoes for baking are russets. You can use other types if you want air fryer baked potatoes, but these give the best results.

Storing and reheating leftovers

Place the baked potato in an airtight container or a resealable bag. It will stay good for 3 to 5 days this way. To reheat it, place it in the oven at 350F for about 15 to 20 minutes or until heated through.

Enjoy!

Use a knife to slice the potato long ways down the middle (about 3-4 inches) and then do the same thing crossways. use a clean kitchen towel and both hands to push them open from each end.
  10. Immediately top with fixin’s! Enjoy.
