What's Sizzling on TSRI This Week?  Our hottest recipes! We have officially decided to plant some roots for the next month. We have been enjoying traveling over the last several months, but with the gorgeous weather here at home and the holidays around the corner home sounds great.

Being home has given me a chance to do some really recipe development and let me tell you we have some insanely awesome recipes coming this week. First of all 

I started working on my Thanksgiving gravy recipe and Oh my word! It is incredible. I have also been working on cookies and crock pot dinners. So, you will have some fabulous dishes in your email box this week!

We may be planting roots, but we will be enjoying our fair share of local fun this month. There is so much going on and we are totally stoked to be going to the sold out NASCAR race next weekend. Isn't that the best group of photos? Christmas cookies, Thanksgiving stuffing, pan-fried chicken thighs, crockpot carnitas and that hottie in the center there... That is Chad. 2 years ago for Christmas I got him a NASCAR Racing Experience. So, he had the opportunity to actually drive a real NASCAR car on the track at the PIR (Phoenix International Raceway). That is the same track that we will be watching the NASCAR race at this weekend. Think they will let him drive? I wonder if I could talk to someone. LOL.

Totally freakin' excited about the race. It is next Sunday. BTW, if you are looking for a Christmas gift that will blow the ordinary gift out of the water... Get the NASCAR Racing Experience. There is usually a Groupon available to make it relatively reasonable. I highly recommend it.

In the kitchen this week... we are working on a lot of fabulous recipes. Comfort food and lots of crockpot dinners are the theme this week. Of course, Lazy Day cooking. Which by the way... Big secret (not anymore) we are working on our Lazy Day eCookBook. It will be out soon. What do you think about that?

This recipe has been so popular lately that I decided to share it with you again...

Did you know October is national pork month?  Seriously.  I am pretty sure they made this holiday just for us.  You have seen my bacon recipe collection, correct? We are so excited to be partnering with the National Pork Board. We are a match made in heaven.

This year one of my favorite stores is partnering with the National Pork Board to celebrate. Costco, which let's face it would be my only store if I had a bigger family and more freezers, has partnered with the National Pork Board with an entire month dedicated to pork.  It's 'Porktober'! Costco will be bringing you sales on different cuts of pork all month long.

This week they are featuring the pork tenderloin which I absolutely love!  I have been on a jalapeno popper kick for a few months and I knew exactly what I wanted to create with these fabulous pork tenderloins. I was already dreaming of jalapeno popper pork.  {{slurp}}

Chad, Munchkin and I headed out to Costco for our weekly shopping trip.  Wednesdays and Thursdays seem to be the best days for shopping around us, less people and you can still catch the sample people on Thursday, which Munchkin loves. We love getting our pork at Costco, they have an awesome variety of cuts and you can't beat the prices. Not to mention the quality is truly a step above.


Chad actually worked as an art director for many years. I remember the process his old employer went through to get their products approved to sell at Costco. It is quite an arduous task. It took well over 6 months to meet their stringent requirements. As much of a pain that it was, as a customer, I am thrilled that they take that kind of time to screen the perfect companies and products. It makes me confident in my purchases and this day was no different.

I headed out for all the fixin's for my Jalapeno Popper Stuffed Pork Tenderloin. Cream cheese, Colby Jack cheese (I buy the bricks and grate myself), bacon crumbles and of course the pork tenderloin.  I was thrilled to discover there were 4 tenderloins in each 2 pack. Yay me!

Perfectly seasoned cream cheese, Colby Jack cheese, bacon crumbles and jalapenos create the perfect filling for this Jalapeno Popper Stuffed Pork Tenderloin. I guess that is technically double the pork and double the cheese {{swoon}}.  No complaints there.

A really simple recipe, it comes together in a snap.  It all starts by butterflying the tenderloin and pounding it thin.  Then a glorious layer of jalapeno popper filling is spread over top.  It is baked to perfection and the end result is a tender, juicy pork tenderloin that is bursting with flavor and will surely knock your socks off!

Chad and I went nuts over this recipe.  It was so good I actually made a second one. Served this with au gratin potatoes and veggies.  Homerun.

I was a little skeptical when I first started preparing pork, I guess it was a fear of over cooking it but now I just remember that for a flavorful, tender and juicy dish, cook loin roasts, chops and tenderloins to an internal temperature between 145°F (medium rare) and 160°F (medium), followed by a three-minute rest, using a digital thermometer to ensure accuracy. Bullseye every time! I also found this awesome video on how to stuff a pork tenderloin to help you.

  • Why New Mexico Chile Powder? It has a deep dark reddish brown color and features an earthy, sweet flavor and subtle, spicy heat. It is mildly hot and absolutely perfect in this sauce. It creates a truly authentic flavor! New Mexico Chili Powder can be found in the international aisle in the bulk bags or on Amazon. if you are afraid the heat will be too much you can use half New Mexico Chili Powder and 1/2 regular chili powder.

    Jalapeno Popper Stuffed Pork Tenderloin

    Perfectly seasoned cream cheese, Colby Jack cheese, bacon crumbles and jalapenos create the perfect filling for this Jalapeno Popper Stuffed Pork Tenderloin. A really simple recipe, it comes together in a snap. The end result is a tender, juicy pork tenderloin that is bursting with flavor and will surely knock your socks off!
    prep time: 30 minscook time: 35 minstotal time: 65 mins

    Ingredients

    • 1 1/2 pound pork tenderloin
    • 1/2 (8 ounce) package cream cheese, softened
    • 1/2 teaspoon New Mexico Chile Powder
    • 1/4 teaspoon ground cumin
    • 1/4 teaspoon kosher salt
    • 1/4 teaspoon onion powder
    • 1/8 teaspoon garlic powder
    • 1/4 cup bacon crumbles (or 4 strips of bacon precooked and crumbled)
    • 1/2 cup shredded Colby Jack Cheese
    • 2-3 jalapenos, (seeded, deveined and diced)
    • salt and pepper to taste
    • olive oil

    Instructions

    1. Preheat oven to 350°F. Line a baking sheet with aluminum foil. Set aside.
    2. Drizzle 1 tablespoon olive oil into a medium skillet over medium - medium-high heat. Add jalapenos. Sauté until jalapenos are slightly browned.
    3. Meanwhile in a medium size bowl; combine cream cheese and spices. Mix until combined. Add bacon and cheese. Stir until combined. Add jalapenos and stir one last time. Taste. Add salt if necessary.
    4. Cut a lengthwise slit down the center of the pork tenderloin to within 1/2-inch of bottom (careful not to cut all the way through). Open tenderloin so it lies flat. Cover with plastic wrap. Flatten to 1/4-1/2 inch thickness by gently pounding with the flat side of a meat mallet, starting from the middle and working outward. Remove plastic wrap.
    5. Lay pork tenderloin on the counter top with the long sides being the top and bottom and the short sides being at the left and right sides.
    6. Smear jalapeno popper mixture over the pork, leaving a 1" edge around the bottom and left and right sides uncoated. Roll the pork toward you. Meet the two long edges together and tuck the coated edge under the uncoated edge. Lay seam side down and tie the roast at 1-1/2-inch to 2-inch intervals with kitchen string. The tuck the ends under the roast and wrap string around the roast longways to hold closed.
    7. Drizzle the tenderloins with a little olive oil. Sprinkle with salt and pepper. Place in the oven and bake for 25-30 minutes or until a thermometer inserted into the center of the pork registers 140°F.
    8. Turn oven setting to broil (broil hi) and cook until the top is nicely browned. About 3-5 minutes.
    9. Transfer to a cutting board to rest, about 10 minutes. Slice and serve.
    10. Enjoy!

    Helpful Tips to make Copycat Outback Alice Springs Chicken:

    • Use a plastic Zip lock bag to marinade your chicken in. Doing this allows the chicken to be fully immersed in the honey mustard sauce and makes for easier cleanup, too.
    • Add a pinch of salt to the mushrooms while they are cooking. The salt not only seasons the mushrooms, but helps them release their moisture, which means a faster cooking time.
    • Use parchment paper to line your baking sheet. The sweet honey mustard sauce will run off the chicken and burn onto the baking sheet as it cooks. Lining it with parchment paper creates a non-stick surface for the chicken and makes cleanup a breeze!

    Outback Copycat Alice Springs Chicken

    Outback Copycat Alice Springs Chicken is bursting with flavor and so easy to prepare! It is no wonder its one of the most popular menu items at Outback Steakhouse! Tender chicken, honey mustard sauce, sautéed mushrooms, bacon and Swiss cheese turn ordinary, plain chicken into a meal you’ll want again and again!
    prep time: 1 hour 10 Min cook time: 35 minstotal time: 1 hours and 45 mins

    Ingredients

    • 1/2 cup honey
    • 1/2 cup Dijon mustard
    • 3 tablespoons mayonnaise
    • 1 tablespoon fresh lemon juice
    • salt and pepper
    • 4 boneless skinless chicken breast halves
    • 2 tablespoons olive oil
    • 6 slices bacon, cooked until crispy and cut in half
    • 2 cups button mushrooms
    • 1 tablespoon butter
    • 1 cup Monterrey Jack Cheese, grated
    • Fresh Parsley, chopped

    Instructions

    1. Whisk together honey, Dijon mustard, mayonnaise, and lemon juice in a small bowl until smooth. Reserve ½ cup of sauce and set aside. Pour remaining honey mustard sauce into a gallon-sized Zip lock bag and add chicken. Marinade for 1 hour, up to 24 hours. 
    2. Preheat oven to 400 degrees and line a baking sheet with parchment paper.
    3. In a heavy-bottomed skillet, heat 2 tablespoons of olive oil over medium-high heat until it shimmers. 
    4. Remove chicken from the marinade with tongs and place into hot skillet. Season each side with salt and pepper and cook until golden brown but not cooked through, working in batches as not to over-crowd the pan.
    5. Place browned chicken on prepared baking sheet. 
    6. In the same skillet, add butter and melt over medium heat. Stir in mushrooms and a pinch of salt, and cook until tender and starting to brown. Remove from heat. 
    7. Divide and spoon mushrooms over the chicken breasts, followed by 2 slices of bacon, and the Monterrey jack cheese. 
    8. Bake for 10-15 minutes or until the thickest part of the chicken reaches 165 degrees.
    9. Top with fresh parsley and serve with reserved honey mustard sauce for dipping.

    Not only is their cheesecake phenomenal but so is their food.

    I LOVE their Louisiana Chicken Pasta but I first always get an order of Avocado Egg Rolls. If you don't have the restaurant near you, no worries! You can make these egg rolls right at home.

    Helpful Tips to make Cheesecake Factory Copycat Avocado Egg Rolls:

    • Make the dipping sauce first. The egg rolls are best eaten shortly after they are fried so having the sauce ready to go is best. You can make it a day in advance if needed.
    • Be sure to buy your avocados a few days in advance to give them time to fully ripen and get soft. I can rarely find perfectly ripe avocados at the store.

    How to Fold the Egg Rolls:

    • Dip your finger in the beaten egg and brush it over all the edges. Place 1/4 cup of the avocado mixture in a line, diagonal, from corner to corner. 
    • Fold in the ends and press the wonton down around the filling. Fold up the bottom corner, and then roll up the egg roll making sure all the edges are sealed.

    • Tongs- You'll want to use tongs to move the egg rolls in and out of the hot oil.

    • 9 Wonton wrappers
    • 1 egg beaten
    Chipotle Ranch Dipping Sauce
    • 1/2 cup Greek yogurt or sour cream
    • 1/2 cup mayonnaise
    • 1/2 cup buttermilk
    • 1/2 cup cilantro
    • 1 chipotle pepper in adobo sauce
    • 1 teaspoon adobo sauce add more to taste
    • 1/2 lime juice
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder

    Instructions

    1. In a mixing bowl, toss together the avocado, tomatoes, cilantro, onion, and salt.
    2. Place a wonton sheet on the counter with one corner pointed toward you. Add about 1/4 cup filling to the middle in a horizontal line. Dip a finger in the beaten egg and brush all the edges. Fold in the sides, pressing down on the wonton at the ends holding in the filling. Fold up the bottom corner over the filling and then roll the wonton forward and lightly press the exposed corner on the outside.
    3. Cook in a pot with 1/2 of oil heated to 350 degrees. You may need to work in batches. Cook for 45-60 seconds per side or until golden. Drain on a paper towel lined plate. Cut diagonally in half and serve with the dipping sauce.
    4. Chipotle Ranch Dipping Sauce:
      Place all sauce ingredients in a food processor or blender and puree until smooth. Pour into a bowl and place in fridge until ready to serve.

    Last night Chad asked me to make my pork for this weekend.  So, I decided to share it with you so you can experience the Best Ever Simple Crockpot Pulled Pork Sandwich recipe too!

    Best Ever Simple Crockpot Pulled Pork Sandwiches

    The Best Ever Simple Crockpot Pulled Pork Sandwiches are incredibly moist, tender and delicious. A simple recipe, loaded with flavor from a homemade barbecue sauce and Dr. Pepper. Dr. Pepper? Yep. You would never believe all the flavor that DP imparts into this pork.

    Ingredients

    • 5-pound pork butt, trimmed of visible fat
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon smoked paprika
    • ½ teaspoon kosher salt
    • ½ teaspoon fresh ground black pepper
    • 3 cups Dr Pepper
    • 3 cups KC Style Barbecue Sauce, divided (or your favorite)
    • 12 hamburger buns, split and lightly toasted
    • 12 pickle slices

    Instructions

    1. Combine spices in a small bowl, mix well.  Massage spice mix into pork and place in crockpot.  Pour soda over pork.  Cook on low 5-7 hours, until pork is tender and pulls apart easily.
    2. Drain completely, shred pork using 2 forks, add 2 cups barbecue sauce and cook on low for one hour.  Serve on toasted bun with a pickle slice and more of the remaining 1 cup barbecue sauce.
    3. Enjoy!
