Nothing beats the summer heat like an icy cold summery treat.  I love popsicles!  They are light, refreshing, so easy to make and made perfectly sweet for you, as you control the sugar. 

There was not much thinking when I was deciding what flavor to make.  Chad and I scored the best strawberries at the grocery store last week.  We ended up buying around 70 pounds total. 

Needless to say, we are stocked for the year on Strawberry Jam and have been enjoying many summery desserts.  It truly was lucky to get such great strawberries for such a great price.

I have been making this simple recipe and sharing it with everyone who pops in.  It is so scrumptious that I have been through several batches already. 

The adults are blown away that they are home made. The kids gobble them up and I enjoy every minute of it.  Munchkin asks for these all the time.  The best part is...  I feel good about feeding them to her.

Helpful Tips to make Sublime Strawberry Popsicles:

  • Adding a little sugar to the berries and allowing them to macerate really amps up the strawberry flavor in addition to bringing out their sweetness.
  • I love lemon juice in these pops, but lime or orange will be delicious as well.
  • After they freeze, I store my popsicles in snack size ziptop bags and place all of those individual bags into a gallon size ziptop bag. They keep well for 6 - 8 months.

What you will need to make Sublime Strawberry Popsicles:

  • Popsicle molds - these are our favorite, although any mold will work.
  • Blender - I love to use a high powered blender for all smoothies and it is perfect for these ice pops.

Sublime Strawberry Popsicles

3 ingredients make the most perfect Strawberry Ice Pop! It's the perfect summertime treat.

Ingredients

  • 2 pounds ripe strawberries, washed, hulled and halved
  • 2 tablespoons sugar
  • 2 tablespoons lemon juice

Instructions

  1. Place strawberries in a medium bowl.  Add sugar.  Toss to coat.  Allow berries to macerate for about 30 minutes. Once you see juice in the bowl you can move on to the next step.
  2. Add strawberries and lemon juice to food processor or blender. Blend until strawberries are pureed. Add to popsicle molds. Freeze for 4-24 hours.  I leave mine in for 24 hours.

These Blueberry Vanilla Yogurt Ice Pop Popsicles are the consummate summer treat. They are creamy, fruity, and ice cold!

Loaded with vitamin C, antioxidants, and power-boosting protein, these fruit popsicles are going to be a staple in my freezer now.

The summer weather is here to stay. And, I have been collecting my recipes for fruit popsicles to stay cool. Have you had a chance to try these Pineapple Orange Popsicles yet?

They have no refined sugar and are a perfect cool treat for a hot day. Or, these Strawberry Kiwi Vitamin C Ice Pops are an easy 4 ingredient popsicle recipe for a healthy summer treat.

Are fruit popsicles healthy?
Whether or not your popsicles recipes are healthy really depends on what you put in them.

If they contain protein and fresh fruit without a lot of added sugar, chances are they are a healthy summer popsicle recipe.

That's why these Blueberry Vanilla Yogurt Ice Pop Popsicles are such a favorite of mine. They contain only one tablespoon of added sweetness from the honey.

How to make popsicles at home
These fruit popsicles are so easy to make at home that you'll never want to buy them at the store again. All you will need is a popsicle mold of some sort.

You can make popsicle fruit pops in any type of mold from a Dixie cup and a popsicle stick to a popsicle mold. If you want them to look like the ones you buy at a store, you will want to use a mold. 

What you will need to make Blueberry Vanilla Yogurt Popsicles

Can I add chunks of fruit?
All of the ingredients in these fruit popsicles are blended until they are smooth and creamy. But, if you want a popsicle recipe that has chunks of fruit, you can make whole fruit popsicles as well.

Just add whole blueberries to the popsicle mold before you freeze them. They will need to be small enough to fit into the mold. So, you may need to slice them in half if they are too large.

For larger fruits, you may want to slice them into thin slices rather than thicker chunks.

What other fruits can I use?
You can puree almost any type of fruit for these fruit popsicles. Why not try another type of fresh berry. Or, try mango, pineapple, kiwi, or even peach.

Pureed bananas make a great choice if you are looking for fruit popsicles with no added sugar. They are sweet enough on their own.

The important thing to remember is to blend the fruit so the texture is creamy and smooth.

Helpful Tips to make Blueberry Vanilla Yogurt Popsicles

  • If you're wondering how to make popsicles creamy, not icy, it's the addition of the yogurt that adds creaminess to your yogurt popsicle.
  • If you want coconut milk fruit popsicles, you can add coconut yogurt rather than traditional dairy-based yogurt for a lactose-free popsicle recipe. Or, you could try another plant-based yogurt like soy or almond.
How long do these need to freeze?
The hardest part about making these yogurt popsicles is waiting for them to freeze. When making fruit popsicles, you will need to let them freeze for at least 4 hours.

I like to freeze mine for 24 hours to make sure everything is solid. So, make sure you plan ahead and make them the day before you want to enjoy them.

How can I serve these fruit popsicles?
If you're planning on serving these at a party, I find it's best to set them in a large tray of ice cubes so that they stay frozen and don't melt.

And, if you are serving them to kids, slip a cupcake liner through the stick on the bottom to catch any of the messy drips. You'll appreciate it when it's time to clean up.

Blueberry Vanilla Yogurt Fruit Popsicles

Blueberry fruit popsicles perfectly sweetened and packed with delicious vanilla yogurt and luscious fresh blueberries.
Prep time: 5 MFreeze time: 4 hoursTotal time: 4 H & 5 M

Ingredients

    • 2 cups blueberries, fresh or frozen defrosted
    • 1 tablespoon honey
    • 3 ½ cups vanilla yogurt, divided

      Instructions

        1. In a small bowl, stir honey and blueberries together. Set aside.
        2. In a blender combine blueberry mixture and 2 cups yogurt, blend until a smooth consistency is achieved.
        3. Fill ice pop molds with 1½ cups vanilla yogurt.  Layer blueberry mixture on top.  Freeze 4-24 hours, until ice pops are frozen through.  I like to freeze mine for 24 hours.
        4. Serve and enjoy!

          If you are looking for a tasty way to beat the summer heat, the Raspberry Lemonade Yogurt Ice Pop is just the perfect treat.  Chad and I have a deep love and appreciation for all things lemon.

          Whether its sweet treats, savory eats, household remedies or beauty treatments we are always happy to use lemon.  We always have a fruit basket full of lemons and a good portion of the year we are fortunate enough to have a tree full of lemons.

          As I was preparing these fabulously flavorful frozen treats, all I could think about was biting into one.  Savoring the layers of tart lemon juice and lemon zest and contrasting sweet raspberries perfectly combined with smooth and creamy protein packed yogurt.

          I very carefully constructed each popsicle.  Took my time, I mean look at those raspberries, all with the end game in mind.  These were mine!  Chad doesn't care for popsicles that much and Munchkins palette isn't quite developed enough to really enjoy lemon yet.  This creation was all for me. 

          That was until Chad came back from the photo shoot, I don't know what came over him.  Shortly after the photo shoot was over I didn't have any more ice pops.  I had 10, now I have 1.  He had commandeered the entire tray, except the one in my mouth.  So nice of him to save me one.

          All kidding aside, Chad loved these ice pops so much that he declared these "his popsicles".  We have a freezer full of ice pops for the munchkin and I.  But these ones, these are for Chad.  So, being the ever resourceful woman that I am...  I made another batch.  Thankfully raspberries are on sale so I can really stock up on these ice pops.  Low calorie, healthy treat.  The perfect dessert for us to eat!

          You might want to hide these though.  Seriously, behind the vegetables or something.

          • Use fresh lemon juice. This is not the recipe for bottled lemon juice. Trust me it will make a difference.

          Raspberry Lemonade Yogurt Ice Pops

          Raspberry Lemonade Yogurt Ice Pops are the perfect summer treat! They are refreshing and packed with vitamin c, antioxidants and power boosting protein. Just 5 ingredients and a few minutes to pop these in the freezer.
          prep time: cook time: total time:

          Ingredients

          • 1/4 cup granulated sugar
          • 1 tablespoons lemon zest (zest of one lemon)
          • 1/2 cup fresh lemon juice (about 2 lemons juiced)
          • 1 1/2 cups plain yogurt
          • 6 ounces fresh raspberries, cleaned (large ones cut in half)

          Instructions

          1. Evenly distribute raspberries between ice pop molds.  Set aside.
          2. In a medium bowl, combine lemon zest and sugar.  Smash lemon zest with a fork until all sugar is coated in lemon.  Add lemon juice and yogurt.  Stir until well combined.
          3. Pour into molds.  Cover with aluminum foil and add sticks.  Freeze for 4-24 hours.
          4. Enjoy!
