This time of year my crockpot gets a workout! There are no shortage of tasty crockpot recipes to satisfy everyone in the family.  This Crockpot Beef Stroganoff is one of them. Hearty, satisfying and flavorful with beef, mushrooms, onions and garlic.  Definitely a comfort food recipe and since everything goes in the crockpot and simmers all day, easy too!

Helpful Tips to make Crockpot Beef Stroganoff:

  •   You can use regular egg noodles, or for a healthier version, whole wheat.
  •   To make the prep go even quicker, buy pre-cut mushrooms.
  •   If you need the recipe gluten free, substitute gluten-free noodles.
  •   Regular or light sour cream works in this recipe.
  •   This dish is even better the next day for lunch or leftover dinner!

  • Slow Cooker - the slow cooker is almost my most used kitchen gadget, especially during fall/winter! It's just so convenient, and lets face it, it makes comfort food taste even better!
  • Beef Stock- this beef stock is a staple in my pantry! It is reduced sodium (47% less) with all the flavor.

Crockpot Beef Stroganoff

Crockpot Beef Stroganoff is an easy and delicious recipe. Hearty and flavorful with beef, mushrooms, onions and garlic that slow cooked all day long!!! It is an amazing crockpot version of the family favorite classic beef stroganoff.
prep time: 10 minscook time: 8 hourtotal time: 8 hours and 10 mins

Ingredients

  • 1 1/2 pounds cut beef stew meat
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 1/4 cups low-sodium beef broth
  • 2 cups (about 6 ounces) coarsely chopped white mushrooms
  • 1 medium onion, chopped
  • 3 tablespoons Worcestershire sauce
  • 2 garlic cloves, minced
  • 1 heaping tablespoon dijon mustard
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried thyme
  • 1 (12 ounce) package egg noodles
  • 1 cup sour cream (light or regular)

Instructions

  1. Place beef in 6-quart crockpot, add salt and pepper. Then add beef broth, mushrooms, onion, Worcestershire sauce, garlic, Dijon mustard, parsley and thyme. Mix well.
  2. Cook on low 8-9 hours, or high 4-5 hours. I prefer cooking the beef on low to make sure it's nice and tender.
  3. Cook egg noodles according to the package directions.
  4. Add the cooked and drained noodles to the crockpot as well as sour cream. Mix well. Let simmer for another 15 minutes, stirring occasionally.

I love cooking beef in my slow cooker. Not only is it quick and easy, but the meat comes out fork tender and delicious every time I make it.

How to make the Italian Beef Recipe

Slow cook a boneless beef chuck roast in your crockpot with bouillon and seasonings until it is fork-tender.

Then, shred the meat and serve on toasted hoagie rolls with provolone cheese for a simple, but delicious dinner.

Ingredient notes for Italian Beef Sandwiches

What cut of beef is best for Italian beef?

I use chuck roast in this recipe because it comes out perfectly tender when cooked in the slow cooker. But, you could also substitute a rump roast or another type of boneless beef roast if you prefer.

What type of bread is best for Italian beef sandwiches?

I love hearty sandwiches on hoagie rolls. But, you can use any thin sandwich-type roll if you don't have hoagie rolls.
  • Brioche sandwich roll
  • Ciabatta oblong bun
  • French torpedo roll
  • Italian sandwich roll

Serving the sandwiches on slices of sandwich bread is not recommended. The bread will not be sturdy enough to hold all of the shredded beef and peppers.


About the broth

You can substitute 3 cups of boiling beef stock for the water and bouillon, but the bouillon gives it a really great flavor!

I would still add a few teaspoons of the bouillon or beef base when making this Italian beef recipe.

What types of cheese can I use?

We love the taste of provolone cheese on our sandwiches. But, you can use another type of meltable cheese if you prefer. Good substitutions are mozzarella or cheddar cheese.

To extend the storage time, you can easily freeze your leftovers. Just place the meat in a freezer bag or wrap it tightly with aluminum foil and store it for up to two to three months for the best quality.

To reheat your leftovers after storing them, you will need to allow them to thaw in the refrigerator overnight.

Then, place the leftover beef and the broth in a pan covered with aluminum foil. Bake until it is warmed through and serve it on toasted rolls.


Serving suggestions

We top our Italian Beef Sandwich with roasted red peppers and mild banana peppers.

But, if you want a slightly different taste, you can top it with your favorite giardiniera.

Italian Beef Recipe (Crock Pot)

Make this Italian beef recipe for tender roast beef in a crock pot, then make sandwiches with sweet peppers and melted cheese. SO delicious!

Ingredients

  • 3 cups of boiling water
  • 5 cubes of beef bouillon
  • 1 tablespoon Worcestershire Sauce
  • 2 teaspoons ground black pepper
  • 2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons dried parsley
  • 1 1/2 teaspoons dried basil
  • 1 teaspoon crushed red pepper (to taste)
  • 1/8 teaspoon ground thyme
  • 1 (3 pound) boneless beef chuck roast, trimmed of most fat
Sandwich Fixin’s
  • 8 hoagie rolls
  • 16 slices provolone cheese
  • 1 (16 ounce) jar roasted red peppers, sliced
  • 1 (16 ounce) jar mild sliced pepper rings

Instructions

  1. Turn 6 quart slow cooker to high heat. Add boiling water, beef bouillon and Worcestershire.
  2. Combine remaining seasonings in a small bowl. Sprinkle over beef broth and whisk to combine. Add roast and flip to coat both sides. Cover and cook on high for 4 hours or low 8-10 hours. Shred beef by using two forks to pull it apart. Stir to coat all beef in the juices. Cook 1 additional hour covered. (Do not drain)
  3. When ready to serve: Slice rolls in half, place on a baking sheet and broil in oven for 2-4 minutes until bread is lightly golden brown.
  4. Scoop beef on toasted roll and top with 2 slices of provolone cheese. Place back on baking sheet and broil until cheese is melted. Top with red pepper slices and mild pepper rings.
  5. Serve and enjoy.

I always looked forward to my mom’s homemade cabbage rolls when I was a kid. There was something about the sticky rice, ground beef, and slightly sweet tomato sauce that made me gobble it up.

When I started making traditional cabbage rolls on my own, I had a newfound respect for the meal my mom effortlessly brought to the table. Turns out making cabbage rolls is a lot of work! Blanching the cabbage, cooking the sauce, and assembling the rolls took hours.

Unstuffed Cabbage Rolls recipe tastes just as rich, flavorful, and comforting, but is made in a fraction of the time, with barely any effort. Serve this one-pot meal over cooked rice, or omit the rice all together for a low carb option.

  • This makes a great freezer meal. Double the recipe and cook in a larger pot, such as a dutch oven. Cool and freeze half for a later meal.

Unstuffed Cabbage Rolls

Unstuffed Cabbage Rolls have the comforting flavor of traditional cabbage rolls, but without all the work! Chopped cabbage, ground beef, and a spice-infused tomato sauce comes together easily to make this a perfect one pot weeknight meal.

Ingredients

  • 1/2 small head cabbage, chopped (about 6-7 cups)
  • 1 1/2 pounds ground beef
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 8 ounce can tomato sauce
  • 14 ounce can fire-roasted diced tomatoes
  • 1/2 cup beef stock
  • 1 teaspoon paprika
  • 1/2 teaspoon thyme
  • 2 tablespoons brown sugar
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3-4 tablespoons tomato paste
  • Fresh parsley and cooked rice, for serving

Instructions

  1. In a large 10-inch skillet cook ground beef and onion over medium heat, for about 5 minutes. When beef is cooked and onion is translucent, drain excess liquid. Add garlic to the skillet and sauté for 30 seconds more. 
  2. Add tomato sauce, diced tomatoes, beef broth, paprika, thyme, brown sugar, salt, and pepper to skillet and stir. Add chopped cabbage and toss gently. Bring mixture to a boil.
  3. Cover skillet, reduce heat to medium-low and simmer for 15 minutes. Stir, recover, then simmer for 10 minutes longer, or until cabbage is tender.
  4. Remove lid and add 3 tablespoons of tomato paste. Stir and simmer, uncovered, for 5-10 minutes, or until sauce reduces slightly. If you prefer a thicker sauce, add additional tomato paste and stir. Garnish with fresh parsley and serve over cooked rice.
