My favorite shortcut in the kitchen is to plan for left overs. From the time I hit the grocery store throughout the week I am planning to make more than we will eat, that way I can incorporate the left over dinners into 'fend for yourself nights' which are so nice to not have to cook every night. And the left overs also work great to go into the next nights' dinner.

After a week of fabulous Mexican food in Houston, all I could think of was enchiladas. So I decided to use some left over chicken breasts I had in the fridge. Beef or pork would be great in this meal too. Of course after a long day I wasn't in the mood for the rolling tortillas and the mess. So I decided to whip up a fabulous chicken enchilada skillet.

We have been using Horizon Organic products since Munchkin came off the bottle. So we were so excited to partner with them on this #smartmeals campaign. It is all about making better choices for dinner and this skillet is smart!

This skillet takes all my favorite things about enchiladas and pulls it together in one easy 20 minute skillet using left overs. You can utilize pretty much any protein: chicken, beef, beans, etc.

It starts by pan roasting the corn until it is golden brown and caramelized which adds a beautiful flavor to this dish.

Fire roasted tomatoes and roasted green chiles really give this dinner an all day roasted flavor which, you know I love so much (hence my name ''). And naturally Horizon Organic cheese is mixed into the sauce to give it a creamy texture. I stirred in tortilla strips which intensifies that corn flavor (you can even use corn chips if you like) and also topped with more cheese and tortilla strips.

It is out of this world delicious. I know you are going to love it!

Helpful Tips to make Cheesy Chicken Enchilada Skillet:

  • Use your favorite enchilada sauce. The heat level of the sauce will affect the skillet, so if you like mild, use mild. If you prefer hot, use hot.
  • You can also use left over beef, or rotisserie chicken in the skillet if that is what you have on hand.

    What you will need to make Cheesy Chicken Enchilada Skillet:

    • Skillet– To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.
    • Heat resistant spoon or spatula – Ideal for cooking, stirring, and serving.

    Cheesy Chicken Enchilada Skillet

    Cheesy Chicken Enchilada Skillet has everything you love about your traditional enchiladas in a no-muss no-fuss one skillet recipe ready in just 20 minutes! Skillet roasted corn is the base for this fabulous meal that uses left over or rotisserie chicken to make it so amazingly easy.

    Ingredients

    • 1 tablespoon extra virgin olive oil
    • 1 cup frozen corn kernels (or canned corn, rinsed and drained)
    • 1 pound pre-cooked diced chicken (about 3 cups)
    • 1 (14.5 ounce) can fire-roasted diced tomatoes with garlic
    • 1 cup black beans (rinsed and drained)
    • 1/4 cup diced green chiles (from a can)
    • 1 cup enchilada sauce
    • 1 (4 ounce) bag tortilla strips, divided
    • 1 (6 ounce) package Horizon Organic Shredded Cheddar Cheese
    • 1 (6 ounce) package Horizon Organic Shredded Mexican Cheese, divided
    • 1 tablespoon fresh chopped cilantro
    • optional: 1/2-1 teaspoon cayenne pepper (to taste)

    Instructions

    1. Warm a medium skillet over medium-high heat, once you can feel the heat by holding your hand 6 inches over the skillet, drizzle olive oil into pan. Immediately add corn. Use a wooden spoon to create an even layer of corn.
    2. Allow corn to cook until golden brown and caramelized, about 3 minutes. Then add chicken and stir. Add diced tomatoes, beans, green chiles and enchilada sauce. Stir to combine and bring to a bubble, stirring occasionally, about 2-3 minutes. Reduce heat to medium. Taste for seasoning, if you prefer more heat add the cayenne pepper to your taste preference. 1 teaspoon was perfect for us. If you like mild spice it may be perfect the way it is.
    3. Add 1/2 of the bag of tortilla strips, reserve the remaining for topping the skillet. Add all of the cheddar cheese and 1/2 of the bag of Mexican cheese. Reserve the remaining cheese for topping the
    4. skillet. Stir to combine. Sprinkle remaining cheese, chips and cilantro over top.
    5. Serve and enjoy!

    If you're missing your favorite Mexican restaurants, you can easily make a few of your cravings at home. Just grab a bag of tortilla chips, your favorite toppings, and this chicken enchilada casserole.

    This chicken enchilada recipe uses a red enchilada sauce. You can buy one at the store if you're pressed for time. Or, my red enchilada sauce is easy to make for this recipe.

    You won't believe how simple it is to make. And, you can have it ready to serve in only 20 minutes. It makes enough for two 16 ounce cans that you'd buy at the store. So, it's easy to make extra.

    • Red enchilada sauce
    • Corn tortillas
    • Chicken breasts

    How to make chicken enchilada casserole

    It's very easy to make this chicken enchilada recipe. You are basically stacking the ingredients in a baking dish and baking them.

    You begin with the red enchilada sauce, then layer halves of corn tortillas, cooked chicken breast strips, diced green chilis, and shredded Mexican cheese blend.

    Then, you continue to make layers on top of layers until all of your ingredients are gone. Cover the baking dish with aluminum foil and bake it for a total of 30 minutes.

    It's so much easier to make a chicken enchilada this way. And, it tastes so good!

    If you're wondering what size pan to use, you can use a 5x7 baking pan or an 8x8 baking pan for this recipe.

    Using a 9x13 would work if you are going to double the recipe. This is an easy recipe for entertaining or a Cinco de Mayo party so making extra is always good.

    Optional toppings include fresh pico de gallo, sliced scallions, sliced olives, diced avocado, diced red onion, and sour cream.

    Chicken enchilada casserole variations

    There are so many different ways that you can make this recipe. I never get tired of it. You can substitute other types of meat for the chicken if you like.

    Why not try pork, beef, or your favorite seafood. Or, you can always use tofu if you prefer to make this meatless.

    And, you can always vegetables if you want to.

    Why not try sliced green bell peppers, mushrooms, onions, or even fresh spinach? This recipe is an easy way to hide extra vegetables if you have a picky eater.

    For a sour cream chicken enchilada casserole, mix sour cream with the red enchilada sauce. This results in a more creamy chicken enchilada casserole.

    While I love adding cheese to this recipe, there's no reason that you can't leave it out if you're lactose intolerant. Or, you can substitute cheddar for the traditional Mexican blend.

    To make a more cheesy chicken enchilada casserole, double the amount of cheese you use.

    To make this recipe gluten-free, look for gluten-free corn tortillas as the base.

    The rest of the ingredients should already be gluten-free.

    How can I store leftovers?

    If you have leftovers of this chicken enchilada casserole, you can cover them and store them in the refrigerator for up to three days.

    When it's time to reheat them, place the baking dish in a cold oven and set the oven to 350F. Reheat it until the leftovers are warm. How long this takes will depend on how many enchiladas you have.

    What should I serve with this chicken enchilada casserole?

    Chicken Enchilada Casserole (5-Ingredient)

    Chicken Enchilada Casserole has all the delicious taste you love from your favorite chicken enchilada recipe without all of the work. These easy chicken enchiladas are stacked rather than rolled. And, best of all, you can have dinner on the table in about 30 minutes.

    Ingredients

    • 2 cups (16-ounces) red enchilada sauce
    • 6 (8-inch) corn tortillas
    • 1 pound chicken breasts, cooked and shredded (or rotisserie chicken)
    • 1 (7-ounce can) fire-roasted diced green chiles
    • 12 ounces shredded Mexican cheese blend
    • Optional toppings: fresh pico de gallo, sliced scallions, sliced olives, diced avocado, diced red onion, sour cream,

    Instructions

    1. Preheat your oven to 350°F.
    2. Add 1 cup of enchilada sauce to the bottom of your casserole dish. Add 4 tortilla halves to the bottom of the dish and flip over to coat both sides in the sauce. Place the tortillas with the cut edge against the side of the pan so it covers the bottom of the dish.
    3. Add about 1/3 of chicken and chiles over the tortillas. Sprinkle 1/3 of the cheese over top.
    4. Add 1/2 cup of enchilada sauce over the cheese. Spread sauce evenly with a spatula.
    5. Layer with 4 tortilla halves placed so they cover the casserole. Add another 1/3 of chicken, chiles, and cheese.
    6. Add another 1/2 cup of enchilada sauce and spread with a spatula.
    7.  Layer with the remaining 4 tortilla halves placed so they cover the casserole. Add the remaining 1/3 of chicken, chiles, and cheese.
    8.  Cover your baking dish with aluminum foil.  Bake for 20 minutes.
    9.  Uncover your baking dish and return to the oven for 5-10 more minutes or until the cheese is completely melted. (I like to broil it for the last minute or two so it gets a beautiful bubbly and browned topping).
    10.  Garnish with preferred toppings. Serve and enjoy!

    7-Layer Mexican Bean Dip

    7 Layer Mexican Bean Dip is a go-to meal in our house - served with tortilla chips or flour tortillas. This simple recipe is also served at every party we host and there is never a drop left! It is an excellent make-ahead recipe that I love to freeze and pop in the oven when we have company or a party.

    This recipe was first shared about 5 years ago. Since then I have made it about 50 times with a couple dozen variations and it is always a hit.

    7 Layer Mexican Bean Dip is a regular meal that my family requests. They ask for it so often that I started making it ahead so all I have to do it pull it out of the freezer and stick it in the oven.

    It all starts with a layer of cheesy refried beans and your favorite rice (I love our baked brown rice or jasmine rice cooked in chicken stock).

    It is topped with a layer of salsa verde, cheese and seasoned ground beef.  A layer of red enchilada sauce really adds mouth watering flavor to this dish. But it wouldn't be complete without a cheesy topping.

    This dish serves about 8-12 people. I like to prepare it in small 2 cup oven safe bowls and freeze them for easy meals. Then I pop them in the oven and viola, dinner is served. Can't beat that.  Be sure to read the cooks notes for variations and make ahead directions.

    Helpful Tips to make 7 Layer Mexican Bean Dip:

    • This dish freezes very well. I like to make (6) 2-cup servings and freeze them for easy dinners. Each one serves 2 with chips. 
    • To pre-make: Prepare recipe as written, but do not bake it. Wrap oven safe dishes in aluminum foil and freeze.  Then, place in oven for 30-45 minutes on 350°F until warmed through. Uncover the last 10 minutes to melt the cheese.
    • This is an incredibly versatile recipe that can be made with your favorites. Substitute the seasoned ground chicken layer with ground beef or turkey, Italian sausage (omit seasoning) or even diced left over chicken, turkey, beef or pork.
    • Diced green chiles are fabulous in place of the Salsa Verde Layer.  

    What you will need to make 7 Layer Mexican Bean Dip:

    • Skillet  – I have had this pan since 2006. It is my go-to skillet. It heats evenly and quickly. The stainless steel cleans up beautifully with a little baking soda so they still look brand new.
    • Jelly Roll Pans (baking sheets with sides) - used for everything from cookies to roasting, a good baking pan will last for years.

    7 Layer Mexican Bean Dip

    7 Layer Mexican Bean Dip is a go to meal in our house - served with tortilla chips or flour tortillas. This simple recipe is also served at every party we host and there is never a drop left! It is an excellent make ahead recipe that I love to freeze and pop in the oven when we have company or a party.

    Ingredients

    • 1 pound ground chicken, uncooked
    • 2 tablespoons Mrs Dash Southwest chipotle seasoning
    • drizzle of extra virgin olive oil
    • 1/4 cup water
    • 1 can refried beans (I like spicy refried beans)
    • 2 cups Spicy Baked Brown Rice (cooked) or your favorite cooked rice
    • 1/2 cup salsa verde (green chile sauce)
    • 1/2 cup red enchilada sauce
    • 12 ounces Colby Jack cheese, shredded
    • 1/2 can large black olives, sliced

    Instructions

    1. Preheat oven to 350°F.
    2. In a medium skillet over medium heat drizzle olive oil in warm pan.  Add chicken and brown.  Once chicken is cooked, add chipotle seasoning and stir to combine.  Add water and cover. Simmer 15 minutes, remove cover and cook until water is cooked out.  Set chicken aside until needed.
    3. In a medium casserole dish or heat safe bowl (I used a 1.75 quart).  Spread refried beans into dish and add 4 ounces cheese. mix to combine well.
    4. Add rice and spread evenly.
    5. Add salsa verde and smooth over rice layer.
    6. Sprinkle approximately 4 ounces cheese onto salsa verde layer.  Sprinkle cooked chicken evenly over cheese layer.
    7. Add enchilada sauce and smooth evenly over chicken.
    8. Sprinkle remaining cheese over top.
    9. Arrange sliced olives on top of cheese.
    10. Place dish on a small baking sheet and place in center of oven.  Bake for 15 minutes or until cheese is melted and lightly browned (or up to 30 minutes if ingredients are cold).
    11. Serve with chips.

    DONNA'S NOTES

    1. This dish freezes very well. I like to make (6) 2-cup servings and freeze them for easy dinners. Each one serves 2 with chips.
    2. To pre-make: Prepare recipe as written, but do not bake it. Wrap oven safe dishes in aluminum foil and freeze.  Then, place in oven for 30-45 minutes on 350°F until warmed through. Uncover the last 10 minutes to melt the cheese.
    3. This is an incredibly versatile recipe that can be made with your favorites. Substitute the seasoned ground chicken layer with ground beef or turkey, Italian sausage (omit seasoning) or even diced left over chicken, turkey, beef or pork.
    4. Diced green chiles are fabulous in place of the Salsa Verde Layer.
