Let’s take a moment to think about this. I love Death by Chocolate. Anything and everything I have ever created with that theme in mind has been to die for. No pun intended. OK, well maybe I did plan that out.

My favorite Death by Chocolate Cake takes a full day to prepare and 2 sink loads of dishes, a FULL day. I know, I know. I was once an overachiever with a lot more time on my hands. Seven layers of heavenly chocolate beautifully packaged into this fabulous cake. If you have someone to make it for you… You totally need to try it.

After some self-therapy and coming to terms with the above delicious creation and the fact that I just don’t have that kind of time, I decided to simplify. So, I used that fantabulous theme to create a Death by Chocolate Bundt Cake. With four incredible kinds of chocolate packed into a simple and impressive Bundt cake (with an awesome Kahlua kick), I thought I had found my true Death by Chocolate love…

THEN… Last week my friend Liz from That Skinny Chick Can Bake posted these Death by Chocolate Cookies. You know I was on her site faster than lightening! The idea of my favorite rich, decadent, dessert in a bite sized package thrilled me. I made them the very next day.

Such an easy recipe and all that flavor packed into a tiny cookie. This is currently my favorite Death by Chocolate endeavor. I packed 5 kinds of chocolate into that bite sized cookie. Milk, Semi-sweet, bittersweet, cocoa and white, 5 layers of ooey gooey goodness. Few dishes and the first batch was out of the oven less than 30 minutes later! SCORE.

Death by Chocolate Cookies

Death by Chocolate Cookies are bursting with heavenly chocolate! A simple recipe with 5 layers of ooey gooey chocolay goodness will have the chocolate lovers in your life giddy with delight!

Ingredients

1 cup plus 1 tablespoon all-purpose flour
1/4 cup cocoa powder
1 teaspoon baking powder
1/8 teaspoon salt
8 ounces semi-sweet chocolate chips
2 large eggs
1 tablespoon vanilla extract
5 tablespoons butter, at room temperature
3/4 cup light brown sugar, packed
1/4 cup granulated sugar
1/2 cup bittersweet chocolate chips
1/2 cup milk chocolate chips (or chopped milk chocolate bar)
1/2 cup semi-sweet chocolate chips
1/2 cup white chocolate chips

Instructions

Preheat oven to 350º. Prepare 2 baking sheets with parchment paper.
In a small heat safe bowl, melt 8 ounces of semi-sweet chocolate chips in the microwave until smooth. Stir and set aside.
In a large mixing bowl add butter and beat with an electric mixer until smooth and creamy, about 1 minute. Beat in the sugars. Add the eggs and vanilla, mix until incorporated.
Add the melted chocolate and beat until combined. Using a small sieve or sifter, sift in the dry ingredients (flour, cocoa, baking powder and salt) and mix on low speed until just combined. Fold in the chocolate chips.
Using a 1 tablespoon scooper or heaping teaspoonful drop cookie dough onto prepared baking sheets.
Bake for 9-11 minutes; until the cookies have begun to set. The center may still appear soft, they will firm up as they cool.
Allow cookies to cool on baking sheet for at least 5 minutes before transferring to a wire rack to cool completely.
Serve and enjoy!

I almost called this a chocolate dump cake, because from frosting to cake, this simple Dr Pepper cake using cake mix takes just 5 ingredients and it is perhaps the easiest and tastiest cake ever.

The rich, decadent and perfectly tender cake melts in your mouth. Topped with homemade maraschino cherry frosting is it truly a flavor explosion.

And it is and ready to toss in the oven in a flash. Honestly I don't usually make dump cakes, but sometime you just really need an easy recipe that will impress a crowd.

Helpful Tips to Make Cherry Dr Pepper Cake:

I know people love diet soda, but this is not the place for it.
You can substitute Cherry Coke if you prefer, but the Cherry Dr Pepper gives it an amazing flavor.
To avoid pink fingers, wear kitchen gloves when working with the cherries.
This cake keeps for about 3-4 days on the kitchen counter wrapped tightly with plastic wrap. During the summer, or if your kitchen is warm, store in the refrigerator.

Outrageous Cherry Dr Pepper Cake

Outrageous Cherry Dr Pepper Cake is an incredibly flavorful cherry chocolate cake recipe with just 5 ingredients that will blow your mind!

ingredients

1 (15.25 ounce) box super moist chocolate fudge cake mix (dry)
12 ounces Dr. Pepper Cherry (room temperature)
1 (18 ounce) jar maraschino cherries, divided
2 (1 cup) sticks salted butter (room temperature)
7 cups powdered sugar

instructions

Preheat oven to 350°F. Spray a 9x13x2 baking pan with cooking spray. Set aside.
In a large bowl combine cake mix and soda. Whisk until combined. Set aside.
Remove 24 cherries from the jar, remove stems and cut cherries into fourths. Add cut cherries to cake batter. Whisk again until combined.
Pour batter into the prepared baking pan. Smooth with a spatula so the cake is even.
Place the cake in the center of the oven and bake 30 minutes or until a toothpick comes out clean.
Meanwhile: Add butter to the bowl of a stand mixer fitted with the whisk attachment (or place in a large bowl and use and hand mixer).
Beat butter until light and fluffy, about 3 minutes.
Add sugar 1 cup at a time until it is all incorporated (beating between each addition).
Add 3 ounces (6 tablespoons) maraschino cherry juice from the jar and beat until mixture is light and fluffy.
Frost the cake with all of the icing and garnish with remaining cherries.

DONNA'S NOTES:

Do not add the ingredients that the cake mix calls for. This recipe is just for the dry mix.
If icing is too thick, add more cherry juice 1 tablespoon at a time until you reach your desired consistency, beating in between each addition.
If it is too thin add powdered sugar 1 tablespoon at a time until you reach your desired consistency, beating in between each addition.

Blueberry Lemon Cake Recipe Tips:

Toss fresh or frozen blueberries in 1 tablespoon of flour before baking. This helps the blueberries to stay dispersed throughout the cake and not sink to the bottom.

To make a layer cake: Divide batter between two 9 inch cake pans and bake for 20-25 minutes. Poke warm cake layers with holes and drizzle with lemon glaze. Spread the whipped lemon cream cheese frosting in between cooled layers, along with some fresh blueberries. Then frost the entire cake and sprinkle more fresh blueberries on top.

To make this recipe with cake mix: Use a yellow or lemon cake mix. Prepare according to box directions, but also add 1 teaspoon of lemon extract and 1 tablespoon of lemon zest. Before baking, fold in 2 cups frozen or fresh blueberries tossed in 1 tablespoon of flour.

For best results, use room temperature ingredients. The eggs, butter, and dairy should all be room temperature before baking. This makes the batter come together smoothly and homogeneously.

Buttermilk substitution: Pour 1 tablespoon vinegar or lemon juice in a measuring cup. Add milk until you have 1 1/4 cups total liquid. Let sit for 5-10 minutes, stir, and then use.

Whipped cream substitute: Use 2 cups Cool Whip instead of whipping heavy cream separately to fold into cream cheese frosting.

Lemon Blueberry Cake

Ingredients

Lemon Blueberry Cake

3/4 cup (6 oz) unsalted butter, softened
1 3/4 cup sugar

1 tablespoon lemon zest (about 2 lemons)
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder

1 1/4 cup buttermilk
1 3/4 cups fresh or frozen blueberries, tossed in 1 tablespoon flour

Lemon Glaze

1/4 cup fresh lemon juice (use zested lemons)
1 1/2 cup powdered sugar

Lemon Whipped Cream Cheese Frosting

12 ounces cream cheese, softened
1 teaspoon lemon zest
1 teaspoon lemon extract
1 cup powdered sugar
3/4 cup heavy cream (or 2 cups Cool Whip)
1/4 cup fresh blueberries, for decorating
Lemon slices, for decorating

Instructions

For the Cake

Preheat oven to 350ºF. Grease a 13 X 9 inch baking pan. Set aside.
In a large mixing bowl beat together butter and sugar until very light and fluffy, about 4 minutes.
Add eggs, one at a time, beating well after each addition. Beat in vanilla extract, lemon extract, and lemon zest.
In a separate bowl whisk together flour, baking powder, and salt. Alternatively add flour and buttermilk to butter / sugar mixture, beating on low after each addition until just combined. Gently fold in blueberries tossed in flour.
Pour into prepared baking pan and bake 30-35 minutes, or until toothpick inserted in middle comes clean.
Remove from oven and mix together lemon drizzle ingredients. Poke holes all over warm cake using a skewer or fork. Pour drizzle over cake and let seep in. Use a spatula to spread drizzle around and evenly distribute. Allow cake to cool completely before frosting.

For the Frosting

In a large bowl beat together cream cheese, lemon zest, lemon extract, and powdered sugar. Set aside.
If using heavy cream, pour into a separate clean, large bowl. Beat on high until it holds shape and peaks form, about 3-4 minutes.
Fold whipped cream (or Cool Whip) into cream cheese mixture until no streaks remain.
Spread frosting on top of cooled cake and garnish with fresh blueberries and lemon slices.

COOK'S NOTES

Best Ever Pecan Pie Bars (VIDEO)

Best Ever Pecan Pie Bars are so good people offer to pay me for them. A fabulous recipe with a caramelized pecan pie set atop a shortbread crust is the absolute perfect nut bar. My family requests more of this dessert than any other every year.

Resharing this in memory of my mom... It's been 6 years and we miss her everyday...

Well, it is officially November and around here that means it's baking season!

Every Christmas I ask our families what they would like to see in the homemade gifts that we give each year. My family always says the same thing. "Lots and lots of your pecan bars."

A vanilla shortbread crust is the base for this amazing treat. 2 pounds of pecans and brown sugar guarantee that this will be a very nutty sweet treat.

Interestingly, this is an adapted version of the recipe that started it all. In the fall of 2006, after dating for nearly 10 years, Chad and I were busy preparing for our Christmas wedding.

Needless to say, holiday baking wasn't in the plans, but my mom insisted I had to make these pecan squares that she had gotten from a friend at work.

We lived 2,300 miles apart. So, I wrote down the recipe, planning to make them soon. Let me tell you; those pecan squares were amazing.

At the time I had no idea who the author was, but that one recipe would soon change my world.

It wasn't long after that I was flipping through the channels, and I landed on a woman making the same pecan square recipe that my mom gave me. I stopped, remembering how delicious they were. Her name was Ina Garten.

She had a Long Island accent and a warm laugh that reminded me of my mom. She had a way about her that drew me in. So, I watched, and I learned. A passion was ignited in me to get into the kitchen and try new things.

I started outfitting my kitchen with new tools and getting creative with my food. Before long I found my family and friends were texting me and asking for recipes for my newest creations.

We decided to put them online so everyone we knew could find them. In the summer of 2011, we published our first recipe on blog.

Chad and I are just like Frick and Frack. Partners in love and life, you can't find one of us without the other, so naturally, it was family adventure as Chad saw my passion and excitement and jumped-in, camera in hand. He has an amazing knack for making my recipes looks as delicious as they taste, dontchathink?

The funny thing is, up until this point I REALLY thought I knew everything there was to know about cooking. I proudly served Chad frozen chicken fried steak and boxed mashed potatoes for our first meal together in 1998. I really thought I was the cat's meow. I would soon realize that I had so much to learn.

How to Freeze Pecan Pie Bars

So, to surprise my family I made an entire 12x18 pan of pecan bars and shipped it to my mom for Christmas a few years ago. I told her if she wrapped them well they would keep for 6 months in the freezer.

Would you believe that shortly after New Years my baby sister called and begged me to make her some more! They were gone. So, I am shipping her a 1/4 pan. Shhh! Its a surprise.

This recipe can be 1/2'd to make a 9x13 pan and cut into 1/4's to make an 8x8 pan. I seriously recommend that you make these. You will love them.

Helpful Tips to make Best Ever Pecan Pie Bars:

The dough will be very sticky; sprinkle the dough and your hands lightly with flour.
Try chopping pecans in a food processer to make easy work of the prep or buy chopped pecans.
The pecan bars will be a little wiggly when they are done cooking, just not jiggly. They will set up as they cool.
Let the bars cool completely before cutting, I like to refrigerate overnight.
Use a sharp knife to cut the bars.
I like to use parchment paper to line the pan. When they are done cooling you can lift the bars out of the pan by the parchment and cut on a cutting board.
These bars freeze perfectly. Wrap in a gallon size freezer bag with sheets of parchment paper between the stacks of bars. They keep for up to 6 months in the freezer.

What you will need to make Best Ever Pecan Pie Bars:

12x18 Baking Pan - This is NOT the standard casserole dish. It holds 2 times as much and I use it several times a year to make huge batches of pecan bars.
9x13 Baking Pan - I love this pan for baking cakes with square edge, making pans of brownies and 1/2 recipe of these pecan bars (see the recipe notes for details).
8 x 8 Pan- Perfect square pan for 1/4 recipe of these pecan bars (see recipe notes for details).

Best Ever Pecan Pie Bars

The Best Ever Pecan Pie Bars are so good people offer to pay me for them. A fabulous recipe with a caramelized pecan pie set atop a shortbread crust is the absolute perfect nut bar. My family requests more of this dessert than any other every year.

Ingredients

Shortbread Crust

1 1/4 pounds (5 sticks) unsalted butter, room temperature
3/4 cup granulated sugar
4 large eggs
1 tablespoon pure vanilla extract
4 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon kosher salt

Pecan Pie Topping

1 pound (4 sticks) unsalted butter
1 cup light corn syrup
3 cups light brown sugar, packed
1/4 cup heavy cream
2 pounds pecans, chopped

Instructions

Preheat the oven to 350°F.
For the crust, beat the butter and granulated sugar in the bowl of an electric mixer fitted with a paddle attachment, until light, approximately 3 minutes.
Add the eggs and the vanilla and mix well. Sift together the flour, baking powder, and salt. Mix the dry ingredients into the batter with the mixer on low speed until just combined.
Press the dough evenly into an ungreased 18 by 12 by 2-inch baking sheet, making an edge around the edge like you would a pie crust . It will be very sticky; sprinkle the dough and your hands lightly with flour. Bake for 15 minutes, until the crust is set but not browned. Allow to cool.
For the topping, combine the butter, corn syrup, and brown sugar in a large, heavy-bottomed saucepan.
Cook over low heat until the butter is melted, using a wooden spoon to stir. Raise the heat and boil for 3 minutes. Remove from the heat. Stir in the heavy cream and pecans.
Pour over the crust, trying not to get the filling between the crust and the pan. Bake for 25 to 30 minutes, until the filling is set.
Remove from the oven and allow to cool. Wrap in plastic wrap and refrigerate until cold. Cut into bars and serve.

FOR A 9x13 pan (serves 18)  Crust  1 1/4 cups (2 1/2 sticks) unsalted butter, room temperature 6 tablespoons granulated sugar 2 large eggs 1 1/2 teaspoons pure vanilla extract 2 1/4 cups all-purpose flour 1/4 teaspoon baking powder 1/8 teaspoon kosher salt  Topping: 1/2 pound (2 sticks) unsalted butter 1/2 cup light corn syrup 1 1/2 cups light brown sugar, packed 2 tablespoons heavy cream 1 pound pecans, chopped  Follow directions above.  Watch your cooking time.
