No barbecue is complete without a side of potato salad, but to be honest, I have never been a huge fan of the classic potato salad that has eggs and mayonnaise. There had to be a potato salad that wasn't coated in mayonnaise and there is- German Potato Salad!

What is German Potato Salad?

German Potato Salad is a side dish consisting of diced red potatoes, bacon, and onions.

Rather than being tossed in eggs and mayonnaise like the classic American version, the potatoes are tossed in a warm sauce made up of bacon grease, red onion, and vinegar.

This German Potato Salad can be served cold but unlike the classic potato salad, this potato salad is very good warm and often served that way.

Helpful Tips to make German Potato Salad:

  • Cook the bacon over medium heat. You want to render the fat so you need to cook it slowly. Once the bacon is nice and crisp, spoon it out with a slotted spoon onto a paper towel lined plate. You want to leave all the grease in the pan for cooking the onions.
  • Dice your potatoes before cooking. Trying to cut scorching hot cooked potatoes is not very fun.
  • Pour the dressing over the potatoes while they are still warm. Warm potatoes are able to absorb the dressing so that they take on all the flavors. When the potatoes are cold they somewhat repel the dressing.
  • For a more beautiful presentation, reserve a couple tablespoons cooked bacon, and tablespoon of onion and parsley each to sprinkle on top after mixing everything together.
  • If transporting this to a party, I suggest mixing the bacon in right before serving so that it doesn't lose all its crispiness. That is half of what makes bacon so delicious, am I right?

German Potato Salad

German Potato Salad is a must have barbecue side dish that comes together quickly and can be eaten hot or cold. This bacon loaded salad has NO mayonnaise but instead is tossed in a vinegar oil dressing.

Ingredients

  • 2 pounds red potatoes diced
  • 1/2 pound bacon diced
  • 1 red onion chopped
  • 1/2 cup apple cider vinegar
  • 1 tablespoon dijon mustard
  • 2 tablespoons olive oil
  • salt & pepper
  • 6 green onions sliced
  • 1/4 cup flat leaf parsley chopped

Instructions

  1. Place potatoes in a medium size pot and cover with cold water and bring to a boil. Cook for about 10 minutes until tender. Drain and place in a large bowl.
  2. Meanwhile, cook the bacon in a fry pan until crispy. Remove with a slotted spoon onto a paper towel lined plate. Add the onions to the bacon grease and cook for 3 minutes. Add the vinegar and mustard and cook for another 2 minutes. Remove from heat, mix in the oil, and pour over the warm potatoes. 
  3. Season with salt and pepper. Add the green onions, parsley, and cooked bacon. Toss it all together and serve. This dish can be serve hot, room temperature, or cold.

These smoked bbq beans are one of our favorite summer side dishes. But, summer parties are the perfect time to bring along a variety of dishes.

How to Make Smoked Baked Beans

After preheating your smoker and choosing your favorite wood, you simply combine the ingredients in a pan. I prefer to use a cast iron pan.

But, you can also use a Dutch Oven if you want to. Or, if you are cooking for a crowd, you can use a disposable aluminum pan.

Place your pan in the smoker and cook for about three hours. You will stir every hour and cook until the sauce has thickened and the beans are cooked.

If you're new to smoker recipes, this smoked baked beans recipe is a simple dish to get started with.

How can I make this without a smoker?

This recipe can be prepared in a slow cooker but will not have that smoked flavor. Cook it on HIGH for 3 hours or LOW for 6 hours. 

You can bake this recipe in the oven but it will not have that smoked flavor. Bake it at 400°F for 55-60 minutes until the sauce thickens.

Frequently asked questions

What beans are used in baked beans?

Baked beans are usually made from haricot beans. Another name for haricot beans is navy beans. You can find them either dried or in a can at the grocery store.

Can I use homemade baked beans?

This recipe starts with two cans of already prepared baked beans. If you would prefer to make baked beans from scratch, you can do that as well.

Just be careful what seasonings you use so that they do not overwhelm the smoke flavor.

How long does it take to smoke beans?

This smoked baked beans recipe takes about three hours to make in your smoker. You will need to check it every hour.

The exact time you need really depends on the type of smoker you have. The baked beans are done when the sauce has thickened and the beans are heated all the way through.

What type of bacon do I add to baked beans?

I prefer my bacon to be cooked but not crispy. To bake bacon: lay slices of bacon on a foil-lined baking pan. 

Place the pan in the cold oven, turn the heat to 400°F and bake for 8-10 minutes. 

The length of time will vary based on the thickness of your bacon (thick-cut takes longer). Chop up the cooked bacon and refrigerate until ready to use.

What you need to make Smoked Baked Beans

What about leftovers?

We eat these so quickly that we very rarely have any leftovers to store. But, you can put them in the refrigerator for another day if you do.

Store your smoked baked beans in an airtight container in the refrigerator for 5-7 days. If you would prefer to freeze them, you can do that as well.

To freeze baked beans, let the beans come to room temperature. Then, transfer them to an airtight container.

They will keep for 2-3 months.

To reheat your baked beans, just heat them in a pan on the stove until they are warmed through.

Or, you can heat them in the microwave. They are just as delicious the following day as the first time.

Smoked Baked Beans

Smoked baked beans is the first of our smoker recipes! These tender beans with bacon are the perfect side dish! Make this recipe using any smoker.
Prep time: 5 Minutes Cook time: 3 HoursTotal time: 3 Hours & 5 Minutes

Ingredients

  • 2 (28-ounce) cans Bush's original baked beans (or 4 (15.5-ounce) cans)
  • 2 (14-ounce) cans kidney beans, rinsed and drained
  • 1 cup barbecue sauce (I used KC Masterpiece)
  • 1/4 cup light brown sugar
  • 1 (7-ounce) can fire-roasted diced chiles (I used Macayo’s)
  • 1 cup A&W root beer
  • 1 pound regular cut bacon, cooked and chopped (1/2-3/4” pieces)

Instructions

  1. Preheat your smoker to 225°F. Choose your favorite wood, I am using my favorite blend of oak, maple and hickory on my pellet smoker.
  2. Combine the ingredients in a cast iron pan or aluminum pan (I used a 9x12-half steam table pan), whatever you prefer to cook on your smoker with.
  3. Place your pan on your smoker. Keep in mind the closer to the heat source, the faster they will cook. I like to keep my beans closer to the heat source when possible.
  4. Smoke for 3 hours, gently stirring every hour, or until the sauce has thickened and the beans are heated through. If the sauce gets too thick, you can stir in some more root beer to thin it out.
DONNA'S NOTES

Cooking smoked chicken leg quarters in your smoker is such an easy thing to do. I am really enjoying using my smoker more this summer.

The final result is a delicious smoked flavor that just cannot be beaten.

Recipe Tips for Smoked Chicken Quarters

For even more flavor, sear the chicken leg quarters in butter before you place them in the smoker. The final result will be richer and will result in a darker color.

Always let the chicken rest for at least 5 minutes when you remove it from the smoker. This lets the juices settle evenly in the meat.

The result is tender, juicy chicken. Remember that the internal temperature will continue to go up 10 to 15 degrees as it rests.

How to measure internal temperature of chicken pieces

To check the internal temperature of smoked chicken quarters, put the tip of the thermometer into the thickest part of the chicken.

But, be sure that the thermometer doesn't touch the bone. Then, look at the display to see the lowest number that it reads.

That number is the internal temperature of your chicken.

The USDA recommends an internal temperature of 165°F for all chicken and poultry to be done.

However, for extra tender fall off the bone chicken quarters, let them cook until the internal temperature reaches 180°-190°F.

It's definitely worth a few extra minutes for the end result.

How long does it take to smoke chicken leg quarters? 

The length of time it takes to make this smoked chicken recipe will depend on the temperature your smoker is set to.

  • At 225°F degrees, you should smoke the chicken leg quarters for four hours.
  • If smoking at 275°F, you will need to cook your chicken for 2 1/2 to 3 hours.
  • At 300°F, you should smoke the chicken leg quarters for one hour and 45 minutes.

What type of wood chips are best for smoked chicken? 

The type of wood chips you use will contribute to the flavor of your smoked chicken quarters. It's important to keep that in mind when making your choice.

Using a fruit wood like apple, cherry or peach will give your chicken a slightly sweet, fruity taste.

For a true southern barbecue taste, opt for hickory which is traditional for smoking. Or, maple results in a mild, sweet flavor that's popular as well.

Finally, if you enjoy a strong, smoky flavor when you smoke meats, you can use mesquite. Using mesquite will result in the strongest flavor when smoking.

My personal preference is to use a more subtle wood like apple when smoking chicken. Experiment to see which flavor is your favorite.

Is it necessary to marinate the chicken? 

No, you don't need to marinate the chicken when you make smoked chicken quarters. I use a seasoning rub that you will work into the skin.

The result is a smoky, sweet flavor that is absolutely delicious.

If you would prefer to marinate your chicken instead of using this rub, you can do that as well.

Just place the chicken in a dish, add your favorite marinade, and cover it with plastic wrap. Let the whole thing sit overnight in the refrigerator before smoking.

Smoked Chicken Quarters

Smoked chicken quarters are juicy and tender on the inside with crispy skin on the outside. Make this smoker recipe using any type of smoker!
Prep time: 2 Minutes Cook time: 3 Hours Total time: 3 Hours & 2 Minutes

Ingredients

  • 10 pounds chicken leg quarters
  • 2 tablespoons turbinado sugar (aka course)
  • 1 tablespoon light brown sugar
  • 1 tablespoon chipotle powder
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon kosher salt
  • 1 1/2 teaspoons smoked paprika
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon fresh cracked black pepper

Instructions

  1. Preheat the smoker to 275°F. Pat the chicken leg quarters down with paper towels to get any excess liquid off, lay them out on a sheet tray or work surface.
  2. In a small bowl mix together the chipotle powder, onion powder, garlic powder, salt, coarse sugar, brown sugar, paprika, chili powder, and pepper. Generously rub the chicken leg quarters with the spice mix, try to get under the skin if you can.
  3. Place the leg quarters directly onto the smoker grates. Smoke for 2-3 hours. Chicken is ready when an internal temperature reaches 165°F. However, for extra tender fall off the bone chicken quarters, let them cook until an internal temperature reaches 180°-190°F
