Baked potatoes are one of the most versatile meals I've found because there are so many different ways to cook them.

And, the topping ideas are almost endless. And, I have just learned how to make the most wonderful baked potato in the smoker.

Temperature and time for a smoked baked potato

When it comes to making smoked potatoes, time and temperature are the most important things to consider.

Of course, there will be slight variations depending on the type of smoker you have and the size of your potatoes.

But, for the most part, you will want to set your smoker to 375F. It will take about 15 minutes to preheat.

After it preheats, you should cook the potatoes for about an hour. Test them by sticking a fork in them. If the fork goes in easily, it is done.

Remember that a larger potato will take longer to cook.

If you prefer to let your baked potato smoke for longer than an hour, you can lower the temperature.

Just set your smoker to 225F.  Then, cook the potatoes for 2 to 3 hours at the lower temperature. Remember to check them to be sure they are done and not overcooked.

One of the best things about making smoked baked potatoes is that you can cook them along with whatever else you have in the smoker.

So, if you are making my smoked chicken quarters, just add the potatoes in the smoker.

Just remember that you will need to time them so that they are both done at the same time.  Adjust the temperature and cooking time accordingly.

What type of potatoes to use 

I am smoking russet potatoes. They are an all-purpose potato that is often chosen for baking. But, that doesn't mean that you can't use another type of potato.

Smoked red potatoes would work as well. When choosing, be sure that all of the potatoes are a uniform size.

This way they will all be done at the time time.

Tools needed 

This is a quick and easy side dish that only needs a few simple tools.
  • Smoker - I have love my pellet smoker (Traeger and Green Mountain Grills are both great)
  • Your favorite wood chips - I love this blend and use it for just about everything

Choosing the right wood chips

Experimenting with different types of wood chips is part of the fun of using a smoker.

The type of wood chip you use will really make a difference in the flavor of your smoked baked potato.

I am using my favorite blend of oak, maple, and hickory on my pellet smoker.

But, you can experiment with apple, cherry, mesquite, or whatever other flavors you enjoy smoking with.

Applewood smoked potatoes sound absolutely amazing. I'll need to try that next.

Preparing the potatoes for smoking 

The potatoes don't need a lot of preparation when you are making smoked baked potatoes.

Just place the potatoes on a sheet, tray or work surface and use a fork to pierce the skin all over.

Then, coat them in the olive oil and rub the salt all over the potatoes. You do not need to cook the potatoes before you add them to the smoker.

Should the potatoes be wrapped in foil? 

When it comes to making baked potatoes, so many people want to wrap them in foil. When you make smoked baked potatoes, you don't need to wrap them in foil.

This way, the smoke leaves a wonderful flavor in the potato. Wrapping them in foil will prevent the full flavor from developing.

But, if you are worried about the clean up afterward, you can wrap them in foil to make it easier. But, it's not necessary.

Smoked Baked Potato

Making a smoked baked potato is one of the easiest smoker recipes around! This recipe is a must-make; you'll love the flavor of smoked potatoes!
Prep time: 5 Minutes Cook time: 1 Hour Total time: 1 Hour & 5 Minutes

Ingredients

  • 4 russet potatoes, scrubbed clean
  • 2 tablespoons olive oil
  • 2 tablespoons kosher salt
  • toppings such as butter, pepper, sour cream, and thinly sliced chives

Instructions

  1. Preheat the smoker to 375°F. Choose your favorite wood, I am using my favorite blend of oak, maple and hickory on my pellet smoker.
  2. Place the potatoes on a sheet tray or work surface and use a fork to pierce the skin all over.
  3. Coat in the olive oil and rub the salt all over the potatoes.
  4. Once the smoker is to temp (about 15 minutes), place the potatoes directly on the grate. Depending on the size, check at an hour and the potatoes should be done. You know they are done when you can stick a fork in it all the way to the center.
  5. Use an oven mitt to hold the potato and give it a little squeeze to help separate the potato from the skin. Then immediately cut them open. Use a knife to slice the potato long ways down the middle (about 3-4 inches) and then do the same thing crossways. use a clean kitchen towel and both hands to push them open from each end.
  6. Immediately top with fixin’s! Enjoy.

  1. To smoke at 225°F smoke time will be 2-3 hours, 275°F about 2 hours

Tips for Making Smoked Meatloaf

Making my smoked meatloaf recipe is fairly simple.

But, if you want a few pro tips for the best ever meatloaf recipe, here are a few to keep in mind.

Don't forget to check out the video to see us make this meat loaf recipe.

  • Choose meat with a fairly high fat content. If you choose meat that is too low fat, your meatloaf will be dry. The fat content should be at least 15%.

  • Make sure that you add moisture in each step of the recipe process. That can include eggs, my BBQ sauce, or Worcestershire sauce. For extra moisture, you can add a tablespoon of milk.

  • Soak the breadcrumbs in the egg mixture before you add it to the ground beef. You won't believe how much of a difference this makes in this smoked meatloaf recipe.
  • Saute the vegetables before adding them. This does help to add moisture to your meatloaf recipe. And, it helps infuse the meatloaf with flavor.

  • Don't overmix it. You only need to combine the ingredients until they are well distributed. Too much mixing will make it dry.

Temperature to cook meatloaf in a smoker

If you're wondering about the temperature to cook meatloaf, it can vary based on the recipe.

When making my smoked meatloaf recipe, you will need to preheat your smoker to 225F. That will result in the best flavor and texture for your meatloaf.

Don't overcook it. You don't want your meatloaf to be dry.

What flavor wood chips to use 

Choose your favorite wood, I am using my favorite blend of oak, maple, and hickory on my pellet smoker.

But, you can always try applewood if you prefer. This smoked meatloaf recipe will taste good no matter what type of wood chips you use.

Meatloaf internal temperature 

The correct meatloaf internal temp is 160F. It's very important to use a meat thermometer to check when your meat is done.

The USDA recommends cooking all ground meat to an internal temperature of 160F. Just place the thermometer in the center of your loaf.

Alternate proteins

If you'd prefer not to use ground beef, you can use another type of ground meat. Chicken, turkey, pork, and venison are all good options.

Keep in mind that ground meats that are lower in fat content may be drier than if you used ground beef. So, you may want to use half and half instead.

How can I store leftovers? 

If you have leftovers, place the smoked meatloaf in an airtight container in the refrigerator. They will last for 3 to 5 days tightly covered.

Or, if you want to keep them for a longer period of time, place slices in a freezer bag. You can keep the frozen meatloaf for up to six months this way.

To reheat it, let it thaw in the refrigerator. Then, heat the oven to 250F. Place the meatloaf slices in a baking dish along with one tablespoon of water.

Cover the dish with foil and heat for 30 minutes. You can add more barbecue sauce to the top if you prefer as well.

Smoked Meatloaf

Smoked Meatloaf is better than any other meat loaf you may have eaten. It's juicy on the inside with a crispy exterior and a sweet and smoky flavor.
Prep time: 10 MCook time: 3 hourTotal time: 3 H & 10 M

Ingredients

  • 1 tablespoon canola oil (or light flavored oil)
  • 1 small yellow onion, diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 2 pounds lean ground beef
  • 2 chiles in adobo, chopped (NOT WHOLE CANS)
  • 2 large eggs, lightly beaten
  • 2 tablespoons Worcestershire sauce
  • 1/2 cup panko breadcrumbs
  • 4 tablespoons light brown sugar, divided
  • 1/2 cup TSRI’s signature bbq sauce (or bbq sauce of your choice), divided
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the smoker to 225°F. Choose your favorite wood, I am using my favorite blend of oak, maple and hickory on my pellet smoker.
  2. In a medium skillet over medium-low heat saute the onion, bell pepper, and garlic in the oil until softened, about 5 minutes. Cooking at low temp helps to release the sugar in the onions so don’t crank up that temp. Set aside to cool.
  3. In a large bowl combine the ground beef, chiles in adobo, eggs, worcestershire sauce, breadcrumbs, 2 tablespoons of the brown sugar, ¼ cup of the bbq sauce, salt, and pepper. Mix to combine. Add in the cooled onion and peppers and mix to combine, do not over mix, just until everything is incorporated.
  4. In a 9x13 foil container or container of your choice, form the mixture into a loaf.
  5. Add the remaining 2 tablespoons of brown sugar and ¼ cup of bbq sauce to a small bowl and mix to combine. Brush half of the glaze all over the meatloaf.
  6. Smoke for 2-3 hours, basting with the remaining glaze after an hour and a half. Meatloaf is done when the internal temperature reaches 165°F.
  7. Let cool at least 10 minutes before slicing and serving.

Tips for Making Smoked Chicken Thighs

This recipe is one of the simplest ways to make smoked chicken thighs at home.

And, it uses one of my favorite homemade rubs, containing New Mexico chili powder and smoked paprika.

One of the reasons I use thigh meat is because it is such an inexpensive cut.

If you are feeding a crowd, or you're watching your grocery budget, cooking chicken thighs in the smoker is a great choice.

It's important to prep the meat before smoking it. You will need to trim the excess skin and fat around the edges first.

When preparing the thighs, make sure that you rub the spices into both the top and the bottom of the piece of meat.

Work a little bit underneath the skin if you can as well.

And, always let the meat rest for five minutes before serving.This allows the juices to redistribute as it cools so that your chicken will be moist and juicy.

How long to smoke chicken thighs

The smoking time depends on the size and the type of smoker you're using. It's really best to smoke the thighs based on the internal temperature reading using a meat thermometer.

This recipe calls for a temperature of 275F. At that temperature, you will need to cook them for about one hour and 35 minutes.

This is the time and temperature if you are using bone-in chicken thighs.

If you are cooking boneless chicken thighs, you will need to cook them for slightly less time.

To smoke boneless chicken thighs, preheat your smoker to 225F and cook them for about 55 minutes.

Remember, they are done when your meat thermometer shows an internal temperature of 165°F.

Don't rely on just the time to determine when your meat is cooked.

What is the best type of BBQ sauce to use?

One of the last steps in this recipe is to brush the meat with BBQ sauce. I love the taste of my KC Style Barbecue Sauce, but you can use your own homemade version.

Or, you can use a bottled BBQ sauce if you are pressed for time.

How to prevent dry rub from burning on the chicken

One of the challenges of cooking with a dry rub in the smoker is preventing it from burning.

When you make this recipe, you will brush BBQ sauce onto the chicken during the last 10 minutes of the cooking time. This will help prevent the sauce from burning.

But, it will still allow the delicious rub to flavor the thighs during the smoking process.

Can I make a double batch?

Yes, you can double this recipe. I love making a big batch because there are so many different ways to use it during the week.

You can easily use the leftovers to make BBQ chicken salad, toss it on to homemade pizza, or use it in your favorite pasta recipe.

Smoked Chicken Thighs

Ingredients

  • 4 chicken thighs, bone-in, skin-on
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon New Mexico chile powder
  • 2 teaspoons light brown sugar
  • 1/2 cup bbq sauce

Instructions

  1. Preheat the smoker to 275°F. Choose your favorite wood, I am using my favorite blend of oak, maple and hickory on my pellet smoker.
  2. Trim any excess skin off of the chicken thighs, set aside.
  3. In a small bowl mix together the garlic powder, onion powder, salt, pepper, paprika, chile powder, and brown sugar. Rub the spice mixture all over the chicken, set aside.
  4. Once the smoker is to temperature, place the chicken thighs directly on to the grates, skin side up. Close the lid and cook for 45 minutes or until the thighs reach an internal temperature of about 140°F. Turn the thighs over and baste it with the bbq sauce. Turn them back over, skin side up, and brush with bbq sauce. Close the lid and cook for an additional 45 minutes or until the chicken thighs reach an internal temperature of 165°F.

Whether you're serving the whole leg or using it in your favorite soups or casseroles, smoked turkey drumsticks are easy to make in your smoker.

So, if you cannot get to the fair to buy your favorite turkey leg, you can easily make them at home.

Turkey legs are actually two parts; the thigh and the drumstick. The jumbo size drumsticks come from very large turkeys.

Depending on the size, turkey legs can be very high in calories and fat. Removing the skin will help reduce the fat content.

If you enjoy a smokey flavor when you eat meat, you should try hickory or mesquite wood chips in your smoker.

But, if you want a more subtle taste, a fruitwood chip like apple or even cherry would be a delicious option.

To make these smoked turkey drumsticks, you will need to preheat your smoker to 250°F.

If you're wondering how long to cook turkey legs, they'll need to cook for about two to two and a half hours.

Will this smoked turkey leg recipe work with chicken drumsticks?

The process you use to smoke chicken and turkey is basically the same. But, you won't want to cook your smaller chicken legs for the same amount of time you cook your turkey drumsticks.

Instead, you will need to preheat your smoker to 225°F rather than 250°F. Then, smoke your chicken drumsticks for about an hour.

You should smoke poultry until a meat thermometer reads an internal temperature of at least 163°F. But, for extra tender meat that falls easily off of the bone, smoke the meat until it reaches 180°F.

Be sure to allow the meat to rest for 5 minutes after removing it from the smoker. It helps the juices redistribute as it rests for juicier turkey.

Is it necessary to brine turkey before smoking it?

Many people choose to brine their turkey before smoking it. They feel that it helps keep the meat moist while it's smoking.

But, this step is completely optional, and I didn't use a brine before I put it in the smoker. You don't need to brine your poultry before you smoke it when making smoked turkey legs.

Dry rub seasonings and substitutions

I use dry rub seasonings when I smoke turkey drumsticks because I love the flavor. And, one of my favorite spices to use is New Mexico Chili Powder.

If you cannot find New Mexico chili powder in your area, you can use cayenne pepper or traditional chili powder instead. But, I do love the flavor of New Mexico chili powder if you can find it.

If you'd like a dry rub that isn't as spicy, you can try a mixture of brown sugar and smoked paprika. Or, I've heard that Old Bay seasoning makes a delicious dry rub for poultry.

  • 4 turkey legs
  • 1 1/2 tablespoons light brown sugar, packed
  • 1 1/2 teaspoons garlic powder

  1. Preheat the smoker to 250°F. Place the turkey legs on a sheet tray, gently loosen the skin from the meat by running your fingers under the skin, set aside.
  2. In a small bowl mix together the garlic powder, onion powder, salt, pepper, brown sugar, and chile powder. Rub the turkey legs all over with the mixture, getting under the skin. Place the skin back to its original shape.
  3. Once the smoker is to temp, about 15 minutes, place the turkey legs directly on the grates. Smoke for 2 to 2 ½ hours, until the internal temperature reaches at least 165°F. I like to smoke them until the internal temperature reaches 180°F as I tend to find the meat more tender. Let cool slightly and serve!

Cooking smoked chicken leg quarters in your smoker is such an easy thing to do. I am really enjoying using my smoker more this summer.

The final result is a delicious smoked flavor that just cannot be beaten.

Recipe Tips for Smoked Chicken Quarters

For even more flavor, sear the chicken leg quarters in butter before you place them in the smoker. The final result will be richer and will result in a darker color.

Always let the chicken rest for at least 5 minutes when you remove it from the smoker. This lets the juices settle evenly in the meat.

The result is tender, juicy chicken. Remember that the internal temperature will continue to go up 10 to 15 degrees as it rests.

How to measure internal temperature of chicken pieces

To check the internal temperature of smoked chicken quarters, put the tip of the thermometer into the thickest part of the chicken.

But, be sure that the thermometer doesn't touch the bone. Then, look at the display to see the lowest number that it reads.

That number is the internal temperature of your chicken.

The USDA recommends an internal temperature of 165°F for all chicken and poultry to be done.

However, for extra tender fall off the bone chicken quarters, let them cook until the internal temperature reaches 180°-190°F.

It's definitely worth a few extra minutes for the end result.

The length of time it takes to make this smoked chicken recipe will depend on the temperature your smoker is set to.

  • If smoking at 275°F, you will need to cook your chicken for 2 1/2 to 3 hours.
  • At 300°F, you should smoke the chicken leg quarters for one hour and 45 minutes.

What type of wood chips are best for smoked chicken? 

The type of wood chips you use will contribute to the flavor of your smoked chicken quarters. It's important to keep that in mind when making your choice.

Using a fruit wood like apple, cherry or peach will give your chicken a slightly sweet, fruity taste.

For a true southern barbecue taste, opt for hickory which is traditional for smoking. Or, maple results in a mild, sweet flavor that's popular as well.

Finally, if you enjoy a strong, smoky flavor when you smoke meats, you can use mesquite. Using mesquite will result in the strongest flavor when smoking.

My personal preference is to use a more subtle wood like apple when smoking chicken. Experiment to see which flavor is your favorite.

Is it necessary to marinate the chicken? 

No, you don't need to marinate the chicken when you make smoked chicken quarters. I use a seasoning rub that you will work into the skin.

The result is a smoky, sweet flavor that is absolutely delicious.

If you would prefer to marinate your chicken instead of using this rub, you can do that as well.

Just place the chicken in a dish, add your favorite marinade, and cover it with plastic wrap. Let the whole thing sit overnight in the refrigerator before smoking.

Smoked Chicken Quarters

Smoked chicken quarters are juicy and tender on the inside with crispy skin on the outside. Make this smoker recipe using any type of smoker!

Ingredients

  • 10 pounds chicken leg quarters
  • 2 tablespoons turbinado sugar (aka course)
  • 1 tablespoon light brown sugar
  • 1 tablespoon chipotle powder
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon kosher salt
  • 1 1/2 teaspoons smoked paprika
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon fresh cracked black pepper

Instructions

  1. Preheat the smoker to 275°F. Pat the chicken leg quarters down with paper towels to get any excess liquid off, lay them out on a sheet tray or work surface.
  2. In a small bowl mix together the chipotle powder, onion powder, garlic powder, salt, coarse sugar, brown sugar, paprika, chili powder, and pepper. Generously rub the chicken leg quarters with the spice mix, try to get under the skin if you can.
  3. Place the leg quarters directly onto the smoker grates. Smoke for 2-3 hours. Chicken is ready when an internal temperature reaches 165°F. However, for extra tender fall off the bone chicken quarters, let them cook until an internal temperature reaches 180°-190°F
