Mint Chocolate Chip Fudgy Brownies

Mint Chocolate Chip Fudgy Brownies are a simple recipe for rich and fudgy brownies, loaded with chocolate mint candies and topped with a mint chocolate chip frosting that will rock your world. Then it’s drizzled with an out of this world chocolate ganache. {{swoon}} You need these!

We are so excited to be partnering with International Delight®  to bring you another fabulous recipe. I don't know about you, but I love my coffee so I always have creamer in the house. I have found this to be an amazing convenient ingredient in cooking and baking sweets. So, of course, when I started thinking about mint chocolate chip frosting I thought of International Delight.



RECIPE AT THE BOTTOM

Happy almost St. Patrick's Day. It has already been an awesome celebration filled with lots of festive treats and not so traditional food. My daughter and I baked up a storm over the weekend so we could celebrate with our friends. We made about 4 dozen of our favorite sugar cookies and decorated the shamrock cookies with our melt in your mouth sugar cookie icing.

Then we packaged them up in these awesome plastic bags that we use for cookie gifts and attached a little card that says "Just like a friend, a four leaf clover is hard to find. Happy St. Patrick's Day. Your friend, Munchkin". Well, I am soooo not the Pinterest mom anymore. I have completely come to terms with being an Amazon Prime mom, but ya know sometimes that desire to create just takes over, and we end up with the cutest little cookies ever!

So, next, I decided that I wanted to whip up a scrumptious treat to bring to the dentist office too. They take such great care of us, and I just wanted a little thank you. Well, being St. Patrick's Day this week I knew Mint Chocolate Chip was the flavor. I decided to combine that with our luscious fudgy brownies to create the most amazing Mint Chocolate Chip Fudgy Brownies. They are sooo amazing.

They are utterly rich and fudgy with bites of creme de menthe candies speckled throughout. The brownies are topped with the most scrumptious mint chocolate chip frosting made with International Delight French Vanilla Creamer and then they are finished with a chocolate ganache drizzle. What could be more perfect?

Mint Chocolate Chip Fudgy Brownies
SERVES 16  |  ACTIVE TIME 15 Min  |  TOTAL TIME 35 Min

1/2 cup unsalted butter
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1/2 tablespoon vanilla extract
2 large eggs
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 (8.5 oz) bag creme de menthe thins, divided

Mint Chocolate Chip Frosting
2 cups powdered sugar
4 tablespoons unsalted butter, room temperature
3 tablespoons International Delight French Vanilla Creamer
1 1/2 teaspoon mint extract, to taste
pinch salt
green food coloring
2 tablespoons mini chocolate chips

Chocolate Drizzle
1/4 cup mini chocolate chips
2 tablespoons International Delight French Vanilla Creamer

Preheat oven to 350°F.

Set 16 candy mints aside for garnish and unwrap and cut the remaining candy in half.

Line an 8x8 baking dish with aluminum foil sprayed with non-stick spray and set aside.

Place the butter in a large microwave-safe mixing bowl and melt completely. Add sugar, cocoa, vanilla and eggs. Beat with an electric mixer until well combined. Add the remaining ingredients (except the creme de menthe thins). Mix on low just until completely combined, but do not over mix. Add 1/2 of the halved candies and stir to combine.

Pour into prepared baking dish. Sprinkle the remaining halved candies over the top and lightly press into the batter with a spatula.

Bake for 20 minutes or until a tooth pick comes out clean, well with no batter and no crumb. You may have chocolate if you stick it into a candy mint. Allow to cool completely. I pop them in the fridge or freezer for a few minutes.

Meanwhile, prepare the frosting.

In a large mixing bowl combine the butter and powdered sugar. Beat with an electric mixer until well combined. Add the creamer and beat on low until completely combined. Add the mint extract to taste, I start with 1/2 teaspoon and work my way up until it tastes perfectly minty. Add food coloring and mix until combined. I added 1 drop of green gel food coloring. If you are using liquid, start with 1/4 teaspoon and go from there. Sprinkle in chocolate chips and mix until combined. Once the brownies are cool, frost with the icing.

Meanwhile: combine the 1/4 cup chocolate chips and 2 tablespoons creamer in a microwave safe bowl. Heat for 1 minute. Remove from the microwave and let the chocolate and cream melt together for about 5 minutes. Stir until smooth. Drizzle the chocolate over the frosted brownies.

Serve and enjoy!
DONNA'S NOTES: The creme de menthe candies are the chocolate and mint rectangle candies that are wrapped in silver and green foil.

Every year we make a point to take the time to give a gift of homemade goodies and cards to those people who have touched our lives.  Family, friends, postal carriers, neighbors and store clerks are all included.  You get the idea.  One year we had our truck in the shop a lot and the service tech was so helpful that he was on our list that year.

We started this tradition of gratitude gifts 6 years ago and it is possibly my favorite part of the holiday season.  Embracing the spirit of giving really sets the season off in the right direction, especially since Munchkin was born.  She is in the spirit of giving already and told me "Mommy, we need to help the kids that have no houses because we are vewwy fornuatate (very fortunate)".

DO.I.NEED.TO.TELL.YOU?  That was probably the proudest moment of my life.  Give me a moment to gush please.   {{{gush}}} OK.  I'm good now.

Our family and friends are pretty sure they are getting a basket each year and start teasing about what they want in the basket next year, pretty early on.  Usually by Easter we are hearing about the Pecan Pie Bars and The Brownies.  I can not think of one person that disliked either of these fabulous treats.

The Best Ever Outrageous Brownies

This recipe is the chocolate lovers dream! The Best Brownies Ever are chocolaty, fudgy, soft and melt in your mouth delicious. It is our most requested brownie recipe and I make 2 pans of these and give them as part of our gratitude gifts we hand out each year.
prep time: cook time: 35 minstotal time: 35 mins

Ingredients

  • 1 pound (4 sticks) unsalted butter
  • 1 pound plus 12 ounces semisweet chocolate chips, divided
  • 6 ounces bittersweet chocolate
  • 8 large eggs
  • 1 tablespoon instant coffee granules
  • 2 tablespoons pure vanilla extract
  • 2 1/4 cups granulated sugar
  • 1 1/4 cups all-purpose flour, divided
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • unsweetened cocoa, to dust pan

Instructions

  1. Preheat oven to 350°F.
  2. Butter a 12 x 18 x 2-inch baking sheet and dust with cocoa (this keeps the brownies from having a white powdery appearance)
  3. Melt together the butter, 1 pound of chocolate chips, and the bittersweet chocolate in a microwave safe medium bowl.  Heat in 30 second increments until melted.  Stir between each heating. Allow to cool slightly.
  4. In a large bowl, stir (do not beat) together the eggs, coffee granules, vanilla, and sugar. Stir the warm chocolate mixture into the egg mixture and allow to cool to room temperature.
  5. Add 1 cup flour, baking powder and salt to a sieve and sift into chocolate mixture.
  6. Toss the remaining 12 ounces of chocolate chips with 1/4 cup of flour.  Add them to the chocolate mixture and stir to combine.
  7. Pour batter into prepared baking pan.
  8. Bake for 30-35 minutes until a toothpick inserted in the center comes out clean.  Half way in between cooking time; rap the baking sheet against the oven shelf to force the air to escape from between the pan and the brownie dough.  Use care not to overbake! Allow brownies to cool thoroughly, cut into 48 brownie squares.
  9. Serve and enjoy!

Although I prefer lemon over chocolate my favorite cookie is the chocolate chip cookie.  I prefer vanilla over chocolate {{{gasp}}}...  You can keep reading, its okay.  I swear I am human.  So anyway, I prefer vanilla over chocolate, yet I would choose a brownie over a blondie any day.

There is just something about the perfect simplicity of a brownie.  Sugar, butter, chocolate, eggs...  It is very perfect.  Well, almost.  I have been enjoying our Lazy Day Brownies that are so good they won a blue ribbon in a cooking contest!  I decided to take the premise of the simple brownie that I love and kick it up a bit.

Well, how do you do that? 
Obviously for me adding more chocolate wasn't what I was looking for.  But, what about adding some smokiness, some maple and a hint of woodsiness.  Oh yah!  I am talking about Jack Daniel's.  Aside from being a favorite in many cocktails, it is amazing to cook and bake with.

Well, it was a great hunch.  Jack is fabulous in these brownies!  They are rich and fudgy, with caramel speckled throughout.  Then they are topped with a caramel sauce and dusted with salt.  OH MY WORD!  They are magical.  The perfect adult treat.

The Salted Jack Caramel Brownie

Jack Daniel's Brownies are a rich and fudgy brownies with a hint of smokiness. Featuring specks of caramel throughout. Then they are topped with a caramel sauce and dusted with salt. OH MY WORD! They are magical. The perfect adult treat.

Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1 (11.5 ounce) package milk chocolate chips
  • 1 teaspoon vanilla extract
  • 1/2 cup Jack Daniel’s whiskey
  • 2 large eggs
  • 1 cup all purpose flour
  • 1/2 teaspoon kosher salt, plus more for dusting
  • 1/4 teaspoon baking powder
  • 1/2 (11 ounce) package of vanilla caramels (unwrapped and half of them quartered)
  • 2 tablespoons heavy cream

Instructions

  1. Preheat oven to 350°F.
  2. Line an 8”x8” baking dish with parchment paper, set aside.
  3. Place butter and chocolate in a large microwave safe mixing bowl, melt completely.  Whisk until smooth.  Add sugar, whiskey, and vanilla.  Whisk to combine.  Add eggs and beat until incorporated.  Add flour, baking powder and salt.  Whisk until completely combined, but do not over mix. 
  4. Pour batter into prepared baking dish.  Sprinkle the quartered caramels over the brownie.
  5. Bake for 30 minutes or until a tooth pick comes out clean.
  6. Meanwhile combine remaining caramels and heavy cream in a microwave safe bowl and heat (30 seconds at a time) until melted. Stir to combine.
  7. Drizzle brownies with caramel sauce and sprinkle with kosher or pretzel salt.  Allow to cool completely before cutting.
  8. Serve and enjoy!

Mexican Hot Chocolate Brownies come together so simply with ingredients you already have in your pantry! Ingredients

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder, plus more for dusting
  • 1/2 tablespoon vanilla extract
  • 2 large eggs
  • 1/2 cup all purpose flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
Browned Butter Frosting
  • 4 tablespoons unsalted butter
  • 1 cup powdered sugar
  • 2 tablespoons International Delight French Vanilla Liquid Creamer
  • pinch salt

Instructions

  1. Preheat oven to 350°F. Butter and dust an 8x8 baking pan with cocoa powder, set aside.
  2. Place butter in a large microwave safe mixing bowl, melt completely. Add sugar, cocoa, vanilla and eggs. Whisk to combine well. Add remaining ingredients. Whisk until completely combined, but do not over mix.
  3. Pour into prepared baking dish. Bake for 20 minutes or until a tooth pick comes out clean. Allow to cool completely before frosting.
  4. Meanwhile: Heat butter in a small saucepan over medium-high heat, whisking constantly until golden brown, about 3-5 minutes. Add sugar, creamer and salt. Whisk until completely combined and smooth. Pour over the cooled brownies.
  5. Serve and enjoy!

I am so excited that the seasonal favorites are hitting the shelves. The Pumpkin Pie Spice is my fall favorite, but when I caught a glimpse of the new Salted Caramel Mocha International Delight Creamer I immediately thought of making brownies with it.

Let me tell you, that thought was absolutely brilliant. {If I must say so myself}. As I am sure you figured out, we love brownies in our house. I have shared 15 recipes for brownies already, but trust me these are something special. They are rich and fudgy chocolate brownies with salted caramel throughout. Topped with a luscious salted caramel mocha ganache they are truly out of this world!

My mother-in-law is the goddess of chocolate! If I am making a treat it is a good idea to make sure it is chocolate. I can not count the number of chocolate treats I have made for her. But, brownies are so much fun and I love making different flavors.

These were really hard to share. I wanted to eat the whole pan! They are that good. I know you are going to love them too.

Salted Caramel Fudgy Brownies
SERVES 16 | ACTIVE TIME 10 MIN | TOTAL TIME 40 MIN


1/2 cup unsalted butter
1-1/2 cups (about 11.5 ounces) semi sweet chocolate chips
1/2 cup granulated sugar
2 large eggs
1 cup all-purpose flour
1/2 teaspoon kosher salt, plus more for dusting
1/4 teaspoon baking powder
1/2 cup Salted Caramel Mocha International Delight Creamer

Ganache Frosting
1 cup semi sweet chocolate chips
1/2 cup Salted Caramel Mocha International Delight Creamer

Preheat oven to 350°F.

Place butter and chocolate in a large microwave-safe mixing bowl,
heat (30 seconds at a time) until melted. Stir until smooth. 

Meanwhile: Line an 8”x8” baking dish with aluminum foil sprayed with non-stick spray or parchment, set aside.

Add sugar to melted chocolate. Beat with an electric mixer until incorporated. Add eggs and beat until completely smooth, about 1 minute. Add flour, baking powder and salt. Mix on low until the flour is just mixed in. With your mixer on low, pour in the creamer. Mix until combined. Careful not to overmix.

Pour batter into the prepared baking dish. Bake for 30 minutes or until a toothpick comes out clean.

Meanwhile, combine 1 cup chocolate chips and 1/2 cup creamer in a microwave safe bowl and heat (30 seconds at a time) until melted. Stir until smooth.

Once the brownies come out of the oven. Stir the ganache and pour the ganache over the hot brownies.

Allow to cool completely before cutting. Sprinkle with salt. Serve and enjoy!

DONNA'S NOTES: If you are all out of the Salted Caramel Mocha creamer, you can substitute your favorite creamer. Caramel Macchiato is a great replacement.

Hey friends, it's Julia from Plated Cravings here. I’m happy to be a contributor on TSRI and share some of my favorite recipes with Donna and Chad's lovely readers.

This brownie recipe makes a great dessert for a party or summer get-together. You might ask why they’re called slutty brownies?

I would say because they are over the top indulgent, delicious, AND they’re pretty easy to make.

You could easily make these Oreo cookie brownies using a box of brownie mix or your favorite chilled chocolate chip cookie dough if you’re short on time!

In fact many slutty brownie recipes are completely made from the box and yes, that’s easier, but trust me and make them from scratch instead.

Slutty Brownies Recipe Notes

  • You can use any kind of Oreos for this recipe.
  • I always line my baking pans with parchment paper. Not only does it make clean up easier, but it also lets you lift the brownies easily from the pan.
  • I like to use Dutch-process cocoa powder for my brownies because it dissolves easily. Plus, it gives the brownies a darker color. 
  • All ovens are different so I recommend using a wooden skewer or toothpick to check for doneness. Make sure to bake the brownies in the lower third of the oven.
  • Slutty brownies are very rich! As a result, you may want to cut them into 16 squares instead of 9. Be sure to serve them with milk.
  • To make this recipe easier you can use a brownie mix or your favorite cookie dough instead of making it from scratch. Perfect for days when you are super busy, but still want something a little more special!
  • The cookie layer will be chewy and soft. Perfect for every cookie dough lover! If you want the layer to be less soft try baking the cookie layer for a few minutes before adding the Oreo cookies and the brownie batter.

Ingredient notes and supplies:

  • Brownie Pan - I love this pan! It’s super easy to clean, everything slides right off and there is also a version with a lid so it’s easy to transport and store baked brownies or cakes. 
  • Dutch-process cocoa powder - I love to use this cocoa powder for baking because it dissolves easily and is darker in color.
  • Chocolate Chips - According to America’s Test Kitchen these are the best chocolate chips!

Slutty Brownies

Slutty Brownies are a decadent dessert of fudgy brownies, chewy chocolate chip cookies, Oreo cookies, and caramel, all in one bite, A sinfully delicious brownie recipe!

Ingredients

Cookie dough layer
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 6 Tablespoons granulated sugar
  • 6 Tablespoons packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup semi-sweet mini chocolate chips
Brownie Layer
  • 1/4 cup unsalted butter
  • 6 ounces semi-sweet chocolate, coarsely chopped
  • 1/2 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 3 Tablespoons Dutch-process cocoa powder, sifted
  • 1/4 teaspoon salt
  • 1/4 cup mini chocolate chips or chunks
  • 24 Oreos
  • Caramel Sauce (optional)
Instructions
  1. Start with the first step of the brownie batter. In a double boiler melt the chopped chocolate together with the butter. Remove from the heat, pour into a mixing bowl. Let cool for 8-10 minutes.
  2. Preheat the oven to 350°F and spray a 9-inch square pan with cooking spray and line it with parchment paper leaving an overhang.
  3. Make the cookie dough, while the chocolate is cooling. In a small bowl or measuring cup combine flour, baking soda, and salt. 
  4. In the bowl of a stand mixer or using a hand mixer combine butter, granulated sugar, brown sugar and vanilla extract. Add egg and whisk until combines. Gradually add in flour mixture. Fold in chocolate chips and spread into the prepared square pan.
  5. When the chocolate mixture has cooled down for about 10 minutes, add the sugar to the cooled chocolate butter mixture and whisk until well incorporated. Add the eggs, one at a time and whisk in the vanilla extract.
  6. Add the flour, Dutch-process cocoa powder, and salt and gently fold them in. Mix only until everything is incorporated. Fold in the chocolate chips.
  7. Spread half the batter over the cookie dough, then top with a layer of Oreo Cookies and spread the remaining batter on top of the cookies. Sprinkle crushed Oreos on top.
  8. Bake in the lower third of the oven for 40-45 minutes or until a toothpick comes out with only a few moist and fudgy crumbs attached.
  9. Let the brownies cool in the pan on a cooling rack to room temperature then put in the fridge for 1 hour for easier cutting. Drizzle with caramel sauce and serve!
