Helpful Tips to make Greek Spaghetti Salad:

  • Make sure you salt the water when you boil your spaghetti. This will give the pasta a little more flavor.
  • Make it ahead of time! Cook your pasta and chop your vegetables the day before and store everything together in an airtight container. Make and store your Greek vinaigrette separately. When you’re ready to eat pour the vinaigrette over the pasta salad and toss it until everything is well coated. 
  • You can roast your own red peppers or save some time and use a jar of roasted red peppers.

What you will need to make Greek Spaghetti Salad:

  • StrainerYou can’t make pasta without a good strainer! Make sure to drain the water from the pasta thoroughly before adding the other ingredients.
  • KnifeThe pasta is the only thing that has to be cooked for this recipe after that it’s all chopping. A good knife makes getting perfectly diced vegetables that much easier. 
  • Garlic Press – Save yourself some time and use a garlic press to crush your garlic rather than mincing it by hand.
  • Bowl with Lid – This Greek Spaghetti Salad is going to be making an appearance at a lot of summer potlucks and that means you need an easy way to get it there. A large bowl with a tightly fastened lid can go straight from the fridge to the party.

Greek Spaghetti Salad

Greek Spaghetti Salad is an easy summer pasta salad recipe that comes together really quick. It is loaded with roasted red peppers, cucumbers, olives, and feta cheese, topped with a homemade Greek vinaigrette. It's my latest obsession!
prep time: 20 MINScook time: 10 MINStotal time: 30 mins

Ingredients


  • 16 ounces spaghetti, cooked according to package instructions
  • 1 cup Kalamata olives, pitted and sliced
  • 2 cucumbers, diced
  • 2 cups roasted red peppers
  • 1/4 cup diced red onion
  • 1 1/2 cups crumbled Feta cheese
  • 1 cup olive oil
  • 1/2 cup red wine vinegar
  • 1/4 cup fresh lemon juice 
  • 2 teaspoons Italian seasoning
  • 1 clove garlic, minced
  • 1 teaspoon granulated sugar
  • 1⁄2 teaspoon salt
  • 1⁄2 teaspoon black pepper

Instructions


  1. In a large bowl combine spaghetti, cucumbers, roasted red peppers, red onion, and feta cheese.
  2. In a small bowl whisk together olive oil, red wine vinegar, lemon juice, Italian seasoning, garlic, sugar, salt and pepper.
  3. Pour the dressing over the pasta salad and toss gently until everything is fully combined.

notes

If you are making this the day before stop after step 2 and place your pasta salad in one resealable container and your dressing in a separate container. Store in the refrigerator until ready to serve. Then pour the dressing over the pasta salad and toss until everything is well coated. Serve.

No barbecue is complete without a side of potato salad, but to be honest, I have never been a huge fan of the classic potato salad that has eggs and mayonnaise. There had to be a potato salad that wasn't coated in mayonnaise and there is- German Potato Salad!

What is German Potato Salad?

German Potato Salad is a side dish consisting of diced red potatoes, bacon, and onions.

Rather than being tossed in eggs and mayonnaise like the classic American version, the potatoes are tossed in a warm sauce made up of bacon grease, red onion, and vinegar.

This German Potato Salad can be served cold but unlike the classic potato salad, this potato salad is very good warm and often served that way.

This is the perfect side dish for your bacon loving friends and those who detest mayonnaise.

Helpful Tips to make German Potato Salad:

  • Cook the bacon over medium heat. You want to render the fat so you need to cook it slowly. Once the bacon is nice and crisp, spoon it out with a slotted spoon onto a paper towel lined plate. You want to leave all the grease in the pan for cooking the onions.
  • Dice your potatoes before cooking. Trying to cut scorching hot cooked potatoes is not very fun.
  • Pour the dressing over the potatoes while they are still warm. Warm potatoes are able to absorb the dressing so that they take on all the flavors. When the potatoes are cold they somewhat repel the dressing.
  • For a more beautiful presentation, reserve a couple tablespoons cooked bacon, and tablespoon of onion and parsley each to sprinkle on top after mixing everything together.
  • If transporting this to a party, I suggest mixing the bacon in right before serving so that it doesn't lose all its crispiness. That is half of what makes bacon so delicious, am I right?

What you will need to make German Potato Salad:

  • 12 inch Non-Stick Skillet-I use this pan every single day. It's great for cooking eggs, sandwiches, sauces, pancakes, bacon... everything! If you only have one pan in your house, this should be it!
  • Glass Mixing Bowls with Lids- I love these bowls because they're great for food preparation and also for storing and transporting food. I love that they are microwave and dishwasher safe and that I can stack things on top of them in the fridge.
  • 4-Quart Sauce Pan- This is the perfect size pot for boiling potatoes, pasta, sauces... Every kitchen needs a good quality sauce pan.

German Potato Salad

German Potato Salad is a must have barbecue side dish that comes together quickly and can be eaten hot or cold. This bacon loaded salad has NO mayonnaise but instead is tossed in a vinegar oil dressing.

Ingredients

  • 2 pounds red potatoes diced
  • 1/2 pound bacon diced
  • 1 red onion chopped
  • 1/2 cup apple cider vinegar
  • 1 tablespoon dijon mustard
  • 2 tablespoons olive oil
  • salt & pepper
  • 6 green onions sliced
  • 1/4 cup flat leaf parsley chopped

Instructions

  1. Place potatoes in a medium size pot and cover with cold water and bring to a boil. Cook for about 10 minutes until tender. Drain and place in a large bowl.
  2. Meanwhile, cook the bacon in a fry pan until crispy. Remove with a slotted spoon onto a paper towel lined plate. Add the onions to the bacon grease and cook for 3 minutes. Add the vinegar and mustard and cook for another 2 minutes. Remove from heat, mix in the oil, and pour over the warm potatoes. 
  3. Season with salt and pepper. Add the green onions, parsley, and cooked bacon. Toss it all together and serve. This dish can be serve hot, room temperature, or cold.

Its a very simple salad, but completely full of fresh summer flavor.

While I was never sure what they used in their dressing, I opted to make a light, tangy dressing of basil, vinegar and a touch of dijon mustard.

Helpful Tips to make Summer Vegetable Salad:

  • This recipe is good for almost anything you have around. In this version, I used grape tomatoes, corn, red onion and cucumber, but yellow squash, zucchini, etc also work.
  • To make the corn, my favorite trick is to microwave the ears still in the husk for six minutes. Use a sharp kitchen knife to slice off the end of the cob- close to the base. Carefully slide the corn out of the husk- no shucking required and NO stray corn silk!

Summer Vegetable Salad

Ingredients

  • 1 pint grape tomatoes, halved
  • 2 cucumbers, quartered lengthwise 
  • 1 red onion, halved and thinly sliced
  • 2 ears sweet corn, steamed (see note above) and removed from cob
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoon red wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon dijon mustard
  • Salt and pepper

Instructions

  1. In a large bowl, add the tomatoes, cucumbers, onion and corn.
  2. In a separate small bowl, add the vinegar, oil, mustard and basil. Season with salt and pepper, then whisk together with a fork until emulsified.
  3. Pour the dressing over the vegetables and gently toss until evenly coated.

Helpful Tips to make Steak Fajita Pasta Salad:

  • The steak can be grilled or cooked in a skillet on the stove top. Either way make sure to let your meat rest for 10 minutes once it has finished cooking so that the juices don't run out when you slice it.
  • Make this pasta salad the night before to save yourself time on party day. If you do, add half of the dressing to the pasta salad and place the other half in the refrigerator overnight. About an hour before serving add the rest of the dressing and toss the pasta salad to coat.
  • Customize this pasta salad however you like. Feel free to skip add-ins that aren't your favorite and substitute in others.

What you will need to make Steak Fajita Pasta Salad:

  • Colander- This awesome colander makes it so easy to drain the water from your pasta!
  • Knife - A good chef's knife makes getting perfectly thin slices of steak for this fajita pasta.
  • Cutting Board- You'll need a cutting board to go with that knife. This cutting board is super durable and easy to clean.

Steak Fajita Pasta Salad

Steak Fajita Pasta Salad is perfectly cooked fajita steak and vegetables tossed with pasta and topped with a flavorful dressing that brings all of the flavors together. It's an easy pasta salad recipe to bring to all of your summer picnics and potlucks!
prep time: 1 hour and 20 MINScook time: 20 MINStotal time: 1 hours and 40 mins

Ingredients

  • 5 tablespoons olive oil, divided
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon Cayenne pepper
  • 1 pound flank steak
  • 3 bell peppers, (red, yellow, and green peppers) sliced
  • 1 red onion, sliced
  • 16 ounces bow tie pasta, cooked
  • 1 English cucumber, sliced
  • 1 pint cherry tomatoes, halved
  • 2.25 ounces sliced black olives
  • 1 cup pickled jalapenos

Zesty Dressing

  • 1/2 cup olive oil
  • 1/2 cup cilantro, finely diced
  • 4 tablespoons lime juice
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons honey
  • 1 clove garlic, minced
  • 1/4 teaspoon salt

Instructions

  1. In a small bowl combine all of the dressing ingredients and set aside while you prepare the rest of the dish.
  2. Mix 3 tablespoons olive oil, chili powder, cumin, paprika, salt, onion powder, garlic powder, and cayenne pepper in a small bowl.
  3. Divide in half and add 1/2 of the marinade to a resealable bag. Add steak to bag and rub the marinade into it. Place bag in the refrigerator and marinate for 1-3 hours.
  4. Add a 1 tablespoon of oil to a large skillet along with the sliced onion. Cook over medium-high for 2-3 minutes until the onion begins to soften.
  5. Add bell peppers and the remaining marinade to the onions and continue to cook until vegetables are tender.
  6. Set vegetables aside and add remaining 1 tablespoon of oil to the skillet. Remove steak from fridge and place in hot pan. Cook until meat reaches the desired level of doneness, approximately 3-4 minutes per side for medium-rare.
  7. Once the steak is cooked set aside and let rest for 10 minutes then slice into thin strips.
  8. Add steak, peppers, onion, cucumbers, tomatoes, olives, and jalapenos to a large bowl of cooked pasta. Toss to combine.
  9. Pour the dressing over the pasta salad and toss to coat.

NOTES:

If you are making this the day before divide the dressing in half and add half to the pasta salad when you make it then store in fridge overnight and add remaining half of dressing before serving.

When I start thinking about summer my mind is flooded with memories of amazing barbecues, unforgettable beach parties and family get-togethers.

Weekends at the beach, pig roasts at sunset and family fun that would go into the wee hours of the morning. As far back as I can remember there were always tables of food at every gathering. I mean we are Italian, but we grew up in a little southern town in Florida.

Which meant not only did we know how to roast a pig but there was amazing food and sweet tea at every event. I mean nothing goes better with a summer meal than iced tea.

Of course there were more side dishes than you could count and naturally I gravitated to the pasta salads. My love for pasta, and especially tortellini has turned into this near dedication to turn all of my favorite meals into a pasta salad.

Our Pizza Tortellini Salad is a fusion of my favorite pizza with bacon, pepperoni and black olives with a fabulous summer salad. They come together to create the most spectacular summer salad yet!

It all starts with a rainbow of vegetables, bacon, pepperoni, black olives, mozzarella and Parmesan cheeses and tender cheese tortellini, of course. But the real magic is the dressing. A homemade zesty Italian dressing with a little kick from red pepper flakes is the perfect complement to this fun Pizza Tortellini Salad.

This pasta salad is so summery and refreshing. I could not stop eating it. I did manage to share it with family and friends though. What can I say, I love to feed people. And they all loved it and asked for the recipe! That is the mark of a great recipe. I know you are going to love it too.

  • Salad is excellent the next day. This is a fantastic make-ahead salad. When making ahead, use 1/2 of the dressing when preparing the salad. Reserve the remaining dressing to pour over the salad before you serve. If you use all of the dressing initially your pasta may soak up all the dressing.

Pizza Tortellini Pasta Salad

Ingredients

  • 1 (19 ounce) bag frozen cheese tortellini
  • 1 English cucumber, cut into quarters and sliced
  • 1/4 medium red onion, thinly sliced
  • 16 ounces cherry tomatoes, halved
  • 4 ounces cooked bacon, chopped
  • 1 (2.25 ounce) can sliced black olives, drained
  • 8 ounces mozzarella, cut into bite size pieces
  • 1 (5 ounce) package mini pepperoni
  • 1 ounce shredded Parmesan cheese
  • 2 tablespoons fresh basil, chopped
Dressing
  • 1/2 cup light tasting olive oil
  • 1/4 cup white wine vinegar
  • 1/2 teaspoon dried oregano
  • 2 garlic cloves, minced
  • 1/4-1/2 teaspoon red pepper flakes, to taste
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh ground black pepper

Instructions

  1. Bring a large pot of water to a boil. Cook tortellini according to directions on the package.  Drain and set add to a large serving bowl.
  2. Combine dressing ingredients in a pint size mason jar. Seal and shake the living tar out of it. Pour half of the dressing over the warm pasta and toss to combine.
  3. Add the remaining salad ingredients to the bowl and toss until well coated. Serve immediate or refrigerate until ready to serve. I like to reserve some of the basil and pepperoni to scatter on top when serving.
