I made this cake for Christmas last year and my nieces literally picked the pan clean. It is sooo good.

All of my social media networks have been flooded with fall flavors and I tell you cranberries have been screaming at me.  After seeing this cranberry cake on my friend Mary's blog and Taste of Home I had finally had enough.  I had to try it!

I was so excited, at long last Munchkin and I stepped into the kitchen to make this cake.  Just a few ingredients and it came together so fast. Cranberry and almond flavors are bursting out of this moist simple buttery cake that will whisk you away to a winter wonderland.

As I took my first bite I knew this was THE cake of the season.  Perfectly flavored and a crowd pleaser.  Even my picky family loved everything about this cake and I am sure you will too.

Helpful Tips to make Cranberry Almond Christmas Cake:

  • If the almonds start getting too browned, you can tent a piece of aluminum over the pan for the remaining cooking time.

Cranberry Almond Christmas Cake Recipe

Cranberry Christmas Cake has only a handful of ingredients and comes together in a snap! A moist butter cake bursting with flavor it is is bursting out of this moist simple buttery cake it is truly the most perfect holiday cake.
prep time: 10 minscook time: 40 minstotal time: 50 mins

Ingredients

  • 2 cups granulated sugar
  • 3 large eggs, room temperature
  • 3/4 cups unsalted butter, room temperature
  • 1 teaspoon pure almond extract
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 1 (12-ounce) bag fresh cranberries (or frozen and thawed)
  • 1 cup sliced almonds

Instructions

  1. Preheat oven to 350°F.  Butter a 9x13 baking pan.  Set aside.
  2. In a large mixing bowl, beat sugar and eggs for 5 minutes with an electric mixer on medium.  The volume of the mixture will increase by almost half and will be thickened. Do not skip this step. The eggs will work as the leavening the cake needs to rise.
  3. Add butter and extracts and beat for 2 more minutes.  Slowly add flour and beat until combined.  Fold in cranberries.
  4. Using a spatula, pour and smooth into prepared pan.  Sprinkle almonds over top.
  5. Bake for 40-45 minutes until a toothpick comes out clean. Let cool completely before cutting.
  6. Serve and enjoy!

Costco has had some really great looking berries this summer. I keep buying more and at some point I ended up with too many to fit in my fridge.

Well, instead of buying a new fridge (which is what I really wanted to do) I decided to whip up a simple blueberry cake.

With just a handful of ingredients this amazing simple cake came together.

The addition of almond extract in the batter and toasted almonds on top really enhance the sweet blueberries in this tender buttery cake.

The almond topping is sprinkled on before it goes into the oven, leaving nothing to do when it cools, but enjoy a slice or 3.<

This has been our most popular cake all year. I actually made 3 of these cakes before I managed to get a shot. 

Mind you every time someone pops over I am sure to feed them before they leave.  My friend Heather popped over and got a taste. She swears it tastes just like a coffee cake, but better.

I found myself picking at this cake every time it was on the counter top because is it sooo good.

So, I cut it up and tossed it in the freezer for safe keeping.

Then my father-in-law came by and picked up the last batch. Whew! Crisis averted. Needless to say the cake freezes perfectly and you are going to love it.

  • For perfect slices, use a serrated knife to cut the cake.
  • Cake freezes beautifully. Wrap individual pieces in plastic wrap and then place in a resealable freezer bag. Remove as desired. 
  • Allow thawing for 10-15 minutes on the counter before eating.

Blueberry Almond Breakfast Cake

Blueberry Almond Breakfast Cake is the perfect combination of blueberry and almond in a tender butter cake. This recipe comes together so easily with just a handful of ingredients you will find yourself whipping it up all year long. Perfect for making any time of year with fresh or frozen fruit.

  3. Add butter and extracts and beat for 2 more minutes.  Slowly add flour and beat until just combined.  Fold in blueberries.

  6. Allow to cool completely before serving, or the cake will crack. If you can't wait, just know it will taste amazing!

What's Sizzling on TSRI This Week?  Our hottest recipes! We have officially decided to plant some roots for the next month. We have been enjoying traveling over the last several months, but with the gorgeous weather here at home and the holidays around the corner home sounds great.

Being home has given me a chance to do some really recipe development and let me tell you we have some insanely awesome recipes coming this week. First of all 

I started working on my Thanksgiving gravy recipe and Oh my word! It is incredible. I have also been working on cookies and crock pot dinners. So, you will have some fabulous dishes in your email box this week!

We may be planting roots, but we will be enjoying our fair share of local fun this month. There is so much going on and we are totally stoked to be going to the sold out NASCAR race next weekend. Isn't that the best group of photos? Christmas cookies, Thanksgiving stuffing, pan-fried chicken thighs, crockpot carnitas and that hottie in the center there... That is Chad. 2 years ago for Christmas I got him a NASCAR Racing Experience. So, he had the opportunity to actually drive a real NASCAR car on the track at the PIR (Phoenix International Raceway). That is the same track that we will be watching the NASCAR race at this weekend. Think they will let him drive? I wonder if I could talk to someone. LOL.

Totally freakin' excited about the race. It is next Sunday. BTW, if you are looking for a Christmas gift that will blow the ordinary gift out of the water... Get the NASCAR Racing Experience. There is usually a Groupon available to make it relatively reasonable. I highly recommend it.

In the kitchen this week... we are working on a lot of fabulous recipes. Comfort food and lots of crockpot dinners are the theme this week. Of course, Lazy Day cooking. Which by the way... Big secret (not anymore) we are working on our Lazy Day eCookBook. It will be out soon. What do you think about that?

We are so excited to be partnering with International Delight®  to bring you another fabulous recipe. I don't know about you, but I love my coffee so I always have creamer in the house. I have found this to be an amazing convenient ingredient in cooking and baking sweets. So, of course, when I started thinking about bread pudding I thought of International Delight.

And donuts. I have loved cake donuts since I was a kid. Recently though when Chad is getting donuts, I will pass. I don't know if it's my palette or the way they are made now but I would rather skip them.

That was until my friend  brought me 2 dozen donuts from New York. A lovely Amish woman makes them the first Saturday of every month and I was lucky enough to get my hands on a fresh batch. I have to say they are truly the best donuts I have ever had. Well, after the donuts had passed their peak of freshness I started wondering what I could do to revive them.

I knew they needed liquid so I started thinking about cakes and breakfast and landed on my new favorite Christmas breakfast! My daughter and I completely devoured ours. It is absolutely amazing and I know you are going to love it.

Cranberry Maple Donut Bread Pudding
SERVES 8 |  ACTIVE TIME 10 Min  |  TOTAL TIME 60 Min

8-12 stale glazed cake donuts
4 large eggs
1 teaspoon cinnamon
3/4 teaspoon salt, divided
2 cups half-and-half
7 tablespoons unsalted butter, melted
6 tablespoons maple syrup
6 ounces fresh or frozen cranberries
2 tablespoons International Delight French Vanilla Creamer
3/4 cup powdered sugar

Preheat oven to 350°F. Butter a deep 9" pie pan (or 9x9 baking pan).

Chop donuts into bite size pieces. You want enough donuts so that your pie plate is heaping, they will be pressed down later. Place them in the buttered baking dish. Set aside.

Whisk the eggs in a large bowl and add cinnamon and 1/2 teaspoon salt. Whisk to combine. Add half-and-half, 4 tablespoons melted butter, 4 tablespoons maple syrup. Whisk until well combined.
Pour egg mixture over the donuts. Toss donuts to coat and press down into the egg mixture if necessary so they can absorb the mixture. Rest for 15 minutes. Add cranberries and toss to combine. Gently press the donuts into the pan so they will stick together, not so much that you flatten them.
 
Cover with foil and bake for 30 minutes. Remove foil and bake for 15-20 additional minutes, until it is set.

Meanwhile, add powdered sugar to a medium bowl. Add remaining 3 tablespoons butter, 2 tablespoons maple syrup, creamer and remaining 1/4 teaspoon salt. Whisk to combine.

Pour or drizzle frosting over warm bread pudding.

Serve and enjoy!

DONNA'S NOTES: If you are using fresh donuts, you can bake the cut pieces in the oven until they are dry and stale.
