An absolute family favorite, I have been making this homemade Italian style mac and cheese for over 8 years.

I originally shared this recipe with you when we first started our site and now (6 years later) have prepared it several dozen more times.

I have a lot of tips to add to the recipe so make sure you check out my notes on the recipe.

Homemade Italian Mac and Cheese

This stove-top macaroni and cheese is loaded with ooey-gooey cheese and Italian spices.

Obviously, it is something we have eaten so many times that I don't need a recipe and I use this one as a base to create many different dinners.

Y'all ask so often what I fix when I don't have anything planned. Well, this happens more times than not so I have become a master at re-imagining leftovers.

I guess I got that from my mom. She was a whiz at transforming leftovers into a whole new dinner.

This recipe is the perfect last-minute meal. It calls for ingredients that you have on hand all the time and then just add in whatever leftovers your fridge holds and it becomes dinner.

Precooked sausage, kielbasa, leftover chicken, beef or turkey from Thanksgiving along with some leftover veggies added at the end, or frozen peas (added with the pasta) and you have yourself a fantastic two pot meal in under 20 minutes!!!

Helpful Tips to make Super Simple Mac & Cheese Italian Style:

  • I do not use pre-shredded cheese as much as I used to. Now I use 4 ounces mozzarella and 4 ounces provolone (or 8 ounces mozzarella). I shred them and add them to the recipe in place of the cheese blend. 
  •  From time-to-time, I will add a little Romano, Asiago or Fontina into the mix. It depends on what I have in the house. But the essential part is to use at least 4 ounces of mozzarella in your blend.
  •  Veggie ideas: When there are about 5-6 minutes left on your pasta cook time add 2 cups frozen peas or frozen broccoli (cover the pot to help it come back to a boil more quickly and remove the cover once boiling again). 
  • They will be done at the same time the pasta is done and it will combine to make an incredible dinner. Another vegetable option is to stir in 3 cups fresh baby spinach, once the pasta and cheese sauce has been fully combined (at the end). It will be just wilted perfectly when it is time to serve.
  •  Protein ideas: After you have drained your cooked pasta, add it back to the pan and add chopped leftover turkey, chicken or rotisserie chicken to the hot pasta.  Then pour the sauce over top. 
  • The heat from the pasta and the cheese sauce will warm the meat through and it will be ready to serve when the mac and cheese is ready. I have also used leftover ground beef, burgers, rinsed and drained beans (navy, kidney or pinto are our favorites).

Super Simple Mac & Cheese Italian Style

Super Simple Mac & Cheese Italian Style is a go to recipe around here. With just 7 ingredients and 15 minutes you can have this fantastic dinner on the table. It is the ultimate left-over and weeknight dinner helper.
prep time: 5 MINScook time: 10 MINStotal time: 15 mins

Ingredients

  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk (2% is good too)
  • 1 pound dry mini penne pasta
  • 8 ounces of Italian blend shredded cheese (*see below to make your own blend)
  • 1/3 cup fresh grated Parmesan cheese
  • 1 tablespoon dried Italian seasoning (I prefer McCormick Tuscan Style Italian Seasoning)

Instructions

  1. Bring a large pot of water to a boil, salt it, cook pasta according to package directions, to al dente.  Drain pasta once it is cooked and set aside.  Work on the next step while your pasta is cooking.
  2. Meanwhile, in a medium sauce pan over medium heat melt butter, add flour and Italian seasoning and whisk for about 2 minutes to cook out the 'flour-y' taste. Add milk and continue to whisk occasionally, allowing the mixture to thicken. Add cheeses and whisk until fully combined.
  3. Pour cheese sauce over strained pasta and stir to combine. Sauce will thickens as it sits.
  4. Serve and enjoy!

DONNA'S NOTES

Lazy Day Mac and Cheese

3-Ingredient Mac and Cheese is the ultimate comfort food made simple. This Lazy Day recipe is so easy to cook, you will be making it all the time. It is utterly creamy and loaded with ooey gooey cheese. Perfect any night. This one pot meal makes for less dish washing and that my friends makes it a home run.

Ever since I first shared our One-Skillet 20-Minute Mac and Cheese with Broccoli, 2 years ago I have been enjoying this quick and easy method of mac and cheese making more nights than not.

Now don't get me wrong, Super Simple Mac & Cheese Italian Style is still a family favorite. As a matter of fact. I made it the night I was working on this post. I was so inspired by all the mac and cheese recipes.

I have a culinary confession to make. I have been playing with a lot of different variations of mac and cheese this last year and Munchkin says "Mommy, I don't mean to hurt your feelings. But, I don't like your mac and cheese.

Can we have the one in the box?" Ugh!  True confession; I have been battling the box mac and cheese with my 5 year old. It's like a dagger in the heart.


Well, after some playing around I realized she did not like the flavor and texture of the mac and cheese she was associating with 'homemade'. You know the thick and yummy cheese that you think of when it is potluck time.

So, I went back to basics. I stick with familiar cheeses, like mozzarella, Parmesan and cheddar. I also add more milk so the cheese sauce is creamier. SCORE! I got my mac and cheese lover back.

This 3-Ingredient recipe is so easy and creamy. As with any recipe that relies on a few ingredients, make sure those ingredients are the best. For this recipe I picked out my favorite good quality cheese and it really kicks the flavor up a notch!

It's funny but I absolutely love homemade mac and cheese and while we were working on our new cookbook, we developed our new favorite.

Helpful Tips to make Lazy Day Mac and Cheese:

  • Use full fat milk in this recipe. If you choose to go with a low-fat (2% or skim milk) you will want to cook more slowly and add in a little corn starch.
  • Do NOT add salt until the end, adding it too soon will result in a grainy mac and cheese (caused by the milk curdling, which is fine to eat but not as pleasant). For an über rich mac and cheese you can use heavy cream or half and half.
  • Feel free to add spices as desired at the end. A sprinkle of parsley goes a long way for added freshness.
  • Add your favorite cheeses, I have used sharp cheddar, mild cheddar and extra sharp. I usually use about half sharp and half mild for my perfect flavor. Also note, the pre-shredded cheese you can buy at the store has a corn starch like coating on it that may cause your cheese sauce to be super thick. You can add an extra splash of milk to thin it out a little.

Lazy Day Mac and Cheese

3-Ingredient Mac and Cheese is the ultimate comfort food made simple. This Lazy Day recipe is so easy to cook, you will be making it all the time. It is utterly creamy and loaded with ooey gooey cheese. Perfect any night. This one pot meal makes for less dish washing and that my friends makes it a home run.
prep time: cook time: 15 minstotal time: 15 mins

Ingredients

  • 8 ounces dried elbow macaroni
  • 24 ounces (3 cups) whole milk
  • 8 ounces finely shredded cheddar cheese
  • optional, salt and pepper to taste

Instructions

  1. In a medium saucepan combine milk and pasta. Stir. Bring to a boil slowly over medium heat stirring occasionally. Do not walk away from the stove the milk  Once milk comes to a boil, reduce to simmer until pasta is cooked al dente (cooked but firm to the bite). Sprinkle in cheese and stir until cheese is completely melted. Turn off burner and cover pot while you are cleaning up, about 5-6 minutes to allow sauce to thicken.
  2. Add salt and pepper to taste, if desired. (I actually add about 1/2 teaspoon kosher salt and 1 teaspoon fresh ground course black pepper).
  3. Serve and enjoy!

Helpful Tips to make Slow Cooker Creamy Mac and Cheese:

  • You can use a combo of any cheese you like, or if you only have one type on hand, use just one, just make sure you use same amount of cheese specified in the recipe.
  • The key to this mac and cheese is to make sure you remember to stir it a few times, otherwise the pasta may stick to the bottom or sides of the slow cooker and burn.
  • You can grate your own cheese, or you can buy grated/shredded cheese to save time.
  • If you want to add some protein to the dish, I like stirring in at the end grilled chicken or some cooked sausage.
  • You don’t need to pre-cook the pasta for this recipe. You can also use elbow, bow tie or small shells pasta.
  • For a spicier kick add some cayenne pepper or red pepper flakes.
  • The cheese sauce will thicken as it cools. If you plan to hold the mac and cheese in the slow cooker on warm, add extra milk as needed to keep the sauce nice and creamy. Also, if you are going to refrigerate it to eat later, add enough milk to the pasta to thin out the sauce before refrigerating. That way when you pull it out, it will scoop easily and the mac and cheese will warm up perfectly in the microwave or on the stove top. We do this every week and portion it out for easy lunches.

Slow Cooker Creamy Mac and Cheese

Slow Cooker Creamy Mac and Cheese is made with four cheeses and its so easy to make by adding all the ingredients to the crockpot.
prep time: 5 minscook time: 1 hour and 10 minstotal time: 1 hours and 15 mins

Ingredients

  • 1 pound cellentani pasta (also known as cavatappi), uncooked
  • 4 tablespoons unsalted butter, sliced into 1-tbsp pieces
  • 4 ounces cream cheese, cut into 1-oz pieces
  • 1 teaspoon kosher salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Dijon mustard
  • 4 cups whole milk
  • 1 1/2 cup heavy cream
  • 2 cups freshly shredded sharp cheddar cheese
  • 1 cup fresh shredded Gruyere cheese
  • 1/2 cup shredded mozzarella cheese
  • Fresh Italian parsley, for garnish

Instructions

  1. Pour the uncooked pasta onto the bottom of your slow cooker. I love my 6-quart for this recipe. Scatter the butter and cream cheese pieces over the pasta. Sprinkle the salt, paprika and mustard over the top and pour the milk and cream into the slow cooker. Stir to combine everything and smooth the pasta into one even layer coated in sauce.
  2. Cover and cook on low for 1 to 2 hours, until the pasta is chewy (not quite crunchy, but very al dente). Your cook time will vary if you use a different pasta, so start with 1 hour and adjust from there.
  3. Stir once halfway through the cook time and be sure to smooth the pasta into one layer so it is well coated with the sauce.
  4. Once the pasta is ready, sprinkle on the cheddar, Gruyere and mozzarella cheeses and stir to combine. The cheese will melt into the sauce to create the most luxurious creamy cheese sauce. Cover the mac and cheese and cook for 10 minutes, until the cheese is melted and it comes together.
  5. Stir before serving and garnish with fresh parsley.

DONNA’S SIMPLE KITCHEN TIP:

  1. The cheese sauce will thicken as it cools. If you plan to hold the mac and cheese in the slow cooker on warm, add extra milk as needed to keep the sauce nice and creamy. Also, if you are going to refrigerate it to eat later, add enough milk to the pasta to thin out the sauce before refrigerating. That way when you pull it out, it will scoop easily and the mac and cheese will warm up perfectly in the microwave or on the stove top. We do this every week and portion it out for easy lunches.

Hey! It’s Melanie here from Garnish & Glaze! I’m thrilled to be part of team and share a recipe with you each month. You can look forward to comforting easy meals, effortless slow cooker meals, and ah-mazing desserts.

This recipe is seriously the simplest. You can have this on the table in less than 20 minutes. To start, you'll boil water for your pasta and then cook up the bacon and garlic. While the pasta cooks, just grate the Parmigiano Reggiano (this is seriously the best but you can use Parmesan or any other hard Italian cheese) and whisk it with the egg and egg yolk in a large bowl.

Before draining your pasta, it's very important to save some of that starchy salted cooking water. I like to just tilt the pot and scoop about 1 cup out with a mug. I actually do this for every pasta dish. The starchy water helps the sauce really cling to the noodles (especially cream based sauces) and reach the perfect consistency.

So, after straining the noodles, you’ll place them in the bowl of whisked eggs and Parmigiano and toss quickly. As you’re tossing you’ll see the egg/sauce start to cook and become thicker and that’s when you’ll add in a little pasta water at a time while mixing until you get the desired consistency of sauce. I added about a half cup. Then throw in the bacon and serve up the most delicious creamy pasta. Of course, the toppings are optional but who doesn't want more cheese?!

  • Pasta water should taste like the ocean.
  • Use Parmigiano Reggiano for the best taste, if you can't find that you can substitute fresh grated Parmesan cheese. This is not the best place for the canned stuff, you know what I mean.

What you will need to make Spaghetti Carbonara:

  • Garlic Press-One of my moist used kitchen tools! I received mine as a gift years ago and I can't imagine why I never had one. It minces garlic with one squeeze, with the peel still on!
  • Good tongs - I use these for all of my one-pot pasta meals and they are perfect for this recipe too!

Spaghetti Carbonara

Spaghetti Carbonara is a super simple, creamy Italian pasta recipe that takes less than 20 minutes and just 5 ingredients to throw together.

Ingredients

  • 8 ounces dry spaghetti
  • 4 slices bacon, diced
  • 3 cloves garlic, minced
  • 1/2 cup Parmigiano Reggiano, freshly grated (plus more for garnish)
  • 1 large egg
  • 1 egg yolk
  • Flat leaf parsley, minced (optional)

Instructions

  1. Cook spaghetti in a large pot 1/2 filled with heavily salted water (about 1 1/2 tablespoons) as directed on box. Reserve about 1 cup starchy pasta water before draining.
  2. Meanwhile, cook the bacon over medium heat in a medium size skillet, until almost crisp. Add the garlic for the last 30 seconds. Drain on a paper towel lined plate.
  3. Meanwhile, in a large bowl, whisk Parmigiano and eggs together. Set aside.
  4. After draining the pasta, add it to the egg mixture and toss quickly with tongs to coat the noodles. Add a little starchy pasta water at a time to achieve desired consistency (about 1/4- 1/2 cup). Helpful Tips to make Instant Pot Mac and Cheese:

  • This recipe works in the 6 quart and 8 quart Instant Pot. If you are using an 8 quart Instant Pot it is possible to double the recipe, no need to adjust the time.
  • You can use elbow macaroni or corkscrew macaroni for this recipe.
  • If you are using low-sodium chicken broth you might need to adjust the seasoning and add ½ teaspoon of salt to the uncooked noodles.
  • If you don’t have chicken broth on hand you can use the same amount of water or vegetable broth instead.
  • I recommend to grate the cheese yourself and to not use shredded cheese because the shredded cheese won’t get as creamy and smooth as “normal” cheese.
  • To get the best flavor and texture use a combination of cheeses. You can substitute 1 cup of cheddar cheese with mozzarella cheese but don’t use more than one cup otherwise it will be very stringy.
  • Instead of cheddar you can use any smooth melting cheese like gouda, gruyere, or Monterey jack for example.
  • I prefer to use regular milk instead of evaporated milk in this recipe because I always have regular milk on hand and find that it tastes better.
  • If there is extra liquid left after cooking, give it a stir, put the lid back on and let it sit for a few more minutes until the pasta has absorbed all the liquid.
  • Depending on how dry or wet the cooked macaroni are use 1/2 cup of milk or more until the desired consistency is reached.
  • This creamy dish tastes best fresh because the longer mac and cheese sits, the dryer it will become. Reheating is possible but don’t expect it to taste as creamy and smooth as before.

  • Instant Pot - If you don’t have an Instant Pot you need to buy one! I love mine!!
  • Cheese Grater - This grater is my favorite!
  • Hot Sauce - I can’t get enough of this hot sauce.

Instant Pot Mac and Cheese

This Instant Pot Mac and Cheese recipe is so creamy and can be made in less than 15 minutes using your electric pressure cooker!

Ingredients

  • 4 cups Chicken Broth
  • 16 ounces dry macaroni 
  • 2 Tablespoons Butter
  • 1/2 teaspoon dried onion powder, optional
  • 1/2 teaspoon dried garlic powder, optional
  • 1/2 teaspoon dried mustard, or 1 1/2 tsp dijon mustard
  • 1 teaspoon hot sauce, optional
  • 1/2 teaspoon freshly ground black pepper
  • 3 cups grated Cheddar Cheese
  • 1/2 cup grated Parmesan Cheese
  • 1/2 cup milk

Instructions

  1. In the inner pot of an Instant Pot, combine chicken broth, macaroni, butter, dried onion powder, dried mustard, hot sauce, and black pepper.
  2. Put the lid on the pot and set the valve to the sealing position. Set to pressure cook on high for 5 minutes. 
    After the time is up do a quick release. Have a towel ready because there might be some liquid spraying. If there is extra liquid, put the lid back on and let sit for 2 minutes.
  3. Add 1/4 cup of milk, then stir in handfuls of cheese at a time and stir until smooth and melted. Add more milk if needed. Adjust seasoning to taste and serve immediately.
