Chicken Alfredo Tortellini Soup

Chicken Alfredo Tortellini Soup is like your favorite chicken Alfredo recipe with vegetables in a rich and velvety soup. It is warm and comforting and utterly happy-dance inducing!

Ingredients

  • 2 tablespoons unsalted butter
  • 1/2 medium yellow onion, diced
  • 4 ounces baby carrots, halved lengthwise and sliced into half-moons
  • 2 cloves garlic, minced
  • 1 pound boneless skinless chicken breasts, cut into bite-size cubes
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup all-purpose flour
  • 4 cups reduced-sodium chicken stock
  • 1 cup half-and-half
  • 1 teaspoon crushed red pepper flakes
  • 9 ounces cheese tortellini, frozen or fresh
  • 2 cups freshly shredded Parmesan cheese
  • 2 ounces fresh baby spinach

Instructions

  1. Warm a large pot over medium-high heat. Once you can feel the heat when you hold your hand 6 inches above the pot, add the butter and let it melt. Add the onion and carrots. Cook the vegetables until the onions are translucent, about 3 minutes. Add the garlic and cook for 30 seconds.
  2. Then add the chicken, salt and pepper. Stir to combine. Cook for 3 minutes, just to get a little color on the chicken, stirring occasionally. Don’t worry about the chicken being cooked through, because we are going to continue cooking it.
  3. Sprinkle the flour over the chicken and veggies. Stir to coat everything and continue cooking for 2 to 3 minutes to cook out the floury taste. Stir in the chicken stock, half-and-half and red pepper flakes. Continue cooking until the soup thickens, 5 to 10 minutes.
  4. Add the tortellini to the pot and cook until al dente (has a bite to it), 5 to 7 minutes (frozen takes longer). Remove the pot from the heat. Sprinkle a handful of cheese over the soup and stir. Once it has melted into the soup, add another handful. Slowly melting the cheese will give the soup a smooth consistency. Taste for seasoning and add salt and pepper as necessary. Pour into
    bowls and garnish with the spinach.

'Tis the season for runny noses and coughs. Not to mention the crazy weather our northern friends are having. My family loves this soup. There is just something about homemade chicken noodle that is almost healing, isn't there?

I have been working on the best homemade chicken noodle soup for quite some time.  I've tried many recipes, but none have been loved more by my husband than my Best Ever Simple chicken noodle soup recipe.

There is nothing quite like enjoying a bowl of homemade chicken noodle soup like your mom used to make. I remember my own mother making it when we were growing up. It was the perfect remedy for a cold or even a bad day. It surely is the best way to warm you up on a cool winter night and make everything feel better!

Mom’s soup took all day to cook, but nowadays that is just not in the schedule. With work, play dates and carpools to fill your days, this is the perfect chicken noodle soup to make on a busy day. It’s packed with carrots, celery, and chicken, and it goes from prep to plate in just 25 minutes. This home-style soup is perfectly satisfying and oh so delicious.

We even keep our freezer stocked with a few batches so when the unexpected cold arises, we simply defrost and heat on the stovetop or in the microwave.  It is so amazing!

Helpful Tips to make Homemade Chicken Noodle Soup:

  • This is a great soup to make ahead and freeze. Let the soup come to room temperature before putting it in the freezer. I like to place a layer of plastic wrap over the soup to help prevent freezer burn.
  • The noodles will break apart when you reheat it, so if preferred you can freeze the soup without the noodles and toss them in the pot when you are reheating it. Thaw soup in the refrigerator overnight. Bring to a boil add egg noodles and cook until al dente.

Homemade Chicken Noodle Soup

Simply the BEST EVER Homemade Chicken Noodle Soup in 25 Minutes! This easy recipe is bursting with fabulous flavor, tender chunks of chicken and veggies. Tis the season for runny noses and coughs. Not to mention the crazy weather our northern friends are having. My family loves this soup. There is just something about homemade chicken noodle that is almost healing, isn't there?
prep time: 10 minscook time: 15 minstotal time: 25 mins

Ingredients

  • 2 tablespoons unsalted butter
  • 4 carrots, sliced
  • 2 celery ribs, sliced
  • 8 cups low sodium chicken stock (or 8 cups water and 4 tablespoon chicken base)
  • 1 pound uncooked boneless skinless chicken breast, cut into bite size pieces
  • 1 (8-ounce) bag extra broad egg noodles
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon fresh ground black pepper

Instructions

  1. In a large (8 quart) saucepan over medium-high heat, add butter. One butter is melted add the carrots and celery to the saucepan and stir. Sauté for 3 minutes.
  2. Add chicken stock and chicken. Cover and bring to a boil. Once boiling, add egg noodles and cook until al dente (approximately 10-12 minutes).
  3. Add parsley and pepper. Stir and serve!

DONNA'S NOTES

We have completely enjoyed our comfort food this winter (just ask my hips). Now, as we have headed into warmer months (it has been in the 80's here) I am longing for light and fresh meals.

One of my family’s favorite summery flavor combinations is rosemary and lemon. It’s so bright and refreshing. We love rosemary-lemon grilled chicken, so I decided to bring that flavor in to the kitchen until I am ready to venture out to the grill.

It’s funny, as soon as the temperatures hit 80 degrees on my outdoor thermometer here in Arizona (Yes, 80!), I was looking for fresh rosemary. Rosemary grows like crazy out in the desert. So naturally we have 6 rosemary bushes that I planted a few years ago in my yard.

They are prolific and have provided me and my friends and neighbors with enough rosemary to last all season. I also dry it so I have that amazing home grown rosemary in my pantry. It is quickly becoming my favorite herb!

I love rosemary on just about everything. I even made a rosemary lemon ice cream a few years ago. The best is combining it with garlic, onions and veggies and you have an amazing dinner!

    Ingredients

    • 1 tablespoon extra virgin olive oil 
    • 3 cloves garlic 
    • 4 small boneless skinless chicken breasts (about 1 pound)
    • 2 tablespoons chopped fresh rosemary (or 2 tsp dried)
    • 2 lemons 
    • 1 teaspoon kosher salt
    • 1 teaspoon fresh ground black pepper
    • 1 (24-oz) package frozen summer vegetables (or use fresh if in season) 

    Instructions

    1. Preheat medium (10") skillet over medium high heat. 
    2. Chop rosemary and mince garlic while skillet is heating.
    3. Sprinkle tops of chicken breasts with about 1/4 of the salt, pepper and rosemary. Add oil to skillet. Add garlic. Stir and place chicken in skillet seasoned side down. Sprinkle chicken with about 1/4 of the salt and pepper. Add all of the remaining rosemary.
    4. Cook chicken on both sides until cooked through, about 3 minutes on each side.
    5. Add vegetables. Squeeze lemon juice into skillet, sprinkle with remaining salt and pepper. Place chicken on top of vegetables. Bring to a boil. Cover.
    6. Cook 5 minutes or until vegetables are crisp tender.
    7. Serve and enjoy!

    Succulent sun-dried tomatoes, briny kalamata olives, herbed chicken and tender baby spinach all come together in a rich and creamy cheese sauce. It’s most definitely my favorite one-pot wonder and it’s ready in just 30 minutes.

    Let’s just say it’s so good I broke out into my happy dance! My family knows that if they see me dancing with my food in the kitchen . . . dinner’s going to be incredible!

    One of my favorite kinds of recipes to cook is one-pot meals. I am sure you have noticed my infatuation with one-pot recipes over the years.

    So naturally when we were deciding what was most important to be in our first cookbook, we knew One-Pot Wonders needed it's own chapter!!!

    🔥 "One-Pot Wonders" are rock star recipe with very little clean up and an ease of preparation. All 10 recipes in this chapter are tagged with their total cook time and they are all ready in 30 minutes or less.

    At least half of these recipe simply require you to add the ingredients to the pot and turn on the stove. I can't wait for you to dive into this chapter.


    I mean how much easier could it get???  You simply toss all of the ingredients into your Dutch oven and toss with tongs a few times as it cooks. Then voila, dinner is ready!

    This recipe is crazy good, so good in fact that we I shared it with our friends that own a Greek restaurant they asked for the recipe!!!

    Helpful Tips to make One-Pot Cheesy Greek Pasta with Chicken:

    • Grab two lids of the same size. You can use plasticware or lids from your fridge. Place one lid with the lip facing up, so you have an edge that will hold your food. Fill the lid with pitted kalamata olives. Place the second lid on top of the olives with the lip facing down. Firmly press down on the top lid. The two lips will hold the olives in place, so they do not roll off the lid. Slide your serrated knife between the lids and carefully slice through them. Watch your fingers. Now you have halved olives in the blink of an eye!

    What you will need to make One-Pot Cheesy Greek Pasta with Chicken:

    • Dutch oven - I love this set and use it all the time. It is perfect for roasts and I especially love it for my one-pot meals.
    • Tongs - I love this set of 3. I use every pair of them. They are so handy and grip amazingly well!

    One-Pot Cheesy Greek Pasta with Chicken

    One-Pot Cheesy Greek Pasta with Chicken is a simple recipe featuring our favorite Mediterranean ingredients that infuse big, bold flavors in this ambrosial Greek pasta dish.     Ingredients

    • 1 cup sun-dried tomatoes packed in oil and Italian herbs, drained
    • 1 large yellow onion, sliced
    • 1 lb boneless, skinless chicken breasts, cut into 1/2" pieces
    • 6 cloves garlic, sliced
    • 1 cup kalamata olives, pitted and halved
    • 1 lb linguine pasta, uncooked
    • 2 teaspoons dried oregano
    • 1 teaspoons freshly ground pepper
    • 1 teaspoons kosher salt
    • 8 cups baby spinach leaves, divided
    • 4 cups chicken stock
    • 1 cup Chardonnay
    • 8 ounces feta cheese, crumbled

    Instructions

    1. Combine the tomatoes, onion, chicken, garlic, olives, linguine, oregano, pepper and salt with 4 cups of the spinach in a 12-inch braising pan or Dutch oven over medium-high heat. Pour the chicken stock and the wine over the top.
    2. Cover and bring to a boil. Cook for 7 to 9 minutes, until the pasta is al dente (has a bite to it). Toss the pasta with tongs occasionally to keep it from sticking to the bottom of the pot. You will still have some liquid in the pan when the pasta is done cooking; this is going to make the base for our delicious cheese sauce.
    3. Turn off the heat and add the cheese to the pasta. Toss the pasta with tongs until the cheese melts into the pasta. Toss in the remaining 4 cups (120 g) of spinach.

    DONNA'S NOTES
