Chipotle Copycat Slow Cooker Pork Carnitas

Chipotle Copycat Slow Cooker Pork Carnitas are a luscious slow-cooked pork that is so soft and juicy, they melt in your mouth. Traditional Mexican cuisine would have you standing over a stove for hours, but who has that kind of time? This simple recipe is perfectly seasoned and creates tender meat with robust flavors.

The secret is a quick sear on the stovetop to lock in all of those succulent flavors and juices. After that, it gets cooked in the slow cooker until it is fork-tender and truly melts in your mouth. I toss it in and on everything.

So, back to this story...  It is absolutely amazing and I am sure you know why I had to make this recipe 8 times before we finally managed to get a photoshoot done. We just can't keep her hands off it!

Actually, my family is so spoiled with good food. We really prefer to eat at home. I just do not find myself enjoying eating out anymore, it is just such a disappointment most of the time.

I thought it was just me and then I started noticing my family had the same opinion. As a matter of fact when I was planning a little get together for my daughter's 1st-grade 'graduation', I thought we would have a little dinner out with my in-laws to mark the accomplishment.

I asked Munchkin where she wanted to go. I named all of her 'favorite restaurants'. She looked at me with the sweetest eyes and said "Mommy can YOU cook dinner? I want your Mexican Rice Skillet".

I am sure you know my heart grew 10 sizes that day (bursting with love and pride) and although we ended up going to dinner at a new restaurant that night, but you better believe I made her dinner that very next night.

I imagine it is the regional influence, but my family leans toward Mexican flavors, especially my daughter. Southwestern, Tex-Mex and of course Sonoran (a region of Mexico that borders Arizona) influences have really inspired the dishes that come out of my kitchen.

Growing up every celebration dinner featured Italian food, and I giggle inside as I think about my mom and dad coming to visit when my daughter was born and I had prepared "Mexican Lasagna". My dad was like "what the @$^& is Mexican Lasagna? Where's the pasta???" LOL.

Anyway, back to my point... I really love the food at Chipotle Mexican Grill. It is my go-to on road trips. My favorite is the burrito salad. I love to pile the lettuce with pork carnitas, pinto beans, guacamole, cheese and a huge spoon of fresh salsa as my dressing. It is fresh, flavorful and it doesn't bloat me up. Because who wants to sit in the car when you feel like your jeans are going to pop open.

Chipotle Copycat Slow Cooker Pork Carnitas Chipotle Copycat Slow Cooker Pork Carnitas

So, when we are home and I am craving those spectacular burrito salads and Chad wants a burrito, I start recipe developing. I have created many of my favorite recipes from Chipotle and some other favorites. But, whenever we are having a party or on a game day get together a Chipotle Buffet usually wins out.

The star of the show is this simple Pork Carnitas recipe. It is simply seasoned with salt, pepper, rosemary, thyme, and bay. But, the flavor will knock your socks off.

It starts off being seared on the stovetop to create a layer of flavor that will really shine through.  The searing browns the meat and creates this caramelized reaction and the flavor is unbeatable!

Chipotle Copycat Slow Cooker Pork Carnitas Chipotle Copycat Slow Cooker Pork Carnitas

Next, we transfer the pork to the crockpot and add in the remaining seasonings and deglaze the pan to scrape up all of the tasty brown bits stuck to the bottom of the pan. Pour the juices into the slow cooker and cook until the meat is fall-apart tender.

You will enjoy this on and in so many dishes. It is great to make ahead and use in tacos, burritos, on a salad, and even on a sandwich. I love to make nachos with these carnitas too. No matter what you do with it, you are going to absolutely love this recipe.

Helpful Tips to make Chipotle Copycat Slow Cooker Pork Carnitas:

  • Do not use non-stick pans for searing. Cast iron or stainless steel are great alternates to the dutch oven.
  • You can use bone-in or boneless pork but watch your cook time.
  • Searing the meat before placing it in the slow cooker adds another layer of flavor. While you could skip this step, I highly recommend taking the extra 15 minutes and doing it. Trust me the flavor is worth it!
  • If making this with fresh rosemary sprigs, I place them on the bottom of the slow cooker and put the pork roast on top.

What you will need to make Chipotle Copycat Slow Cooker Pork Carnitas:

  • Dutch oven - I love this set and use it all the time. It is perfect for roasts and I especially love it for my one-pot meals.
  • Slow Cooker - the slow cooker is almost my most used kitchen appliance, especially during fall/winter! It's just so convenient, and let's face it, it makes the comfort food taste even better!

Enjoy!

Chipotle Copycat Slow Cooker Pork Carnitas

Chipotle Copycat Slow Cooker Pork Carnitas are a luscious slow cooked pork that is so soft and juicy, they melt in your mouth. Traditional Mexican cuisine would have you standing over a stove for hours, but who has that kind of time? This simple recipe is perfectly seasoned and creates a tender meat with robust flavors.
prep time: 15 minscook time: 6 hourtotal time: 6 hours and 15 mins

Ingredients

  • 5-pound pork shoulder (also known as pork butt)
  • 2 tablespoons extra light olive oil
  • 2 teaspoon kosher salt, divided
  • 2 teaspoon ground black pepper, divided
  • 4 dried bay leaves
  • 1 tablespoon dried rosemary (or 3 large fresh rosemary sprigs)
  • 1/2 teaspoon ground thyme
  • 1/2 cup water

Instructions

  1. Rinse pork roast under cool water. Pat dry with a paper towel (do not skip this step, patting it dry helps create less steam and creates a better sear).
  2. Preheat a dutch oven over medium-high heat. Add 2 tablespoons olive oil. Place pork on a plate and sprinkle on all sides, with 1 teaspoon salt and 1 teaspoon pepper. Once the oil is shimmering and hot, carefully place pork in a Dutch oven (do not wait or the seasoning will begin to draw out moisture). Sear each side. Allow pork to sizzle in the pan without touching it for at least 2 minutes.
  3. The pork will naturally release from the pan once it is properly seared. If it is sticking to the bottom of the pan, it is most likely not seared yet. It will take 2-5 minutes per side. Reduce heat if the pan is getting too hot.
  4. Add bay leaves to the bottom of  your crockpot (I use a 6-quart slow cooker), place pork on top of bay leaves and carefully pour remaining cooking liquid from your Dutch oven over the pork. Add 1/2 cup water to Dutch oven, return to medium-high heat. Use a silicone spatula or wooden spoon to scrape the stuck browned bits from the bottom. Once the mixture is boiling, pour it over the pork in the slow cooker. Sprinkle rosemary, thyme and remaining salt and pepper into the slow cooker and over the pork. Flip the pork once to season the other side.
  5. Cover and cook on high for 5-6 hours (alternately cook on low for 10-12 hours). When the pork is tender, use 2 forks to shred meat. Taste for seasoning, if necessary add salt to taste (mine did not need salt).
  6. Stir to coat pork in cooking liquid. Cover and cook for 30-60 minutes to help the pork absorb the juices. Serve and enjoy!

DONNA'S NOTES

  1. Do not use non-stick pans for searing. Cast iron or stainless steel are great alternates to the dutch oven.
  2. You can use bone-in or boneless pork, but watch your cook time.
  3. Searing the meat before placing it in the slow cooker adds another layer of flavor. While you could skip this step, I highly recommend taking the extra 15 minutes and doing it. Trust me the flavor is worth it!
  4. If making this with fresh rosemary sprigs, I place them on the bottom of the slow cooker and put the pork roast on top.

Slow Cooker Pork Carnitas

Spice rubbed pork roast slow cooked to glorious perfection with only 20 minutes of active cook time makes this the best carnita recipe I have ever made! Tender and flavorful bites of pork are finished in the oven to obtain the most magnificent crisp around the edges. This recipe is a keeper. We will certainly be serving Slow Cooker Pork Carnitas at our parties this year!
Spice rubbed pork roast slow cooked to glorious perfection with only Slow Cooker Pork Carnitas
You have seen my pork recipe collection, correct? We kinda like our pork...  Just a lot.

Last week Costco was is featuring the boneless pork sirloin tip roast which I had never cooked with before.  Don't get me wrong, I have made plenty of pork loin and tenderloin, but this cut was new to me.  I have to tell you I am already in love with it! It is pretty lean but the perfect cut so that I never missed the extra fat.

 Spice rubbed pork roast slow cooked to glorious perfection with only  Slow Cooker Pork CarnitasWith the weather cooling off, it is the perfect time to sit down to dinner with family and friends and serve them something they will love.  What could be better than pork?  How about pork in the slow cooker! It is definitely time to dust off the slow cooker and I knew exactly what I wanted to create with these fabulous boneless pork sirloin tip roasts. You may have noticed I have a bit of a 'thing' for Mexican and southwestern flavors and I have been dreaming of pork carnitas.  {{slurp}}

So, Chad, Munchkin and I headed out to Costco for our weekly shopping trip.  Last time I told you about Wednesdays and Thursdays being the best days for shopping around us.  Well, someone must have told all our neighbors, because Costco was hopping this week. Sadly we missed the sample people, which bummed Munchkin out.  Funny that she so looks forward to samples.  haha

So, I popped it in the slow cooker slathered them in my favorite southwestern spices, added chicken broth and cooked them until tender.  Then I cooked down the cooking liquid and poured it over the pulled pork on a baking sheet and broiled until the edges were crisp. Then when I pulled it out of the oven I squeezed a couple of fresh limes over the top and served it.

Oh my word!  Talk about mouthwatering delicious. Chad and I went nuts over this recipe. Carnitas wrapped in a flour tortilla with our favorite rice and toppings was fabulous.  What knocked it out of the park for me was the Carnita Bowl.  Carnitas served over cilantro lime rice, beans, salsa and guacamole.  Oh my goodness. I may have to share that recipe with you next week.

I was a little skeptical when I first started preparing pork, I guess it was a fear of over cooking it but now I just remember that for a flavorful, tender and juicy dish, cook loin roasts, chops and tenderloins to an internal temperature between 145°F (medium rare) and 160°F (medium), followed by a three-minute rest, using a digital thermometer to ensure accuracy. Bulls eye every time!

Helpful Tips to make Slow Cooker Pork Carnitas:

  • Pour cooking liquid into a pot and boil until thickened (spoon leaves a trail when swirled through) and pour over pork.
  • Preheat oven to broil.  Place pork until broiler until edges are nice and crisp, about 3-5 minutes.

What you will need to make Slow Cooker Pork Carnitas:

  • A large skillet with a lid – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.
  • Mesh Strainer – Normally you don’t need to drain the grease when cooking with lean ground beef, but if you do, a mesh strainer will help ensure you don’t lose any of the cooked meat.
  • Heat resistant spoon or spatula – Ideal for cooking, stirring, and serving.

Enjoy!

We will certainly be serving Slow Cooker Pork Carnitas at our parties this year!
prep time: 20 minscook time: 4 hourtotal time: 4 hours and 20 mins

Ingredients

  • 4 pounds boneless pork sirloin tip roast
  • 1 tablespoon New Mexico chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried oregano, crushed
  • 2 cups low sodium chicken stock (or 2 cups water and 1 tablespoon low sodium chicken base)
  • 2 limes
  • salt to taste

Instructions

  1. Cut pork into 8 cubes.  Set aside.
  2. In a small bowl combine chili powder, garlic, cumin, paprika, and oregano.  Mix to combine.  Coat pork with the spice mixture on all sides of pork pieces.  Place into a slow cooker (I used a 6 quart). Pour chicken stock around the sides of the pot.  Avoid pouring directly on top of pork or seasoning will come off.
  3. Cover and cook on high for 4 hours (alternately cook on low for 10 hours).  Meanwhile prepare a baking sheet with aluminum foil. When the pork is tender, use 2 forks to shred meat into large pieces. Taste for seasoning, if necessary add salt to taste (mine did not need salt). Use a slotted spoon to remove pork from slow cooker and place on a cookie sheet.
  4. Pour cooking liquid into a pot and boil until thickened (spoon leaves a trail when swirled through) and pour over pork. Preheat oven to broil.  Place pork until broiler until edges are nice and crisp, about 3-5 minutes.  Remove from oven and squeeze 2 limes over top.

Slow Cooker Cheater Pork Carnitas + VIDEO

3- Ingredient Slow Cooker Cheater Pork Carnitas are so easy they just about cook themselves. The most simple recipe yields the most fabulous results. Just toss it in the crockpot and go! Come back hours later to perfectly tender and juicy pork that is mouthwateringly delicious and perfect on everything.

Cheater pork carnitas make the best street tacos, veggie salad topping, carnita nachos and cheese and so much more! I actually turn the leftovers into taquitos.

It all starts with a good cut of pork. I used pork shoulder (aka pork butt), but you could go with pork loin for a leaner cut. The pork shoulder makes it even more rich and tender.

Toss it all in a slow cooker and let it go. Shred it with forks or meat claws and serve!

I have made this several times and I just can't get over how easy and flavorful it is. I love it in nachos, tortillas and made into flautas or taquitos.

You are going to love it too.

Crock Pot Pork Chops + Video

Crock Pot Pork Chops are made with the easiest slow cooker recipe ever. Toss the ingredients in and return to juicy chops, ready to eat!

are made with the easiest slow cooker recipe ever Crock Pot Pork Chops + Video
Using a slow cooker is the perfect way to save time on the busiest days. These crock pot boneless pork chops are perfectly tender, melt in your mouth meat cooked in the most spectacular sauce.

If you're looking for easy pork Crock Pot recipes, you've got to try my Crock Pot Pork Sirloin Tip Roast.

Spice rubbed pork roast slow cooked to glorious perfection with only 20 minutes of active cook time makes this the best carnita recipe I have ever made!

Or, this Slow Cooker Pork Carnitas recipe makes luscious, slow-cooked meat that is so soft and juicy, it melts in your mouth. The carnitas are perfectly seasoned with robust flavor.

How to Make Crock Pot Pork Chops

Making slow cooker pork-chops is seriously so easy. Just toss the ingredients into the pot and set it to low.

This recipe takes just a few minutes of preparation and your Crockpot does the rest. Come back to it hours later and you'll find perfectly tender, melt in your mouth pork ready to serve!

Tips for making the best boneless pork chops

Using thick-cut chops is essential. Thinner cuts cook too quickly so you will not have the same results.

Add chili paste according to your desired heat level. We use 3 tablespoons for a little kick. If you prefer a milder flavor, add less or omit it altogether. It is fabulous either way.

Cook times will vary based on your Crockpot and the thickness of your chops. It's important that you don't overcook your meat or it will be dry and tough.

are made with the easiest slow cooker recipe ever Crock Pot Pork Chops + Video

Tools needed
  • A Slow Cooker - I like mine that is programmable so it’ll only run as long as I want it to then it turns to warm, so food doesn't get overcooked.

  • Garlic Press - One of my most used kitchen tools! I received mine as a gift years ago and I can't imagine why I never had one. It minces garlic with one squeeze, with the peel still on!

Why we use boneless pork chops

We like to use boneless meat for this recipe because it reduces the cooking time. Just be sure that you use a thick-cut chop so the meat stays juicy.

Also, when choosing the meat, look for cuts that have some fat (marbling).

Lean meat isn't the best choice for crockpot cooking - you need the fat and marbling to keep the food moist.

When it's time to remove them from the slow cooker, you will need to use a spatula to take them out of the slow cooker. This is because they are so tender, they may even fall apart.

are made with the easiest slow cooker recipe ever Crock Pot Pork Chops + Video

Will the recipe work with bone in pork chops?

Yes, you can make this recipe with bone in chops if you want to.

Be sure to look for chops between 1 and 1 1/2 inches thick. Also, be careful not to cook them for too long. Overcooked meat will be dry and tough.

Can you freeze the leftovers?

Yes, you can easily freeze leftover chops. Just place them in an airtight container or a freezer bag. Then, store them in the freezer and use them within 6 months.

are made with the easiest slow cooker recipe ever Crock Pot Pork Chops + Video

How to reheat leftovers

Reheating leftover pork couldn't be easier!

  1. Preheat the oven to 350F. Then, add 2 tablespoons of water or beef broth to a baking pan.
  2. Place the meat in the pan and cover it with aluminum foil.
  3. Then, cook them for between 10 and 15 minutes, depending on the thickness of your chops.

Helpful Tips to make Easy Crockpot Sriracha Honey Chicken Wings:

  • You can use fresh wings.  Cook time would be 3-4 hours on low or 1 to 2 hours on high.
  • Additionally, when using fresh your sauce will cook quicker. Approximately 3-5 minutes.
  • The scrumptious caramalized sauce is achieved by cooking down the sauce and reapplying it and broiling it until you reach the desired browning.
  • Instead of cooking the sauce down and broiling it you can mix up 2 tablespoons corn starch and 2 tablespoons water in a resealable container and shake it really well. Pour slurry into crockpot then cook an additional 30 minutes on high.

What you will need to make Easy Crockpot Sriracha Honey Chicken Wings:

  • Slow Cooker - the slow cooker is almost my most used kitchen gadget, especially during fall/winter! It's just so convenient, and lets face it, it makes comfort food taste even better!
  • Sauce Pan-
  • Baking Sheet- Jelly Roll Pans (baking sheets with sides) - used for everything from cookies to roasting, a good baking pan will last for years.

Enjoy!

With love from our simple kitchen to yours.
