Ingredients in tater tot casserole

  • Ground beef - You’ll be draining the grease, so you can use whatever type of ground beef you have on hand. This being said, you can use lean ground sirloin and save yourself the mess of draining the grease off.
  • Yellow onion, diced - If all you have on hand are white or red onion, they’ll work just fine. Even shallots will work in a pinch! If you want to use frozen diced onions, it is probably best to thaw them first. Otherwise, there will be some excess water in the casserole.
  • Garlic powder - If you don’t have any on hand, minced fresh garlic works as well. If you omit the salt, you can even use garlic salt.
  • Salt - Kosher or sea salt offer the best taste, but iodized salt will be fine.
  • Worcestershire sauce - This gives the hamburger casserole some additional meaty flavor. You can omit it if you don’t have any. I even use steak sauce in a pinch!
  • Canned green beans, drained - Frozen green beans are fine. If you steam them in the microwave for 2 minutes first, you can even use fresh.
  • Canned niblet corn, drained - The same rules apply for the corn. I just always have a can or two in my pantry.
  • Cream of mushroom soup - You need to use condensed soup, not the ready to eat variety. If you don’t like using condensed soup, you can make it yourself! I have a recipe for condensed cream of chicken soup that will work perfectly, or this condensed cream of mushroom soup recipe from Kevin is Cooking looks great.
  • Shredded cheddar cheese  - You can substitute the cheddar with any shredded cheese your family enjoys, or don't use any at all...

EQUIPMENT YOU’LL NEED:
  • 9 x 13-inch casserole dish - Some casserole dishes have the capacity stamped on the bottom of the dish. You want to use something that holds at least 2 quarts.
  • 10-inch large skillet - I have had this pan since 2006. It is my go-to large skillet. It heats evenly and quickly. The stainless steel cleans up beautifully with a little baking soda so they still look brand new.

RECIPE TIPS

  1. Keep the tater tots in the freezer until right before you add them to the casserole. As a result, they’ll stay nice and crispy in the oven. Nobody enjoys mushy tater tot casserole, right?
  2. To make serving the hamburger casserole easier, be sure to lightly grease the casserole dish with non-stick cooking spray.
  3. The reason that this meal is sometimes known as tater tot hotdish is because it tastes best when it is served immediately. After it sits for a while, it can get a little mushy.
  4. Refrigerate any leftovers and use them within 5 days.

HOW TO FREEZE TATER TOT CASSEROLE
The recipe is easy to make ahead and freeze for baking later.

Assemble the casserole according to the directions in the recipe card.

Then, wrap the casserole with a double layer of plastic wrap and a layer of aluminum foil over the plastic. It will keep well in the freezer for 3 to 4 months.

When you’re ready to serve it, you can remove the plastic wrap and recover with the foil and pop it right into a preheated oven aluminum foil still covering it. You’ll need to add 20 to 25 extra minutes of cooking time.

After the first 45 minutes, you should remove the foil. This will help the tater tots to become crispy and the cheese to turn bubbly and golden brown.

Tater Tot Casserole

Tater tot casserole is a delicious ground beef dinner full of veggies and cheesy tots. This recipe makes the best kid-friendly, comfort food!

ingredients:

  • 1 pound lean ground beef, (I use 88% lean)
  • 1/2 medium yellow onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 tablespoon Worcestershire sauce
  • 1 (10.75-ounce) can cream of mushroom soup
  • 1 (15-ounce) can green beans, drained
  • 1 (15-ounce) can kernel corn, drained
  • 2 cups (8-ounces)  shredded cheddar cheese
  • 1 (16-ounce) package frozen tater tots

instructions:

How to cook Tater Tot Casserole

  1. Preheat the oven to 350°F. Lightly grease a 9x13 baking dish with cooking spray. Set aside.
  2. Warm a large (10”) skillet over medium-high heat. Add ground beef, onion, garlic powder, and salt to skillet. Cook until the beef is cooked through, using a spatula to break up the ground beef as it cooks.
  3. Add mushroom soup, green beans, corn, and 1/2 cup cheese to the beef in the skillet. Stir to combine.
  4. Spread the beef mixture into the prepared baking dish.
  5. Arrange tater tots in a single layer over the ground beef mixture.
  6. Sprinkle the remaining cheese over the top of the tater tot casserole.
  7. Bake uncovered for 30-40 minutes until tots are golden brown and hot.

This classic tuna noodle casserole uses canned tuna and canned cream soup. Here, I use two cans of cream of mushroom soup. But, you can use cream of celery or whatever other types of cream soup you have on hand. Or, if you're out of cream soup, you can make homemade cream of chicken soup or a basic white sauce and use that as the basis for this casserole.

If you don't have Ritz crackers on hand right now, you can easily substitute something else. I've used buttered breadcrumbs. Anything that is crunchy would make a good topping.

What should I serve with this?

This tuna noodle casserole recipe is a full meal as it is because it contains a protein, starch, and a vegetable. But, if you want to serve a side dish, you can serve a steamed vegetable. My Green Beans with Garlic make a great side dish for almost any meal. Or, my Honey Glazed Baby Carrots would work as well. If you have it, a side garden salad would also work well with this casserole.

Can you freeze tuna casserole?

If you want to make up a large batch on the weekend and then freeze it, you can certainly do that. Just bake the casserole as directed and allow it to cool. Then, you can freeze it, tightly covered, for five to six months. The key is to be sure that it is tightly covered.

When you want to serve it, allow it to thaw in the refrigerator and bake it as directed. Or, you can bake it frozen and increase the cooking time by 30 minutes. Be sure you check it every 15 minutes to be sure it doesn't overcook.

How long can you keep tuna noodle casserole?

If you have leftovers, you can store them tightly covered in the refrigerator. They should be eaten within three days.

To reheat this, just put it back in the oven and heat until the center is hot. How long it takes to reheat it will depend on how much casserole is left in the pan.

Or, you can reheat it in the microwave if you prefer.

It should take about two minutes but, again, it depends on how much is on your plate and how powerful your microwave is.

Tuna Noodle Casserole

Ingredients


  • (12-ounce) package extra broad egg noodles
  • 2 cups frozen peas (or your favorite vegetables)
  • 2 (10.75 ounce) cans Campbell's Condensed Cream of Mushroom Soup (or 1 can mushroom, one can celery)
  • 1 cup milk
  • 2 cup sharp shredded cheddar cheese, divided
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 2 (10 ounce) cans tuna, drained
  • 1 cup crushed Ritz crackers
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 350°F.
  2. Cook noodles according to package directions (only cook noodles to al dente, they still have a bite to them) as they will cook in the oven if using frozen peas add them during the last 2 minutes.
  3. Meanwhile: In a large bowl combine soup, milk, 1 cup of the cheddar cheese, onion, garlic, and pepper. Mix well. Add warm pasta, peas, and tuna, stir until combined.
  4. Spread into a 9x13 baking dish. Sprinkle the top with the remaining 1 cup of cheddar cheese.
  5. Mix the cracker crumbs with butter in a bowl and sprinkle over the casserole.
  6. Bake for 25-30 minutes or until the cheese is bubbly and the casserole is heated through.

DONNA'S NOTES

  1. If using canned peas, drain them and add to the bowl at the same time as the pasta.
  2. Be sure to only cook the noodles to al dente as they will continue cooking in the oven.
  3. You can use any pasta you like. Noodles are classic but this recipe is great with elbows, shells, cavatappi, and penne too. I imagine every pasta would work in this recipe.
