Tips for Making Smoked Chicken Thighs

This recipe is one of the simplest ways to make smoked chicken thighs at home.

And, it uses one of my favorite homemade rubs, containing New Mexico chili powder and smoked paprika.

One of the reasons I use thigh meat is because it is such an inexpensive cut.

If you are feeding a crowd, or you're watching your grocery budget, cooking chicken thighs in the smoker is a great choice.

It's important to prep the meat before smoking it. You will need to trim the excess skin and fat around the edges first.

When preparing the thighs, make sure that you rub the spices into both the top and the bottom of the piece of meat.

Work a little bit underneath the skin if you can as well.

And, always let the meat rest for five minutes before serving.This allows the juices to redistribute as it cools so that your chicken will be moist and juicy.

How long to smoke chicken thighs

The smoking time depends on the size and the type of smoker you're using. It's really best to smoke the thighs based on the internal temperature reading using a meat thermometer.

This recipe calls for a temperature of 275F. At that temperature, you will need to cook them for about one hour and 35 minutes.

This is the time and temperature if you are using bone-in chicken thighs.

If you are cooking boneless chicken thighs, you will need to cook them for slightly less time.

To smoke boneless chicken thighs, preheat your smoker to 225F and cook them for about 55 minutes.

Remember, they are done when your meat thermometer shows an internal temperature of 165°F.

Don't rely on just the time to determine when your meat is cooked.

What is the best type of BBQ sauce to use?

One of the last steps in this recipe is to brush the meat with BBQ sauce. I love the taste of my KC Style Barbecue Sauce, but you can use your own homemade version.

Or, you can use a bottled BBQ sauce if you are pressed for time.

How to prevent dry rub from burning on the chicken

One of the challenges of cooking with a dry rub in the smoker is preventing it from burning.

When you make this recipe, you will brush BBQ sauce onto the chicken during the last 10 minutes of the cooking time. This will help prevent the sauce from burning.

But, it will still allow the delicious rub to flavor the thighs during the smoking process.

Can I make a double batch?

Yes, you can double this recipe. I love making a big batch because there are so many different ways to use it during the week.

You can easily use the leftovers to make BBQ chicken salad, toss it on to homemade pizza, or use it in your favorite pasta recipe.

Smoked Chicken Thighs

Smoked Chicken Thighs are flavorful and juicy inside, with perfectly crispy skin. Use our recipe for cooking chicken thighs on any type of smoker!

Ingredients

  • 4 chicken thighs, bone-in, skin-on
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon New Mexico chile powder
  • 2 teaspoons light brown sugar
  • 1/2 cup bbq sauce

Instructions

  1. Preheat the smoker to 275°F. Choose your favorite wood, I am using my favorite blend of oak, maple and hickory on my pellet smoker.
  2. Trim any excess skin off of the chicken thighs, set aside.
  3. In a small bowl mix together the garlic powder, onion powder, salt, pepper, paprika, chile powder, and brown sugar. Rub the spice mixture all over the chicken, set aside.
  4. Once the smoker is to temperature, place the chicken thighs directly on to the grates, skin side up. Close the lid and cook for 45 minutes or until the thighs reach an internal temperature of about 140°F. Turn the thighs over and baste it with the bbq sauce. Turn them back over, skin side up, and brush with bbq sauce. Close the lid and cook for an additional 45 minutes or until the chicken thighs reach an internal temperature of 165°F.

Tips for making air fried chicken

  • You can marinate your chicken in the refrigerator before you cook with it. Using buttermilk helps keep it nice and juicy when you bake it. 

  • If desired, allow it to marinate between 1 hour and 24 hours. Or, if you're pressed for time, you can skip this step.

  • If you would like a little kick, add 1/4 cup of your favorite hot sauce to your buttermilk dip.

  • Make sure your chicken is covered with oil. All flour spots will taste floury when the it is done if you don’t spray them with oil and cook it.

  • When you place them in the air fryer, be sure that the sides aren't touching. This helps them cook evenly and come out nice and crispy. Crispy air fried chicken is my favorite.

  • How long you need to cook air fried chicken depends on the type of air fryer you have. You should use a meat thermometer. 

  • The chicken is ready when it reaches 165°F or more, so pull the chicken out at 163°F as it will continue to cook.

What type of chicken is best?

You can use any type of chicken that has skin on it. I've used a combination of legs and thighs. Larger pieces like breasts will need to cook longer.

So, try to find pieces that are uniform in size so all of the pieces cook for the same amount of time.

Just keep in mind that the breading might not stick as well to skinless chicken.

Bone-in chicken with skin will work best in this recipe.

How to make your own buttermilk

If you don't have buttermilk to dip your chicken in, you can make your own. All you need to do is to mix one cup of milk with one tablespoon of white vinegar.

If you don't have vinegar, you can use lemon juice. Just let it sit for 5 minutes until you notice that the mixture has curdled. You'll never have to run to the store for buttermilk again.

How to store leftovers
If you have leftovers of this air fried chicken, you should store them in the refrigerator in a container with a tightly fitting lid. You can keep it in the refrigerator for 3 to 4 days.

If you want to store it for a longer period, you can freeze it for up to 6 months.

To defrost, let it thaw in the refrigerator and then reheat it or enjoy it cold.

This recipe is delicious cold the next day. You may want to make extra so you can plan another meal with it cold.

How to reheat air fried chicken
This chicken is at its best on the same day you make it. But, you can reheat it if you need to. Just place it back in the air fryer at 370F for about 10 minutes.

Air Fryer Fried Chicken

Air Fryer Fried Chicken lets you enjoy the taste of fried food with a fraction of the fat and calories. Make this recipe for a comfort food dinner!

Ingredients

  • 2 pounds skin on chicken, legs and thighs
  • 2 cups buttermilk
  • 2 large eggs
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground black pepper 
  • Oil for spraying chicken - vegetable, canola or olive oil
Chicken Coating
  • 2 cups all-purpose flour
  • 1 tablespoon garlic powder
  • 1 tablespoon seasoned salt
  • 1 1/2 teaspoons smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon fresh ground black pepper
  • 1 teaspoon kosher salt

Instructions

  1. Dry chicken with a paper towel and set aside.
  2. In a large bowl combine buttermilk, eggs, salt, and pepper. Whisk until well combined.
  3. In a separate large bowl combine flour, garlic powder, seasoned salt, paprika, onion powder, black pepper, and salt. Whisk to combine.
  4. Add chicken to coating and toss the chicken until coated.
  5. Remove chicken from the coating and dip into the buttermilk mixture.
  6. Return dipped chicken to the flour mixture, toss to coat the chicken.
  7. Spray the basket of the air fryer with oil. Place the prepared chicken in your air fryer basket, leaving room around each piece to allow air to flow. Liberally spray the chicken with oil.
  8. Cook at 370°F for 15-20 minutes. Cooking times will vary between air fryers so closely monitor your cook time and temperature.
  9. Turn the chicken over with tongs and spray with more oil.
  10. Cook for an additional 5-10 minutes or until golden brown and the internal temperature reaches 163°F.
  11. Repeat with any remaining chicken.
  12. Serve immediately.
