I keep my pantry stocked with beans because they are so easy to incorporate into everyday meals. As a matter of fact, my daughter's favorite dinners of all time is a skillet with black beans. Having them on hand makes it so easy to toss together a great meal.



With summer rolling around we are already in fresh vegetable mode.  I can't get enough salads right now. One of my favorite fresh combinations are corn and black bean salsa. I decided to take this classic favorite and transform it into a scrumptious potluck hero.

Every year we all find ourselves attending summer parties and potlucks. I know I always want to bring something everyone will love, because who doesn't want everyone fawning over their food? Am.I.Right?

My latest obsession is this corn and black bean tortellini salad. The star of the show are the exceptional black beans and grilled corn on the cob makes the perfect partner to this salad. It is a salad so I have loaded up with my favorite veggies and a simple chile-lime dressing to bring it all together and then I topped it with avocado, cheese, and cilantro.

You could use your own store bought chili-lime dressing but homemade is so easy. I mean who could say no? This salad is absolutely craveworthy!!!

Corn and Black Bean Tortellini Salad

SERVES 8  |  ACTIVE TIME 15 Min  |  TOTAL TIME 15 Minutes

1 (19-ounce) bag frozen cheese tortellini pasta
1 cup chile-lime salad dressing, recipe follows
1 orange bell pepper, cut into bite-size pieces
1 English cucumber, cut into moons (halved and sliced)
1/4 medium red onion, thinly sliced
16 ounces cherry tomatoes, halved
3 ears grilled corn, cut off the cob
1 (15-ounce) can BUSH’S® Black Beans, rinsed and drained
1/2 jalapeno, seeded and diced
4 ounces feta cheese, crumbled
1 avocado - peeled, pitted and diced (optional)
1/2 cup chopped fresh cilantro (optional)

Bring a large pot of water to a boil and cook tortellini according to directions on the package (do not add salt to the water). Drain. Pour cooked tortellini into a large serving bowl.

Pour dressing over tortellini and gently toss with salad tongs until the hot tortellini is well coated. It will absorb some of the dressing as it sets.

Add the peppers, cucumber, onion, tomatoes, corn, black beans and jalapeno to the bowl. Toss to combine. Top with feta cheese, avocado, and cilantro.

Serve and enjoy.

Chile-Lime Salad Dressing
1/2 cup fresh lime juice
1/4 cup olive oil
2 tablespoon honey
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon New Mexico chili powder

In a pint-size mason jar add salad dressing ingredients, shake mason jar until dressing is combined.

Chicken Bacon Ranch Pasta Salad

Chicken Bacon Ranch Pasta Salad is the consummate pasta salad, loaded with fresh ingredients and it's bursting with flavor. It’s perfect for a summer BBQ or Potluck!

Ingredients

  • 16 ounces medium shell pasta
  • 2 large chicken breasts (or about 2 cups previously cooked chicken)
  • salt and pepper, to taste
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup milk
  • 3 tablespoons Ranch dressing mix (or 1 1oz ranch dressing mix packet)
  • 1/4 teaspoon garlic powder
  • 1 cup chopped Roma tomatoes
  • 2 cups cubed cheddar cheese
  • 1/3 cup sliced green onions (about 4 stalks)
  • 1 (2.25-ounce) can sliced olives, drained
  • 8 slices of bacon, cooked and crumbled

Instructions

  1. Bring a large pot of water to boil and cook your pasta according to package directions. Drain and rinse the pasta with cold water when done.
  2. Meanwhile; saute chicken breasts in a pan over medium-high heat, seasoned with salt and pepper, flipping after about 5 minutes. Cook until internal temperature of the chicken reaches 165 degrees. Allow to rest for 10 minutes before dicing.
  3. In a medium bowl (or mason jar), combine sour cream, mayonnaise, milk, ranch dressing mix and garlic powder. Stir together till smooth. Set aside.
  4. In a large bowl, combine cooked pasta, chicken, diced tomato, cheese cubes, green onions, olives and bacon. Stir together to combine.
  5. Cover and place in the fridge for 2 hours (or more) before serving.

Nothing says summer quite like a cook-out filled with grilled eats, sides, salads and beans.  My perfect cookout menu includes burgers and dogs, my moms potato and macaroni salads, roasted corn and beans. I am so excited to be sharing recipes for our favorites with you this summer.

Have you ever tasted baked beans so smoky and rich that you could eat them for an entire meal?  Well, these are the beans of your dreams!  It all starts with a pound of bacon, veggies and the fixins for the best tasting smoky beans you have ever eaten.

Prepared in a slow cooker the recipe is as easy as soaking the beans overnight and then dumping all the ingredients into the slow cooker and letting them go all day (or night).  The results are incredible.  Deep rich molasses and brown sugar add to the body of the smokey, tender beans.  The vinegar helps mellow out the sweetness so it is perfect.  These beans are reminiscent of the beans you would enjoy at a smokehouse.  Now you can have them at home.

Chad and I went nuts with these, as I mentioned I ate bowls of them on their own and Chad put them on everything you can imagine.  They are the perfect topping to a grilled burger, just add a slice of cheese!  This dish will be a hit at your cook-out, just be sure to bring the recipe with you.  Everyone will ask for it!

Helpful Tips to make Slow Cooker Smokehouse Bacon Beans :

  • If you want your beans really thick, after about 10 hours remove 2 cups of beans from cooker and smash them.  Add them back to the cooker and stir.  This step will help the beans thicken.

Slow Cooker Smokehouse Bacon Beans

Smokehouse Bacon Beans are an easy recipes with rich and thick beans slow cooked for hours in a mixture of molasses, brown sugar, veggies and bacon, bacon and more bacon. Most possibly the cook-out side of your dreams!
prep time: 15 minscook time: 12 hourtotal time: 12 hours and 15 mins

Ingredients

  • 32 ounce package dried pinto beans
  • 1 pound thick cut bacon, cooked and diced
  • 1 medium yellow onion
  • 4 cloves garlic, minced
  • 8 cups water
  • 1/4 cup molasses
  • 1 cup packed light brown sugar
  • 1/2 cup ketchup
  • 1 tablespoon dried chipotle chili pepper
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons fresh ground black pepper
  • 1 tablespoon kosher salt

Instructions

  1. Sort through beans and pick out any stones, small and shriveled, excessively dirty (like a black spot covering a whole side of a white bean), or otherwise look old and mishandled beans.
  2. Pour beans into a large sieve or colander and rinse well.  Pour rinsed beans into 6 quart slow cooker and cover with water by 2 inches.  Place cover on and leave slow cooker OFF.  Allow beans to soak overnight (about 8-12 hours).
  3. Drain the soaked beans and rinse the slow cooker.  Place onions, garlic and bacon into the slow cooker.  Then add beans back into the slow cooker.  Add water, molasses, brown sugar, ketchup, chili pepper, vinegar, and pepper.  (Salt will be added at the end).
  4. Cook on high for 10-12 hours until beans are tender.  Add salt to taste, we use the full 1 tablespoon.
  5. Serve and enjoy!

DONNA’S NOTES

How to Make Smoked Baked Beans

After preheating your smoker and choosing your favorite wood, you simply combine the ingredients in a pan. I prefer to use a cast iron pan.

But, you can also use a Dutch Oven if you want to. Or, if you are cooking for a crowd, you can use a disposable aluminum pan.

Place your pan in the smoker and cook for about three hours. You will stir every hour and cook until the sauce has thickened and the beans are cooked.

If you're new to smoker recipes, this smoked baked beans recipe is a simple dish to get started with.

How can I make this without a smoker?

This recipe can be prepared in a slow cooker but will not have that smoked flavor. Cook it on HIGH for 3 hours or LOW for 6 hours. 

You can bake this recipe in the oven but it will not have that smoked flavor. Bake it at 400°F for 55-60 minutes until the sauce thickens.

Frequently asked questions

What beans are used in baked beans?

Baked beans are usually made from haricot beans. Another name for haricot beans is navy beans. You can find them either dried or in a can at the grocery store.

Can I use homemade baked beans?

This recipe starts with two cans of already prepared baked beans. If you would prefer to make baked beans from scratch, you can do that as well.

Just be careful what seasonings you use so that they do not overwhelm the smoke flavor.

How long does it take to smoke beans?

This smoked baked beans recipe takes about three hours to make in your smoker. You will need to check it every hour.

The exact time you need really depends on the type of smoker you have. The baked beans are done when the sauce has thickened and the beans are heated all the way through.

What type of bacon do I add to baked beans?

I prefer my bacon to be cooked but not crispy. To bake bacon: lay slices of bacon on a foil-lined baking pan. 

Place the pan in the cold oven, turn the heat to 400°F and bake for 8-10 minutes. 

The length of time will vary based on the thickness of your bacon (thick-cut takes longer). Chop up the cooked bacon and refrigerate until ready to use.

What about leftovers?

We eat these so quickly that we very rarely have any leftovers to store. But, you can put them in the refrigerator for another day if you do.

Store your smoked baked beans in an airtight container in the refrigerator for 5-7 days. If you would prefer to freeze them, you can do that as well.

To freeze baked beans, let the beans come to room temperature. Then, transfer them to an airtight container.

They will keep for 2-3 months.

To reheat your baked beans, just heat them in a pan on the stove until they are warmed through.

Or, you can heat them in the microwave. They are just as delicious the following day as the first time.

Smoked Baked Beans

Smoked baked beans is the first of our smoker recipes! These tender beans with bacon are the perfect side dish! Make this recipe using any smoker.
Prep time: 5 Minutes Cook time: 3 HoursTotal time: 3 Hours & 5 Minutes

Ingredients

  • 2 (28-ounce) cans Bush's original baked beans (or 4 (15.5-ounce) cans)
  • 2 (14-ounce) cans kidney beans, rinsed and drained
  • 1 cup barbecue sauce (I used KC Masterpiece)
  • 1/4 cup light brown sugar
  • 1 (7-ounce) can fire-roasted diced chiles (I used Macayo’s)
  • 1 cup A&W root beer
  • 1 pound regular cut bacon, cooked and chopped (1/2-3/4” pieces)

Instructions

  1. Preheat your smoker to 225°F. Choose your favorite wood, I am using my favorite blend of oak, maple and hickory on my pellet smoker.
  2. Combine the ingredients in a cast iron pan or aluminum pan (I used a 9x12-half steam table pan), whatever you prefer to cook on your smoker with.
  3. Place your pan on your smoker. Keep in mind the closer to the heat source, the faster they will cook. I like to keep my beans closer to the heat source when possible.
  4. Smoke for 3 hours, gently stirring every hour, or until the sauce has thickened and the beans are heated through. If the sauce gets too thick, you can stir in some more root beer to thin it out.
DONNA'S NOTES
