How to Make Air Fryer Potato Chips

  1. Soak
Start by soaking sliced potatoes in salted water and then use paper toweling to pat them dry.
  1. Bake

After drizzling them with olive oil, you’ll cook them in your air fryer until they are golden brown.

It takes a little bit of practice to perfect making potato chips in an air fryer. Be sure to check them partway through to check for doneness.

TIP: If you notice that the chips are sticking together, you can use tongs to very carefully separate each of them. This will help them to cook properly.
 
Also, if there are some that are done already, remove them so that they don't burn.
  1. Drain

After you remove the chips from the air fryer, you will need to let them sit on a paper towel to cool.

The simplest way is to line a large cookie sheet with paper towels

Arrange one layer of chips on the paper towel. If you have more chips to cool off, then place a layer of paper towels on top of the first batch before adding another layer of chips.

How thick should the potato slices be?

To make crispy air fryer chips, you will need to cut the potatoes into thin slices. I try to make them about 1/8 inch thick, using a mandolin slicer.

To help them cook evenly, use potato slices that are as close to the same size as possible.

Arranging them in a single layer takes a little longer, but ensures that they cook more evenly.

Best potatoes for air fried potato chips

The best all-around baking potato is a Russet potato.

It's the variety that is most often used for baking and frying. It’s our choice for making this homemade potato chip recipe.

Can I use sweet potatoes instead of regular potatoes?

Yes, if you want to make sweet potato potato chips in an air fryer, you can use the same basic process.

Just check them a few minutes earlier, because sweet potatoes have more sugar in them and may burn otherwise.

Or, you can lower the temperature of the fryer slightly.

For extra delicious sweet potato chips, lightly sprinkle them with cinnamon sugar after removing them from the fryer.

Troubleshooting and tips for success

  • Use a mandoline slicer. This will help ensure you get uniform thin slices of potato chips. This will help them cook better.
  • Don't skip soaking the potatoes in cold water. This step removes the excess starch from the potato which helps prevent them from sticking together.
  • Remove the potatoes from the air fryer as soon as they are golden brown. If you leave them in too long, they will burn.

Why are my airfryer chips soggy?

If your chips came out soggy, you may not have dried them well enough after soaking them.To ensure that they come out crispy, it is important that you pat them completely dry before you fry them.

Air Fryer Potato Chips

Air fryer potato chips are a healthier version of your favorite salty snack! Make this easy recipe for guilt-free snacking!
Prep time: 10 MinCook time: 25 Mininactive time: 30 MinTotal time: 1 H & 4 M

Ingredients

  • 8 cups water
  • 1 tablespoon salt
  • 2 large russet potatoes, sliced to ⅛ inch thick
  • 1 tablespoon olive oil
  • Salt to taste
Serving
  • Fresh parsley, chopped
  • French onion dip
  • Chip dip, your favorite
  • Ketchup

Instructions

  1. Pour water into large bowl, add the salt and stir until the salt is dissolved.
  2. Thinly slice the potatoes to 1/8 inch thick. Using a mandolin slicer is highly recommended.
  3. Soak the potatoes in the saltwater for 30 minutes.
  4. Drain the potatoes and pat dry with a paper towel.
  5. Preheat the Air Fryer to 330°F for 5 minutes
  6. Add potato slices to the large bowl and drizzle with olive oil and toss with clean hands until coated.
  7. Layer the potatoes in the preheated air fryer.
  8. Cook the potatoes at 330°F for 20-25 minutes or until desired browning. Make sure to shake the basket halfway through cooking.
  9. Immediately season the potatoes with salt when done cooking.
  10. Serve immediately with your favorite dipping sauce.

  1. Drying - it’s easiest to line a large cookie sheet with paper towel and layer the potatoes between sheet of paper towels
  2. Cooking potatoes that are close to the same size is best, if possible. And layering in a single layer takes a little longer, but they cook more evenly.

While that may seem like a lot of cheese, it pales in comparison to the country of Denmark. The citizens of that country each eat an average of 62 pounds of cheese every year!

What you’ll need for this cheese sauce recipe

Note: This is just a partial list of ingredients. For a full ingredient list, with amounts, see the recipe card at the bottom of this post.

  • Roux: All cheese sauce recipes start with a roux (pronounced ROO). This is a fancy French cooking term for a thickener made with equal parts of a fat (usually butter) and all-purpose flour.
  • Milk: You need to add liquid to roux to create a pourable sauce. In the case of cheese sauce, the liquid is milk. You can use any type you prefer, but using milk with a higher percentage of fat, like whole milk or half & half, will give you the best results.
  • Cheeses: Although this is a simple cheese sauce, we use three types of cheese. Not only do they add flavor, but each one of them adds an extra layer of creaminess to the sauce.

Velveeta cheese is the perfect choice for a creamy cheese sauce. For the best flavor, we use pepper jack and cheddar cheese.

IMPORTANT NOTE:
To ensure that you have the creamiest sauce possible, buy blocks of cheese and shred them yourself.

This is because packages of shredded cheese have a chemical on them that prevents the shreds from clumping together.

Unfortunately, this chemical also prevents the cheese from melting well.

KITCHEN TOOLS AND EQUIPMENT

Tips for making creamy cheese sauce

  1. Incorporate the milk slowly. If you add all of the milk to the roux at one time, the butter will not combine with the milk to thicken the sauce. As a result, the sauce will be thin and you will notice butter floating on the top of it.
  2. Add the cheese a little at a time. When making cheese sauces and cheese-based soups, be sure to add the cheese slowly, and add it at the end of the cooking time. 
  3. Use low heat. Also, always cook and reheat the sauce over low and slow heat. To maintain a smooth consistency and prevent graininess, using low heat is absolutely necessary.

Uses and Serving Suggestions

You can make the sauce to use in a lot of different ways! Here are just a few ideas:

  • Veggies - Use the cheese sauce for cauliflower, broccoli, carrots, or any other veggies. Picky eaters will gobble them up!
  • Pasta - Use it to make macaroni and cheese, or serve it over any other type of pasta or noodles
  • Breakfast - Serve over scrambled eggs or hashbrowns for breakfast or brunch.
  • Loaded baked potatoes - Top a smoked baked potato or air fryer baked potato with some of this creamy sauce, some crumbled crispy bacon, sour cream, and chives!
  • Nachos - it really needs no explanation but my favorite nachos ever are: pulled pork on tortilla chips with baked beans and this cheese sauce! Add a few jalapenos and a drizzle of barbecue sauce and you'll be in heaven.

Creamy Cheese Sauce Recipe with 3 Cheeses!

This creamy cheese sauce recipe uses 3 cheeses, making it perfect on pasta, vegetables, or as a dip. Make this recipe soon, for any reason!

Ingredients

  • 2 tablespoons unsalted butter 
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cayenne pepper
  • 1 1/2 cups whole milk
  • 1/2 cup freshly shredded pepper Jack cheese
  • 1/2 cup freshly shredded sharp cheddar cheese
  • 8 oz Velveeta cheese, cut into chunks

Instructions

  1. In a small saucepan over medium heat, melt the butter. 
  2. Add the flour, salt and cayenne pepper and whisk to combine. Cook for 1 minute to cook out the floury taste. Don’t skip this step. Trust me, floury sauce is not tasty, and cooking it for a minute will also brown the flour, adding a slight nuttiness to your cheese sauce.
  3. Add the milk, whisking constantly. Simmer until the sauce begins to steam, about 3 minutes. Decrease the heat to low. 
  4. Add the cheeses a handful at a time, whisking after each addition until the cheese melts into the sauce. Lift your whisk out of the sauce. If there are still cheese shreds on the whisk, keep stirring. Continue adding the cheese and whisking until all the cheese is melted into the sauce, and then stir the sauce until it’s well-combined.
  5. The sauce will keep in the refrigerator in a mason jar for 3 to 4 days.
DONNA'S NOTES
  1. When making cheese sauces and cheese-based soups, be sure to add the cheese slowly over low heat, or your sauce could become grainy. Reheat cheese sauces and soups low and slow to maintain the smooth texture.

Tips for Making Smoked Chicken Thighs

This recipe is one of the simplest ways to make smoked chicken thighs at home.

And, it uses one of my favorite homemade rubs, containing New Mexico chili powder and smoked paprika.

One of the reasons I use thigh meat is because it is such an inexpensive cut.

If you are feeding a crowd, or you're watching your grocery budget, cooking chicken thighs in the smoker is a great choice.

It's important to prep the meat before smoking it. You will need to trim the excess skin and fat around the edges first.

When preparing the thighs, make sure that you rub the spices into both the top and the bottom of the piece of meat.

Work a little bit underneath the skin if you can as well.

And, always let the meat rest for five minutes before serving.This allows the juices to redistribute as it cools so that your chicken will be moist and juicy.

How long to smoke chicken thighs

The smoking time depends on the size and the type of smoker you're using. It's really best to smoke the thighs based on the internal temperature reading using a meat thermometer.

This recipe calls for a temperature of 275F. At that temperature, you will need to cook them for about one hour and 35 minutes.

This is the time and temperature if you are using bone-in chicken thighs.

If you are cooking boneless chicken thighs, you will need to cook them for slightly less time.

To smoke boneless chicken thighs, preheat your smoker to 225F and cook them for about 55 minutes.

Remember, they are done when your meat thermometer shows an internal temperature of 165°F.

Don't rely on just the time to determine when your meat is cooked.

What is the best type of BBQ sauce to use?

One of the last steps in this recipe is to brush the meat with BBQ sauce. I love the taste of my KC Style Barbecue Sauce, but you can use your own homemade version.

Or, you can use a bottled BBQ sauce if you are pressed for time.

How to prevent dry rub from burning on the chicken

One of the challenges of cooking with a dry rub in the smoker is preventing it from burning.

When you make this recipe, you will brush BBQ sauce onto the chicken during the last 10 minutes of the cooking time. This will help prevent the sauce from burning.

But, it will still allow the delicious rub to flavor the thighs during the smoking process.

Can I make a double batch?

Yes, you can double this recipe. I love making a big batch because there are so many different ways to use it during the week.

You can easily use the leftovers to make BBQ chicken salad, toss it on to homemade pizza, or use it in your favorite pasta recipe.

Smoked Chicken Thighs

Ingredients

  • 4 chicken thighs, bone-in, skin-on
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon New Mexico chile powder
  • 2 teaspoons light brown sugar
  • 1/2 cup bbq sauce

Instructions

  1. Preheat the smoker to 275°F. Choose your favorite wood, I am using my favorite blend of oak, maple and hickory on my pellet smoker.
  2. Trim any excess skin off of the chicken thighs, set aside.
  3. In a small bowl mix together the garlic powder, onion powder, salt, pepper, paprika, chile powder, and brown sugar. Rub the spice mixture all over the chicken, set aside.
  4. Once the smoker is to temperature, place the chicken thighs directly on to the grates, skin side up. Close the lid and cook for 45 minutes or until the thighs reach an internal temperature of about 140°F. Turn the thighs over and baste it with the bbq sauce. Turn them back over, skin side up, and brush with bbq sauce. Close the lid and cook for an additional 45 minutes or until the chicken thighs reach an internal temperature of 165°F.
