Skinny Guacamole
Our Best Ever Guacamole recipe gets a revamp in our Skinny Guacamole. This simple Mexican dip is creamy and bursting with flavor. With a hint of spicy and a secret ingredient that cuts the fat and calories, this will be your New Year obsession.
A few years ago I fell in love with guacamole. Honestly I had been trying to like avocado for years. I just never cared for the texture. To be honest, most guacamole I tried was no better. Until I tried the guacamole at a local restaurant. It was fantastic. It had red onion in it and a few more familiar flavors.
I took all the fantastic flavors that I loved and included them in my guacamole. I absolutely love it, Munchkin loves it and everyone who has ever eaten it loves it! This was fantastic until I calculated the nutritional information. I almost fell out of my chair.
Needless to say, finding this new love for this dip led me to redevelop a healthier version that I can enjoy with less guilt. Here it is, absolutely delicious and with all the flavor I have come to love. Those who have tried both said it was as creamy and delicious as the original.
They didn't miss a thing and didn't notice a change in the flavor (until I told them). The secret ingredient is peas! I replaced more than half of the guacamole with peas. Peas have no fat, so that is a fantastic change. It tastes amazing. It is perfectly creamy with great flavor!
Serve on a tray with a variety of vegetables, like cucumbers, celery, tomatoes and carrots for a crunch satisfying snack!
Enjoy!
With love from our simple kitchen to yours.
