I am not a morning person, so as much as I enjoy a hot breakfast and love for Munchkin to have a really great breakfast, I am beyond standing in front of a stove most mornings. Enter the crockpot breakfast. Brilliant!
Oatmeal, pancakes and waffles are our favorite breakfast options around here. My 7-year-old could eat them everyday for the rest of her life and be a happy girl.
As picky as she is about eating, I love to make her a hot breakfast that I can feel good about. I have been making banana oatmeal for years, prepared in a saucepan, and freezing it for quick and easy breakfasts.
Of course that involves standing over the stove using valuable morning time. So, I started making this crockpot version with some of her favorite fruit, which frees me up from having to stand over the stove. Apples and cranberries are in the tops for favorite fruit.
Needless to say she went crazy over this oatmeal. She devoured 2 bowls and couldn't stop raving about it.
My favorite part was prepping it the night before. Storing in a ziptop bag and dumping it all in the crockpot in the morning and letting cook while I was getting ready for the day. By the time we are ready to eat the oatmeal is perfectly cooked and absolutely amazing.
