You may have noticed I have a bit of a thing for summer berries. I wait all year for the season to get here and when it finally does. I go crazy with berries. They go with every breakfast, snack and dessert.  I am thinking about incorporating them into dinner too.

Truth be told my I do have favorites. Strawberries, blueberries and then raspberries. Blackberries are kind of the weird cousin that only gets to tag along once in a while.

I like them, but the can have a more 'earthy' flavor than I prefer. The earthiness can really overwhelm the other flavors so I leave them out more times than not.

Last year I made my first fruit salsa. Pineapple Salsa and it was insanely delicious. I couldn't get enough. Then I created Strawberry Habanero Everything Spread. Oh my gosh. I can not tell you how amazing the sweet dips were when dipped with salty tortilla chips.

So this year I decided to try something new. A completely sweet fruit salsa served on tortilla chips.


It all starts with a triple berry mixture that is dressed in a dazzling raspberry sauce. It is sweet and tangy and addictively tasty. We couldn't stop eating it. We dipped it with chips. Then once it sat in the refrigerator for about an hour it because this perfect everything salsa. Perfect for dipping or on top of oatmeal or ice cream.  {{swoon}} I know you are going to love it too.

Summer Berry Fruit Salsa

Summer Berry Fruit Salad is a simple recipe with a glorious dressing. The berries are left to macerate in the dressing and the result is a sweet and tangy perfectly scoopable summer sensation! This fruit salad is great to take to potlucks and picnics. Just be sure to bring the recipe because everyone will be asking for it.

Ingredients

  • 1 pound fresh strawberries, diced 
  • 5 ounces fresh raspberries 
  • 9 ounces fresh blueberries 
  • 1/4 cup seedless raspberry jam 
  • 2 tablespoons granulated sugar
  • 2 tablespoons fresh lemon juice 

Instructions

  1. Combine jam, sugar and lemon juice in a small measuring cup. Whisk to combine ingredients. Set aside. 
  2. Combine fruit in a large bowl. Pour dressing over fruit. Stir until fruit is completely coated. 
  3. Serve immediately or place in the refrigerator for 1 hour-overnight to allow the flavors to meld.

DONNA'S NOTES

  1. The longer the fruit sits the more juice it will make. If you want a dry and crisp salsa I recommend serving it immediately. If you prefer your fruit soft and macerated allow it to sit in the refrigerator. I enjoyed it both ways.
  2. I served with sweet potato tortilla chips and also corn tortilla chips. The saltier corn chip was a nice contrast to the sweet salsa.

Perfect for topping fruit, coffee, making frosting and so much more.

I can only recall a few times growing up that we bought premade whipped cream. It was always homemade, and I absolutely love the taste and texture of homemade whipped cream.

The one issue that I used to struggle with was after sitting for a while the whipped cream would deflate. Well, I figured out the trick to stabilize it and help it stay fluffy for days in the fridge.

Custom Flavors - Add powders at the same time that you add the sugar. Add liquids once the cream is thick enough to see a trail follow the beater. All flavors are to taste, add more if it is not strong enough.

Chocolate Whipped Cream - Add 2 tablespoons cocoa powder.

Vanilla Almond Whipped Cream (my favorite) - Add 1 teaspoon vanilla extract and 1 teaspoon almond extract.

Vanilla Bean Whipped Cream - Add 1 tablespoon vanilla bean paste. Chocolate Whipped Cream - Add 2 tablespoons unsweetened cocoa powder at the time you add the sugar.

Hot Chocolate Whipped Cream - Add 2 tablespoons unprepared hot chocolate mix.

Peppermint Whipped Cream - Add 1 teaspoon peppermint extract and 7-10 drops red food coloring.

Strawberry Whipped Cream - Add 1 tablespoon strawberry jam (at the time you add liquids).

Lemon Fluff Whipped Cream - Add 1 teaspoons lemon extract and 1/2 tablespoon lemon zest.

Peanut Butter Whipped Cream - Add 1 tablespoon creamy peanut butter.

Pumpkin Spice Whipped Cream - Add 1 teaspoon cinnamon, and 1/4 teaspoon nutmeg, 1/4 teaspoon ginger.

Praline Whipped Cream - Add 2 tablespoons crushed praline topping folded into the stiff-peaked whipped cream.

Marshmallow Whipped Cream - Add 2-3 tablespoons of marshmallow fluff once soft peaks form. Continue whipping until cream reaches medium or firm peaks. This is a stabilized whip cream.

Stabilizing whipped cream with dry pudding mix - Add 2 tablespoons dry instant pudding mix. I love flavoring this way too. I prefer Jell-O Instant French Vanilla pudding. It helps the whipped cream stay fluffy longer.

Homemade Whipped Cream

Homemade Whipped Cream is rich, silky and utterly delicious. It's the perfect topping to just about every dessert. It is really a kitchen staple. This simple recipe with 11 custom flavor creations and tips on how to keep it longer in the fridge, you are sure to find what you are looking for!

Ingredients

  • 3-4 tablespoons powdered sugar
  • 1 cup heavy cream, cold 
  • pinch of salt 

Instructions

  1. Add sugar and salt to a tall bowl. I use my 8-cup measuring cup. Pour cream into the bowl. Whip with an electric mixer (or stand mixer), with the whisk attachment. Beat mixture, beginning on low speed and increasing slowly to prevent any cream from splashing. 
  2. Increase speed as much as you can without splashing out of the bowl. As the cream is whipped, you will start to notice a trail from the mixer through the cream. If I am adding any extracts, I like to add them at this point. 
    Continue to beat, lower the speed as it thickens. Once you have soft peaks (when you lift the mixer out of the whipped cream, some cream stays on the whisk and barely holds it shape). If you want less fluffy whipped cream, reduce speed to low so you can watch the stages carefully. Otherwise, you may go too far too fast and end up with butter.
  3. For medium peaks continue beating until the cream is firm enough to hold its shape, but the tip flops over. If you are looking for whipped cream thick enough to pipe, you will want to go to firm peaks. At this stage, when you lift the beaters out of the whipped cream the cream will hold its shape and stand up on the end of the beater when flipped upside down. 
  4. Serve and enjoy!

DONNA'S NOTES

  1. If you are adding powders, they should be added at the time the sugar and salt are added to the bowl. 
  2. When adding liquids, I like to add them once the cream is thick enough to see a trail as the mixer moves around.

We are so excited to be partnering with our friends at Jones Dairy Farm to bring you a scrumptious breakfast or brunch recipe perfect for the holidays with family and friends, starring one of my favorite ingredients: Ham!!!




I have had a thing for Monte Cristos from as far back as I can remember. I mean, what's not to love. It is a variation of the classic French sandwich the croque-monsieur.

It is a ham, turkey and cheese sandwich that is dipped in an egg batter and fried like French toast. Then it is sprinkled with powdered sugar and served with jam. It is pure heaven.





So when we started thinking about recipes we could make with Jones Dairy Farm ham with that amazing hickory flavor and I drifted off to my favorite Monte Cristo sandwich. Realizing that it is game day season and a portable Brinner (breakfast for dinner) option would be brilliant, we transformed the classic Monte Cristo.


To make this recipe even easier we used frozen dinner rolls. Once they are thawed you roll them out and load them up with the meats and cheeses. Then, they are tucked and rolled into a ball. They are brushed with an egg and cream mixture to give them that gorgeous sheen and that French toast flavor.

They bake until perfectly bubbly and browned. I sprinkled them with powdered sugar and served them with strawberry jam.

Let me tell you they are so amazing that even my picky 7-year-old couldn't keep her hands off of them.

We first tried the strawberry habanero combination about 4 months ago and we have been hooked ever since.

Habanero Jelly Recipe

I have been sharing it with friends and family and I have to say that I have yet to receive a negative review. Munchkin did say (in her cute 5-year-old voice) "it's a little bit sicy (that means spicy), but I like it!"

Of course, she thinks anything more seasoned than ketchup is a little spicy. One of our friends actually told us that we should bottle it and sell it. Another friend that we shared it with put it on everything.

Helpful Tips to make Strawberry Habanero Everything Spread:

  • You can adapt the recipe to suit your heat level. We have made the following:
    1 alarm - mild heat - 1 habanero, seeds and veins removed
    2 alarm - medium heat - 2 habaneros, seeds and veins removed
    3 alarm - hot heat - 3 habaneros diced (seeds and veins included)
    4 alarm - fire - We have not make this level yet, but we would love to hear what you all come up with.
  • I have not canned these as we love it so much it goes too fast.  I put it in a glass bowl or 2 jelly jars and store it in the fridge.
  • Jam will keep in the refrigerator for at least 2 weeks (much longer from my experience).  But, it will keep  longer, if you pack and seal in canning jars according to the manufacturer's instructions.

What you will need to make Strawberry Habanero Everything Spread:

  • Heavy bottomed pot- heavy bottom pots are thicker at the bottom for a more even cooking distribution.
  • Jelly Jars - if you don't have a stockpile of these I highly recommend you invest in some. Interestly Amazon and Ace Hardware are my 2 favorite places to find them. I use them for everything making whipped cream, storing salad dressings, jams, jelly, drinking glasses.
  • Disposable Vinyl Gloves - The first time Chad suggested I wear gloves to cut up habaneros I laughed at him. Until...  I wiped the back of my hand across the nose and upper lip. It hadn't directly touched the peppers, I had already washed my hands...  But oh my goodness my face was on fire for hours. Now I have 2 boxes in my pantry at all times.
  • Hands-Free Over the Sink Strainer - Perfect for working in and out of the strainer without worrying about it tipping over or having to hold it.

Strawberry Habanero Everything Spread

Strawberry Habanero Everything Spread is our latest obsession. A sweet strawberry spread with a fantastic citrusy flavor and a little bite at the end. Perfect, just perfect! This simple recipe comes together with just 4 ingredients and you will be making it all year long!
prep time: 10 MINScook time: 25 MINStotal time: 35 mins

Ingredients

  • 2 pounds fresh strawberries, hulled and quartered
  • 3 cups sugar
  • 2 habaneros, seeds and veins removed (diced) (this makes medium heat)
  • 2 tablespoons orange juice

Instructions

  1. Rinse strawberries in cold running water and hull them.  Quarter strawberries and place in a heavy-bottomed pot, add sugar, habaneros and orange juice. Stir well to combine.  Bring to a boil over medium heat, stirring often.
  2. Stir occasionally until the spread reaches 220 degrees on a candy thermometer. This will take approximately 25 to 35 minutes. Use a potato masher to smash strawberries if you desire a less chunky consistency or you can transfer to a food processor and blend it smooth.
  3. Remove pot from heat.  If you are not food processing it, place jam in bowl or jelly jars and allow to come to room temperature.  Then store in the refrigerator.

DONNA'S NOTES

Nothing beats the summer heat like an icy cold summery treat.  I love popsicles!  They are light, refreshing, so easy to make and made perfectly sweet for you, as you control the sugar. 

There was not much thinking when I was deciding what flavor to make.  Chad and I scored the best strawberries at the grocery store last week.  We ended up buying around 70 pounds total. 

Needless to say, we are stocked for the year on Strawberry Jam and have been enjoying many summery desserts.  It truly was lucky to get such great strawberries for such a great price.

I have been making this simple recipe and sharing it with everyone who pops in.  It is so scrumptious that I have been through several batches already. 

The adults are blown away that they are home made. The kids gobble them up and I enjoy every minute of it.  Munchkin asks for these all the time.  The best part is...  I feel good about feeding them to her.

Helpful Tips to make Sublime Strawberry Popsicles:

  • Adding a little sugar to the berries and allowing them to macerate really amps up the strawberry flavor in addition to bringing out their sweetness.
  • I love lemon juice in these pops, but lime or orange will be delicious as well.
  • After they freeze, I store my popsicles in snack size ziptop bags and place all of those individual bags into a gallon size ziptop bag. They keep well for 6 - 8 months.

What you will need to make Sublime Strawberry Popsicles:

  • Popsicle molds - these are our favorite, although any mold will work.
  • Blender - I love to use a high powered blender for all smoothies and it is perfect for these ice pops.

Sublime Strawberry Popsicles

3 ingredients make the most perfect Strawberry Ice Pop! It's the perfect summertime treat.

Ingredients

  • 2 pounds ripe strawberries, washed, hulled and halved
  • 2 tablespoons sugar
  • 2 tablespoons lemon juice

Instructions

  1. Place strawberries in a medium bowl.  Add sugar.  Toss to coat.  Allow berries to macerate for about 30 minutes. Once you see juice in the bowl you can move on to the next step.
  2. Add strawberries and lemon juice to food processor or blender. Blend until strawberries are pureed. Add to popsicle molds. Freeze for 4-24 hours.  I leave mine in for 24 hours.

Not to mention, you can pick out your own chocolate variety to take home, from their massive assortment of Chocolate squares. The sundaes on the menu are within range of $12-$16. A single scoop of ice cream starts at $5.95 with a choice of a cone or waffle bowl.

Pacific Wharf Cafe


Trademarked as the original San Francisco Sourdough, Boudin adds another authentic ingredient to the Pacific Wharf dining in California Adventure.

Here you can have salad or soup in a sourdough bread bowl, buy a freshly-baked loaf or round, or seasonal bread pudding. Salads run $11.49 and include Chinese Chicken Salad and Chicken Apple & Walnut Salad. Another specialty, is the Turkey Pesto Club, served on sourdough, for $9.99.

They also have a turkey sandwich for kids and a Yummy Cheesy Macaroni toddler meal. This counter-service restaurant also offers a small variety of desserts and beer choices.

Rita's Baja Blenders

This rehabbed water tower, once owned by a now-defunct fishing warehouse is the go-to place in California Adventure for excellent margaritas and so much more! Strawberry or Lemon-Lime Margaritas for $10 are the most popular items here. You can even add Grand Marnier for an extra $2.

They also serve sangria here and non-alcoholic frozen drinks like the Tripicool Strawberry, Lemon Lime and a feature flavor for $5.49. Rita's also serves up a large bag of chips to munch on while you sip.

Cocina Cucamonga Mexican Grill

Across the Wharf from Ritas is the Mexican counter service restaurant. They feature a variety of hearty dishes and healthy salads to choose from. This is a great place where everyone can usually find something to eat.

Street Taco Plates (my favorite choice) and Fish Taco Plates are served with rice and beans to make a great meal! About $13 each. You can also get a Cocina Bowl for the same price with the same meat and vegetarian options as the tacos.

Kids also get a choice of a taco or bowl of their choice. They also have a quesadilla option on the menu and a Chicken with Rice option for toddlers.

Other entree options include Torta Ahogada Al Pastor, Marinated Half Chicken, and Chicken Salad.

For a side, you can order Chips and Salsa, Guacamole and Chips, and Fruit Salad. Beverage offerings include Mango Agua Fresca, and a selection of Mexican imported beers including a house-made Citrus Michelada made with Modelo Negra or Pacifico for $9.25.

Portions here are very large. It is a great value and an excellent place to split dinner to save room for the Ghirardelli's sundaes!

Lucky Fortune Cookery

The specialty at Lucky Fortune Cookery is made to order Asian Rice Bowls. The menu at Lucky Fortune Cookery is short but sweet. Among the bowls, you can choose from are Chicken, Tofu, and Beef with a price range of $12.49-$13.49.

For some inexpensive sides, you can order Chicken and Vegetable Potstickers, Edamame, or fresh sliced Mango. The Kids menu is Disney Check only, just like the other wharf options. This kids meal is chicken and brown rice served with applesauce, a mandarine, and choice of beverage.

In addition to the fountain beverages, Lucky Fortune Cookery offers a specialty black tea with passion fruit and mango topped with flavored foam; and Sapporo as an alcoholic option for $8.50.

Chad and I have eaten here a few times. Being the kid's menu is limited we usually have to go somewhere else for Munchkin, which is a bit of a hassle (standing in line twice), so we tend to eat somewhere we all enjoy.

Pacific Wharf Distribution Co.

Karl Strauss hand crafter beers from San Diego are on tap at the Pacific Wharf Distribution Co truck along with fresh-baked soft pretzels. Beer $10, Pretzels $5-6.

Wine Country Trattoria


This lovely Mediterranean-style winery is set back in a lovely Tuscan villa setting across from the Pacific Wharf food court and offers a beautiful indoor or patio dining experience. Wine Country Trattoria is a table service restaurant and one of only three places for which you can make reservations.

The restaurant serves three courses of Italian cuisine and even has antipasti and dessert offerings on the kid's menu. A majority of the entrees is various kinds of pasta. However, rib-eye, salmon, braised lamb, and chicken Parmesan are among the other Italy inspired offerings.

The wine menu consists of Sangria, an Italian wine flight, and a Californian wine flight. They also list bottled beer and nonalcoholic beverages. The meal includes coffee or soft drinks of choice. A three-course meal consisting of the Soup Del Giorno, Spaghetti Aglio Olio, and Wine Country Tiramisu would cost $33 plus tax. And the price range goes up to $56 per person, not counting alcohol.

Alfresco Tasting Terrace


On this rooftop 'lounge' created just for wine lovers, you can find a great selection of wines and cocktails with a small offering of appetizers and incredible views. They are only open from 12pm or 2pm (depending on the park hours). Get there early, the tables tend to fill up.

They have a variety of "Disney Family" wines which include Chardonnay from Kurt Russell's Gogi Wines, Fess Parker (Davy Crockett) Syrah, MacMurray Estate Pinot Noir, and Lasseter Family Winery Rose. These wines sell for between $14 and $20 per glass and are sold by the bottle for $59-$89.

Cocktails and nonalcoholic beverages as well. Among the small bites and appetizers are flatbread, bruschetta, Chicken Caesar Piadina, Meatballs Marinara, and a Charcuterie and Cheeseburger Board. Priced $8-12

Mendocino Terrace


A lovely patio wine bar, Mendocino Terrace offers wine and port flights, wine by the glass and a cold cut or cheese plate, $12-13.

The lounge provides the usual array of nonalcoholic beverages and a handful of bottled beer and cider options, Mendocino Terrace is much more wine-focused, and they offer a lot.

Wine is sold by the glass giving you the opportunity to sample a few varietals. There are 11 white wines. Two of which are from California. Most are from other countries such as New Zealand, Germany, and France.

The price per glass ranges from $8.50 to $16.00. There are 9 options in the sparkling and Rose category. Most of which are from Italy with a price range of $8-$19. There are 19 red wines to choose from. The cheapest glass is $9.50, and the most expensive is a Napa Valley Cabernet Sauvignon at $17.00.

Sonoma Terrace


The perfect shady spot to cool down and enjoy a selection of Golden Wine Winery's California wines and craft brews. They also serve cocktails, beer, cider and have a small snack menu. Bavarian Pretzel for $6.99 ($7.98 with cheese), a Meatball Sandwich ($10.49)or Baked Brie with Blackberry Jam ($7.50).
