Finding the perfect finger food to blow your friends minds is a tough feat, whether its for game day or card night.

But these certainly fit the bill.  Chad has been begging for pretzels since we made out Pretzel Rolls last year.  Well I finally decided to make them.

I don't know what I was waiting for.  I guess I needed to create something outrageous and simple at the same time.  With these cheesy stuffed pretzel bites, I have succeeded! They are crazy good.

These Outrageously Cheesy Stuffed Pretzel Bombs are the perfect bite size appetizer to impress your guests.  Pretzel bites are loaded with cheddar cheese and baked to perfection.

All of this comes together in under an hour. Truth be told I even had my 3 year old hanging on my apron strings, if you know what I mean, so you might whip these up even faster.

She loves to help and I cherish every little moment, even when I am tripping over her in the kitchen.

She was armed with her very own ingredients and she was making her very own batch of pretzels.  Rolling the dough and stuffing it with cheese saying "look at me Mommy".

We create fabulous dishes together and these pretzel bombs are no different.  Although we may have had good intentions to share these with friends...  Not this time.

We devoured them.  Sorry guys maybe next time.

Helpful Tips to make Outrageously Cheesy Pretzel Bombs:

  • You can mix the dough by hand if you do not have a stand mixer.  Add water, yeast and sugar.  Once the yeast blooms stir in the salt and the flour.  Mix with a spoon.  Turn dough out onto floured counter top and knead for 3-5 minutes until dough is no longer sticky.  Proceed with remaining instructions.
  • You can use 36 frozen dinner rolls (I use Rhodes) in place of the dough recipe.

Outrageously Cheesy Pretzel Bombs

Outrageously Cheesy Stuffed Pretzel Bombs are the perfect bite-size appetizer to impress your guests. Pretzel bites are loaded with cheddar cheese and baked to perfection. All of this comes together in under an hour.
prep time: 42 minscook time: 8 minstotal time: 50 mins

Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 1 1/4 cups warm water (110°-120°)
  • 2 tablespoons granulated sugar
  • 3 1/4 cups all-purpose flour
  • 1 pound block mild cheddar cheese
  • 1 teaspoon kosher salt
  • 1/2 cup baking soda
  • 1 large egg
  • course salt

Instructions

  1. Preheat oven to 450°F.  Line a baking sheet with parchment paper or spray with cooking spray.
  2. Pour water into the bowl of a stand mixer (see cooks note if you do not have a stand mixer), sprinkle yeast over top, add sugar and stir.  Allow yeast to bloom for 5-10 minutes.  Once it is nice and foamy, it is ready.
  3. Meanwhile cut cheese into 36 even pieces, less than ½ ounce each.  Fill an 8-quart pot with water and bring to a boil over medium-high heat.  In a small bowl beat egg and 2 tablespoons water with a fork.  Set aside.  Sprinkle clean countertop with 1/4 cup flour. 
  4. Add flour and salt to mixer.  Knead for 3- 5 minutes until the dough comes together in one ball.  Add more flour a tablespoon at a time as needed, if the bread is too sticky to come together.  The dough should be tacky when you pull it out of the mixer, not sticky.
  5. Place dough on a floured countertop and knead in flour until it is no longer tacky, just a minute or two.  Form dough into a ball.  We are going to cut this ball into 36 (somewhat) even pieces.  First, quarter the ball of dough.  Roll each quarter into a fat log.  Cut that into 3 pieces.  Roll each piece into a log and cut it into 3 pieces.  When you are done you will have 36 pieces.
  6. Roll each dough piece (one at a time) into a ball and then flatten it into a circle.  Add a piece of cheese in the center.  Carefully pull each side over the cheese to create a ‘cheese package’ then roll the dough into a ball.  Be careful to make sure you can not see the cheese through the dough.  Tap fingers in flour, pinch any tears and roll again.  Set aside and repeat until all you have 36 stuffed dough balls.
  7. Carefully, a sprinkle at a time, add baking soda to boiling water.  USE CAUTION:  IT WILL BUBBLE UP.  Place dough balls into boil water a few at a time.  Remove with a slotted spoon after 30 seconds.  Place on parchment paper to cool and repeat.
  8. Arrange all pretzel balls on parchment so they are not touching.  Brush egg-wash onto each one and sprinkle with coarse salt.
  9. Bake for 8-10 minutes until the tops are browned.
  10. The ooey-gooey cheese may escape some of your pretzel bombs.  That is a beautiful thing!  Scoop all that cheesy goodness up onto the plate and serve.  Your guests will go crazy over them.
  11. Enjoy!

Munchkin and I made these together.  It was so much fun.  Once they went into the oven the whole family gathered in the kitchen anticipating the incredible magic that was going on in the oven.

The jalapeno's, bacon and cheese all melding together with the pretzel as it bakes to create a sensational firecracker of an appetizer that will explode in your mouth.

Once they came out of the oven we doing the hot potato as we tried to eat them while they were scorching hot.

Needless to say they were so good we ate another, and another, and another and eventually called them dinner.  I am sure you will love them too!

    Jalapeño Popper Cheesy Pretzel Bombs

    Soft and chewy pretzel poppers are stuffed with ooey gooey cheese, crispy bacon and spicy jalapeños. This scrumptious recipe is like nothing you have ever eaten before. Game day, girls night or a Tuesday night with the family these Jalapeño Popper Cheesy Pretzel Bombs will rock your world!

    Ingredients

    • 12 ounces warm beer (110°-120°), I used Blue Moon *see cooks note
    • 2¼ teaspoons active dry yeast (1 packet)
    • 2 tablespoons granulated sugar
    • 12 ounces bacon, cooked and chopped into bite size pieces
    • 8 ounces cream cheese
    • 8 ounces shredded Mexican cheese blend (or cheddar cheese)
    • 1 (4 ounce) can diced jalapeños
    • 1 large egg
    • 3 1/2 cups all-purpose flour + more for dusting counter
    • 1 teaspoon kosher salt + more for pretzel tops
    • 2 tablespoons baking soda
    • 2 cups water

    Instructions

    1. Preheat oven to 450°F.
    2. Pour beer into the bowl of a stand mixer fitted with a dough hook (see cooks note if you do not have a stand mixer), sprinkle yeast over top, add sugar and stir.  Allow yeast to bloom for 5-10 minutes.  Once it is nice and foamy, it is ready. *It should look like the 'head' of a beer poured too quickly and smell yeasty.
    3. Meanwhile in a medium mixing bowl combine cheeses, bacon and jalapeños.  Mix together.  You may need to use a wood spoon to get it well mixed.
    4. In a small bowl beat egg, set aside.  Sprinkle clean counter top with ¼ cup flour.  Line a baking sheet with parchment paper or spray with cooking spray.  Set aside.
    5. Add flour and salt to stand mixer.  Knead for 3- 5 minutes until the dough comes together in one ball.  Add more flour a tablespoon at a time as needed, if bread is too sticky to come together.  Dough should be tacky when you pull it out of the mixer, not sticky.
    6. Place dough on floured counter top and knead in flour until it is no longer tacky, just a minute or two.  Form dough into a ball.  We are going to cut this ball into 36 (somewhat) even pieces.  First quarter the ball of dough. *I used a bench scraper, but a butter knife would work too.  Roll each quarter into a fat log.  Cut that into 3 pieces.  Roll each piece into a log and cut into 3 pieces.  When you are done you will have 36 pieces.
    7. Fill a medium (4 cup) bowl with 2 cups of hot water and add baking soda.  Place baking sheet, baking soda water and cheese mixture on the counter that you are working on.
    8. Roll each dough piece (one at a time) into a ball and then flatten it into a circle.  Add 1 tablespoon of cheese mixture in the center *I used a tablespoon scooper.  Carefully pull each side over the cheese to create a ‘cheese package’, pinching the edges closed.  Roll the dough into a ball.  Be careful to make sure you can not see the cheese through the dough.  Tap fingers in flour, pinch any tears and roll again.  Set aside and repeat until you have 3 stuffed dough balls.  Transfer 3 stuffed dough balls to hot water mixture and allow to set while you prepare the next 3.  Prepare the next 3 dough balls.  Remove dough balls from water with a slotted spoon and place on prepared baking sheet.  Place 3 newly prepared balls into the water and prepare 3 more.  Repeat until all dough balls are on the cookie sheet.
    9. Arrange all pretzel balls on parchment so they are not touching.  Brush egg wash onto each one and sprinkle with course salt.
    10. Bake for 8-10 minutes until the tops are browned.
    11. The ooey gooey cheese may escape some of your pretzel bombs.  That is a beautiful thing!  Scoop all that cheesy goodness up onto the plate and serve.  Your guests will go crazy over them.

    I can't get enough of pretzels lately.  I have made 6 different pretzels in the last few months and still more ideas keep popping into my head.  Luckily we bought a food saver and we just wrap them up and pop them in the freezer until we are ready to eat more.

    After working on a few ranch, cheese and bacon recipes over the last few weeks I knew it would be the perfect flavor combination for a pretzel!

    Ranch pretzels are absolutely amazing!  A tender dough bursting with flavor from the herbs and buttermilk in the seasoning.  Then as if that isn't enough to take it over the top, I stuffed them with cheese and bacon.  Total flavor explosion!  Easy to make and they freeze well too!

    A soft and tender pretzel with the most subtle sweetness is the recipe you have been dreaming of.  Even better, they are ready in just 30 minutes.  Quick and easy you can make these Best Ever Soft Pretzel Bites with or without a mixer!

    PRINT RECIPE

    Cheesy Bacon Ranch Stuffed Pretzel Bombs
    SERVES 36  |  ACTIVE TIME 42 Min  |  TOTAL TIME 50 Min

    2¼ teaspoons active dry yeast
    1 ½ cups warm milk (110°-120°)
    2 tablespoons honey
    3¼ cup all purpose flour
    3 tablespoons ranch seasoning mix (I used Hidden Valley)
    1 teaspoon kosher salt
    8 ounces mild cheddar cheese, shredded
    4 ounces cream cheese
    12 ounces bacon, cooked and diced into bite size pieces
    ½ cup baking soda
    1 large egg
    course salt

    Preheat oven to 450°.  Line a baking sheet with parchment paper or spray with cooking spray.

    Pour milk into the bowl of a stand mixer (see cooks note if you do not have a stand mixer), sprinkle yeast over top, add honey and stir.  Allow yeast to bloom for 5-10 minutes.  Once it is nice and foamy, it is ready.

    Meanwhile in a medium mixing bowl combine cheeses and bacon.  Mix together.  You may need to use a wood spoon to get it well mixed. 

    In a small bowl beat egg and 1 tablespoon water, set aside.  Sprinkle clean counter top with 2 tablespoons flour.  Line a baking sheet with parchment paper and spray with cooking spray.  Set aside.

    Fill a medium (4 cup) bowl with 2 cups of boiling water and add baking soda carefully (it will bubble up).  Place baking sheet, baking soda water and cheese mixture on the counter that you are working on.

    Add flour, ranch seasoning and salt to mixer.  Knead for 3-5 minutes until the dough comes together in one ball.  Add more flour a tablespoon at a time as needed, if bread is too sticky to come together.  Dough should be tacky when you pull it out of the mixer, not sticky.

    Place dough on lightly floured counter top.  Form dough into a ball.  We are going to cut this ball into 36 (somewhat) even pieces.  First quarter the ball of dough.  Roll each quarter into a fat log.  Cut that into 3 pieces.  Roll each piece into a log and cut into 3 pieces.  When you are done you will have 36 pieces.

    Roll each dough piece (one at a time) into a ball and then flatten it into a circle.  Add a little less than 1 tablespoon of cheese mixture in the center *I used a tablespoon scooper.  Carefully pull each side over the filling to create a ‘cheese package’, pinching the edges closed.  Roll the dough into a ball.  Be careful to make sure you can not see the cheese through the dough.  Tap fingers in flour, pinch any tears and roll again. 

    Set aside and repeat until you have 3 stuffed dough balls.  Transfer 3 stuffed dough balls to hot water mixture and allow to set while you prepare the next 3.  Prepare the next 3 dough balls.  Remove dough balls from water with a slotted spoon and place on prepared baking sheet.  Place 3 newly prepared balls into the water and prepare 3 more.  Repeat until all dough balls are on the cookie sheet.

    Chad and I recently decided that we would like to start kicking back and taking in a game at home, here and there. Of course that involves game day food!  You may have noticed we like finger food for game day. Our top game day recipes are mostly popable bites.  You can check them out here.

    Being the pizza lovers we are and having the need for something fun and popable, I put together these really easy Cheesy Pepperoni Pizza Bombs that are going to rock your world!

    They start with frozen dinner rolls (yes that simple) stuffed with pepperoni and mozzarella cheese.  Then they take a dip a scrumptious seasoned butter sauce and Parmesan cheese.  They bake in the oven and come out the most tender scrumptious ooey gooey cheeeeesy pepperoni pizza bombs.



    These are so amazing we literally ate half of them the first day.  Perfectly seasoned bread bites are crisp on the outside and packed with ooey gooey cheese and pepperoni.  They are perfectly popable and ooooh so addictive.

    You can serve them with sauce (here is a fabulous 5 minute marinara recipe) but honestly, I preferred to enjoy all the cheesiness without the sauce. You can even freeze and reheat them. To reheat simply pop them in a 350°F oven and bake for 10-15 minutes.

      Glorious Cheesy Pepperoni Pizza Bombs are perfectly seasoned bread bites loaded with pepperoni and tons of ooey gooey cheese, baked to perfection. That makes this easy recipe a game day winner!

      Ingredients

      • 24 frozen white dinner rolls (I used Rhodes in the freezer section)
      • 3/4 cup (1- 1/2 stick) unsalted butter, melted
      • 1 1/2 cup fresh shredded Parmesan cheese
      • 1 tablespoon dried Italian seasoning
      • 1 1/2 teaspoon garlic powder
      • 1 teaspoon onion powder
      • 1 teaspoon kosher salt
      • 24 ounces mozzarella cheese, cut into 48 bite size pieces
      • 1 (5 ounce) package mini pepperoni
      • Marinara for serving

      Instructions

      1. Preheat oven to 350°F.
      2. Lightly flour counter top.
      3. Place 12 dinner rolls on a microwave safe plate and microwave on defrost for about 2 minutes (or until dough is no longer frozen, but not cooked).  Cut dinner rolls in half with kitchen shears. Repeat with the remaining 12.
      4. Meanwhile cut cheese into 48 even pieces, about 1/2 ounce each.  Prepare a casserole dish by spraying with non stick cooking spray (approximately 9”x13”). Set aside.
      5. In a large bowl melt butter.  Add Italian seasoning, garlic powder, onion powder and salt. Stir to combine. Set aside.
      6. Toss 1 piece of dough in flour and flatten and stretch like you are making a mini pizza. Stretch dough to about 3” across.
      7. Add a pinch of mini pepperoni (about 6 pieces) and a piece of cheese. Pull the edges of the dough together to create a ball. If they ball won’t seal, tap your finger tips into the flour and crimp the seal together.
      8. Place pizza bombs in the bowl with the butter mixture. Lightly toss to coat. Repeat until all are in bowl. Add 3/4 of Parmesan cheese (reserving a little for the last few minutes in the oven) to bowl.  Toss to combine. If any pizza bombs open, lightly tap fingers in flour and recrimp edges.
      9. Place pizza bombs in prepared dish. Bake for 30-35 minutes until the tops are golden brown and the pizza bombs are no longer doughy. Sprinkle with cheese the last 5 minutes of bake time.
      10. Remove from oven.  Place on a serving tray.  Serve with marinara or alone.
      11. Enjoy!

      DONNA'S NOTES

      1. The ooey gooey cheese may escape some of your pizza bombs.  That is a beautiful thing!  Scoop all that cheesy goodness up onto the plate and serve.  Your guests will go crazy over them.
      2. You can half this recipe.  Simply cut all ingredients by half.
      3. Allow to cool before eating.

      Crazy Caramel Apple Pie Bombs

      Crazy Caramel Apple Pie Bombs are the pull apart bread of your dreams. This fabulous recipe is packed with caramel and apples and baked to perfection. Pull one open and a river of sweet caramel runs over the apple pie bombs.
      prep time: 15 minscook time: 30 minstotal time: 45 mins

      Ingredients

      • 4 tablespoons melted unsalted butter, divided
      • 2 medium apples, peeled cored and diced (I used gala)
      • 6 tablespoons light brown sugar, packed
      • 1 tablespoon ground cinnamon
      • 30 caramels, unwrapped and divided (I use Kraft)
      • All-purpose flour, (for dusting)
      • 12 frozen white dinner roll dough balls, (I used Rhodes)
      • 2 tablespoons heavy cream

      Instructions

      1. Preheat the oven to 350°F.
      2. Butter an 8 x 8-inch baking pan with 2 tablespoons of the butter and set aside.
      3. Combine the apples, 2 tablespoons of the brown sugar and the cinnamon in a medium bowl and toss to coat. Set aside. Unwrap the caramels and cut 18 of them into quarters. Set aside. Lightly flour your counter top.
      4. Flatten each dough ball into a circle about 3 inches across. You can use a rolling pin or you can pull the dough around the edges like you are making a mini pizza. Add 1 tablespoon of the apple mixture and 6 of the cut caramel pieces.
      5. Carefully pull each side over the center to create a “package,” and then roll the dough into a ball. Be careful to make sure you cannot see through the dough. If you have any tears or can’t seal the dough, tap your fingertips in flour, pinch any tears and roll again.
      6. Place the dough ball in the prepared dish, seam side down. Repeat until all of the apple pie bombs are in the dish. Brush the apple pie bombs with the remaining 2 tablespoons of melted butter and sprinkle with the remaining 4 tablespoons of brown sugar. Bake the bombs for 30 to 35 minutes, until the tops are golden brown and they are no longer doughy.
      7. Meanwhile, place the remaining 12 caramels and the heavy cream in a microwave safe bowl and microwave until melted, 30 seconds at a time, stirring after each interval. Once you have a smooth mixture, set aside to cool.
      8. Remove the apple pie bombs from the oven and drizzle with the caramel sauce.
      9. Serve and enjoy!
