Instant Pot pork chops (boneless or bone-in)

This Instant Pot boneless pork chop recipe is one of the easiest ways to make pork chops with gravy.

You can even make them with frozen pork chops if you have forgotten to defrost something for dinner.

Just add about 5 extra minutes to your cooking time to account for them being frozen.

If you do choose to start with frozen pork chops, remember that it will take longer for your Instant Pot to come up to pressure.

Take that into consideration when planning how long it will take to make dinner.

How long to cook pork chops in a pressure cooker 

Making pork chops in the pressure cooker will ultimately depend on what size and what thickness pork chops you use.

The thicker they are, the longer they will need to cook. Here are a few simple tips to keep in mind.

  • If you use center cut chops with a bone, you will need to cook them for about 15 to 18 minutes. If they are 3/4" thick, it will be closer to 15 minutes. And, if they are 1" thick, it will be 18 minutes.
  • If you are making boneless loin chops as I did in this recipe, you will need about 8 to 10 minutes depending on the size.
  • When using pork steaks that are 1" thick, cook them for about 20 minutes.

  • chicken stock - this is my favorite, it is incredibly flavorful without too much salt

Frequently asked questions

Making gravy from pork juices 

So, one of our favorite ways to enjoy these Instant Pot pork chops is with gravy. And, it couldn't be easier to make gravy using this method.

All you need to do is to remove the pork chops from the Instant Pot. Then, add 3 tablespoons of the chicken stock to a mason jar and set aside.

Add the remaining chicken stock to the pot and use a spatula to scrape the yummy browned bits from the pot.

Return the pork chops to the pressure cooker and continue to cook them.

During this time, you will need to add cornstarch to the Mason jar that has the chicken stock and shake it until it creates a slurry.

Remove the pork chops when they are done cooking. Finally, pour the mixture into the Instant Pot and saute until it has thickened.

Storing, freezing, and reheating directions 

If you have extras from this pressure cooker pork chops recipe, you can place them in an airtight container in the refrigerator.

They will stay good for 3 to 5 days. To freeze them, place them in a freezer bag.  Use them within 2 to 3 months for the best quality.

Thaw them overnight in the refrigerator.

To reheat pork chops, you can use your oven. Preheat the oven to 350F.

Place 2 to 3 tablespoons of chicken broth into the bottom of a baking dish. Add the pork chops to the pan and cover the entire thing with aluminum foil.

Then, reheat them for 10 to 15 minutes until they are warmed through.

How to prevent dry pork chops 

If you're worried about dry pork chops when you make this boneless pork chop recipe, it's important that you bring the meat to room temperature before you cook it.

And, you can add a tiny bit of chicken stock to the pan when you cook it to prevent drying.

Instant Pot Pork Chops and Gravy

Instant Pot Pork Chops come out tender, juicy, and flavorful in about 20 minutes. Make this recipe and your pressure cooker will handle the hard work!
Prep time: 5 Minutes Cook time: 22 Minutes Total time: 40 Minutes (including 10 minutes to pressurize and 10 minutes to release)

Ingredients

  • 4 boneless thick cut pork chops (at least 1-inch thick)
  • 2 tablespoons light brown sugar
  • 1 teaspoon cumin
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 tablespoons olive oil
  • 2 cups chicken stock, divided
  • 3 tablespoons cornstarch
  • chopped fresh flat-leaf parsley, optional garnish

Instructions

  1. In a large bowl combine the brown sugar, cumin, salt, paprika, garlic powder, and pepper. Stir to combine and set aside.
  2. Toss the pork chops in the spice mix until seasoned on all sides.
  3. Turn the instant pot on to saute. When you can feel the heat when you hold your hand above the instant pot, add the olive oil.
  4. Add pork chops to the instant pot and brown for about 2 minutes per side.
  5. Remove pork chops from the instant pot and set aside.
  6. Add 3 tablespoons of the chicken stock to a mason jar and set aside. Add the remaining chicken stock to the pot and use a spatula to scrape the yummy browned bits from the pot.
  7. Turn off the pot.
  8. Return the pork chops to the pot and place the lid on. Set valve to the sealing position.
  9. Set to manual on HIGH pressure for 8 minutes. It will take about 10 minutes for the pot to come to pressure.
  10. When done cooking, allow to naturally pressure release for 10 minutes. Then switch to quick release to release any remaining pressure.
  11. Meanwhile, add the cornstarch to the mason jar and shake the living tar out of it until completely combined to create a slurry.
  12. Remove pork chops from the pan and place on a serving dish.
  13. Add the slurry to the pot, return to saute. Stir until the sauce has thickened enough to coat the back of a spoon.
  14. Serve and enjoy!
DONNA'S NOTES

It’s similar to a baked chicken with mushrooms recipe my mom made when I was growing up, except she used a can of cream of mushroom soup and an oven, and mine is made with Instant Pot chicken breasts and a homemade creamy mushroom sauce that is so much better than the stuff from a can!

I’m not going to lie, the mushroom sauce is my favorite part. It is made using the stock that the chicken and mushrooms are cooked in, with the addition of a little heavy cream, and a slurry of cornstarch and water. As you bring the sauce to a boil the cornstarch thickens it into a smooth, rich gravy that perfectly coats the chicken.

I like to serve it all over some white rice. I spoon a little extra mushroom sauce over the rice, place the chicken and a little more sauce on top, and dinner it serve. It’s a really simple, but totally delicious Instant Pot chicken breasts recipe that everyone in the family will love.

Helpful Tips to make Instant Pot Chicken Breasts with Mushrooms:

  • Make sure you brown the chicken breasts really well to give them a nice color and to help seal in the juices.
  • You can substitute chicken thighs for chicken breasts if you prefer dark meat. Just make sure you brown them well. 
  • Make sure you deglaze the bottom of the Instant Pot with the chicken stock before adding your chicken breasts back into the pot. This will ensure that nothing burns on the bottom of the pot during the pressure cooking portion. 
  • I suggest white button mushrooms or cremini mushrooms for this recipe but you can substitute with another mushroom if you prefer.

Instant Pot Chicken Breasts with Mushrooms

Instant Pot Chicken Breasts with Mushrooms is classic comfort food. Perfectly tender chicken breasts smothered in a rich and creamy mushroom sauce cooked in one pot make this the perfect recipe for busy weeknights.
prep time: 10 minscook time: 45 minstotal time: 55 mins

Ingredients

  • 4 chicken breasts, about 1 - 1 1/2 pounds
  • 1 cup chicken stock
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 8 ounces mushrooms
  • 2 cloves garlic, minced
  • 4 sprigs fresh oregano
  • 4 sprigs fresh thyme
  • 1 sprig rosemary
  • 1 cup heavy cream
  • 2 tablespoons dijon mustard
  • 2 tablespoons cornstarch
  • 3 tablespoons water

Instructions

  1. Combine salt and pepper and sprinkle over the chicken breasts.
  2. Set Instant Pot to saute and add 1 tablespoon of olive oil. Cooking in batches place chicken breasts in the Instant Pot and brown on both sides. Approximately 10 -12 minutes. Set browned chicken aside.
  3. Add the second tablespoon of olive oil to the pot and add the mushrooms, cooking for approximately 7 minutes until they are tender. Press cancel to turn off the saute function.
  4. Pour stock into the Instant Pot, and deglaze the bottom of the pan, getting up all of the browned bits. Add the garlic, oregano, thyme, and rosemary.
  5. Lock the Instant Pot lid in place and turn the valve to sealing. Set to high pressure for 8 minutes.
  6. Once the timer goes off press cancel and let the Instant Pot do a natural release for 5 minutes before turning the valve to venting to release the remaining pressure.
  7. Remove the chicken from the Instant Pot and cover with foil to keep warm.
  8. Make a slurry by combining the cornstarch and water and stirring until there are no lumps.
  9. Press saute and add the heavy cream, and dijon mustard. As the mixture heats slowly pour in the cornstarch slurry stirring constantly. Continue to cook for 5-7 minutes until the sauce thickens.
  10. Add the chicken back to the sauce and serve with white rice.

Garlic lime all-purpose marinade is a simple recipe that comes together in a snap and creates the most amazingly flavorful, moist and tender meat dishes. Perfect on chicken, pork, steaks and seafood. I have loved quick and easy marinades as long as I can remember. I use them for chicken, pork chops and steaks all the time. I love really versatile marinades and have been working on this garlic-lime version for some time now. I wasn't until I made it with Star Fine Foods new garlic olive oil that I knew the recipe was perfect. I have used the garlic flavored olive oil in several dishes already but it really kicked this marinade up a notch.

This simple marinade is truly all-purpose. It is excellent on chicken, whether it is grilled or oven roasted. We brought garlic-lime marinated chicken to a potluck this summer and had the host grill it. It was absolutely amazing! It is spectacular on steak, London broil, pork, and I can imagine how much a seafood lover would enjoy fish marinated in it.

It all starts with a fantastic flavor palate. Garlic and lime are one of my favorite culinary combinations and this marinade brings the two together with a tangy goodness that will make you sing! The addition of mustard in this marinade helps creation an emulsion so the marinade really hangs onto the meat.

With enough acid to really make your meat moist and tender, this marinade will take your dish all the way to flavor town. I actually may have poured this cooked down marinade over my mashed potates too.  I couldn't help myself the marinade is so good I cook down the left overs and drizzle them over my dinner.

    Garlic Lime All-Purpose Marinade

    Garlic lime all-purpose marinade is a simple recipe that comes together in a snap and creates the most amazingly flavorful, moist and tender meat dishes. Perfect on chicken, pork, steaks and seafood. Truly an all-purpose marinade I would happily use this as gravy on my mashed potatoes too (I may have done that already).

    Ingredients

    • 2-5 pounds meat of choice (I used boneless skinless chicken breasts)
    • 6 tablespoons STAR Garlic Flavored Olive Oil
    • 1/4 cup STAR White Wine Vinegar
    • 1/4 cup fresh lime juice (about 2 limes)
    • 2 tablespoons packed light brown sugar
    • 1-1/2 tablespoons whole grain mustard
    • 1-1/2 tablespoons dijon mustard
    • 1 teaspoon kosher salt
    • 1 teaspoon black pepper
    • 4 cloves garlic, minced

    Instructions

    1. Place meat in ziptop gallon bag. Set aside.
    2. Combine all remaining ingredients in a mason jar (or a 2 cup measuring cup). Seal your jar and shake vigorously until your mixture becomes completely combined (or you can whisk well) and pour over meat. Zip bag closed and place in a bowl in the refrigerator (to prevent leaks) or double bag it. Marinate 30 minutes to overnight. I recommend overnight if you have the time. If marinating for hours, remember to flip the bag over a few times to keep the meat coated and moist.
    DONNA'S NOTES
    1. If you wish to use the marinade to serve over the meat, you can boil it on the stove top until reduced by 1/3 to create a delicious sauce.
    2. You can substitute all Dijon mustard or all whole grain.
    3. Cooking instructions will vary based on the meat you choose.
    TO GRILL CHICKEN
    1. Preheat grill to medium-high. Place chicken on the counter (to take the chill off) while grill is heating. Grill chicken about 4-5 minutes on each side. 
    2. Serve and enjoy.
    TO GRILL PORK CHOPS
    1. Preheat grill to medium high. Place the pork chops on the grill and sear both sides, about 2 to 3 minutes per side. Move the pork chops away from the flame. Cook over indirect heat with the grill closed until they are somewhat firm to the touch or until an instant-read thermometer inserted horizontally into the center of a chop, away from the bone, registers 145°F, about 15 minutes. Transfer the pork chops to a platter and let rest for 10 minutes. 
    2. Serve and enjoy!
    TO BAKE CHICKEN OR PORK CHOPS
    1. Preheat oven to 425°F. Bake for 30-40 minutes until chicken is cooked through (1 pound takes less time, 5 pounds takes more time). Cover with aluminum foil for 5 minutes and let the chicken rest. 
    2. Serve and enjoy!
