Last time we were at the mall we treated Munchkin to some pretzel bites.  They were soft tender, chewy and delicious.

I knew right then I needed to come up with a homemade version.  I sure did!  I honestly didn't realize they would be THIS good.

But, they were and we ate them for dinner.  True story.  No, not with dinner.  FOR dinner.  Yes, they are that good.

Munchkin went nuts over these with the cheese sauce and Chad and I may have eaten our weight in pretzel bites, but it is well worth it!

We are a pretzel loving family and this is one of our favorite treats.  You are going to love them too.

Helpful Tips to make Soft Pretzel Bites:

Soft Pretzel Bites

A soft and tender pretzel with the most subtle sweetness is the recipe you have been dreaming of. Even better, they are ready in just 30 minutes. Quick and easy you can make these with or without a mixer!
prep time: 22 MINScook time: 8 MINStotal time: 30 mins

Ingredients

  • 2¼ teaspoons active dry yeast
  • 1¼ cups warm milk (110°-120°F)
  • 2 tablespoons honey
  • 3¼ cups all purpose flour
  • 1 teaspoon kosher salt
  • ½ cup baking soda
  • 1 large egg
  • coarse salt (or pretzel salt)

Instructions

  1. Preheat oven to 450°F.  Line a baking sheet with parchment paper or spray with cooking spray.
  2. Pour milk into the bowl of a stand mixer (see cooks note if you do not have a stand mixer), sprinkle yeast over top, add honey and stir.  Allow yeast to bloom for 5-10 minutes.  Once it is nice and foamy, it is ready.
  3. Fill an 8 quart pot with water and bring to a boil over medium high heat.  In a small bowl beat egg and 2 tablespoons water with a fork.  Set aside.  Wash a section of counter top for rolling out dough.  Do not flour it or it will be harder to roll out the dough.
  4. Add flour and salt to mixer.  Knead for about 3 minutes until the dough comes together in one ball.  Add more flour a tablespoon at a time as needed, if bread is too sticky to come together.  Dough should be tacky when you pull it out of the mixer, not sticky.
  5. Place dough on counter top and form dough into a ball.  We are going to cut this ball into 64 (somewhat) even pieces.  First quarter the ball of dough.  Roll each quarter into an 18-22” strand.  Cut that into 4 equal pieces.  Then cut each piece into 4 equal pieces.  I used a bench scraper but a butter knife will work fine.  When you are done you will have 64 pieces.
  6. Carefully, add baking soda to boiling water.  USE CAUTION:  IT WILL BUBBLE UP.  Place dough bites into boiling water about 10 at a time.  Remove with a slotted spoon after 30 seconds.  Place on parchment paper to cool and repeat until all bites have been boiled.
  7. Arrange all pretzel bites on parchment so they are not touching.  Brush egg wash onto each one and sprinkle with coarse salt.
  8. Bake for 7-9 minutes until the tops are browned.
  9. Enjoy!

 We have waited long enough.

I know y'all are still freezing up north, but it is beautiful here in Arizona and all I want is grillin' food, you know the old school kind...  burgers and dogs!

So, Chad wanted a burger on a pretzel bun and I wanted a hot dog.  Here is the ultimate compromise.  Although I still didn't take the cover off my grill.

These simple pretzel dogs are so much tastier than anything you can buy pre-made and my 4-year-old and I had so much fun making them!

You don't even need a mixer.  I used beer in the pretzel dough to give it a little punch of flavor and oh boy, its spectacular!

You can use organic, all beef, nitrate-free, sausages, or whatever makes you happy.  I am going to make these in mini size next time which will make for the perfect appetizer.

Simple Homemade Pretzel Dogs

A hot dog baked right inside a soft beer pretzel makes these the tastiest and easiest homemade pretzel dogs you will ever eat! Ready in just 35 minutes you can enjoy these any night.   • 12 ounces warmed beer (110°-120°F)* see notes
  • 2 tablespoons honey
  • 3¼ cups all-purpose flour
  • 1 teaspoon kosher salt
  • ½ cup baking soda
  • 1 large egg
  • coarse salt (or pretzel salt)
  • 8 hot dogs

Instructions

  1. Preheat oven to 450°F.  Line a baking sheet with parchment paper.  Set aside.
  2. Pour beer into the bowl of a stand mixer (see cooks note if you do not have a stand mixer), sprinkle yeast over top, add honey and stir.  Allow yeast to bloom for 5-10 minutes.  Once it is nice and foamy, it is ready.
  3. Fill an 8-quart pot with water and bring to a boil over medium-high heat.  In a small bowl beat egg and 2 tablespoons water with a fork.  Set aside.  Wash a section of countertop for rolling out dough.  Do not flour it or it will be harder to roll out the dough.
  4. Add flour and salt to mixer.  Knead for about 3 minutes until the dough comes together in one ball.  Add more flour a tablespoon at a time as needed, if the bread is too sticky to come together.  The dough should be tacky when you pull it out of the mixer, not sticky.

  6. We are going to cut this ball into 8 (somewhat) even pieces.  First, quarter the ball of dough.  Then cut each quarter in half.  Roll each piece into a 12” strand.
  7. Place the end of the dough strand on the end of the hot dog pinching the end together, and then wrap it around the dog until all of the dough is wrapped around the dog.  Pinch the ends so they stay together.
  8. Carefully, add baking soda to boiling water.  USE CAUTION:  IT WILL BUBBLE UP.  Place hot dogs into boiling water about 3 at a time.  Remove with a slotted spoon after 30 seconds.  Place on parchment paper to cool and repeat until all hot dogs have been boiled.
  9. Arrange all pretzel dogs on parchment so they are not touching.  Brush eggwash onto each one and sprinkle with coarse salt.
  10. Bake for 11-13 minutes until the tops are browned.
  11. Enjoy!

I can't get enough of pretzels lately.  I have made 6 different pretzels in the last few months and still more ideas keep popping into my head.  Luckily we bought a food saver and we just wrap them up and pop them in the freezer until we are ready to eat more.

After working on a few ranch, cheese and bacon recipes over the last few weeks I knew it would be the perfect flavor combination for a pretzel!

Ranch pretzels are absolutely amazing!  A tender dough bursting with flavor from the herbs and buttermilk in the seasoning.  Then as if that isn't enough to take it over the top, I stuffed them with cheese and bacon.  Total flavor explosion!  Easy to make and they freeze well too!

Cheesy Bacon Ranch Stuffed Pretzel Bombs
SERVES 36  |  ACTIVE TIME 42 Min  |  TOTAL TIME 50 Min

2¼ teaspoons active dry yeast
1 ½ cups warm milk (110°-120°)
2 tablespoons honey
3¼ cup all purpose flour
3 tablespoons ranch seasoning mix (I used Hidden Valley)
1 teaspoon kosher salt
8 ounces mild cheddar cheese, shredded
4 ounces cream cheese
12 ounces bacon, cooked and diced into bite size pieces
½ cup baking soda
1 large egg
course salt

Preheat oven to 450°.  Line a baking sheet with parchment paper or spray with cooking spray.

Pour milk into the bowl of a stand mixer (see cooks note if you do not have a stand mixer), sprinkle yeast over top, add honey and stir.  Allow yeast to bloom for 5-10 minutes.  Once it is nice and foamy, it is ready.

Meanwhile in a medium mixing bowl combine cheeses and bacon.  Mix together.  You may need to use a wood spoon to get it well mixed. 

In a small bowl beat egg and 1 tablespoon water, set aside.  Sprinkle clean counter top with 2 tablespoons flour.  Line a baking sheet with parchment paper and spray with cooking spray.  Set aside.

Fill a medium (4 cup) bowl with 2 cups of boiling water and add baking soda carefully (it will bubble up).  Place baking sheet, baking soda water and cheese mixture on the counter that you are working on.

Add flour, ranch seasoning and salt to mixer.  Knead for 3-5 minutes until the dough comes together in one ball.  Add more flour a tablespoon at a time as needed, if bread is too sticky to come together.  Dough should be tacky when you pull it out of the mixer, not sticky.

Place dough on lightly floured counter top.  Form dough into a ball.  We are going to cut this ball into 36 (somewhat) even pieces.  First quarter the ball of dough.  Roll each quarter into a fat log.  Cut that into 3 pieces.  Roll each piece into a log and cut into 3 pieces.  When you are done you will have 36 pieces.

Roll each dough piece (one at a time) into a ball and then flatten it into a circle.  Add a little less than 1 tablespoon of cheese mixture in the center *I used a tablespoon scooper.  Carefully pull each side over the filling to create a ‘cheese package’, pinching the edges closed.  Roll the dough into a ball.  Be careful to make sure you can not see the cheese through the dough.  Tap fingers in flour, pinch any tears and roll again. 

Set aside and repeat until you have 3 stuffed dough balls.  Transfer 3 stuffed dough balls to hot water mixture and allow to set while you prepare the next 3.  Prepare the next 3 dough balls.  Remove dough balls from water with a slotted spoon and place on prepared baking sheet.  Place 3 newly prepared balls into the water and prepare 3 more.  Repeat until all dough balls are on the cookie sheet.

Arrange all pretzel balls on parchment so they are not touching.  Brush egg wash onto each one and sprinkle with course salt.

Bake for 8-10 minutes until the tops are browned.

The ooey gooey cheese may escape some of your pretzel bombs.  That is a beautiful thing!  Scoop all that cheesy goodness up onto the plate and serve.  Your guests will go crazy over them.

Finding the perfect finger food to blow your friends minds is a tough feat, whether its for game day or card night.

But these certainly fit the bill.  Chad has been begging for pretzels since we made out Pretzel Rolls last year.  Well I finally decided to make them.

I don't know what I was waiting for.  I guess I needed to create something outrageous and simple at the same time.  With these cheesy stuffed pretzel bites, I have succeeded! They are crazy good.

These Outrageously Cheesy Stuffed Pretzel Bombs are the perfect bite size appetizer to impress your guests.  Pretzel bites are loaded with cheddar cheese and baked to perfection.

All of this comes together in under an hour. Truth be told I even had my 3 year old hanging on my apron strings, if you know what I mean, so you might whip these up even faster.

She loves to help and I cherish every little moment, even when I am tripping over her in the kitchen.

She was armed with her very own ingredients and she was making her very own batch of pretzels.  Rolling the dough and stuffing it with cheese saying "look at me Mommy".

We create fabulous dishes together and these pretzel bombs are no different.  Although we may have had good intentions to share these with friends...  Not this time.

We devoured them.  Sorry guys maybe next time.

Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 1 1/4 cups warm water (110°-120°)
  • 2 tablespoons granulated sugar
  • 3 1/4 cups all-purpose flour
  • 1 pound block mild cheddar cheese
  • 1 teaspoon kosher salt
  • 1/2 cup baking soda
  • 1 large egg
  • course salt

Instructions

  1. Preheat oven to 450°F.  Line a baking sheet with parchment paper or spray with cooking spray.
  2. Pour water into the bowl of a stand mixer (see cooks note if you do not have a stand mixer), sprinkle yeast over top, add sugar and stir.  Allow yeast to bloom for 5-10 minutes.  Once it is nice and foamy, it is ready.
  3. Meanwhile cut cheese into 36 even pieces, less than ½ ounce each.  Fill an 8-quart pot with water and bring to a boil over medium-high heat.  In a small bowl beat egg and 2 tablespoons water with a fork.  Set aside.  Sprinkle clean countertop with 1/4 cup flour. 
  4. Add flour and salt to mixer.  Knead for 3- 5 minutes until the dough comes together in one ball.  Add more flour a tablespoon at a time as needed, if the bread is too sticky to come together.  The dough should be tacky when you pull it out of the mixer, not sticky.
  5. Place dough on a floured countertop and knead in flour until it is no longer tacky, just a minute or two.  Form dough into a ball.  We are going to cut this ball into 36 (somewhat) even pieces.  First, quarter the ball of dough.  Roll each quarter into a fat log.  Cut that into 3 pieces.  Roll each piece into a log and cut it into 3 pieces.  When you are done you will have 36 pieces.
  6. I really love the tropical hint that coconut milk adds to a recipe and I have been wanting to make Coconut Lime Chicken Nuggets for a while now and there is no time like the present.

It all starts with a coconut milk and lime marinade.  The two create a virtual tropical bath for the chicken bites.

The marinade is so fragrant you may be tempted to drink it.  But, save it for the chicken, you will thank me later.

Coconut Lime Chicken Bites

Bite sized chicken breasts are marinated in coconut milk and limes, then they are double coated to make these the crispiest most flavorful Coconut Lime Chicken Bites you have ever tasted. This recipe is super easy and these chicken bites are sooo addictive you are going to want to make 2!
prep time: 60 minscook time: 15 minstotal time: 75 mins

Ingredients

  • ½ cup fresh lime juice (approximately 3 limes)
  • zest of 3 limes (reserve a pinch for garnish)
  • 3 garlic cloves, minced
  • 1 cup Silk Original Coconut milk + 1 tablespoon, divided
  • 2 teaspoons kosher salt, divided
  • ½ teaspoon fresh ground black pepper
  • 2 pounds boneless skinless chicken breasts, washed and trimmed
  • 4 cups corn flakes cereal
  • 2 cups sweetened flaked coconut
  • 2 large eggs
  • 1 cup unseasoned bread crumbs
  • olive oil spray (aerosol or non-aerosol)

Instructions

  1. Combine lime juice and zest, garlic, coconut milk, 1 teaspoon salt and pepper in a measuring cup.  Beat with a fork to combine.  Set aside.
  2. Lay chicken breasts on a cutting board, using a fork, prick the chicken several times to help tenderize the meat. Cut chicken into bite size pieces.  Place chicken in a 1 gallon resealable zip top bag.  Place in the refrigerator to marinate (30 minutes, up to over night).
  3. Preheat oven to 425°F.  Prepare 2 baking sheets with olive oil spray.  Set aside.
  4. Prepare coatings.  In a 1 gallon zip top bag add corn flakes.  Seal and press on bag to crush cereal.  Once crushed up to small pieces add coconut and 1 teaspoon salt.  Toss to combine.  Set aside.
  5. In a medium dish beat 2 eggs and a tablespoon coconut milk until well combined.  Set aside.
  6. In a 1 gallon zip top bag add bread crumbs.  Set aside.
  7. Remove chicken from refrigerator and drain marinade.
  8. Line up your prep station on a clean counter: marinated chicken, bread crumb bag, egg wash, coconut mixture and baking sheet. (Or reverse it if you prefer your baking sheet on the far left side).
  9. A few pieces at a time toss chicken into bread crumbs, toss to lightly coat.  Transfer chicken pieces into egg wash.  Toss chicken to coat and place into coconut mixture.  Toss to coat well and press coconut mixture onto chicken if necessary.  Place chicken onto prepared baking sheet.  Once the baking sheet is full, spray lightly with olive oil spray and set aside while you prepare the second sheet.
  10. Prepare the second sheet the same as the first.  Place baking sheets into oven and bake for 12-15 minutes.  Flip chicken bites after 10 minutes. Cook until coating is golden brown and chicken is cooked through.
  11. Garnish with reserved lime zest, serve and enjoy!
